By The Clock

Thank you, Thursday, for being fabulous in a strange and wonderful way.  I was in a good mood all day.  I was busy with easy to do tasks, I had simple but tasty meals, and little bonuses kept popping up.

8:00 – Wake up with Adam still in bed.  He had a study day before an exam and I got to start my morning making a pile with him and the dog.

9:00 – Quick meeting with my Statistics teacher.  All of the homework I’ve done so far has been correct!  Plus she let me sit in on an earlier class session to accommodate a change in clinic schedule for the afternoon.

9:20 – Eat a Cappuccino Lara Bar for breakfast.

This is my favorite flavor LB for sure.  It’s not too strongly coffeed and it’s less date-y than other flavors.

11:00 – See the husband mid-day (squee!!!) when he graciously offers to drive me to UB for the lecture I’m attending.

12:00 – Attend a 1 hour lecture on diabetes mellitus and pharmacology.  We didn’t learn much that we can actually put into clinical practice, but it was a fascinating topic.

13:00  – Stop into Jimmy Johns for a large fountain soda – diet coke with a shot of cherry coke – with ice.  Swoon.

14:00 – Lunch.

My Seven Layer Casserole was the #2 best thing to come out of last year’s vegan month (and I’m making numero uno this weekend!).  It is packed full of veggies but tastes like a big mouthful of tortilla chips.  True Story – the reason we went to Moe’s on Tuesday was so I could take home the free chips for this recipe.

16:30 – Finish the writing assignment (due this evening, whoops) that’s been buzzing around my head all month.

18:00 – Dinner in class.

Holy frick, this sandwich, holy frick.  It’s simple, just a Sandwich Thin with mustard, SmartBalance Light, and raw tempeh, but it blew my mind.  The perfect combo of flavors.

Plus a baggie of roasted green beans.

These are actually sort of embarrassing to eat in class because they are squishy and you end up having to cram them in your mouth.  I own it though.

19:30 – We get dismissed from class 30 minutes early!

20:30 – Blog.

21:00 – (planned) read magazines in bed.  <– heaven

Some Thoughts from Yesterday

  1. I finished the last published book in the Temperance Brennan series from Kathy Reichs and I’m devastated. There’s a new one coming out this summer but that’s not soon enough! I get really into what I’m reading and when a good book is over it’s like a friend has moved away.
  2. I want to also be sad that this is the final season of “House” but honestly I’m not sure how they’d top this season. The most recent episode was amazing! While I love books (Duh!), I also get really moved by good tv. I always tell Adam and if I had watched more as a kid I probably would have grown up to work in television. I am genuinely awed by people like Hugh Laurie, Emily Deschanel, Joss Whedon, and Hart Hanson. Anyway though, “House,” I’m loving the character development. Thus week House and Chase grew in ways that were both amazing and realistic to the characters.

A Few Things Done Today

  • A CT10k workout. Week 1.2 was 9 sets of 3 minutes walking, 2 minutes running. With 5 minutes of cool down for 50 minutes, 3.85 miles.
  • I met with a friend to work on a group project. Sometime next month we are doing a nutrition education session for a group of preschoolers. Not the age range I’m used to but it should be fun.
  • I bought a Groupon for 2 unlimited months at Evolation Yoga!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!  I’ll have to wait a bit to activate them (I can’t get as much out of them as I’d like and also put the time I need into the CT10k running plan) but I am so flipping excited.
  • Not my schoolwork.  Like the paper due tomorrow that’s going to ruin my Thursday.

What I Ate Today

1.  Lunch for breakfast.

In the bowl was a concoction just crazy enough to work.  Leftover Smokey Maple Baked Beans, roasted butternut squash, 4 oz of chopped up tempeh, and a dousing of Anchor Bar’s Medium Wing Sauce.

Delicious, but I was crying and snotting after every bite.  I was glad I had this onion bagel with SmartBalance Light to help break up the spice.

2.  Dinner, from Wegman’s.

Veggies with a piece of tofu,

plus a small serving of noodles with cabbage.

And grape leaves.

I had three.  We bought the ‘leaves because Adam tried to order some at his lunch today and they came stuffed with meat and covered in a cream sauce.  Weird!  I’ve never ever seen them offered like that before.  Pretty annoying too that the menu didn’t mention either of those additions.

3. Snack.  I stole the last two servings of Adam’s Somersaults.

Somersaults are his favorite snack item (he basically squealed when we discovered them on sale at Wegman’s) so I want to feel bad for eating them, but they were downright delicious.

Peanut Butter Practice

It’s been a good weekend!  Good food, good fun, good friends.  Not much activity on the school-work front, but we’ve got a 4-day weekend coming up next week so it was hard to motivate myself.  Plus Friday’s 3am session of book reading hit me pretty hard.

I’m so glad I did it though, this was the first book club where we all finished reading on time and we finally got to talk about the book!  So much fun.  I wasn’t an English major/teacher for nothing, I love analyzing literature.

The food wasn’t bad either.  Janessa made vegan 7-layer bars.

And Anna brought this big bowl of fresh fruit that pretty much had my hand planted in it all evening.

My offering fit both the dessert and fruit categories; peanut butter pretzel banana pie.

It got good reviews all around and I’m excited to share the recipe with y’all tomorrow.  But that could have been the booze talking too.

Lemonade, club soda, and Firefly Sweet Tea Vodka (to fit with the book!).  I had that glass x2.

I got home after midnight and was very excited both to get in bed and stay in bed late this morning.

Breakfast was a toasted onion bagel with SmartBalance Light.

Plus a cup of lemonade and club soda.

I left the vodka out today, but had that glass x2.

Today was another round of fancy lunch and easy dinner.  Lunch was healthy, vegan, and included a new recipe to boot.

The beans weren’t quite Southern bbq good, but for quick and vegan I’d say they’re pretty great.  Here’s a link to the recipe.

While Adam and I watched “Grey’s” this afternoon I ate this bowl of popcorn x2.

And then headed to yoga on a full belly.  90 minutes of hot yoga will make you wish you’d done more water and less salt.  This class was the very last practice of my 30-day pass and I’m pretty devastated.  I’ve come to enjoy yoga so much more than I ever thought possible.  I’m still not very good, but every shaky, sweaty minute is filled with glee.

I picked Adam up for a “cookie walk” and we came home with peanut butter cups from the Co-op.

It was good but I wish it had been a bit smaller, even this sugar fiend couldn’t finish her serving.

Dinner was peanut butter laced too.

I promise that bowl was as tasty as the picture is crappy.

Into the skillet with evoo went leftover pasta, leftover (pre-cooked) yellow squash and broccoli, and my peanut sauce.  The noodles get all crispy when you stir-fry them and the sauce forms a crust that’s pure heaven.

Now it’s back to the grind.  Hopefully this weekend of play has left me rejuvinated for work!

Let It All Out

Question first – What is currently stressing you out?  Think about it and really let it out in the comments, you’ll feel (a little) better!

I want to apologize for the on-again-off-again blogging schedule of late.  I also want to be honest with you guys about the fact that I’m having a hard time.  There’s not necessarily one big thing that’s bothering me, but there are a lot of little things that are adding up.  I am 80% sure that I believe in fate, and I am 110% that I believe that any seemingly negative thing you go through leads you to a better place.  But it’s still hard not to get a little freaked out by all the questions I have about the future.

Where will we have to move for Adam’s residency?  What if Adam doesn’t get a residency?  What if Adam’s chosen career means he’s away all the time and I’m lonely?  Should we have kids?  When should we have kids?  Should I get pregnant next year so if that I don’t get a job right away when we move I’ll get to be home with the kid until it’s all sorted out?  Should I wait to have kids until I’m established in my job?  How do women with full-time jobs breast feed?  How do you make an impression at your job if you excuse yourself every hour to pump and are also already 28 years old and starting out in a brand new field?  What if I can’t find a job?  What if the career path I’m on isn’t the one I want?  What do I want to do with my life?

And to be honest, the above questions are only a snapshot of all the things I’ve been worrying about.  It’s hard not to feel a little defeated when I can’t do anything proactive (at the moment) to answer those questions.  Sometimes you just have to have hope/faith/optimism and wait it out.

Sometimes – like last night – you have to eat a veggie sub and a bucket of french fries and sit on the couch watching old episodes of “Family Guy.”  But then the next morning you have to do your hair and put on your comfy-yet-sexy shoes.

So that’s what I did!

And in my comfy-yet-sexy shoes, I drove to school early and made my way through a big stack of school work.  I haven’t stopped working since, and bit by bit, I haven’t stopped feeling a little better, a little more in control.

The theme for my meals today was – late.  Breakfast was at 10, lunch was at 5, and dinner was at 9.  My late breakfast was eaten in the computer lab while I worked.

Holy frick I love reusing containers so much  I over-served Adam’s lunches for this week so that reused cheese container held a half serving he’d left behind.  In the mix was penne pasta, roasted zucchini and yellow squash, sautéed mushrooms, spinach, diced tomatoes, marinara sauce, and a drizzle of olive oil.

It was yumtastic; I’ve been a good wife this week!

Also helping me get back my happy, clinic went really well this afternoon.  We are starting to do SOAP notes and learning more about what RDs actually do helps a lot to relieve my anxiety.  Plus, I screened patient who agreed to do another round of diabetic diet education.  I can’t really say much about clinic (thanks HIPPA), but so far all of my patients have been really nice.

When we got back to campus it was time for late lunch.

Not cottage cheese*, another reusable.  *I may not have been eating a very healthy diet lately but I have been sticking to the vegan challenge at least.  And no soda for another 3 days either.

In the container were leftovers from Monday’s dinner; brown rice, roasted broccoli, and Asian Orange Tofu Bake.

Continuing the citrus theme, I had a navel orange.

And a piece of dark chocolate for dessert.

When we got out of class at 8 I drove a friend home and then hurried to make dinner.

And a Sandwich Thin with mustard, roasted garlic hummus, and 4 oz of raw tempeh.

I wasn’t expecting much but this sandwich was goo-ood.

This post took me awhile to write, but it felt good to put it all out there.  Thanks for “listening,” seriously.  I’ve got a low-sodium diet education presentation tomorrow and I’m still riding a productivity high so I’ll probably burn the midnight oil today.

Back to School

It’s official, I’m back in school!

This morning brought about a million plan changes, but it all worked out in the end.  When Adam left (before sunrise) I couldn’t fall back asleep so I finished reading Kathy Reichs book #9 (Bones to Ashes) for an hour or so in bed.  I couldn’t fall at 5 am but at 8 am I couldn’t wake up!  I ended up getting out of bed 30 minutes before the yoga class I wanted to attend was slated to start.  I thought I could make it, so I slammed this breakfast to fill up my stores.

plus a big glass of water.

But getting ready took too long and I made myself a little sick eating too quickly, and that plan had to be scrapped.  My original plan was to walk to school today, but when I saw the rain I realized it was time to reevaluate again.  I would eat a little more breakfast, take a shower, drive to school and read Kathy Reichs book #10 (Devil Bones), go to class, and then go to the gym at school before driving home.  (I had to go early because there wouldn’t be any parking closer to class time).  And that’s exactly what I did.

My brunch additions were a small apple.

And a 0% Exotic Fig Voskos Greek Yogurt.

The yogurt was great.  The taste wasn’t quite as good as the Greek Gods Fig Greek Yogurt (my all-time favorite), but the nutritional content was far superior.

Then I drove to school, walked the 20 minutes in the rain from my parking spot, and vowed never to drive to school after 8 am again.  Today’s class went well, but apparently this semester is going to be very, very, very hard.  I’m scared.

After class I headed straight to the gym.  35 minutes on the elliptical, level 6 random.

I stopped at Wegmans for a late lunch on my way home.  I was only going so that I could sit in the comfy booths to finish the writing-intensive task of filling out my planner, but I ended up getting a pretty good meal.

Delicious, and it gave me the energy to power through some serious productivity.  I walked and bathed the dog, did the dishes, made dinner, and completed my first homework assignment of the year.  Woot!  Also, I found 15 minutes to make Adam this –

Dinner was even exotic.

I followed this recipe for Orange Peel Shrimp.  With a side of roasted zucchini,

and a 1/4 cup of whole grain texmati brown and rice red blend.

I used salad sized shrimp and subbed in mango butter for orange marmalade, but otherwise I followed the shrimp recipe.

The end flavor was delicious.  The sauce had a great tang and a good level of spice.  But I have to say that I think the recipe was poorly written.  If you decide to make the Orange Peel Shrimp (which I do recommend), I would suggest frying the shrimp in batches.  There is just no way to do 2 lbs at once without overcrowding the pan.  Also, do the shrimp first, set it aside, and cook the sauce in the same pan.  The cornstarch remaining in the pan is minimal, and does not cause the sauce to thicken to quickly; there is no reason to dirty two pans.

Dessert was two S’mores Cups.

If you can believe it, these are even better leftover!  More chewy than gooey, but definitely a bit easier to eat.  These cups are my favorite S’mores variation to date!

We Don’t Need No Stinking Plates

We’ve been warned about inclement weather and woken up to 40+ degree days so many times this winter that lately when the forecast calls for snow, I just chuckle. 

Dear Weather Gods – I am so sorry I scoffed.  Please make it stop.

This morning I woke up to this –

but that is beside the point.

Actually, I woke up to pitch black because when the husband left the house at 4:30 a.m. I got up with him.  Well, not got up necessarily, but woke up and pulled my laptop into bed with me.  I spent an hour or so doing computer work things, an hour or so doing computer fun things, and finally an hour or so finishing sleeping (we got in bed after midnight!).

When I woke up for good at 8:40 I took one look at the window and decided to skip the gym for the day.  Unfortunately, by the time I realized that I had to go outside and move my car it was too late to change into workout gear without getting a ticket.  But it was just as well in the end because when I drove past school the main road that leads to the gym was totally untouched by both snow plows and tire tracks.  Since I had to circle the block to repark my car I took a quick detour to Wegmans and came back with goodies.

I’ve had an intense craving for creamy drinks lately; my fingers are crossed that it’s not a sign that I’m getting sick!

Speaking of which, has anyone tried the International Delight Iced Coffee yet?

I’ve been obsessing over it for days but I can’t bring myself to shell out 5 bucks without knowing if it’s good.

Breakfast was waiting in the fridge for me at home.

What do you do with an almost empty jar of Biscoff?

Quietly weep until you buy more make overnight oats.

Last night I combined 1/3 cup oats, 1/3 cup skim milk, 1 Tbsp chia seeds, and 1 dash cinnamon with the last 1 Tbsp or so of Biscoff left in the jar.

Before serving this morning I stuck it in the microwave for 30 seconds and the Biscoff got all perfect and melty.

My drink was also served in a jar.

I chilled the coffee, then put it in a big jar with the So Delicious Vanilla Coconut Milk and 2 tsp of sugar, and shook shook shook.  Plus ice and a straw.

I’m thinking shaken coffee might be my “thing” until this creamy beverage craving is licked.

In another meal without a plate, lunch was consumed straight from my mini casserole dish.

Into the dish, baked at 450 degrees Farenheit for 30 minutes, went layers of –

  • 1 sliced zucchini
  • 1/2 cup marinara sauce
  • 1/4 cup parmesan cheese

It was similar to my cheesy eggplant bake, but this got a little bit watery.

Still good though.

I’m hoping to continue my productive streak with work on school stuff and my binders project, but with new episodes of Grey’s and Bones available we’ll see how it goes!

Wednesday – Thursday, Still On The Move

Hello again from another location, this time Ohio.  Once we get home from here we have a day trip to Toronto and then I’m staying put until the end of break!

Wednesday

Yesterday was Adam’s and my 4-year wedding anniversary, aka our 9-year anniversary of being together!!!  It’s crazy to think that we’ve shared so much of our lives.  Sappy sidenote – I am grateful every day that I get to spend with my husband.  I am so thankful that the man I love is handsome and funny in addition to being intelligent and kind. </sap>

I had an early morning orthodontist appointment and we had to do a grocery restock and then we reunited with another man I love.

I sort of want to get those pictures framed.

Adam and I spent our anniversary doing our favorite things – namely tons of eating good food and cuddling on the couch watching good tv.  A big, made from scratch breakfast felt downright gourmet.

For the eggs, we went to the deli and requested two, 1/4 inch-thick slices of honey roasted turkey.

We chopped them up and sautéed them in a bit of butter, then scrambled in 4 large eggs.

Out of control delicious.  I quit eating most meat (mammals) before I had gotten to try everything and I suspect that I would really enjoy ham.

We also had hash browns made with white potatoes, onion, red bell pepper, 2 Tbsp of butter, and 2 tsp of chipotle oil.

Adam bought me some fourth year gifts for our anniversary.

A book with a sweet inscription, persimmons for fruit and rugelach for flour (substituted for flour because we were going out-of-town).

I’ve been picking up the persimmons and deciding that they were too expensive to splurge on for weeks at the grocery, so they were such a nice surprise.  We split part of one persimmon but decided that it wasn’t ripe enough yet.

Adam was careful to buy squishy ones because once in the city, before we knew better, we tried to eat an unripe persimmon and about died when all the moisture was sucked from our mouths!  This one had a good flavor but was still a little cotton-mouthy.  So we washed it away with rugelach.

The snack was perfect to bring us into lunch.

I had an Applegate Farms Turkey Bologna sandwich on half a cheddar jalapeno bialey with a little bit of Miracle Whip.

Plus a huge pile of roasted green beans.

Adam hates jalapeno but knew I’d like that bialey more than the others and I gave him the half with more cheese, so we both compromised in the name of love.

It would have been easy and fun to go out for a romantic dinner, so I’m extra proud of us that we stayed home and cooked together instead.

I started by steam-sauteing 3 chopped zucchini in a bit of chicken stock.  Then I finished them off with 1 Tbsp of evoo and this packet of Garlic Gold I got in my HLS swag.

I was expecting to adore the Garlic Gold after all the love it got in the healthy living blog community, but we found it to be pretty “meh.”

We set the cooked zucchini aside and while Adam boiled 3 servings of pasta I made a roux with 2 Tbsp of butter, 2 Tbsp of flour, and 1 Tbsp of milk.  Into that, I whisked 1 cup of skim milk and 1/2 cup of shredded sharp cheddar cheese.  Once the sauce came together all we had to do was toss it with the cooked squash and pasta.

We topped our bowls with a bit of panko and more cheese.

Dinner was great, definitely as good as anything we would have gotten in a restaurant.  This was on the healthy side, but now I am absolutely going to make a similar sauce and use it in oozey, gooey mac and cheese.

We stayed up later than planned watching “That 70’s Show,” which was good for anniversary fun but bad for me working out this morning.  I can’t do anything active here in Ohio and I’m worried that all my vacation workout momentum will be for naught.

Thursday

Today was a day of many meals.  Due in parts to time of the month and restlessness from 7 hours in the car.  And we got junky food too; a healthy living blog no-no but an unavoidable part of existing in the real world.

Mid-way we got to stop for froyo.

I got eggnog and toffee mocha yogurts, topped with candy bar pieces and some marshmallow topping.

Alas both of my flavors were too spicy and I ended up throwing most of mine away.  It was a sad day indeed.

But hundreds of miles later we found a Sonic and I ordered a diet coke with strawberry that totally made up for it.

Adam and I also split fries and chicken tenders.

Good thing my grandma served a lateish dinner, huh?

Webster was a perfect angel for 95% of the drive.

We even got to take him in to meet my grandpa this afternoon.  I like it when all the men in my life are well-acquainted.

Per usual, my grandma made a great dinner.

Side salad,

truffle mac and cheese to make up for Adam not having any on Christmas,

and italian breaded chicken, 

which I only could eat a few bites of because I felt like food was coming out of my ears.

After dinner, Nana and Adam worked on a 750-piece puzzle while I wrote this monster post.  I hate all these super long posts I’ve been writing lately!  I know none of my readers are interesting in scrolling for hours, but since I use my blog as a journal I don’t want to skip days that are so great.  I promise to get back to a less annoying schedule once I’m home for good.

STT; Tuesday Afternoon – Wednesday Afternoon

Tuesday

Yesterday afternoon I ran some errands with my mom during her break.  Including getting me a small square of macaroni and cheese for lunch.

West Indian style mac ‘n cheese is baked with cheese on top.  It’s fantastic, obviously.

Then I went downtown to run errands with my dad.  For this trip I made myself an iced coffee.

With skim milk and 1 Tbsp of gingerbread syrup.

During the afternoon I snacked on carrots,

and chocolate.

Then I made an effort not to be a total loaf this vacation and made dinner.

My parents are wimps so I had to sub two cans of tuna fish for sardines, but other than that I followed my recipe for Sardine Mushroom Tomato Sauce.

With roasted squash and okra on the side.

I never could find good okra in Buffalo this fall, I can’t even tell you how excited I was to spot it here.

I spent the evening baking with my mom, but since my retainers were in no nibbling occurred.

Wednesday

I started this morning with some stewed tamarind.

Tamarind has this unique, tangy yet earthy taste.  It has lots of seeds so whether you are eating it stewed or straight from the pod you have to be careful.  The best way to eat it is to swish a bite around your mouth (without chewing!) and then spit out the seeds when the flesh is gone.  Looking very ladylike I’m sure.

I also ate a leftover serving of whole wheat penne with 1.5 tsp of olive oil, a shake of salt, and a sprinkle of parmesan.

Plus two 7-layer bars,

and more chocolate.

I didn’t realize until I stated writing this post, but I’ve kind of eaten nothing but pasta and chocolate for the past 24 hours!!  I’m heading to the gym this afternoon and I guess I’ll make veggies a priority for dinner!

Now I’m back at school, trying to catch up on e-mails and eating this Greek Gods honey Greek yogurt.

P.S. No Window Shopping Wednesday this week.  With all the wishlist posts floating around it just felt a little tired.  I’ll be back with it after Christmas, next week.
