Bananas Foster is one of my favorite desserts; banana, with sweet, and rum, is just divine! But it’s not a common dish to find on menus and making it at home seems so complicated. These bars are not complicated, but they are wonderful.
Yield: 12 servings; Prep Time: 30 minutes; Cook Time: 35 minutes
bars, wet
- 1 cup mashed ripe bananas (2 medium bananas should yield 1 cup)
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/4 cup canola oil
- 1/4 cup plain, unsweetened almond milk
- 3 tsp good dark rum (I recommend Cruzan Dark)

- 1 and 1/4 cup all-purpose flour
- 1/4 tsp baking powder
- 1/4 tsp salt
for topping
- 4 Tbsp Earth Balance Buttery Spread (or other vegan butter substitute)
- 1/4 cup all-purpose flour
- 1/2 cup brown sugar
instructions
- Preheat oven to 350 degrees Farenheit.
- In a large bowl, stir together the wet ingredients until well combined.
- Fold dry ingredients into wet. Set aside.
- In medium bowl, cut together topping ingredients using two knives. Ideally you will achieve a homogenous mixture of “pebbles,” but it’s ok if some of your chunks are a little larger.
- Pour batter into a greased 8×8 inch baking dish.
- Spoon topping evenly over the top.
- Bake 33-35 minutes.
- Allow to cool completely before cutting into squares.
