Weekly Wrap-Up; Snack Monster

O. M. G.  I was so flipping hungry all week, it was annoying.  I was basically starving. <– if you haven’t seen CK Louis’ SNL intro monologue yet, go watch it immediately.

Stream of consciousness style, here is a sampling of some of this week’s insane snack consumption…

I’ve flirted with loving different brands bars off and on, but throughout the years KIND products have remained some of my very favorites, so I was thrilled to try some of their new products.  The two newest bar flavors are ridiculous good.  They are all low in sugar – 5 grams of sugar or less and they don’t use artificial sweeteners – and are a good source of fiber and protein.  Adam and I were both impressed by the Caramel Almond & Sea Salt.

And Dark Chocolate Mocha Almond knocked my socks off.  New all-time favorite!  This is what I always wish mocha would taste like.

Their Grain Clusters, basically granola, are a unique blend of gluten-free oats, millet, quinoa, amaranth and buckwheat; each 50g serving provides more than one full serving of whole grains.  The Fruit and Nut Clusters made great yogurt bowls for lunches this week.

With blackberry lime Greek yogurt and blueberries plus a sour sop coconut water on the side.

On Tuesday I did a salad from the cafeteria.  Topped with pickled vegetables and a big scoop of chicken salad.

On Wednesday Adam had the day off so we met up for a lunch date!

Our meals cost only $10 each for huge plates of noodles and an appetizer.

And on Friday I packed Fage with passion fruit and clementine, nectarines, and TJ’s freeze-dried apples.

The apples were insanely good and I want more immediately.  I planned on supplementing my smaller lunch with food from the cafeteria but it was a coworker’s last day so I had cake instead.

In spite of my copious snacking, I was too hungry to properly deal with dinner during the first half of the week.

My Bare Burger turkey burger – with smoked mozzarella, fried onions, all of the pickles, lettuce, tomato, mayo, and ketchup – was amazing and I ended up ordering one two days in a row!

When I finally did get around to making my own dinners like an adult, I had an assist from Pirate’s Booty.

They just introduced a line of macaroni and cheese and they sent me some samples to try out.  The price, flavor, and texture were very comparable to other boxed mac and cheese options, but Pirate’s Booty uses organic pasta and contains no artificial colors or flavors.

We ended up with two very fancy feeling semi-homemade dinners.

Night one, I stirred roasted mini heirloom tomatoes in to the mild cheddar macaroni.

On top of spinach salads – baby spinach topped with chopped pecans, crumbled blue cheese, 1 tsp each honey and evoo, and a sprinkle of truffle salt.

Night two was another side-by-side bowl of greens and ‘cheese.

My veggie side was a simplified take on Jenna’s baked beans.

I just baked chopped kale with a can of beans, cup of whiskey maple bbq sauce, a scoop of Bone Suckin’ Mustard, and a ton of chopped garlic.

My pasta was aged white cheddar shells with TJ’s frozen mushroom medley and some sweet cheddar.

Delicious!  I plan on buying both the shells and the mushrooms this weekend so I can make this meal again.

Weekend Wrap-Up; Sunday Smorgasburg In DUMBO

Another wonderful weekend!  Amazingly, the husband and I are still not sick of each other, so when he has a weekend day off it is better than fricking Christmas.  He worked Saturday while I slept until noon and cleaned and grocery shopped and then Sunday was family fun day.

We’ll start with a snack review.  Polar’s new Georgia Peach Seltzer is delicious.

Very juicy, though the flavor almost reminded me of bananas.

This Trader Joe’s microwave popcorn is also nice.

My favorite thing is the packaging, honestly.

I hate how ridiculously convoluted microwave popcorn nutrition labels are but this one was crystal clear.

And the birthday cake stuffed cookies are not good.

Of course I ate two more servings before I came to that conclusion… for research.

The cheap fresh blueberries from Trader Joe’s are great now.  No more mushy berries.

I suck at including pictures, but I actually am (relatively) good at eating my vegetables.  Go ahead and picture several servings of olive hummus with raw veggies this weekend and a big salad from the cafeteria for Friday’s lunch.  Much better.

Friday night started with green juice.  A blend of kale, spinach, cucumber, parsley, and apple.

We needed it to offset the next round of drinks.

We spent a glorious evening on the patio at Bierkraft.  A girlfriend met up with us after work, and we befriended the couple who shared our table, and we all laughed and shared restaurant recommendations for hours.

Highlights from the night were 21st Amendment Brewery’s Hell or High Watermelon.

And this Reindeer’s Revolt that stole my heart.  It was malty and sweet with just a bit of spice.  Though I’m not sure why Bierkraft had two freezer’s worth of Christmas beers in the first week of June.

We also had amazing frozen margaritas, ill-advised rounds of shots, and an awkward dinner at Calexico.  I drunkenly ordered the only thing on the menu that I would never eat and sat there like a weirdo while the waitress boxed up the entire dish minus two bites at the end of the meal.  Whoops.

Saturday’s dinner was a winner; and yes, it bums me out that that rhymed.

It was just a really yummy, summery combination of foods.  Leftover veggies, cruciferous crunch with pecans and blueberries.

I am so flipping glad that it is corn on the cob season again.  Learning how easy it is to cook in the oven was a great discovery last summer.

On Sunday we took the dog into Brooklyn for Sunday’s Smorgasburg.

I ate a fantastic lemonade with watermelon and mint.  Served with a bubble tea straw for the big, juicy chunks of melon.

And a really terrible taco.  The edamame and corn were inexplicably neither cooked nor seasoned.

Thankfully Adam made much better choices – miso chicken taco, ginger bourbon pecan pie, rhubarb Columbian soda – and was willing to share.

We took the dog exploring, then made our way to Luke’s Lobster.

We shared a combo and were both swooning.  This was the best lobster roll I have ever eaten, including one I had at a shack on the harbor in Boston.

They serve it fairly plain, just with lemon butter and secret spices, and the freshness of the lobster meat shines through.  We plan on taking my parents for one the minute their airplane lands later this month.

Weekly Wrap-Up; Busy Busy

Whew, has it been a busy week! I can’t even tell y’all, work has been wiping me out. <– Hence the 1.5 day late blog post.

Wednesday night I got home around 6:00, then sat at my desk with my boots and coat on until 8:00 when Adam got home and I finally had to get up! Then Thursday I managed to undress, and even get halfway into my gym clothes, before crawling under the covers and calling it a night.

For the most part, I’ve stopped blogging coffee that isn’t extra exciting in some way, but you can assume I’m still obsessed and drink a cup whenever I can get my hands on it.

Kiss Me Organics offered me a sample of their Organic Matcha powder. Adam is obsessed so I readily accepted.

I haven’t tried baking with it yet, but it blends perfectly into smoothies and lattes – both almond milk for me and skim cow’s for Adam. The flavor is delicious, not at all acrid like green tea can sometimes be. My only complaint is that the bag doesn’t list serving instructions or nutritional information.

Weekly Wrap-Up; Is Winter Over Yet?

Ugggh, this week.  Let’s not even front, last week was ridiculous.  Nary a vegetable to be found.  There will be no “healthy living blogging” in this post, in fact, there will barely be blogging of any sort because I couldn’t be bothered to snap pictures of 60% of my week.

The insane snow and brutal cold just killed my will to live{a healthy lifestyle}.  We’ve got another week of icy cold coming up, but at least my mood seems to finally be on the upswing!

Here is some of what I ate over the past seven days, though like I said, a lot of it -mostly cheese – missed the camera…

The only thing that saved me at all was that Noosa sent me a very generous shipment of their delicious yogurts.

Here’s what I had to say: YUM!  I had tried the honey Noosa in the past (and loved it) but the fruit on the bottom flavors have been blowing my socks off.  They are just sooooo creamy and delicious.  I’m not going to go through them one by one, because I have loved them all.  My only complaints are that Noosa doesn’t make any low-fat varieties and yogurt is packaged in a very large serving, which means that this stuff ends up being a pretty big calorie commitment.  However, it is a big serving for the calories and the yogurt is quite filling.  I wouldn’t make this my only yogurt choice but I will definitely be buying more with my own money.

Here’s what Adam had to say:  “OMG, YUM!!!  Can I have more?!”  It is definitely worth noting that the husband says Noosa is the best yogurt he’s ever had.  He is 100% obsessed with it and has been plowing through the flavors at lightening speed.

I had been looking forward to making this casserole – a mix of roasted broccoli, celery, sautéed mushrooms, cream of mushroom soup, crumbled tempeh, brown rice, and light mozzarella – for more than a week, but the end result was so bland that I am not even going to share the recipe with you.

Weekly Wrap-Up; Lots Of Leftovers

You saw most of this week’s eats yesterday, so this post is just to fill in the gaps.  What you’re not seeing – the coffee.  I was terrible about bedtime this week and the result was constant coffee consumption.  This work week ended up being particularly busy, so it was serendipitous that I was extra-caffeinated.

DSC07303It was good, but I was expecting the meat to be pulled and smothered and I probably would have ordered differently if I’d known it wasn’t.  At least the serving was giant; Adam ate my 2nd half for lunch the next day.

We were mostly there for dessert anyway.  I read a review in the Times that said Biscuits and BBQ had some of the best key lime pie the reviewer had ever tasted.

DSC07305Yep.  Key lime pie is my favorite dessert and this was definitely one of the best slices I’ve had.  The only way it could have been better is if the traditional crust was a graham cracker crust – the way my mom makes it – because I like my extra-sweet with a side of extra-sweet!

Weekend Wrap-Up; Snowmageddon

Hey there!  I hope all of my East Coast (US) readers are keeping warm!  Long Island didn’t get hit as badly with snow as predicted, but getting to and from work on Friday was definitely pretty insane.

Here’s some of what I ate when I wasn’t shivering…

DSC07153DSC07150and a hazelnut iced coffee – with sugar, skim milk, and a dash of vanilla creamer – from Bagel Boss {I can’t really speak to their bagels but I’m obsessed with their iced coffee}.

DSC07170Aaaaaand a different iced latte from Starbucks that I didn’t photograph because it was getting ridiculous.  Yes, I recently became extra in love with coffee.  No, I won’t switch from iced no matter how cold it gets.

A delicious dinner on Friday night.

DSC07134I made “miso stoup” for the first time and was thrilled with the results.  Not totally traditional, but with ingredients we had on hand.  And extra “chunky” because it was our whole meal and not just a side.

DSC07130Miso Soup, Basically  serves 2 – 3

  • 3 cups chicken broth  (you could totally use veggie broth if you want to keep things vegetarian)
  • 3 heaping Tbsp miso paste
  • 2. 5 oz firm tofu, cubed
  • 1/2 cup sliced green onions
  • 1 pint sliced shiitake mushrooms
  • .6 oz roasted seaweed, crumbled
  1. Bring broth to a simmer in a medium pot over medium-high heat.
  2. Add miso to broth and whisk until no lumps remain.
  3. Add remaining ingredients to pan and simmer an additional 3 – 5 minutes.

Not so delicious fondue for dinner on Saturday night.

DSC07161DSC07164Both were fairly meh.  The bread cubes were terrible and we only got two each of the other dippers so if you liked something you couldn’t even try it again because then the other person didn’t get any.  We cashed in a Groupon to Simply Fondue and even with the $ off it was still pretty darn expensive.  Boo.

Yesterday we did a late, great brunch.  My guava mimosa was quite tasty.

DSC07173We were visiting friends in Williamsburg and they took us to Simple.  We all had wonderful meals.

DSC07177I got the Vegetable Burger – Sautéed spinach, mushroom, zucchini, pepper, onion, garlic.  It was more of a pile of veggies than a burger, particularly once I ordered it sans bun.  It was also delicious, especially when topped with Danish blue cheese.  And the fries on the side were nice and crispy!

Weekly Wrap-Up; I Survived!

I survived my first week of full-time work!  Well, almost; I’ve still got to get through today.  And I am very excited to hit the couch as soon as I get home.  TV, how I’ve missed you!  {Random Note – “Mom” on CBS?  So flipping good.  I laugh out loud over and over again.  Also “Brooklyn Nine-Nine” randomly got really good too.  It seemed like a train wreck at first but they’ve pulled it together; it’s another llol situation.}

I do plan on sharing a bit more about work as time goes on.  And I’ll definitely post a picture of my office (I have an office!) once I get it all set-up.  I have some work outfits at the start of this post though, and I’ll try to keep that going.

Last week’s eats were fairly boring, but I’m proud of how (relatively) healthy I managed to keep things.  And I even captured 95% of what went in my mouth on film.  What you don’t see is the snacking I did before dinner every night while I packed my lunch.  Also there was coffee.  So, so much coffee.

DSC06278My sandwich was a little burnt, but oh-so-good.  I mashed together a can of Smoked Trout with Miracle Whip and smoked paprika and then put it between two pieces of gingerbread swirl bread with a slice of light havarti and cooked the whole thing in a pan with a little butter.

Fun night.  Yesterday I met up with a friend who works in Park Slope for dinner.  I had some time to kill before she got off so I walked a ton (my feet are still killing me!) and got the best cup of frozen yogurt.

Then we went to Song for Thai food.

DSC06315My “Spicy Noodles” weren’t spicy at all, but they were nice and chewy and I came home with leftovers for lunch.  It was great to see a friend on a “school night.”

Weekend Wrap-Up; A Fabulous Date

This weekend was downright fabulous!  I’m still not feeling quite 100% from my cold – you’ll notice that fruit and veggie consumption was still abysmal – but I felt well enough to have lots of fun.  Having Adam home on break has been indescribably wonderful.  And tomorrow my parents come to visit (and will be joined later in the week by two sets of aunts and uncles) for Thanksgiving and Hanukkah!

I had not heard of Maison Camus before they reached out to me, but apparently they are an independent, family owned Cognac house.  Their coffee is grown sustainably – no herbicides, fungicides, or pesticides, and they stick to a strict growing process to minimize environmental impact and preserve biodiversity.  The beans are grown at high altitudes (primarily in Costa Rica and Guatemala) and they use small-scale farmers who they pay fair wages.

I haven’t opened the French Roast yet but we loved the Signature Blend.  My first tasting thought was “smooth,” and it was fun to see that match the company’s description (the French Roast is described as bold and I’m quite looking forward to it).  I did put a bit of SCM in my coffee but I took a few sips black and was thrilled with the lack of bitterness.  I drank two big mugs.  Adam, who drinks at least 3 cups of coffee a day and is a much more discerning drinker than I, was very impressed as well.

On Saturday I took Adam on a date that ended up being one of our best days ever.  We decided the last time we had such a good time was on our last trip to Toronto.  We drove up through Long Island to Port Jefferson.

DSC05939DSC05943DSC05945My girlfriend (who lives in Buffalo but grew up in LI) used to babysit for the owners and recommended it to us.  We were grateful for the intel because we had an amazing meal.

DSC05951The Smuttynose was his favorite and the porter was mine, which was funny because we both didn’t care for the others selection.  The frambois was enjoyed by all though and was an excellent palate cleaner.

DSC05964The sampling is a plate of seven assorted cheeses that changes each day.  We loved our selection.  And we came home with leftovers so the fun could continue the next day.  The fun continued that day as well; we finished out our date with a trip to “Thor” and popcorn for dinner.

On Sunday we had leftovers to look forward to.

DSC05993We chopped up the last of our cheese plate and put it on top of crockpot cranberry chicken (scroll down to dinner) and jasmine rice.

I only have one meal in this category!  The other days we did big, late lunches and just snacked (popcorn and bananas foster!) for dinner.  Thankfully this one meal was a winner, though not very photogenic.

DSC05913Crockpot Cranberry Chicken = put 1 lb of boneless, skinless chicken breast into the crockpot and top with 14 oz fresh cranberries and bbq sauce (we used Whole Food’s Korean style) to cover, then cook 4 hours on “high.”

DSC05917So simple, but so good.  Adam raved about this meal and went back for both 2nds and 3rds.  The green on the bottom was frozen spinach that I cooked with evoo, lemon juice, craisins, and smoked almonds.

The gingerbread cookies from Cheryl’s (thanks again, Barb!) are perfectly soft and spicy.

DSC05907I’ve already bought a whole slew of gingerbread flavored goodies and I’m excited to announce that I’ve decided tomorrow is the perfect time to start opening them.

DSC05931I got this with a 50% off coupon and I was glad because I didn’t love it this year.  Somehow it wasn’t sweet at all, which was very strange with the eggnog flavor.

We had a lot of fun setting up a bourbon tasting.

DSC06007DSC06009Bourbon isn’t my favorite kind of whiskey, and on first taste I preferred Rave Review to the competitor.  I rarely give a bad review (I’m excitable and pretty easy please), but I have to say that after heating I hated it!  The flavor was almost savory?! which we think was related to the blend of spices.  That said, I could see how it could be good in a savory dish, and I do plan on cooking with it.

On the positive side, we made Bananas Foster with the Rum and I’m giving that two thumbs up.

DSC06012I basically followed Alton Brown’s recipe, except I skipped the banana liquor and used cinnamon instead of all spice.

DSC06016Served over vanilla ice cream, this was wonderful.  I’m pretty sure we’ll be making another batch next weekend.

Finally, have you seen the new limited edition winter flavors from Polar?

DSC05909Toasted coconut was good but champagne strawberry is out of this world.  The flavor is great and the scent is just ridiculous.  I will also be searching high and low for fudge cheesecake, obviously.
