Carrot Salad

This salad is quick and easy and similar to cole slaw.  I recommend shredding your carrots by hand because they’ll be a little softer that way.  If your family likes things sweeter use vanilla yogurt instead of plan.

Yields: 4 side-dish servings, Prep Time: 20 minutes

  • 2 cups shredded carrots
  • 6 oz plain non-fat yogurt
  • 1/4 cup walnuts, roughly chopped
  • 1/2 cup raisins
  • 1/4 tsp ground nutmeg
  1. Place all ingredients in a large bowl and stir to combine.
  2. Can be served right away but is best when prepared ahead of time and kept covered in the fridge overnight.
