This dip is everything you want store bought sour cream and onion dip to be. Cheesy and creamy with just enough bite. It practically screams for ruffled potato chips.
Yields: approx 2 cups of dip; Total Time: 10 minutes (plus additional time to caramelize onions)
- 1 cup caramelized onions (I recommend using this method)
- 2 Tbsp chopped chives
- 1/2 tsp salt
- 1 cup low-fat sour cream
- 3/4 cup shredded Parmesan cheese
Fold all ingredients together in a large bowl until well-combined. Reserve a few chives for sprinkling on top if you wish.
