Five things from the weekend!

{1} Iced coffee and a mocha chip perfect bar.  <– I am seriously mad at myself that it took me so long to discover how fantastic these bars are!

{2} Plain Greek yogurt with caramel sauce and candied walnuts.

{3} Leftover buffalo chicken pasta casserole, smothered in zhoug sauce.

{4} Whole Foods pizza – bbq chicken and Greek pesto.

{5} Trader Joe’s sunflower seed butter cups are darn good.  I typically don’t like any kind of cups except for Justin’s but I would buy these again.

Dinners this week were all about the pastabilities!  <– I’m done now, I swear

Homemade shrimp Pad Thai.

Buffalo chicken baked pasta.  With ground chicken sauteed with buffalo sauce / riced cauliflower / celery and yellow onion / and sweet red cheddar, smoked cheddar, and blue stilton!

Pasta pie.  A mix of TJ’s squid ink spaghetti and zucchini noodles baked with parsley, triple cream brie, and eggs, plus some panko on top.

Snack attack.  The Chobani Gimmies line is still rocking my face off.

img_3297Do I have enough liquids within reach to get me through dinner prep?  Sadly I found the milk stout to be too sweet for my tastes, but the can was just adorable.

Double Bacon Cheese Beyond Burgers

My trip home last weekend was perfect and we survived “Winter Storm Gia” this weekend… 2019 is looking like my year.

Highlights from week 2 include…

Iced coffee with black walnut extract and sweet cream creamer.

Who knew that Perfect Bars were so freaking delicious?!  This peanut butter chocolate chip one was basically cookie dough.

Stonyfield chocolate yogurt pouch (7/10), a Kiku apple (8/10), and a chocolate peanut butter filled Clif bar (9.5/10).

I brought these yummy coconut candies back from St. Thomas.

Shiner S’more is officially my new favorite beer.

Guzzled while assembling everything but the kitchen sink cookies with caramel, kettle chips, toffee bits, caramel chips, and chocolate chips.

This quickie packaged foods dinner was sooo good.  Chicken and cheese pupusas + bbq chicken chips + roasted broccoli + Trader Joe’s Zhoug sauce.

I have an unhealthy obsession with the “Asian” section of Wegman’s hot bar.

We made insanely, over-the-top, decadent double cheese burgers with Beyond Burger patties.

Two patties on a brioche bun with mayo, turkey bacon, and smoked cheddar slices.  Plus kettle chips and veggies from the Whole Foods’ hot bar – curry caulilini and roasted rainbow carrots, mushrooms, and root vegetables.

img_3144Then later in the week we did a similar thing with Boca Chick’n patties.

We made killer sheet pan hash browns.  Potato, sweet potato, purple sweet potato, olive oil, smoked paprika, green onion, turkey bacon, and red, yellow, and orange bell pepper.

Christmas Lights And Eggnog

Adam had to go to Baltimore for a conference this weekend and I tagged along to hang out with family that lives in Maryland.  It was a fantastic weekend.  Five fun highlights include…

(1) A new bar, stuffed with chocolate almond butter.

(3) Eggnog iced coffee and an eggnog cream stuffed doughnut from Sugar Shack.

(5) Baltimore’s Christmas Street, which is basically what the inside of my head looks like all December.  It was totally magical.

Stuffed With Joy

Peppermint and egg nog > nonholiday flavors.  But even the nonseasonal bites were tasty this week.  Highlights include…

Coffee = Coffee Mate sweet cream cold brew.

The best snacks of the week came from our Snack Crate.  Particularly these chewy items that were all a bit milky in a delightful way.

Chicken fajitas stuffed peppers.  A blend of shredded chicken, sauteed onion, fajita seasoning, cream cheese, cheddar cheese, and cojita cheese, baked inside green bell peppers.

Homemade buffalo chicken macaroni and cheese.  Plus simple side salads, dressed with evoo, honey, lavender salt, and garlic and herb cashews.

Early Thanksgiving

Early post because my extended family is coming into town for Thanksgiving and I am taking a three-day weekend to spend time with my parents!  I’m working the holiday (today) and then I am free until Monday.  Early Thanksgiving because I already managed to cram five holiday meal flavors into a short week of eating.  <– good thing too, I spent yesterday evening baking my contributions for today’s meal and I did so much taste-testing that I may actually still be full this afternoon!

Eggnog (1) in my coffee.  I’ve moved on from the soy nog, I just wasn’t a fan this year.

Pie (2) in my breakfast bar.  Betty Lou’s cherry.  I know cherry isn’t strictly a Thanksgiving flavor but I’m still counting it.

Stuffing (3) with roasted brussel sprouts (4).  I actually made something of a stuffing-dressing/strata hybrid, with several eggs stirred into my stock.  Plus roasted celery and onion, hunks of raisin pecan sourdough, fresh sage and parsley, and turkey breakfast sausage.

With a local cranberry (5) gose and maple brown ale for some thematic booze.

Soup’s Up

There was no post last weekend because I worked on Sunday and it totally knocked me out.  It was a busy day and I was basically still recovering most of this week, which is why there’s not much substance to this post either.  Hopefully I am well-rested now because we have some really fun plans for this weekend!
