Start Of A Three-Day Weekend

My clinic is closed on Friday in celebration of Independence Day tomorrow so today is the start of a three-day weekend for me.  Woo-hoo!  Adam has to work, unfortunately, but I am hitting the road and heading to Solomons, Maryland to spend the weekend with my aunt and uncle at their cabin.  It’s been way too long since I last saw my cousins and I am very excited.  My aunt tipped me off that the “drink special” for the weekend is bourbon slushies so I’m pretty thrilled about that too.

Snacks and cafeteria lunches didn’t make it into this post so I’m skipping a good 45% of what I ate this week…

breakfast

Three things you need to know before we talk about breakfast:  1) I bought Rainer cherries and they have been sweet, delicious, and totally worth the $6 price tag.  2)  My coffee combo was solid this week – double-strength brewed Community Coffee Dark Roast with chocolate milk and fat-free half and half.

DSC08455

3) GoMacro sent me a sampler box of mini MacroBars in 11 fun flavors.  All MacroBars are USDA organic, non-GMO project verified, kosher, gluten-free and vegan certified.  I like that GoMacro company buys fair trade products and their boxes are biodegradable and made from 100% post-consumer corrugated waste.  All of the flavors I’ve tried thus far have been very homogenous in texture, smooth like a paste (but good and not gross like I’m making it sound here!) so they don’t crumble at all but they also don’t stick to your teeth or fingers which I deeply appreciate.

DSC08448

Please note – I was sent a box of mini bars free of charge to sample.  I was not provided further compensation for this post.  All opinions are my own.

Chocolate coffee and peanut butter chocolate chip (protein pleasure).  My favorite flavor thus far, the base of this one is basically just like eating super thick peanut butter.

DSC08425

Cherries and cashew caramel (protein paradise).  This was my least favorite flavor, though it still was not bad, because it didn’t have much going on; when something calls itself caramel I’m looking for it to be pretty darn sweet.

DSC08452

Coffee, cherries, and sunflower butter + chocolate (protein purity).  I know the names are super cheesy but a full-size of this flavor does offer 10 grams of protein for 260 calories.

DSC08457

A big day, cherries, mozzarella stick, coffee, and almond butter + carob (wholehearted heaven).  Surprisingly, this was my favorite flavor, it had a nice sweetness to it.

DSC08492

Why yes, I did go through and pick out all of the “blank and chocolate” flavors first.

lunch

Maple mixture.  Maple Greek yogurt with KIND maple chia granola and fresh pomegranate.

DSC08420

The yogurt, from Green Mountain Creamery, was soooo smooth.  It’s just nonfat milk and maple syrup with live cultures.

On Wednesday, I prepped my lunch and left it on our butcher’s block in the kitchen while I went to get dressed.  Five minutes later, the dog had eaten my lunch.  He is a little monster but I still have absolutely no idea how he managed to get himself up on the block!  I kicked the dog (kidding!!) and rushed off without food.  The point of that long story?  I ate ice cream for lunch and it was fantastic.

DSC08467

DSC08470

Scoops is the new pop-up ice cream shop from Greene Grape.  My toasted green tea scoop (from Phin & Phebes) was extra fun with rainbow sprinkles.

Then it was back to yogurt.

DSC08485

Evolve Kefir‘s strawberry Greek yogurt was very pleasant with yellow plucot and KIND granola.

dinner

Pizza night.  We made four cheese pizza – low-fat mozzarella, fresh mini mozzarella balls, pepperjack, and sharp cheddar – on TJ’s whole-wheat crust and it was ridiculous.

DSC08437

DSC08432

Pizza.  But x2 because we ate the entire pie and we were so sick and it was so worth it.

DSC08442

Plus roasted veggies because we are healthy like that.

DSC08440

Kalettes (the kale + Brussels sprout hybrid which I’ve decided I don’t enjoy) and yummy zucchini.

Big salad(s) bonanza.

DSC08479

We tore up heads of TJ’s Smallish Gems Sweet Lettuce and topped them with champagne vinaigrette, sweet and spicy pecans, pomegranate, and cucumber.

DSC08475

Plus tuna salad on the side.

Casserole night was planned so Adam will have lots of leftovers while I’m away this weekend.

DSC08495

My Buffalo Chicken Baked Pasta that I snuck a bit more veggies into with the addition of sautéed onion and yellow and orange bell peppers.

DSC08499

Plus roasted broccoli and cauliflower.

DSC08496

Fun nutrition fact – there is a dose dependent inverse relationship between broccoli consumption and colon cancer.

real talk

I finished Bossypants and I laughed out loud on the train like a crazy person adored it.  The chapter where she responds to some of her internet critics had me in stitches.  Even the lines about feminism/gender politics in America/women in comedy that make you want to put your fist through a window if you think about it too much managed to be witty.  And now I really want to rewatch 30 Rock.

I bought this NY skyline bag from Fishs Eddy to store small items in my purse and it makes me happy every time I put on lipstick/grab a pen/check my cell phone, which is approximately 8 million times a day.

DSC08464

I finally started Orange is the New Black and I’m going to make my way through the season quickly but I’m kind of over it.  Is there going to be a season 4, because I feel like they need to wrap things up?  There are moments that are incredibly funny but in general this season is a bit too sad for me.  My kind of television sads come from the fact that Joss Whedon thinks all great romances have to end in a horrifying and sudden death, I’m not so keen on the children visiting a prison on Mother’s Day and being panicked by their parents dropping to the dirt during a lockdown.

Do you watch OITNB?  What are your thoughts on season 3?  <– no spoilers, please!

It’s The Weekend And I’m Not Crabby

That title is a play on words referencing a tasty casserole I made this week, but real talk – I was super cranky this week and I only have a few snippets to share…

breakfast

Coffee and a watermelon Greek yogurt.

20150622_080549

I was hoping that the cafeteria would have fresh watermelon on hand to pair with it but honestly that flavor is pretty delicious on its own.

Iced Americano with skim milk and a splash of half and half.

DSC08328

I asked for Americano with “light water” which seems to be my perfect order; mostly espresso without being just espresso.

Cherries and a cheese stick.

DSC08310

Yum!

lunch

Tropical chia pudding.

DSC08272

Chia seeds soaked in canned coconut milk with honey and vanilla bean paste with a smashed banana stirred in the next day.

Cafeteria sandwich.

20150623_121102

Tuna salad on multigrain with veggies and muenster.

Cafeteria Inception-style salad.

20150625_132057

Greens with oil and balsamic vinegar topped with shredded cheddar and cucumber and carrot salads.

snack

Self-explanatory…

DSC08276

DSC08280

Most of our snacks revolved around our homemade no-churn vanilla bean ice cream. <— have you commented on the cookbook giveaway post yet??

DSC08319

Topped with melted dulce de leche and Valencia peanut butter.

DSC08283

And whirled into ridiculous milk shakes with Cinnamon Toast Crunch.

dinner

Last night we went on a date to the mall to buy Adam sneakers and me bras and underwear because apparently we have a serious case of the olds.  We did keep things young and fresh by getting a fancy dinner at the food court.

DSC08330

That’s “Drunken Noodles” from the new Thai spot, I guess.  The veggies were tasty (there were amazing pieces of eggplant) but it was a pretty poor representation of the dish.

The rest of our nights centered around this Cheesy Crab Pasta Bake.

DSC08290

You see the creeper in that photo?  That’s how you know it’s good!

DSC08322

DSC08326

Cheesy Crab Pasta Bake; serves 6-8

  • 8 oz dry bow-tie pasta
  • 1 Tbsp salted butter
  • 1 heaping Tbsp all-purpose flour
  • 1.5 cups milk
  • 4 oz shredded sharp cheddar
  • 4 oz shredded pepperjack
  • 1 tsp Old Bay seasoning
  • 2 tsp fish sauce
  • juice from 1 lemon
  • 1 Tbsp minced garlic
  • 4 sliced green onions (green and white parts)
  • (2) 6 oz cans crab meat, drained and picked through if needed
  • 3 oz crab seasoned chips, crushed
  1. Preheat oven to 375 degrees Fahrenheit and prep an 8×8 inch casserole dish with baking spray.
  2. Cook al dente pasta according to manufacture’s instructions then rinse and set aside.
  3. In a large pot over medium heat, melt butter.  Whisk flour into butter to form a roux and cook 1-2 more minutes until it has slightly darkened.  Whisk milk into roux and cook 3-4 more minutes until thickened, stirring out any lumps as needed.  Working in batches, stir cheeses into sauce.
  4. Reduce heat to low and stir Old Bay, fish sauce, lemon, and garlic into sauce.
  5. Remove pan from heat and stir in pasta, green onions, and crab, tossing until mixture is well-combined.  Pour into prepared casserole dish and top evenly with crushed chips.
  6. Bake 23 – 25 minutes.

DSC08293

Served with spinach salad with champagne vinaigrette, pepitas, and roasted broccoli.

DSC08304

Have a great weekend!

Seoul Food Style

We got to spend time with several Buffalo friends, we went on some great walks, the puppy seems to be feeling a little better, and all in all it was a great weekend.  I’m missing a few shots, but here are most of my favorite eats…

breakfast

Giant iced coffee, always.

DSC07567

That one has fat-free sweetened condensed milk and skim milk.  The SCM is leftover from a failed recipe trial, but Vietnamese-ish iced coffees are better than hot fudge root beer float popsicles (good in theory but I can’t make it work!) any day.

I tried the milk bread from TOUS les JOUR.

DSC07539

Nice and vanilla-bean-y.

Another day, another coffee.

DSC07493

I asked Starbucks to put the marshmallow whipped cream and milk chocolate from the S’mores Frappuccino into my skim latte and they happily delivered.  The taste was good but I was unbelievably ill by the halfway mark, I cannot even imagine drinking a full Frappuccino.

Plus Adam and I split a Pulsin’ maple peanut bar.

DSC07496

It was vegan and made with pea protein and the nutrition stats were pretty good – 12 grams of protein and 5 grams of fiber with 11 grams of sugar.  Not a bad breakfast for a busy morning of errands.

lunch

Lunch in Koreatown.  I set my mouth on fire with a kimchi bun and cooled it down with a (pink!) Harmless Harvest coconut water.

DSC07508

Afterwards we shared dessert at Grace Street, our new favorite snow spot.

DSC07500

We shared a machta latte.

DSC07502

And a black sesame shaved ice with scm, boba, and mini marshmallows.

DSC07504

Between the tapioca balls and the partially frozen marshmallows, this had so much chew!

“Dinner” for lunch.  We almost never cook a full meal in the daytime so this felt pretty fancy.

DSC07543

Roasted broccoli with truffle salt,

DSC07546

and “Cooking Light’s” Farro with Honey-Garlic Roasted Tomatoes.

DSC07549

We added chopped turkey bacon and rotisserie chicken to the farro to make it a little more substantial.  Also I skipped the thyme (the bacon made up for the flavor), used fat-free feta, and subbed sherry for sherry vinegar.

snack

21st Amendment brews at the Gotham West Market.

DSC07511

The market space was gorgeous and we want to go back for ramen and/or tacos soon but guys, holy crap, we paid $17 for two cans of beer!!!  At least, after a lot of walking along the piers, they were refreshing.

Can cookies at Schmackary’s become an every weekend tradition?

DSC07515

This time we split a giant, chewy funfetti cookie topped with cream cheese frosting and tons of sprinkles.

We’ve been loving fruit-infused water lately; having a big jug in the fridge makes me much more likely to pour a glass.

DSC07563

This week was lime and mint and last week was mint and grapefruit, which was even better.

Corn was popped.

DSC07561

Enjoyed while Netflixing approximately eight billion old episodes of “Criminal Minds.”

A girlfriend and I had planned on going to Rice to Riches ever since the first summer we moved here and Monday the time was finally right.  I got a cookie cream rice pudding with mocha crumbles.  We both liked the pudding but thought it would be more enjoyable served in a bowl instead of a trough.

DSC07572

My fancy cup was a skim cortado from Happy Bones, so that was fun.  And we took a great walk across the Williamsburg Bridge.

dinner

Our friends’ adorable baby girl just turned one and they invited us to her Doljanchi, a Korean 1st birthday party tradition.

DSC07551

DSC07553

The buffet was great,

DSC07554

but the best thing ever was getting to catch up with all of the med school friends (and their babies!) that we’ve been missing.

Saturday night we had an absolutely amazing dinner at The Marshal, a Hell’s Kitchen farm-to-table spot that focuses on seasonal, local goodies.  Bonus – the waitstaff are all insanely cute!

DSC07518

I got an Earl’s Tea to drink – chilled Earl Grey Tea, Peace Vodka, Catskills Provisions raw honey, lemon, and orange cream bitters.

DSC07521

We started with scallops – bourbon planked herb crusted Massachusetts jumbo scallops with caramelized lemon and assorted local herbs.

DSC07526

And Arcadian Pastures deviled eggs – ramps-infused yolks, micro-wasabi, and crispy duck prosciutto.

DSC07524

None of the appetizers really knocked our socks off (good but not the best ever) but the duck prosciutto was definitely smoky and amazing.

Our meals, on the other hand, were mind-blowing.  Adam got a bacon-wrapped pork loin that he loved so much he didn’t speak for the rest of the meal and I did a trio of farm sides.

DSC07529

Roasted Bulich Farm snow while mushrooms, herb butter, Upstate white wine // Sautéed Lancaster Farm dandelion greens, red pepper flakes, grapeseed oil, Finger Lakes white wine // Satur Farms sweet potato and kale au gratin.  The gratin was out of this word; it was so rich I couldn’t even finish it.

We were too stuffed to do more than pick at dessert, but we couldn’t skip it!

DSC07533

Bittersweet chilled chocolate fudge in NYC honey with honey comb, bee pollen, and Blue Marble vanilla ice cream.

The Lower East Side has always been my Manhattan haunt of choice, but lately Hells Kitchen has been rocking our socks off!  NYC readers, what’s your favorite neighborhood?

Spring Vacation 2015

Adam and I took advantage of our joint weeks off and flew home to St. Thomas for a quick visit.  The timing worked out perfectly so that we flew in on Mother’s Day and could celebrate with my mom in person.

11226609_802813609773691_611499182_n

Our trip was short but wonderful!

DSC07136

DSC07229

DSC07175

We saw some old friends, ate tons of good food, ran on the beach, and visited our favorite spots.  I am missing pictures of most of the action, but here are some of the highlights…

DSC07204

DSC07207

DSC07166

DSC07138

DSC07168

St. Thomas now boasts several self-serve froyo places (and a Walgreens?!), a fact that seems insane to anyone who grew up in the VI.

DSC07128

Zest, at the Ritz, also had yummy toddy-brewed VI Roasters coffee, so you know I had to make an affogato.

DSC07131

With vanilla froyo with caramel and marshmallow.

Dinner at ITP, my family’s favorite pizza spot.

DSC07153

DSC07155

We shared giant Greek salads and a bbq chicken pizza.

Brunch at Barefoot Buddha, my favorite restaurant on the island.

DSC07223

I got a Vietnamese iced coffee, as well as a really amazing Cuban coffee to go.  Plus my standard order, the Bigfoot Bagel Sandwich.

DSC07227

Egg frittata, smoked turkey, turkey bacon, cream cheese, sharp cheddar cheese, chipotle aioli, tomato-onion coulis and fresh spinach on an everything bagel.

Lunch on the water at Fat Turtle.

DSC07192

The food was meh – we split a Cajun mahi mahi sandwich and a veggie pizza that Adam loved –  but the view was nice.

DSC07200

DSC07198

DSC07190

And afterwards we got house-made salted caramel gelato from a pop-up booth in Yacht Haven.

My parents made Adam’s favorite dish one night for dinner, Bill Clinton’s Enchiladas.

DSC07181

Plus key lime pie for dessert for me.

DSC07185

I scooped a slice of pie onto Greek yogurt for breakfast the next day and it was delicious.

You can’t miss the local dishes at Victor’s.

DSC07212DSC07216

That is pan-fried Old Wife, a nice white fish that went well with the smoky creole sauce.  My plate also had veggies, fried plantains, and fungi – a cornmeal paste that has a texture like firm mashed potatoes.

Finally, fraccos, aka Caribbean shaved ice.

DSC07162

I got soursop and passionfruit with condensed milk and it was one of the best things I ate all vacation!

It was a great trip, and now I’m excited for a three-day staycation in the city before we head back to work.

DSC07235

Fun Facts From The Weekend

{1}  The special drink at Café Bene this month is handmade strawberry milk!  It’s called a “strawberry latte,” and as far as we could tell it is just milk and macerated strawberries.  The husband and I liked it a lot.

strawberry latte aka fresh strawberry milk

That’s more than I can say for the S’mores Frappuccino, as the whipped cream did not taste like marshmallows.

{2}  You can eat Kentucky Derby themed snacks even if you don’t watch the race and still have no idea who won.

This Dark Chocolate Walnut bar was yummy.

DSC06964

And I made Adam and I “Derby Shakes” on Saturday.

DSC06988

Milk chocolate gelato and toasted walnuts blended with skim milk, Jim Beam Maple Bourbon, and ice.

{3}  Bareburger’s new menu includes a burger topped with pimento cheese, pickled green tomato, a fried egg.

hog wild - bareburger

I guess that technically fit in with our Derby eats too.

{4}  The new Avengers’ movie was not bad at all.  Even though it was long enough for us to need a refill on our giant soda.

DSC06983

It was very funny; several quips had the whole theatre laughing out loud.  I think overall it would have been a lot more Whedon-y if it had been Natasha walking into the house instead in that final farm scene (<– intentionally vague so as not to give any spoilers).

{5}  You should totally make my newest recipe at home – Spicy Salmon Roll Casserole.

spicy crunchy salmon roll casserole

It came together really quickly and Adam and I both enjoyed it.  Served with Bon Appetit’s Thai Celery Salad on the side.

DSC07018

DSC07005

I’m looking forward to leftovers of both dishes.

Easter And Onward

This post feels long, and I am le tired, so I will try to be less loquacious than usual.

Very chatty sidenote – how great are some of the words that describe how much a person does or does not talk??  Loquacious.  Taciturn.  Verbose.  Gabby.  Love them!

Real talk though: I somehow caught a springtime cold and I am cranky and sniffling and need to go to bed.  I know I’ve wasted 60+ words on an intro, but I’ll try to let the pictures speak for themselves as much as possible.

breakfast

Vanilla iced coffee with vanilla milk.

DSC06551

Smoothie #1 – strawberry mint.  Chocolate mint soy milk, frozen strawberries, and plain Greek yogurt.

DSC06503

Smoothie #2 – blueberry bliss.  Frozen blueberries and dates with plain almond milk, plain Greek yogurt, and a little honey.

DSC06564

I made another batch of Community Coffee French Roast, this time in our coffee machine.  Traditional/hot brewing did make this a little bitter, but it was still quite drinkable.  Especially with skim milk and a splash of toasted marshmallow coffee syrup or a sprinkle of cinnamon and brown sugar.

DSC06528

DSC06595

lunch

Subs with the in-laws for Easter.  With chips and hard-boiled Easter eggs.

DSC06511

Coffee Chobani with Cocoa Coconut Renola and a Cara Cara.  I am very picky about my coffee yogurts and this stuff was on point.

DSC06523

A half turkey sandwich from the cafeteria with seaweed salad and Easter candy delivered by a coworker.

20150407_121406

20150407_125325

I apparently don’t have a photo to speak for itself, but another day I packed a sandwich from home.  An epic sandwich.  Sweet cheddar and extra-sharp cheddar on a toasted English muffin.  Swoon.

This mix was random, but it worked – spicy Thai chili tuna salad, brown sugar and sea salt seaweed, and a Cara Cara.

DSC06574

snack

Coconut water for rehydration.

DSC06506

These chips are amazing.

DSC06508

Coffee, always.

DSC06529

The husband and I are both obsessed with these two dessert items.

DSC06519DSC06533

Plain Greek yogurt with butterscotch peanut butter and chocolate-covered cocoa nibs

DSC06545

I made How Sweet Eat’s Brown Butter Oatmeal Chunk Cookies for a birthday at work and they received rave reviews.  I subbed vanilla bean paste for cinnamon, subbed dark chocolate chips for chocolate chunks, and made much smaller cookies (for a yield of 40 cookies versus her 15), and I recommend all three changes if you make a batch of your own.

DSC06593

I’m including two non-edibles that fed my soul.  The Story Sisters by Alice Hoffman was like a grown-up version of Francesca Lia Block’s stuff.  It was hard to put down; I read on the train and one night I had to sit in my car in the parking lot for twenty minutes to keep reading.

DSC06570

This lip-balm smells like my dreams.

DSC06599

dinner

Easter dinner.

DSC06512

Dessert was angel food cake layered with a yummy Cool Whip + vanilla pudding mix + shredded pineapple concoction.

DSC06516

An easy, amazing soup.  I cooked shell pasta in chicken broth then dumped in sautéed chopped bok choy and green onions, shredded cooked chicken breast, and a sprinkle of salt and pepper.  My bowl was drizzled with sweet chili oil as well.  Adam absolutely raved about this dish.

DSC06539

I turned the rest of my never-ending marinara sauce into a bastardized version of Jenna’s Channa Masala.  On top of brown rice and roasted broccoli.  Topped with plain Greek yogurt and sweet chili oil.

DSC06555

Safe Catch sent me a can of their wild skipjack tuna.

DSC06578

Please note: I was sent this product free of charge to review.  I was not provided with further compensation for this post.  All opinions are my own.

Seafood is a great thing to include in your diet.  It is a lean protein, a good source of iron, and a good source of omega-3 fatty acids.  Unfortunately, due to the fact that seafood contains mercury, it may not be a good idea to consume it daily, and some varieties are safer than others.  Canned tuna, for example, I have to tell my pregnant patients to limit to </ once per week.  Safe Catch is a new, mercury tested, tuna brand that enforces a strict limit on the amount of mercury allowable in the fish that go into its products (their standards are 90% stricter than the FDA’s mercury safety limit of 1.0 parts per million).  Also important – the fish is caught exclusively with pole and line from managed stocks.

DSC06582

I wanted to be able to really taste the tuna – we give it two thumbs up – so I made it into a super simple tuna salad.

DSC06588

Served on a challah roll with a side of roasted broccoli.

DSC06583

Last night was my sickest, and the husband worked overnight, so I made a(n incredibly tasty!) frozen meal from Trader Joe’s and called it a night.  I also ate a bowl of cereal in bed.

DSC06602

There were entirely too many photos of my hands in this post.

“It’s A Miracle!”

Who else has obsessively binge-watched their way though the entire first season of “Unbreakable Kimmy Schmidt” already?  We finished the whole thing over the weekend.  We loved it!  I’m considering a rewatch.  I hate the two trial episodes – I thought they were god-awful, truly some of the worst television I’ve ever seen – but I adored everything preceding them.  The 10 second concept makes my life.  Unsurprisingly, this is another smart and funny win from Tina Fey.

The theme song has permanently ear-wormed its way into my brain.

Related, LisaBorn Round was amazing!

DSC06216

I read it on the train and then would sit in my car in the parking lot for at least 20 minutes each night to keep reading.  I’m pretty sure Bruni should be giving TED Talks for all would-be crash dieters, emotional eaters, and aspiring journalists.

breakfast

I did the chocolate milk and iced coffee combo two days in a row.

DSC06167

DSC06212

Paired with a Special K protein bar both days.

DSC06214

Not the best bars – for taste or ingredient list – but they were free in the cafeteria and I had some extra morning hunger this week.

Another day I did hot chocolate mix in hot coffee with a lot of milk on top.

DSC06238

So basically just the lukewarm version of my chocolate milk and coffee.

My breakfast plan for St. Patrick’s Day was a green smoothie.  Then I hit the snooze button and the plan was iced coffee with green dye in my milk.  Then I hit the snooze button five more times and I barely managed to get coffee, ice, and boring plain milk into my cup.

DSC06184

…and then I also got Starbucks once I got off of the train.

DSC06193

I usually don’t let myself do two coffees in the morning, but I had stayed in bed until literally 10 minutes before I needed to be in the car so clearly it was a double coffee kind of morning.  And yes, mom, I fixed my hat hair before I saw patients.

lunch

Thankfully the cafeteria totally came through and helped me get some green-theme on St. Paddy’s Day.

20150317_115258

My bagel was topped with pepperjack, sliced turkey, mayo, mustard, and frisee lettuce.  Plus baked onion rings on the side.

Blood orange Fage with Nature’s Path Heritage Flakes and blackberries and a fresh mandarin orange on the side.

DSC06163

I can’t believe I had only ever eaten canned mandarins up until this year, they are my new favorite citrus.

Tart cherry Noosa with coconut butter, homemade butterscotch peanut butter, and a Pinata apple.

DSC06208

We are loving the new 4 oz Noosa packs.  Noosa is Adam’s top favorite yogurt – in fact it’s one of his favorite foods in general – but the original packages were a bit too large to enjoy on the go.

Vanilla-caramel yogurt with blackberries and 18 Rabbits caramel apple granola.

DSC06233

I loved the flavor of the grass-fed yogurt but I’d still be a little nervous about trying it plain.

snack

Popcorn / all-time best Easter candy / beer…

DSC06199DSC06196DSC06249

All good.

A small but gourmet sandwich.

DSC06172

Toasted whole-wheat with Applegate Farm herb sliced turkey, mayo, and leftover carmelized onions.

Weird pasta salad from the cafeteria.

DSC06242

Why do they keep putting croutons in pasta??

An Austrian iced coffee.

DSC06171

Aka coffee (delicious Grady’s cold-brew in this case) with ice, (skim) milk, and (vanilla-caramel) ice cream.

dinner

Asian-style baked shrimp bowls.

DSC06177

From the bottom up, I filled my casserole with quartered bok choy, sliced wild mushrooms, chopped orange and yellow bell pepper, shrimp, fish sauce, rice vinegar, soy sauce, canola oil, and Sriracha.  Then I baked it for 15 minutes at 425 degrees.

DSC06182

Served on top of brown rice cooked in chicken stock.

Leftover bbq salads.

DSC06200

Spicy, local arugula topped with bbq sauce, cucumber, avocado, bell pepper, caramelized onions, and TJ’s fire-roasted corn cooked with turkey bacon.

DSC06203

These were some of the best salads we’ve made in months.

The next night I did a 180 from salads and made my grandma’s recipe for an awesomely retro chicken and rice casserole.

DSC06223

Complete with condensed soups, chow mein noodles, and crushed chips on top.  I swapped half of the rice for shredded cauliflower but otherwise did not healthy it up at all.

DSC06231

Served with green beans baked with fish sauce, honey, Sriracha, and evoo.

DSC06228

We ate casserole the next night too.

DSC06244

And we will probably been eating casserole the next few nights as well!

Hope everyone has a great weekend, good luck getting that song out of your head!

When It Snows It Blizzards*

When it comes to the big, important stuff – having jobs, our health, and a great marriage – Adam and I know that we are unbelievably lucky.  That said, man oh man, this week was annoying.  The snow has been relentless, I wore my favorite sweater to work only to get to the cafeteria and douse myself head to toe in balsamic vinegar, Adam had to have both of his big toe nails emergently removed, and my car has a flat tire.  When it rains it pours*.  I’m pretty sure I have never been so glad for a weekend!

There was a lot of stress snacking going down this week that I didn’t do the best job of photographing, but I am going to recap the most delicious things…

breakfast

Iced coffee on the train and plain yogurt with peanut butter at my desk.

DSC05978

I had a ridiculously amazing coffee combo this week…  Cold-brew with chocolate milk and toasted marshmallow coffee syrup!

DSC05962

So insanely good.

DSC05964

Are you admiring my nails?  Scroll to the last section of this post.

snack

GH Cretors elevated our snacking game by sending me a big box of the two flavors from their new organic line – Simply Salted and Extra Virgin Olive Oil.

Note – the popcorn was sent to me free of charge to review.  I was not provided with further compensation for this post.  All opinions are my own.

Pre-popped popcorn can never really compare to freshly popped, but these are definitely the best bagged varieties we’ve ever tried.  They are nice and crisp.  Adam – who likes to pretend that he doesn’t like popcorn – was crazy for them, so that’s saying something.  We preferred the Simply Salted because the EVOO was good, but not quite as flavorful.  Both are organic and kosher and have 40 calories per cup.

I surprised my sore husband with a giant, sweet latte.

I got myself a rocky road latte as well.  Meh.

We tried the hazelnut torte bar from Lindt’s new “Creation” line.

Now I want the crème brûlée flavor!

I’m still loving the Ice Chips.

Lemon was a very nice way to transition back from lunch to work this week.

lunch

Fage with raspberry and butterscotch peanut butter.

DSC05959

The citrus fruits shown in my lunches this week are fresh Mandarins from Trader Joe’s that were wonderful.  Very sweet and juicy with almost no seeds.

Baked yucca fries from the cafeteria.  I had about double what’s shown because I started eating before I sat down.

They were paired with the salad that ruined my outfit.

TJ’s egg white salad and popcorn.

DSC05980

The egg salad was practically inedible; whyyyy was there so much turmeric??

Popcorn, Applegate Farm sliced turkey, mini Jarlsberg, and olives.

The tasting plates were fun, but I was missing my yogurt bowls.

dinner

If you judge a dish by how good it tastes cold and leftover, straight from the casserole dish – I definitely do! – then my pizza mac and cheese was a real winner.

Adam heated his serving up, but he also recommends that you try the recipe.

Chipotle night.  I ate a giant rice bowl with chicken, veggies, and pretty much all of the toppings.

DSC05976

Our neighborhood is pretty much a food wasteland, but I think Chipotle would be Adam’s first pick even if we lived somewhere with more going on!

This was our best dinner of the week:

DSC05995

Roasted broccoli and kalettes (aka kale-Brussels sprout hybrids).

DSC06000

Southern pickle “fried” chicken.  <– I am so proud of this one; check the recipe sidebar!

DSC06002

I served mine on a toasted, open-faced sandwich with a bit of mayo.

Last night we had fabulous kale salads.

DSC06016

I massaged a bunch of kale with Sepo sauce in the morning and then tossed it with roasted broccoli, cubed avocado, and roasted coconut chips when it was time for dinner.

DSC06019

We were supposed to have chicken on top of our salads but I accidentally left the remaining tenders sitting out on the counter overnight so instead I had a grilled cheese sandwich while I wrote this post.

fancy nails

So my jazzy nail polish?  Actually nail wraps from Jamberry.

DSC05970

One of the girls I used to cocktail waitress with is a Jamberry consultant (her sales page is what I linked above) and she sent me a sample kit so I could try them out.  I am pretty amazed by how easy they are to put on; really not tricky or time-consuming at all, maybe almost as easy as slopping painting on polish.  Plus they are very cute!  I will definitely buy some to try again.

P.S. Thanks to Way Back Machine, I was able to find my old employee profile (click to enlarge) –
