Highlights from a yummy week…

This yogurt bowl was good in theory but unfortunately it was so wet. Plain skyr with blueberries, golden kiwi, and passionfruit. Scooping kiwis out of their skin (rather than trying to peel and cut them) has been a game changer for me; I eat them all the time now.

Hummus and crackers. Both good but not my favorites.

These Patagonia sourdough crackers are amazing though.

Trader Joe’s freeze-dried watermelon candies. Our bag seemed a little stale but the flavor is great.

Lindt Dubai style chocolate bar. 9/10 but nothing is as good as the original Nuts for Nuts Dubai bar.

The best candy is these sour slices from Whole Foods. The calamansi lime ones are ridiculous.

Dinner out at Varli Indian Street Kitchen. Mango lassi.

I got chili paneer which came with tons of onions and peppers and Adam had excellent butter chicken.

Greek baked turkey meatballs. Ground turkey with tabbouleh, feta, salt and pepper, urfa chili, onion powder, garlic powder, and egg. Served with fresh tomatoes and fantastic snap peas (sauteed with feta, piquante peppers, walnuts, honey, rice vinegar, and gochugaru.

In the style of orange chicken, Tangerine Apricot Yuzu Tofu. Firm tofu (I froze/thawed mine which gives it the best texture) tossed with gochugaru, white pepper, and cornstarch / baked with broccoli, red bell pepper, and green onions / tossed with sauce – cornstarch slurry, fresh tangerine juice, apricot jelly, yuzu ponzu, dark soy sauce, chili oil, rice vinegar, honey, and garlic whisked over medium heat / topped with sesame seeds. We added cashews afterwards too! Served on brown rice.

Crispy rice spicy California roll bowls. We love this meal. This iteration was imitation crab, cucumber, avocado, and green onion / tossed with yuzu ponzu and Kewpie / on top of crispy rice – leftover rice tossed with dark soy sauce, oyster sauce, rice vinegar, and chili oil and baked until crispy / topped with furikake.

ApPEELing

Food themes from this week were – fun fruits / limited edition snacks / and tortilla dinners (we used Mission Carb Balance flour tortillas and were big fans). Highlights…

Skyr bowl with blueberries and mamey.

In addition to my ongoing blueberry obsession I was also into golden kiwis this week. I’ve been scooping them out of their skins with a grapefruit spoon!

The Marshmallow Peanut Road Barebells flavor was good but not mind-blowing like I was expecting. P.S. I also tried a David bar this week and now I’m in love with those.

This El Guapo strawberry syrup was not very good in iced coffee but quite nice in an iced Diet Coke.

Liquid Death Cereal Criminal sparkling water really does taste like Fruity Pebbles. P.S. I also found the A&W zero sugar ice cream sundae root beer!!

Adam knocked it out of the park with my birthday gift this year by hunting down the newly released Ben & Jerry’s – Fudgy Flan.

The newest peelable candy flavors – kiwi and lemon – were a 20/10. The lemon ones easily make my top three all time favorite candies; they are so creamy.

Big salads – romaine, house sauce dressing (mayo, honey, yellow mustard, Dijon, lemon juice, and bbq sauce), baked chicken (marinated with yogurt, pickle brine, and pickled jalapeno brine), cucumber, Bahama Bomb tomatoes, pickles, smoked almonds.

Breakfast burritos – eggs soft-scrambled with extra-sharp cheddar, chopped green chilis, roasted green onions, and potato tots. Plus yummy eggplant – roasted and then sauteed with gochujang, peanut butter, white miso, sesame oil, honey, and rice vinegar.

Buffalo chicken quesadillas – extra-sharp cheddar, baked chicken nuggets, and a mix of roasted cauliflower rice with Duke’s mayo and Frank’s hot sauce. Plus roasted purple cauliflower.

Nachos – baked tortilla chips, extra-sharp cheddar, ground turkey (sauteed with taco seasoning, green chilis, and cauliflower rice), and roasted poblano pepper, orange and yellow bell pepper, and green onion.

B-A-N-A-N-A-S

My first week in my new decade was a good one! Here were some food highlights…

Yogurt bowl of the week – plain skry, Trader Joe’s chocolate coffee granola, and tons of blueberries.

My snack theme was bananas. Everything but the bread! If you’re feeling inspired, Hummingbird High makes our go to recipe. Banana bread trail mix = banana chips, cinnamon Life cereal, walnuts, and chocolate chips.

Ben & Jerry’s Chunky Monkey ice cream with fresh banana, leftover birthday dirt, peanut butter, and chocolate shell.

Adam liked the “Dirty Banana” cocktail on our cruise ship so much he ordered it twice in a row! Our version was better. Frozen bananas blended with chocolate ice cream, sweetened condensed milk, Kahlua, and dark rum.

Turkey larb inspired baked meatballs. The balls were ground turkey, panade, egg, toasted rice powder, white pepper, fish sauce, garlic, crunchy chilis, gochugaru, and brown sugar. Served with sauteed cabbage with red onion, lime, and seasoned cashews.

A perfect mix of leftovers. Cabbage / Chuko Ramen‘s vegetarian Mapo Tofu (fried tofu and mixed vegetables tossed in a Szechuan chili sauce with mustards greens, scallions and rice) / Rolo’s crispy potatoes.

A loose take on these tomato beans. We used cannellini beans, skipped the basil and nutritional yeast, added Juanita Piquante peppers, and measured nothing. Served with roasted broccoli/cauliflower and sourdough bread from Radio Bakery.

Cold peanut noodles. Buckwheat and brown rice soba / quick-pickled cucumbers / roasted zucchini / sauce – peanut butter, soy sauce, dark soy sauce, sesame oil, chili oil, rice vinegar, lime juice, ginger, and white sugar / sesame seeds. I topped my bowl with tons of Sriracha and it was delicious.

Younger Than Dirt

It was my birthday this week so I made some of my favorite things for dinners – nachos and weird salads!

Birthday nachos. Chili crisp Kettle chips <– these were fantastic, perfectly seasoned / shredded sharp cheddar and gouda cheese / crispy tofu (shredded super-firm tofu baked with gochugaru). I planned to add chili crisp on top but these tasted so good I didn’t want to mess with them! Plus lovely green beans (steamed and then sauteed with evoo, yellow mustard, honey, rice vinegar, and togarashi).

We had fancy dirt cups for dessert! Chocolate pudding / dirt = crushed Oreos baked with butter, sugar, sprinkles, and edible glitter / Haribo rainbow gummy worms.

And we champagne-toasted a la Tom Hanks. I used rosé champagne and added rose syrup to mine. These were actually really good!

Bacon egg and cheese on a bagel salad. Hard-boiled eggs with turkey bacon, sharp cheddar, green onion, and homemade bagel croutons (poppy seed bagel baked with evoo, sesame seeds, salt, onion powder, garlic powder, and smoked paprika) dressed in skyr, Kewpie, Dijon, pickled jalapeno juice, salt, and white pepper. Plus roasted zucchini.

Caesar chicken salad. Baked chicken with Whisps parmesan crisps and homemade Caesar dressing (food processed Greek yogurt, mayo, Dijon, evoo, lemon juice, anchovies, garlic, capers, parmesan, and black pepper). Plus roasted purple and yellow cauliflower.

Loaded tuna salad. Canned tuna with green onion, poblano pepper, pickles, chili crisp chips, mayo, skyr, Dijon, and pickled jalapeno juice.

The only other things worth mentioning from the week were two really good smoothies. Blueberry cheesecake – frozen blueberries, vanilla protein powder, malted milk powder, butter extract, cinnamon, cottage cheese, and water.

Berry chocolate – frozen cherries and strawberries, chocolate protein powder, Dutch processed cocoa powder, vanilla extract, and water.

Yummy things from the week…

These Smash Bites are hard to find but they are a great snack. This flavor – peanut butter and concord grape jam) is my favorite.

Plain skyr with blueberries, blackberries, and homemade meyer lemon curd.

Homemade amaretto sours! I used meyer lemons, rose syrup, and added vodka.

Homemade cinnamon brownies with crumb cake topping. I left the eggs out of the batter like an idiot but they were still quite good.

We got For Five vodka pasta over the weekend and it was both surprisingly good and surprisingly good reheated.

Congee (brown rice cooked slowly with chicken broth, ginger, and white pepper) topped with a take on Thai basil turkey (ground turkey sauteed with dark soy sauce, soy sauce, oyster sauce, sugar, onion, and basil) with a fried egg and some crunchy chili flakes. Plus roasted purple cauliflower.

Sesame herb salads. Raw cabbage, boy choy, green onions, red bell pepper, poblano pepper, Fresno chili, and cilantro / dressed with sesame oil, lime juice, yuzu ponzu, rice vinegar, brown sugar, and Sriracha / with baked chicken, Whole Food’s sesame seaweed cashews, and sesame seeds.

Peanut butter red curry noodles. Brown rice Pad Thai noodles / baked extra-firm tofu / sauteed cabbage, bok choy, spinach, green onion, and cilantro with white pepper and rice vinegar / sauce – peanut butter, red curry paste, lime juice, fish sauce, brown sugar, and water.

Summer Salad

Things from the week…

It is my birthday month so I, of course, opened my stash of birthday cake coffee concentrates.

Trader Joe’s sparkling matcha lemonade. Not too sweet but the flavor was weak.

Fruity candies. The freeze-dried orange slices were okay (good texture but the flavor was off) but we loved the strawberry gummy assortment from Trader Joe’s.

We are head over heels for protein peanut butter cups this week. 2 tablespoons of peanut butter mixed with 1 Tbsp malted milk powder, 1 Tbsp vanilla protein powder (for texture), 1 Tbsp total maple and/or honey, and a pinch of salt; topped with chocolate shell.

Summer salad! Heirloom tomatoes with plum, peach, nectarine, pan-fried paneer, and crispy roasted chickpeas, topped with salt, chili oil, honey, and balsamic vinegar.

We paired our mostly fruit salad with a side of roasted romanesco, which was delicious.

This meal was a watery fail and I am blogging it to remind myself not to put cold silken tofu on top of dumplings again. Silken tofu / pan-fried Trader Joe’s Thai shrimp gyoza / celery and green onion sauteed with garlic, Sichuan pepper, and white pepper / homemade dumpling sauce – rice vinegar, soy sauce, dark soy sauce, rice wine, sesame oil, chili oil, sugar, sesame seeds, green onion, and chopped smoked almonds.

BBQ plates. Mashed potato salad (we overcooked our potatoes so we leaned into the mashed vibe and made them extra creamy) with celery and cornichon pickles, dressed with plain Skyr, Duke’s mayo, Dijon mustard, pickle brine, garlic powder, and smoked paprika. Turkey meatballs with panade, egg, ranch seasoning, bbq sauce, and shredded sharp cheddar. And roasted green beans.

I don’t know what to call this bowl but the combination worked! Roasted zucchini and orange sweet potato topped with pan-fried paneer and tempeh sauced with Dijon, rice vinegar, and apricot jam.

Spicy California Roll Bowls With Crispy Rice

I’m at work today but starting bright and early tomorrow — I am on vacation! I am eating a take-out burrito bowl while I type but here is some of what I ate before we ran out of groceries…

Smoothie – frozen banana, blueberries, and cherries, Greek yogurt, honey, water, matcha, and vanilla protein powder.

We tried a new to us clear protein drink and were fans; this was nice and thirst-quenching.

Trader Joe’s Crunchy Curls and Everything and the Elote dip are a snack dream team.

Obviously I bought this Dubai chocolate sundae gelato. The mix-ins were a little sparse but I topped it with extra pistachio butter and chocolate shell!!

Beans with beans. Crispy beans – baked cannellini beans with evoo, panko, corn starch, salt, urfa pepper, garlic powder, and onion powder / with spicy green beans – steamed and then sauteed with evoo and butter, chopped kimchi and piquante peppers, walnuts, salt, white pepper, and sugar.

Taco turkey bowls with brown rice / baked cabbage with evoo, salt, pepper, and ranch seasoning / taco and nacho Quest protein chips / ground turkey sauteed with Jamaican curry powder, smoked paprika, onion powder, and garlic powder / sharp cheddar / sauteed bell pepper and green onion with lemon / and I topped my bowl with Blind Betty hot sauce.

Spicy California roll bowls with crispy rice. Crispy rice – leftover rice baked until crispy with dark soy sauce, chili crisp, sugar, and sesame oil / salad – cucumber, avocado, green onion, and imitation crab with soy sauce, rice vinegar, and ponzu sauce / furikake.

Pickle Honey Mustard

It was an eclectic but tasty week. P.S. My best meal was at The Tyger catching up with out of town family (two sets of aunts and uncles!) – best bite was specifically the “Morning Glory,” stir-fried water spinach, with chili, garlic, and shrimp paste – but I took a long walk first and didn’t have my camera. Some highlights…

Smash Foods sunflower butter and strawberry jam bites. These are in my top-five favorite “bars.”

I always have to eat at least one yogurt bowl a week – plain Greek with blueberries, blackberries, and Heritage Flakes cereal.

I think every baked good is better mixed with plain Greek yogurt! This was a cookie dough chocolate cake (plus 99 Acres chocolate sunflower seed butter and blackberries).

Boba tea from Gong Cha. I did an iced black milk tea with black and white bobas <– the mix is definitely the way to go.

Turkey cheeseburger meatballs (ground turkey, salt, white pepper, panko bread crumbs, cream, ketchup, sesame seeds, chopped pickles, and sharp cheddar) with baked fries (tossed in smoked paprika and ranch seasoning) and the best snap peas (sauteed until almost charred with crumbly gouda, walnuts, and gochugaru).

Nachos! Whole Food’s honey mustard kettle chips with gruyere, gouda, chopped cornichon and sweet gherkin pickles, sauteed poblano pepper and green onion, and tofu cubes (marinated in pickle juice, baked, then sauteed with the best sauce – Trader Joe’s dill pickle mustard, gochujang, rice vinegar, honey, and a bit of water). Plus roasted broccoli.

Loaded tuna salad – canned tuna, chopped pickles and Trader Joe’s sweet and hot jalapenos, crunched honey mustard chips, pickle mustard, mayo, and Greek yogurt – with baked green beans.
