Sour Apple

Highlights from this week included – Trader Joe’s sourdough sliced bread, Apple Month stuff, vegan junk food, end of summer veggies…

Cinnamon apple chia oats. <– I also had a(n unphotographed) bar with chia seeds this week, I need to remember to eat more chia, it’s delicious!

Cinnamon apple Over Easy bar.

Zestar apple with a salted caramel Noosa yogurt.

Salted maple kettle corn and freeze-dried fuji apples. P.S. The Trader Joe’s freeze-dried fruits are superior to all others.

Not apple-themed but still amazing – these Snacklins vegan pork rinds. I scooped crab dip with them and it was my favorite snack of the week!

Bacon egg and cheese sandwich for brinner. Toasted sourdough with mayo, yellow mustard, honey-maple sliced turkey, sharp cheddar, turkey bacon, and a fried egg. Plus yellow peach and heirloom tomatoes. Plus on-theme chocolates.

This was supposed to be a roast beef sandwich but our stores were all out?! Sourdough with pastrami-style turkey (probably better than my original plan!), black garlic and horseradish mayo, and sharp cheddar. With roasted orange and purple cauliflower.

Vegan chicken nuggets and roasted zucchini and yellow squash dipped in Bitchin’ Sauce.

A take on callaloo with turkey bacon and crab.

Food In Bowls

Highlights from the past week include…

S’mores iced coffee! I blended coffee with ice, cold brew powder, chocolate milk, vanilla bean powder, and toasted marshmallows.

Yogurt bowl set up – vanilla skyr with Made Good chocolate granola and Jelly Berry grapes.

I quite liked these crispy onion chips from Trader Joe’s.

Toasted turkey and cheddar sandwich. On sprouted wheat sourdough with mayo and pickled jalapeños.

Mexican-ish vegetarian bowls. Brown rice, cauliflower rice roasted with green onion and poblano pepper, Trader Joe’s soyrizo, cojita cheese, and orange Soss.

Crab fried rice. Leftover brown rice stir-fried (with soy sauce, rice vinegar, and fish sauce) with blue crab, eggs, green onion, peas, and carrot.

Dinner inspired by a dish we loved recently at Llama Inn – sautéed bok choy with grapes, sunflower seeds, and black garlic vinaigrette. Plus tuna cakes made with soyrizo.

Sort Of Rad

I worked the past three days, so no weekend for me, but I did make time for some yummy food! Highlights include…

Deconstructed apple smiles – an apple with mini marshmallows and a peanut butter breakfast bar. <– recommend

A yogurt bowl with peach, plum, and peanut butter.

Leftovers assortment for a work snack – hard-boiled egg, chicken sausage, radish, bell pepper, and Russian dressing.

Chamoy candies!

Egg salad (with mayo, honey dijon, paprika, and horseradish) plus mini cucumbers, radish, and bell pepper.

Leftover sheet-pan hash topped with havarti cheese, Kewpie, diced radish, pickled jalapenos, and Korean chili flake.

Spicy wok-fried green beans with cheesy scrambled eggs, vegan pork floss, and chili crisp.

Peanut Butter And…

Highlights from the past week – mostly things with peanut butter…

This Oatmega bar was good, if a bit fishy.

Summery yogurt bowl – plan skyr with peanut butter, granola, and tons of stone fruit (apricot, red plum, and white peach).

My co-workers were head over heels for these cookies! This peanut butter chocolate chip recipe + mini marshmallows.

Whole Foods chicken nuggets and honey mustard with roasted brussel sprouts.

Leftover chicken chilaquiles (we made a big batch and froze some a few weeks ago) with scrambled egg, sour cream, cheddar, and hot sauce.

Plus a paloma sour, which I loved.

P.S. As of tomorrow Adam and I are both on vacation! Woo-hoo! My family is coming to visit for a bit and then we’re heading back to Virginia. I’m not planning on carrying a camera but my Instagram should have the highlights.

Chipotle, Coconut, Curry, Callaloo

I hope all of my American readers are enjoying Memorial Day long weekends. I worked Friday-Monday; womp, womp. But Adam and I are off together next weekend and I am so excited I could burst. Meanwhile, most of what we ate last week was truly fantastic. Highlights include…

Phin-brewed coffee with herbed cold foam.

Tropical yogurt bowl – Trader Joe’s guava and passionfruit Greek yogurt with coconut chips and fresh mango.

This hibiscus water was nice and refreshing.

How excited was I to find Dr. Brown’s in a 2-liter?!

IPAs brewed with milk sugar are my favorite. The Founder’s was good and the Evil Twin is god-tier.

Pretty much any time I go to any store for any reason I come out with at least one ice cream.

Caribbean beans and rice – brown rice cooked with coconut milk, red kidney beans, habanero pepper, urfa chile, garlic, ginger, and onion // with curry chicken breast – baked after marinating in goat’s milk yogurt, green Tabasco, lemon juice, Jamaican curry powder, and paprika // and roasted zucchini.

Salad night – baby spinach and spring mix blend with green onion, red bell pepper, avocado, coconut chips, roasted garlic salmon cakes, and homemade creamy passionfruit vinaigrette.

I made callaloo! A very loose take on callaloo but a good one nonetheless. Spinach cooked with green onion, yellow onion, habanero pepper, spices, coconut milk, and crab meat.

Often eaten with rice, I paired mine with chipotle cheese crisps.

Broccoli, Bacon, Black Sesame, Banana

Highlights from this week include…

Halo-halo inspired yogurt bowls. Vanilla skyr mixed with black sesame paste topped with banana, blueberries, and nata de coco.

Dinners were great this week; I made a big batch of maple tahini broccoli salad. Chicken parm sausages on brioche hot dog buns with ketchup, yellow mustard, and sauerkraut.

Meatball subs. I made baked turkey meatballs packed with garlic, parmesan, and urfa pepper. Plus Trader Joe’s crispy crunchy mushrooms which were 10/10.

Did I plan breakfast for dinner so that this iced macchiato milk stout would be on theme? Yes, 100%.

With cinnamon, pecan, banana pancakes. Plus turkey bacon, blueberries, sumo mandarin, and tons of maple syrup.

Show Me Potato Salad

Five highlights from the past seven days –

{1} A Cherr-Bear smoothie! Yes, I think I’m very clever. A remake of the smoothie I adored for Valentine’s – frozen dark sweet cherries, plain Greek yogurt, and chocolate milk.

{2} A fruit and nut yogurt bowl. Vanilla bean skyr topped with (frozen, reheated) blueberries, halvah, yellow raisins, and nut and seed trail mix.

{3} Whole Foods buffalo sauce soy nuggets and baby carrots, served with an array of dipping sauces.

{4} We made an epically good warm potato salad. Roasted potatoes and celery, hard-boiled eggs, cornichons, dill, mayonnaise, and whole-grain mustard. Plus honey maple smoked salmon.

{5} I made our tastiest no-churn ice cream to date!

Black sesame with layers of fudge sauce and whole-wheat matzoh toffee.

Chocolate-Covered Cherry

Highlights from the week included…

I was off on Wednesday (I work the weekend again) and I took myself into the city for Dough Doughnuts. This key lime pie doughnut – enrobed in toasted marshmallow!! – was 100% worth braving the cold.

We’ve been in a pandemic for more than a year now and Winter 2021 already feels too long so I am looking to maximize the joy in my life wherever I can; hence, I declared chocolate-covered cherry the official theme flavor of Valentine’s week and I have been eating the combo left and right!

Chocolate cherry coffee = Trader Joe’s cold brew, luxardo cherries, chocolate milk.

See also – vanilla milk and luxardo juice (plus a bit of red food coloring!) plus espresso blended with hot chocolate mix.

This chocolate cherry smoothie was hands-down the best smoothie I’ve ever made/consumed. TJ’s frozen sweet dark cherries, luxardo cherries, plain Greek yogurt, chocolate milk.

Ruby cacao covered cherries + strawberry and hibiscus chocolate.

Related note – I don’t even like Hershey’s Kisses but these lava cake ones are currently one of my top five favorite products.

10/10 ridiculously amazing cherry truffle ice cream.

All of our dinners this week were tasty and wonderful (and a snap to prepare!).

Meatball subs with roasted green beans. Turkey meatballs – stuffed with garlic, fish sauce, and urfa chili peppers – tossed in marinara sauce on a toasted hoagie roll with mozzarella. Our sandwiches were comically large but neither of us could stop from finishing them because they were so yummy!

Wild mushroom chicken sausages – topped with caramelized onion and yellow mustard / roasted broccoli / Lays chili chips.

Pizza casserole. I made a crust layer out of riced cauliflower (with spices, eggs, and cheese), topped with mozzarella, marinara sauce and caramelized onions, chicken sausage, and turkey pepperoni.
