Weekend Highlights

Hello, Monday!  This is my last week of “break,” but I don’t even care because I had such a good weekend.  The past three days have been packed full of fun; we did so much on Saturday that Adam even said I wore him out!  Other than some short shifts at work, every moment has been exciting.

I only have time to share the highlights, but I will make this note – we ate like we had the wallets of our future and the metabolisms of our past!

I tried this dark chocolate and soft caramel Nunu bar (from the Yumvelope subscription my mom got me for Christmas) and fell in love.

I received this incredibly sweet and generous care package from Cascadian Farm.

I am too excited to have those Oats & Honey granola bars back in my pantry.

I took Adam to Brickhouse Tavern for bacon-studded deviled eggs,

and discovered that they sold my favorite beer.

We ventured out to Franks Food Truck at 1:30 in the morning.

Back On Winter Break

My title’s no joke – I am officially back on winter break until the 28th!  Since I started my rotation early I’m spending the rest of this portion of the semester catching up on the days of winter break that I missed.  I do have a placement with an outpatient RD on Thursday, but other than that the time is mine.  I’m not doing anything super exciting; in fact, I work every single day of the next two weeks!  I’m hoping to get back into the gym habit too.

My last day of senior practicum was bittersweet, I loved this experience so much more than I was expecting to.  I am going to post some more about the internship after I gather my thoughts, but for now I’ll stick to breakfast.

Breakfast.  A packet of Spiru-Tein Chocolate Peanut Butter Swirl Protein Powder shaken with 1.25 cups Silk Unsweetened Vanilla Almond Milk.

I didn’t really love the texture/flavor all that much, but at least this kept me full through rounds.  p.s. – this flavor has bee pollen in it so it won’t work for strict vegans

Lunch was packed with veggies.  I brought a container of roasted butternut squash and green beans,

and topped it with a thing of Sea’s Gift Sweet Seaweed Snack.

That combo was ridiculous good.  I actually drove to Wegman’s the minute I was done with the day to buy more of the sweet seaweed!

Can I brag for a second?  I brought the nutrition department a thing of my Triple Butterscotch Blondies to say thank you and everyone raved about them.  You know a group of dietitians doesn’t go for seconds on a dessert unless it’s good!

I couldn’t have a blondie – they are sooooo not vegan – but when I got home I did eat 1.5 servings of So Delicious Coconut Milk Cookie Dough Ice Cream.

The flavor of the ice cream is a little bit funky, but the cookie dough pieces are the best I’ve ever had (vegan or otherwise).

Since the college is closed for Presidents’ Day, my night class was cancelled.  This meant I could go out for celebratory drinks and dinner with friends.

I didn’t plan on drinking much, but I kept a Tea’s Tea Green Tea with Grape in my purse for rehydration purposes.

I was embarrassingly tipsy afterward.

My friend had a friend visiting from out-of-town so we had to shower her the wonder of Sun Restaurant for dinner.

I went with the Pad Kee Mao, ordered Thai spicy.  Thai-style fried wide rice noodles with hot and spicy sauce, mixed vegetable, and basil leaves.

There wasn’t egg listed in the description, but it was definitely present in the dish.  I’ve already cheated on the Vegan 20 Day more than once though, so it’s not like it was a big deal.

I ate a little more than half of my pasta, then brought the rest home for Adam.  I also brought him a whole order of the tea leaf salad that he loves to help bribe him into making me popcorn.

Last Friday Night

I spent Friday night getting a little drunk.  Mind you, not so drunk that I would actually want to listen to Katy Perry’s “Last Friday Night.”  We did watch some bad stand up comedy on Netflix though.  <– Tim Minchin, not as funny as this joke would lead you to believe.  (It’s so dirty, don’t click, Nana!)

Friday morning started with a Chocolate Dipped Coconut Luna Bar on the way to the hospital.

I had plans for a morning gym session but when I saw the weather report I decided to sleep in instead.  We got really lucky here, the snow was annoying but not anything dangerous.

I had a nice day at the hospital in spite of the weather.  I got to chart on several interesting patients and had a little more practice with doing pediatric TPN orders.  I love the nutrition support aspect of dietetics but children are really different from what I’ve done with adults.

Lunch was a simple salad.

So flipping good.  And it was a good thing I got in a healthy snack because my responsible food choices took a downhill turn during the rest of the evening.

Sips Lavender Lemondrop Sparkling Cocktails!  This was so fun, and quite delicious.  I described it to my coworker today as “Kate Spade’s Four Loco.”  I would definitely buy them again.

But maybe I’d eat dinner first next time.  My evening meal ended up being… A slice of bread with Smart Balance Light,

Saturday’s meals were a little healthier.  Still very tasty though.

I worked today, but only a half shift, so I had time to get lunch from Wegman’s hot bar.  Some tofu and veggies in mushroom dashi with two pieces of inari.

I did lots of Googling, and as far as I could tell mushroom dashi is just mushroom stock, so I’m still not sure what that yummy sauce was.

We made tofu for dinner too.

A bed of cabbage —a bag of “Asian Slaw” mix cooked with a bit of Earth Balance with caramelized onions tossed in towards the end— topped with walnuts —cooked in a skillet with salt and sugar— and tofu —super firm tofu cooked in the skillet we used for the onions, finished with a sauce of tamari, rice vinegar, sesame oil, Sriracha, honey, and orange juice.

I was glad I added the nuts at the last-minute to help break up the texture.  The flavors were spot on though.

Lobster, And Marrow, And Boba, Oh My!

The past three days were the best of 2013, and I have so much to say.  We ended every day so exhausted/satisfied/full and blogging just felt like an impossible feat.  But how can I not blog two of my favorite meals in Buffalo?  I may not get to say as much as I’d like, but at least this post will help put my memories all in one place.  If I had to state the theme of this post succinctly, it would be – I really, deeply, emphatically love good food.

This weekend we were lucky enough to have a visit from some of my Maryland family, my aunt and one cousin.  They are some of the best people I know and I loved getting to share and explore Buffalo with them.

On the way to the airport, I drank a Zico Chocolate Coconut Water,

When we got home I put out a little meze spread for lunch.

We took a wander down Elmwood to show the fam where I work and play, and stopped at Ashker’s for wonderfully velvety espresso.

We lucked out with the perfect weather – cold enough to scare away the crowds but warm enough that you could really take your time to appreciate Mother Nature.

Mother’s restaurant is 10 steps from our old apartment but we never made it a priority because we thought it was steak house.  The menu was mostly meat, but that didn’t keep me from having an absolutely fantastic meal.

For an appetizer we all split the gnocchi.

All of those components are great on their own but together they became something amazing.  Best gnocchi I’ve ever had; it was pillowy beyond my wildest dreams.

For my entrée: “sautéed red snapper fillet with gulf shrimp, mushrooms, artichokes, scallions, lemon butter sauce, and microgreen salad.

It also came with asparagus and perfectly roasted potatoes.

The dish was wonderful and the portion was gigantic (Adam actually ate the other half of my fish for dinner tonight!).  Certainly a meal worth going back for.

But the best bites I took were actually from the husband’s dish.

The black (squid ink) pasta I could live without, but the scallops – like the gnocchi – were the best I’ve ever had.  They were cooked to perfection, with a nice crust and creamy middle.  Adam must love me a whole lot to have given me as many bites as he did!

– . – . – I need to stop and do some foreshadowing here: the meal at Mother’s was not even the best meal of their visit!

Monday morning my aunt and I walked Webster to The Spot for some coffees.  The baristas gave me a gorgeous drink and were super sweet about the dog in my arms.

Back at home, I had a big bowl of Cascadian Farms Berry Cobbler Granola with fresh blackberries and homemade vanilla cashew milk.

While it clearly couldn’t compete with our dinners, this meal was pretty flipping good.  I’m thinking that the cashew milk may be worth the effort after all.

The weather had shifted back to winter by that point so we spent our afternoon walking around the mall.  My aunt bought me a couple of new work pieces at Old Navy – – can you believe I start school next week?!

You have to do self-serve froyo when you’re at the mall.  I did a small amount of plain tart and coconut yogurt, a medium amount of fresh fruit, and tons of popping boba.

My impetus for dragging everyone to Seabar was simple – “Bourdain’s Last Meal.”

***This post is far too long already for me to go into my food philosophy.  In short – yes, I ate marrow and yes, I still won’t eat read meatIf you would like me to post more about it just ask and I gladly will.

Trying marrow has been on my life list for years and it was like nothing I’ve ever tasted before.  I totally concur with its description as “the world’s best butter.”  We all shared the appetizer but I will totally cop to eating a lion’s share of the marrow.  Also, I spread marrow between two toasts and ate it like a small, ridiculously decadent sandwich.

And then I closed my eyes and swooned.

Actually, I spent most of the meal with my eyes closed tight, straining to help my taste buds make the most of every flavor.  I hate to knock my favorite place in Brooklyn off of the top, but this meal was the best I’ve ever eaten.

My family raved about their sushi – inventive combos composed of incredibly fresh fish – but my entrée was by far the best plate at the table.

None of us could get over the texture of the lobster and the noodles were out of this world.  Also, the pickled vegetables were nothing to frown at, but they were hard to focus on with poached lobster sitting at the table.  When I took my first bite of homemade noodle with egg yolk broken on top I was pretty sure I would die of happiness.

And I haven’t even mentioned the broth yet.  I shared many bites and was more than generous with my lobster claws, all while threatening everyone not to spill a drop.  Then when all that was left was broth, I sucked it up with my straw!  I regret nothing.

I ate a dark chocolate peanut butter santa when we got home.

And I collapsed into bed, basically drunk on marrow.

This morning we pulled ourselves out of our food comas and drove over to East Aurora.  I know I don’t actually live in EA, but I always want to bring visitors to Taste.

We were just admiring the cool industrial vibe when… I dropped my camera on the concrete floor.  Please note – I stayed amazing calm, but if my memory card had broken too and I’d lost the pictures for this post I definitely would have cried.

I’m going to end my blogging here, because I just can’t see tacking cell phone photos on the end of this lengthy post.

Broken cameras be damned, we had a nice day.  I managed to get buffalo wings into my aunt and cousin before they had to head to the airport.  I had a good day of work.  Adam and I shared a Dole Whip at the mall.  And many (many) hours later, I have a new camera.  So tomorrow, we can start all over again.

Use Your Noggin

Hello, hello!  The days I’m excited to blog are always the same days I’m utterly exhausted.  Go figure.  Saturday was a symphony of holiday flavors but also a 9+ hour day at work.  Instead of posting last night I had a total tantrum and passed out fully dressed… so here is a 2-day recap.

Remember when I said “Saturday was a symphony of holiday flavors”?  You know, like five seconds ago.  Well, my day went eggnog –> candy cane –> gingerbread; bam!

I put 1/4 cup oats, 1/2 cup Silk Soy Nog, and 1 Tbsp chia seeds in the fridge overnight, then Saturday morning I added 1 sliced banana and a big dash of Christmas sprinkles.

So festive and delicious.  Also, holy frick, I love chia seeds so much.

My candy cane came in the form of a Peppermint Stick Clif Bar during work.

This is Clif’s best seasonal flavor by far.  The bar has the perfect amount of peppermint.

Gingerbread was a cupcake surprise from the husband.

He had an appointment near Fairy Cakes in the afternoon and he brought me home a gingerbread stout cupcake with cream cheese icing.

It was ridiculous good, maybe the best cupcake I’ve ever had!  The cake had a great ratio of spice to sweet and was so fluffy and moist.  I shared one big bite with Adam but downed the rest with gusto.

The rest of the day’s eats were out of season, but still good.  From fall I borrowed an apple and a Blue Moon Pumpkin Ale.

Adam and I shared a tray, straight from the oven.  We topped scoop-style tortilla chips with roasted brocoli and green pepper, Newman’s Own Pineapple Salsa, and Cabot Reserve Aged Cheddar.

We loved them.  He was a little iffy on roasted brocoli as a nacho topping but it was delicious.  And I was worried about that type of cheese versus a regular cheddar, but that ended up being perfect too.  And the pineapple salsa is hands-down the best jarred salsa I’ve ever had.

Blah, blah, blah, and then I started having a fit and had to go to bed.  I didn’t get anywhere near enough sleep during the weeks Adam was gone and I’m still really freaking tired.

Sunday was a super hungry day and I ate a ton of crap.  A brunch of sorts, was low-fat coffee yogurt with honey roasted peanuts and honey,

Working with crowds of Christmas shoppers is exhausting but also really rewarding.  Five different people today thanked me effusively for my help and that was a really good feeling.  Actually, one super hot guy told another customer that I was fantastic and I about died!

We both swooned over how good they were and finished our drinks in the car long before we made it home.  And we called my mom on speaker on the drive and drove her crazy scraping through our ice for errant tapiocas!

I have a holiday breakfast with work tomorrow and then I’m spending Christmas Eve on the couch with Adam.  I have two days off in a row for the holiday and I am so excited to spend them with my boys!

Happy Hanukkah!

I know I’m a day late on the holiday wishes but 2nd-out-of-8 is not so bad.

I’d love to tell you that I’ve been in a flurry of studying, but in fact I worked almost 22 hours between Friday and Saturday.  I am exhausted, cranky, and not as prepared for tomorrow’s exam as I’d like.  But it is what it is and I’m just glad I have a job.

What I Was Up To Today (Sunday)

Other than oversleeping and wasting some time in the morning, today was nice and productive.  Apparently my body just doesn’t want to study before noon!

I was excited to try this Oro Blanco for breakfast.

Whenever I spot something I haven’t heard of before at the grocery store I just have to buy it.  Adam and I used to love Ugli fruit when we lived in the city and I was hoping this would be similar.

The Oro Blanco had a very thick layer of skin and pith like the Ugli fruit, but the flavor was not my favorite.

It was bitter in a way that made my stomach hurt and I ended up throwing it out after three segments.

Instead I split a Mike’s bagel sandwich with a friend.

The Mike’s sandwich is a bagel topped with cream cheese, provolone, and a fried egg.  It is amazing and ridiculous.

We spent almost six hours at The Spot so the sandwich was only the first of three orders.  I also had an iced coffee with skim milk.

And shared a slice of cheesecake (with a pretzel crust and chocolate ganache!) with a friend.

I just have to say – thank goodness for my great groups of friends or I would not have accomplished a damn thing today!  We went through the notes as a group and it was so helpful.  Not that I’m feeling all that great about a comprehensive exam in one of the hardest classes I’ve ever taken!

Both of the dinner components were very tasty.  I bought a bunch of frozen vegetables on my last grocery trip and I’m actually looking forward to using them.  And I have half a box of blintzes left that for which I need to purchase sour cream.

Dessert was very unnecessary, but also fun.

Biscoff Buddies!  I have a special version of “puppy chow” in the works and since I’ve never actually made puppy chow before, I wanted to do a trial run with a single serving batch.

For this version I used: 3/4 cup honey squares, 1 Tbsp semi-sweet chocolate chips, 2 Tbsp Biscoff spread, and 1 Tbsp powdered sugar.

Who else thinks I shouldn’t be blogging at midnight when I have a giant exam at 7:40 am?  Whoops!

Finals Frustration

I really wanted to post the last few days but I was upset about a bunch of things that I couldn’t put on the blog.  Today was the official end of the semester and the only word I can come up with to describe this day was “eventful.”  I’m still angry and disappointed about things I can’t talk about but I think that the pictures of today’s eats actually paint a pretty accurate portrait of today’s mood all on their own.
