This salad is quick and easy and similar to cole slaw. I recommend shredding your carrots by hand because they’ll be a little softer that way. If your family likes things sweeter use vanilla yogurt instead of plan.
Yields: 4 side-dish servings, Prep Time: 20 minutes
- 2 cups shredded carrots
- 6 oz plain non-fat yogurt
- 1/4 cup walnuts, roughly chopped
- 1/2 cup raisins
- 1/4 tsp ground nutmeg
- Place all ingredients in a large bowl and stir to combine.
- Can be served right away but is best when prepared ahead of time and kept covered in the fridge overnight.
