Peanut Butter, Pretzel, Pumpkin

Highlights from the past week – – –

Pumpkin spice latte smoothie! Canned pumpkin, plain skyr, coffee, cold brew powder, ice, cinnamon, maple, and brown sugar.

Plan Siggi’s with pumpkin seed butter. Plus an apple and a pumpkin spice chocolate cookie. P.S. This recipe made some of my favorite cookies of all time, so butterscotchy!

I am 100% obsessed with these pretzel-stuffed peanut butter cups. I bought bags of minis for work and home.

I saved the best pumpkin beers for last – Abomination Brewing’s Forbidden Pumpkin pumpkin milkshake IPA and Schlafly’s pumpkin ale.

Trader Joe’s Turkey Day quesadilla.

This is to remind me to get takeout from Roast more often! Adam and I split cheesy turkey and roast beef sandwiches, plus fries.

My favorite sheet pan hash combo – roasted bok choy and sweet potato plus smoked salmons (hot smoked Atlantic and salmon candy).

Pumpkin pasta. Whole-wheat rotini with ground turkey cooked with pumpkin puree, sour cream, and chili oil. Plus roasted baby cauliflower.

Highlights from this week…

Beverage wins – cinnamon vanilla cold brew // pumpkin spice latte // strawberry tonic kombucha.

Pina colada smoothie – coconut milk, pineapple, and banana.

Pumpkin spice skyr with a coffee maple cacao bar.

Pumpkin spice Greek yogurt with Cheerios and pumpkin spice granola.

Very into these cheeze stuffed pretzels this week. They are vegan but I definitely melted regular sharp cheddar onto them.

I also turned them into pizza trail mix! With sundried tomatoes, baru baru nuts, and crispy cheese bites.

Sautéed ground turkey with bbq sauce / roasted broccoli romanesco / sautéed TJ’s cruciferous crunch blend / sharp cheddar / Caribbean beans and rice – brown basmati, pink beans, onion, ginger, habanero, and coconut milk.

A crockpot take on this pineapple chicken / riced cauliflower / roasted butternut squash.

Adam invited me on a dinner date but there was hour+ traffic in all directions so instead we got Whole Foods hot bar and watched Castle… it was perfect!

Nuts for Baru Nuts

How are we in the 2nd to last week of August??! Some highlights from this week included…

A blackberry and soursop smoothie (with banana, plain Greek yogurt, and brown sugar).

A banana and coffee smoothie (with cinnamon roll oat milk creamer, cinnamon, brown sugar, and cold brew powder).

Whole Foods snacks. The baru nuts are fantastic! They taste like a cross between peanuts and almonds. I brought some to work and got all of my coworkers hooked as well.

Quinn pretzels with Bitchin’ sauce. A coworker recommended this dip and she did not steer me wrong. We are also both obsessed with these delicious pretzels.

Kombuchas and or matchas.

A loose interpretation of this chicken and corn stir-fry recipe. Instead of rice we paired ours with sautéed shishito peppers and mushroom.

So much Thai take-out! We had pad see ew, cashew chicken, and amazing spicy ginger eggplant.

Very fancy salads – local lettuce, black garlic vinaigrette, pistachios, dried apricots, and goat cheese.

Spicy peanut chicken pizza (a Trader Joe’s crust with spicy peanut sauce, shredded chicken breast, quick-pickled carrots, and cheese) with smashed cucumber salad.

Five highlights from the past seven days –

{1} A Cherr-Bear smoothie! Yes, I think I’m very clever. A remake of the smoothie I adored for Valentine’s – frozen dark sweet cherries, plain Greek yogurt, and chocolate milk.

{2} A fruit and nut yogurt bowl. Vanilla bean skyr topped with (frozen, reheated) blueberries, halvah, yellow raisins, and nut and seed trail mix.

{3} Whole Foods buffalo sauce soy nuggets and baby carrots, served with an array of dipping sauces.

{4} We made an epically good warm potato salad. Roasted potatoes and celery, hard-boiled eggs, cornichons, dill, mayonnaise, and whole-grain mustard. Plus honey maple smoked salmon.

{5} I made our tastiest no-churn ice cream to date!

Chocolate-Covered Cherry

Highlights from the week included…

I was off on Wednesday (I work the weekend again) and I took myself into the city for Dough Doughnuts. This key lime pie doughnut – enrobed in toasted marshmallow!! – was 100% worth braving the cold.

We’ve been in a pandemic for more than a year now and Winter 2021 already feels too long so I am looking to maximize the joy in my life wherever I can; hence, I declared chocolate-covered cherry the official theme flavor of Valentine’s week and I have been eating the combo left and right!

Chocolate cherry coffee = Trader Joe’s cold brew, luxardo cherries, chocolate milk.

See also – vanilla milk and luxardo juice (plus a bit of red food coloring!) plus espresso blended with hot chocolate mix.

This chocolate cherry smoothie was hands-down the best smoothie I’ve ever made/consumed. TJ’s frozen sweet dark cherries, luxardo cherries, plain Greek yogurt, chocolate milk.

Ruby cacao covered cherries + strawberry and hibiscus chocolate.

Related note – I don’t even like Hershey’s Kisses but these lava cake ones are currently one of my top five favorite products.

10/10 ridiculously amazing cherry truffle ice cream.

All of our dinners this week were tasty and wonderful (and a snap to prepare!).

Meatball subs with roasted green beans. Turkey meatballs – stuffed with garlic, fish sauce, and urfa chili peppers – tossed in marinara sauce on a toasted hoagie roll with mozzarella. Our sandwiches were comically large but neither of us could stop from finishing them because they were so yummy!

Wild mushroom chicken sausages – topped with caramelized onion and yellow mustard / roasted broccoli / Lays chili chips.

Pizza casserole. I made a crust layer out of riced cauliflower (with spices, eggs, and cheese), topped with mozzarella, marinara sauce and caramelized onions, chicken sausage, and turkey pepperoni.

Howling Gourds

Adam and I both worked this weekend, so we didn’t have a lot of fun, but we did have some good snacks. Highlights included…

Trader Joe’s pumpkin spice protein smoothie. Mild flavor, good spice, and pretty filling.

Whole-wheat matzoh with melted cheddar. I haven’t fully sold Adam on matzoh brei yet but he’s onboard with the bread as a vehicle for cheese.

Howling Gourds is officially our new favorite pumpkin ale! It’s fairly hoppy and cinnamon-forward but most importantly it is 7% ABV which is higher than most other pumpkin beers we’ve tried in the past.

Clean-out-the-pantry pasta that was surprisingly good. Whole-wheat rotini with steamed broccoli, sautéed radish, Trader Joe’s vegan chorizo, and marinara sauce, topped with Manchego.

Deep Dish And Blue Berries

Biggest event from this week – I left the house to donate blood.  Guys, things in NYC are bleak.  If you are able to donate blood please consider it (we are facing a critical supply shortage because so many planned blood drives were canceled) and otherwise please stay home if you can!

Biggest culinary discoveries this week – 1) I love cinnamon in yogurt. 2) I love mint in smoothies.

A tasty smoothie made with nectarine, grapes, blackberries, yogurt, honey, and fresh mint leaves.

It feels weird to be obsessed with a low-calorie ice cream but this mocha fudge brownie flavor from Ben & Jerry’s moophoria line is kind of the best.  Especially topped with hot fudge!

I made deep dish pizza with TJ’s dough (loosely based on this method) with turkey pepperoni.  Plus roasted veggies.

I topped my leftovers with copious amounts of honey, Cholula, and chili flakes because the only benefit to eating all your meals at home is easy access to your condiments.

LES = Let’s Eat Snacks

Adam and I spent both Saturday and Sunday walking around the Lower East Side eating all the things, admiring street art, and just generally having a fabulous time.  Plus we walked back and forth across the Williamsburg Bridge which is one of our favorite activities.

Weekend highlights include…

Smoothie time.  Beary flavored!  Banana, blueberry, blackberry, almond milk, and brown sugar.

Criss Cross ‘Shrooms – red chilies, wood ear mushrooms, and lotus.  These were actually a bit too spicy even for me, but I loved the fried basil.
