Three Days Into Your Trip

Hello from Ohio.  I know I  haven’t blogged in a few days, these old folks are keeping me busy!

Adam had to stay in Buffalo (he’s going to be a doctor so we don’t feel bad for him, though we do miss him!) but Tuesday morning my mom, dad, and I logged 8 hours in the car.  After some tearful goodbyes, of course.

I did brunch on the road.  Rockstar.

Sandwich – turkey, sandwich thin, pepperjack.

Coffee with skim milk and three sugars.

We split a lavender cookie my parents brought from Canada.  The base was marzipan and the almond lavender combo was divine.

And finally, we made a pit stop at a gas station with the best soda fountain of all time –

I made a giant Coke Zero with Strawberry Fanta and was in heaven.

My grandma fed us a ridiculously tasty dinner.

Swiss Chicken,

fried mushrooms,

fresh corn,

and fruit salad.

Everything was amazing.  I went back for a few more ‘shrooms and half a cob more as well.

Pineapple upside-down cake for dessert.

And then I passed out in a food coma.

Wednesday morning I ate more fruit salad for breakfast.  Topped with boozy whipped cream!

Plus half a banana.

And coffee with skim milk.

Lunch was this fun honey lemonade.

And a turkey sandwich.

Toasted English muffin with thick sliced turkey, peach jam, and pimento cheese.

We ate dinner at Ruby Tuesdays.  Salad bar for everyone.

I ordered the Asian BBQ Salmon with grilled green beans for dinner.

Good, but my green beans are better!

And now I’m thinking about breakfast.

P.S. Hi, husband!!! We miss you bunches!

New To Us

Today was fun!  I love having visitors because it forces you to explore your own town.  We went to several new-to-us spots today and quite enjoyed them all.

Breakfast at Lake Effect Diner.

I’ve put off going for years but now we’ll be going back, soon.  I loved seeing this on the menu –

but I actually went with a vegan choice.

Vegan Burger – “house prepared veggie burger with blend of navy beans, barley, oats, vegetables, herbs, and accented with toasted sunflower seeds.”

I ate every bite, sans bun, topped with ketchup and red onion.

I also ate several bites from my dad’s turkey sausage.

I loved that menu was loaded with vegan, vegetarian, and poultry substitute options.

Lunch was consumed at the mall.  A piece of pretzel with tons of mustard.

Self-serve froyo, duh.

A little tart froyo, a lot of popping boba.

Plus an orange in the car.

Our main afternoon entertainment was wine tasting.

We went to Schulze, Niagara Landing, and A Gust of Sun and had many tasty pours.

We broke mid-tour to look at Lake Ontario.

Then finished up with a champagne toast.

Adam and I shared at several places so I think I drank a little less than last time.

We ate dinner at AcQua, which was good but not as good as it could/should have been.  Bread with butter to start.

I ordered the shrimp and scallop scampi for my meal.

I gave away 80% of my scallops and packed up 80% of my pasta for Adam’s lunch but adored the giant shrimp (dipped in cocktail sauce).

Dessert was the best thing going.

I ate half each of the last four macarons.

Pistachio, maple and apple, chocolate hazelnut caramel, and strawberry with marshmallow.  A delicious way to end the evening!

Sun Shine

My parents didn’t actually come to visit, not yet anyway.  They will be here soon (hopefully!) and it was a good day nonetheless.

Breakfast bowl.

Plain yogurt, sliced plums, fat-free sweetened condensed milk, and cinnamon.

1 – Cinnamon on yogurt is awesome.  2 – Having an open thing of SCM in the fridge has also been awesome.

When visitors come to town Adam and I like to pretend that we don’t regularly live in squalor so we cleaned the house.  Or rather, Adam cleaned the entire house and I made the bed and put away my own laundry.

Whatever, that bedspread hasn’t been on straight since the last time my parents were here.

For lunch we split a Mike’s Sandwich from The Spot.

I ordered, and when Adam asked me what we got I told him “a bagel with cholesterol, topped with cholesterol.”  Basically it’s an everything bagel with 2 eggs, melted provolone, and cream cheese.

It’s as amazing as it sounds.

Also amazing, was my workout.  60 minutes of hot yoga.  My standing series was pretty wobbly today but I made it further in a few of the seated poses than I have before.  I always leave the hot yoga classes feeling really, really happy.

Around 5, my dad called with some news.  The good news was they were still paying for dinner.  The bad news was they wouldn’t be eating with us.  I’m pissed that we lost a whole evening of visiting and fingers are crossed that they’ll be here at 10.

But we did have a fantastic dinner.  I keep a running list of ‘places to try’ on my cell phone and today we crossed off Sun Restaurant.

Sun sells Burmese and Thai cuisine and we tried a bit of both.

We started by sharing La Peth Thoat.  Burmese-style pickled tea leaf salad combined with crispy chana dal pea, fried garlic, onion, tomato, cabbage, peanuts, and lime juice.

I strongly liked it, Adam loved it.  The tea leaves and cabbage were delicious with the lime and the fried chickpeas (crispy chana dal pea) were fun to try.

I got Pad See U – ordered “Thai spicy” – as my entrée. Thai-style stir-fried wide rice noodles with thick sweet soy sauce, egg, broccoli, Napa cabbage, and bell pepper.

This was the best Thai food we’ve had in Buffalo!  My noodles were cooked perfectly and the dish was actually spicy.  I loved it.  I ate 2/3 of my plate and only managed to stop because I am so looking forward to having leftovers.

We split a Taro Custard for dessert.  Thai-style taro custard cake with coconut milk.

We’ve had this dessert at a couple of restaurants now and I think it’s just not our thing.  We both love the bites of taro but we always end up leaving food behind.

Please cross your fingers for us that my parents get in on time so we can have fun tomorrow!

Bowls, Bites, Beans, And Books By Burroughs

Hello, Sunday Monday!  Since I worked on Saturday and was off today, this was technically my Sunday.  Today I ate lots of good things and yesterday I cooked lots of good things.  Yesterday’s kitchen-time included coffee concentrate, dog treats, popcorn, and frozen peanut butter hot chocolate (most of those are being blogged later this week which is why I didn’t blog yesterday; whew!).

The coffee concentrate actually wasn’t very good, though the drink I made with it today was tasty.

Cold coffee instead of iced because I used the ice trays for the frozen dog treats.  In with my weak concentrate was skim milk, 2 Tbsp chocolate milk, and 1 Tbsp fat-free sweetened condensed milk.  With all of those tasty milks it kind of didn’t matter that the coffee wasn’t strong enough.

Breakfast was a two bowl affair.

A big bunch of green grapes.

And 5 oz of plain low-fat yogurt with 1.5 Tbsp Jif Chocolate Hazelnut Spread and a big sprinkle of cinnamon.

The chocolate hazelnut spread is basically a problem; I’ve eaten half a jar with a spoon in the past week!

Adam talked me into pizza for lunch.

Buffalo chicken,

blue cheese,

baby carrots.

I asked Zetti’s to cut my slice because I planned on only eating half, but as you can see that dream died before I even made it home.

Since I didn’t have to work, I filled my day with super important things like grocery shopping and laying on the couch to read an entire book.  It was an important book.

Sellevision is Augusten Burroughs‘ first novel and since I’m obsessed with his memoirs it’s been on my “to read” list for years.  I loved it.  I’m so awed by Burroughs that I have a hard time describing why he’s so amazing.  So instead of trying to recap the book for you on my own, I’m going to share an excerpt from one of his memoirs, Possible Side Effects.  (Things you need to know – Burroughs was an alcoholic.  In the chapter this excerpt is from he writes about drinking, not taking care of himself, wanting to write but not knowing how to begin, and getting locked out and having the locksmith think he was robbed because his apartment was such a mess.)

Instead of folding all the debris in the room into huge plastic trash bags, instead of giving myself a clean slate, I just sat down.  And I wrote:

“You exposed your penis on national television, Max.  What am I supposed to do?”

The line came to me automatically.  I didn’t look for it.  It was simply there.  So was the line that followed: “I didn’t expose it, Howard.  It just sort of … peeked out.”

A show host on a  home shopping channel being confronted by his boss, after the host’s penis slipped out from beneath his robe on the air, in front of millions of viewers.  Sooner or later, this was bound to happen, wasn’t it?  On live television.

Silly.  It made me laugh.  I hadn’t laughed for a year.  I kept writing.

I wrote until seven that evening.  Then I drank.  But I never reached my Place.  Instead, I thought about what I’d written during the day.  I went to bed.

The next day, I wrote more.  I started drinking later in the evening and I drank less.

By the third day, I wrote until midnight and I didn’t drink anything at all except lime seltzer water.

By the seventh day I had written a book.  At least, I thought it might be a book.  It contained one hundred and fifty pages and they were in order.  That’s more than a monkey could do.

I called it Sellevision.

I did not drink.

Love, love, love!

Transitioning now from books to beans… Adam loved our dinner.

I tried to update my recipe for vegan black bean burgers and ended up with a new, better recipe.

Cilantro Lime Black Bean Burgers, serves 4

  • 29 oz can low-sodium black beans
  • juice and zest from 1 lime
  • 1 Tbsp minced cilantro
  • 1 Tbsp chia seeds
  • 3 heaping Tbsp all-purpose flour
  • 1 Tbsp evoo
  1. In a large bowl, mash beans with a fork.  You don’t want to eliminate all of the whole beans (the texture will be better if you don’t!), just get things “mushy” enough that patties can be formed.
  2. Stir lime juice and zest, cilantro, chia seeds, and flour into beans.  Form bean mixture into 8 patties.
  3. Heat evoo in a large skillet over medium-high heat.  Working in batches, cook bean burgers for two minutes on each side.

I served our burgers on big, fluffy buns, with a slice of tomato and pepperjack cheese.

And tomorrow I’m going to try something really fun with the leftovers!

A Friday Saturday Secret

I don’t always like to blog about things right away, but it seems like it’s time to share that…. I got a job!  I will be working part-time at a local toy store from now until my internship schedule makes it impossible.  And I’ve actually been working since Tuesday!

It is freaking fabulous to be employed again but I’m not gonna lie, being on my feet all day is rough.  I haven’t worked out all week and today was the first day I was able to cook dinner after a shift.  I’ve done retail before, and been a waitress and a teacher, but I guess that three years of full-time schooling (sitting) has left me weak.  It doesn’t help that I am ridiculously out of shape.  My aching back is going to give me some major motivation to work on my ab muscles.

Friday morning began with a dermatologist appointment and I ate a to-go breakfast in the car.

An Apple Cinnamon GoGo Squeez.

A White Chocolate Macadamia LUNA Bar.

And a pack of Skinny Cow Milk Chocolate Dreamy Clusters.

Those products were all linked because I’m recommending that you try them all.  Good reviews all around.

I got a good review at the doctor’s office too – the husband’s and my skin checks were in the clear, figuratively speaking.  I’m going to have to see a surgeon about the (benign but painful and ugly) bump on my hand but the dermatologist did say it’ll probably be fully covered by insurance.

I had a mug of hot chocolate before heading to work.

Seven hours later I was ravenous and ready to head home.  I got hot bar from the co-op and finished the entire box on my walk!

It’s a good thing I ate in-transit because I passed out the minute I got home.  Actually, I got in a giant fight with the husband and then passed out, but it’s not polite to blog about that.  My tired back may be making me a bit cranky.

I had an earlier shift this morning so Adam made a date of walking me to work.  We stopped at the farmers’ market for breakfast along the way.

That toasted pecan caramel scone from Chow Chocolat‘s booth was goo-ood.  With a Lori’s Lemon Honest Tea.

I also ate this baggie of grapes right when I got to work.

I slept without my retainers last night (I passed out before I could get them in!) so I skipped lunch today to keep them in for a longer period.  By the time my 8-hour shift was over I was ready to eat.

We had to run some errands when Adam picked me up and I ended up buying the cheapest – most embarrassing – snack I could find at Target.

They actually weren’t bad.  And I’d like to think they helped give me the energy to cook dinner today.

On the menu was Tom Kah Gai Soup.

I followed the recipe (mostly) from Quick and Easy Thai and found success.

I actually didn’t love-love it because this chicken coconut soup isn’t my favorite, but Adam said several times that this was the best thing I’ve ever made!

I gave part of my portion to the husband (he finished almost the entire batch!) and ended up grabbing a turkey sandwich as well.

My dessert was a treat that Adam made me this afternoon.  I bought a ton of berries on sale last week so he dipped me three chocolate-covered strawberries.

Soup and Sandwiches

It’s almost 11, I haven’t showered, and our house-sitter gets here at 4am tomorrow.  Whoops?

My retainers are killing my mouth so today was pretty boring.  I hope I feel better enough in the next 24 hours that I can enjoy some salt water taffy this weekend.

I overslept and missed my cool-weather window this morning and had to workout at the gym.  Instead of being annoyed about the trip I made it into an experience.  Leisurely walk to get coffee, sip on my walk to school, then gym it.  The coffee came from 7-11.

Half French vanilla coffee (unsweetened) and half vanilla bean cappuccino (sweet).  Delicious!

My workout was good too.  I did 10 sets of 2 minutes running/3 minutes walking on the treadmill.  50 minutes and 3.9 miles.  Plus a quick session of stretching and strength moves.

Lunch was a cold slice of cheese pizza.

I got some really good news while I was at school and almost had ice cream to celebrate but something about being in a bathing suit in 24 hours made it less appealing 😉

Wonder of wonders, I got my packing done in the afternoon.

Usually I wait until the middle of the night so this felt like a huge accomplishment.

Dinner made use of this Rothschild Roasted Red Pepper & Onion Dip.

For two, I mixed the 3.75 oz jar with 4 oz of shredded sharp cheddar and a big dollop of Miracle Whip.  I spread my mock pimento cheese on 4 slices of whole grain bread and then pan-fried our sandwiches in a bit of butter.

We dipped our grilled cheeses into the soup.

Growing up in the Caribbean, this was a meal combination I’ve actually never had before!

Aching mouth or not, I knew that my day was far too light in fruits and veggies so I made us after-dinner smoothies.

Silk Vanilla Almond Milk, chocolate whey protein powder, and frozen raspberries and spinach.

It tasted about as good as it looked (i.e. not very) but it was an easy way to get in some nutrients.

I should probably get to bed!

Wakeful Weekend

In solidarity with the husband I kept his vampire/emergency room doctor schedule and stayed awake all Friday night.  I ate a big bowl of popcorn, discovered Solitary, read a book… it was great.  Except that the rest of the weekend ran together in a big fog so I guess it was not so great.  I didn’t do much, but here’s what I ate Saturday and Sunday.

Saturday.  I ate a bowl of Maple Brown Sugar Frosted Mini Wheats and All Bran Bran Buds with skim milk for breakfast.

Split a PB & J’s candy bar with Adam.

This was super fun.

Made a to-die-for bagel sandwich.

A toasted Cinnamon Raisin Bagel Thin topped with a wedge of Laughing Cow Garden Vegetable Cream Cheese Spread (two thumbs up), turkey pepperoni, and melted white sharp cheddar.

Discovered another new froyo place.

I got coffee and coconut yogurt topped with toasted coconut, oreo, marshmallow cream, hot fudge, and candy-coated sunflower seeds (<– freaking awesome topping idea!).

And I ate a big thing of black bean nachos for dinner but was so tired at that point that I forgot to take a picture.

Sunday.  Here is how Adam’s Sunday morning went – drive home from the hospital / say hi to me and tell me about how his night went / fall asleep in bed without covers because I had all of the sheets out with me on the couch

Here’s is how my Sunday morning went – wake up and realize it’s light out (think “don’t freak out) / check my phone and see that it’s 9:30 am (think “don’t freak out”) / notice a 6:30 am text from Adam saying he was heading home / freak out / scream, waking up the husband in the bedroom

Apparently I was talking to him in my sleep!  I used to do that a lot of mornings in college but back then it was more inconvenient than scary.  I still don’t remember talking to him but I am so flipping glad that he was home safe.

For breakfast I made the husband some “I’m Glad You’re Not Dead Honey Roasted Peanut Butter.”

1 lb of TJ’s honey roasted peanuts, 3 Tbsp canola oil, 3 Tbsp honey.  I took several taste-tests for quality purposes (about 2 Tbsp worth) and it was delicious.  I washed it down with a pear that I somehow didn’t photograph.

Lunch was an Annie Chun’s Pad Thai Noodle Bowl.

It was good but not “60% of your daily value of sodium good,” yikes!

I spent the afternoon exploring the Allentown Art Festival with a friend.  We didn’t buy anything but it was fun to wander; almost six miles were covered on foot!

Dinner was leftover soup.  Topped with tons of lime and a dollop of plain Greek yogurt.

We have one more serving left and I’m looking forward to it.

I’m not quite full though and if I finish tomorrow’s assignment in time I’m going to grab a snack.

Bike Then Bar

Today was the first day of class and I still managed to get in a morning workout!

Bike Or Bar, the new spinning gym on Elmwood, offers a free trial class to all newbies. A friend and I decided to try it out with 6am spin.  I was worried that the wake-up would be brutal but I was so excited that it was ok.  I used to hate spinning so my expectations weren’t very high but I ended up loving it!  The intervals were a lot of fun.  The instructor had great energy and I enjoyed the modern music.  A mega plus is that the space is set up to mimic a bar; with the dimmed lighting, strobe lights, and loud music I didn’t feel on display like I do in stark white gyms.  I can’t afford another membership right now but if we had more money I would definitely go back!  60 minute spin class.

The real morning excitement was getting to pick Webster up from boarding.

The vet’s office was closed for the holiday and the apartment has felt empty without him the past two days.

Breakfast was a green pear,

and a Banana Foster Lara Bar Uber.

A quick note on the bar – this was a free blog sample.  Lara Bar sent me the flavors from their new Uber line to try out.

The Uber line is supposed to be sweet and salty with big pieces of fruit and nut.  It delivered!  Just look at this texture –

There were lots of nuts and big chunks of chewy banana.  The flavor was salty and just a little sweet and you couldn’t taste the date at all (the only thing I dislike about regular Lara Bars is the overwhelming date flavor).  I can’t wait to try the other three flavors.

When we were at spin class Janessa gave me the awesome news that class didn’t start until 9 am today.  We took advantage of the extra time and went to Dunkin for coffee.

I’m not really sure why the woman gave me so much milk.  I got a large latte with skim milk and coconut/cinnamon syrup.  ‘Twas good.  And fun to have done spinning and coffee before 9am.

Summer school is going to suck.  That’s all I’ll say about that for now.

For lunch I packed a turkey sandwich.  Applegate Farms Smoked Turkey, French Onion Light Laughing Cow, and a Cinnamon Raisin Bagel Thin.

After school I made my final trek to the Sprint Store.  I don’t know if I’ve mentioned all of my visits but I’ve had to take my phone in three times over the past two weeks.  This was the last time every because today I picked up my *new* phone.  And since I had to come in so many times before the waived all fees and it was free!

I sat at Panera setting up my phone (my new phone! for the final time!) and ate a chocolate croissant.

It was surprisingly good.  Chocolate croissants are a favorite food that I almost never eat.

When dinner time rolled around I did some hardcore wife-ing.  I roasted a whole chicken!

I followed a recipe from Kitchen Counter Cooking School and it was easy as pie chicken.  We started with a 3 lb 8 oz free-range bird.  I made a mixture of butter, lemon juice, and fresh rosemary that I rubbed under and on top of the skin.  Then I stuffed the inner cavity with the juiced lemons and a few bulbs of garlic.  Baked at 425* for 1 hr 15 minutes with occasional basting.

It turned out wonderfully!

I ate a chicken thigh sans skin.

With sides of roasted zucchini,

and sliced carrots cooked in brown sugar and butter.

It was a winner of a dinner.

Though not that appropriate for the weather.  Bring on the chilled salads and gazpacho.

Smoothies for dessert helped us to cool back down.

For two, I blended – 1.75 cups Silk Vanilla Almond Milk, .25 cup frozen blueberries, 1 large frozen banana, 3 Tbsp malted milk powder, and 1/2 Tbsp almond extract.

It was a good mix.  I need to remember my almond extract more often.
