Vegan Visit

A road trip is not an easy time for a restricted diet, but with a combination of preparation and an understanding family I made it work.

I made sitting in the car for six hours work by dressing in comfy-cute clothing.

Plus my driving moccasins.

<– name that show!

Food from home was for breakfast.  A sandwich of tempeh, Smart Balance, and strawberry jam (a killer combination) on a Sandwich Thin.

A small apple.

A piece of leftover Halloween candy.

And a sugar-free Red Bull from a gas stop.

I have been seriously tired lately; I need to make sleep a priority next week or I should basically just buy stock in energy drinks.

For lunch I was jazzed to spot a Sheetz.

I had a medium soy milk latte with marshmallow syrup.

I’m doubtful that the syrup was actually vegan but I’m taking a loose approach to the challenge on this trip.  The coffee was delicious with tons of foamed milk and I was glad I got it, vegan or not.

Plus a veggie burrito.

This was not delicious.  I made myself eat half so I wouldn’t be too hungry for dinner but if there had been other options I probably would have tossed the whole thing.

For dinner we got Italian food with my in-laws.  P.S. We are staying with Adam’s sister and her husband and getting to spend time with my two nieces is making my ovaries hurt; they are so flipping cute!

A piece of bruschetta to start.

The waitress was very nice about bringing me new tomatoes when the first batch came out sprinkled with cheese.

And two slices of veggie pizza (sans cheese) for dinner.

Healthy, vegan, and tasty; I’ll take it.

I’m Typing With One Hand…

…so I’ll keep this short.  Speaking of keeping things, Adam will have to keep me, my surgery went off without a hitch!

It wasn’t a big deal – I just had a benign keratosis removed from the back of my hand – but they sure were dramatic about it.

I had to wear a gown, and get wheeled into the OR.  And look at my giant bandage –

they called it a “sympathy cast!”  I’ll have my stitches in for ten days and then I’ll be right as rain.  But unfortunatly they told me that I’m not allowed to work out while my stitches are in.  I know I haven’t been working out anyway but I really was excited to start again!  Ten days…

They told me to take it easy after surgery but I actually had to head over to a friend’s house to work on a group project.  At least I got some Moe’s out of the deal.

I got a naked burrito (aka a less expensive rice bowl) with black beans, lettuce, green pepper, onion, mushroom, corn salsa, and guacamole.

Delicious.  Moe’s is a great option for Vegan Month.

Resting up didn’t happen the rest of the weekend either, I worked both Saturday and Sunday.  Saturday morning was rough (on top of everything else we started an hour earlier than usual), but at least my shirt matched my bandage!

I ate an apple on the walk to work.

And a drank a Rockstar to help keep myself awake in spite of my pain medication.

My medication makes me feel pretty funny – nauseous and tired and all sorts of loopy – so I never ended up getting lunch at work.

Dinner was a buffalo seitan wrap from the co-op.

Plus a roasted potato.

Those fries are cut so nicely because the husband did it for me.  He’s been so nice helping me while I fumble around!

I did manage to catch up on some sleep this morning.  Thank goodness for Daylight Savings.  Even with the extra hour, all I managed to accomplish today was a shift at work and switching out my summer and winter wardrobe.

Breakfast was an amazing bowl of cereal.  Blackberries with cinnamon sugar, 1 serving each All Bran Bran Buds and Cascadian Farm Dark Chocolate Almond Granola, and Blue Diamond Unsweetened Vanilla Almond/Coconut Milk.

I had the granola from the HLS and have wanted more ever since!

A very late lunch was purchased at the co-op after work.  Broccoli salad and vegan mac and cheese with veggies.

The mac was so tasty that I almost made Adam walk back and get me more!

Instead I was basically stoned on pain meds all evening and was a total weirdo.  Dinner just didn’t happen, though I did eat multiple desserts.

A bowl of melted peanut butter with powdered sugar and cocoa powder.

A Cara Cara Orange.

And a few pieces of primrose oil old fashioned candies.

It’s been a weird day.

Past and Future

Wow; long time no blog!  It’s been a week, which feels crazy.  Last weekend, Adam was out-of-town on interviews and since I didn’t want to broadcast that all over the internet I kept mum.  Then the week was a busy disaster.  One night I came home from work and got straight into bed at 8:20.  One night I drank too many pumpkin beers and got a little drunk.  One night I was out late working on a group project.  And last night the dog threw up and then when we went to clean up I threw up.  Good times.

The Past: Some Things Worth Highlighting from the Last Week

Annie Chun’s Spicy Chicken Ramen.

This soup came together in a snap and it felt fairly authentic.  It was spicy without making you want to run for the gallon of milk.

Another apple-cereal bowl.

This winner creation had steamed (aka microwaved) Honeycrisp apple with Special K Vanilla Pecan, All Bran Bran Buds, honey roasted peanuts, tons of cinnamon, and skim milk.

The new gelato place on Elmwood has pumpkin.

It was good, but the coconut half was even better.

These two pumpkin beers get two thumbs up.

The Long Trail was good, the Saranac was great.

The Potato Chip chocolate bar from Chuao is ridiculous.

Such a perfect melody of salty and sweet!  And the crispiness was fun too.  Now I want to try all of the other flavors!

Arby’s is selling a Peppermint Stick Swirl Shake.

If you like candy canes (who doesn’t?!) you’ll love it.

Mr. Pizza sells a veggie pie that is great.

It was packed with veggies, including green olives!

The Future: A Vegan Challenge in November

Yep, starting next week I’ll begin my annual 1-month vegan challenge.  One of my IRL friends agreed to do it with me and I’d love to have some of my internet friends join as well.  Think about it???

TV Dinner

I think this is my easiest week thus far this school year.  I actually watched tv this evening!  I know that I really should have been working, but at least for this week it’s not the end of the world that I didn’t.

I was starving this morning and ended up eating all of my breakfast and my lunch within the first ten minutes of class.  Müller Passion Fruit Peach Früt Up Yogurt.

A Clif Grape Fruit Rope (FNCE sample).

And a Jalopeño Popper Burger on a Sandwich Thin with pumpkin spice cream cheese.

This was such a good sandwich combination.

I had a long morning of classes and then a doctor’s appointment – with a super long wait – in the afternoon.  Thankfully my appointment took me near Gin Gin, the restaurant with bubble tea that a customer raved about at work last weekend.

It was worth raving about!  The used two kinds of boba, regular and popping!

The bubbles were in a red bean milk tea, and that was delicious too.  I’m glad I took a chance on something different.

I came home with food too.

Hot and sour soup,

and Mongolian chicken (with carrots, cabbage, and a spicy sauce) with white rice.

I ate about half of each and then Adam ate the rest.

Plus ice cream (about a serving) straight from the pint.

With a side of “Private Practice,” “Castle,” and “Royal Pains.”  ‘Twas a good night!

Three Day Weekend

My “three-day weekend” only refers to blogging.  I still went to school on Friday.  And work.  And volunteering and work on Saturday.  And school and work on Sunday.  I guess it actually wasn’t a very relaxing weekend!  I did take pictures, but recapping every single thing I ate sounds pretty tedious.  Instead, let’s focus just on things that were fun and sweet!

Sweet Eats from 10/12, 10/13, and 10/14

An apple, cereal, cinnamon bowl that quickly became one of the best things I’ve ever eaten.  Certainly the best bowl of cereal that’s ever passed my lips!

1 serving each of Vanilla Almond Special K and All Bran Bran Buds, topped with 2 Tbsp Skippy Natural Super Chunk with Honey pb and lots of cinnamon.  I microwaved the bowl for 30 seconds to get everything warm then poured on skim milk.  Ridiculous!  Expect to see many repeats of this.

White chocolate candy corn M&M’s.

These were delicious and I have no idea why they aren’t listed on the website or available at more stores.  I found my bag at 7-11 and snatched it up.  The chocolate isn’t sickly sweet like some white chocolate can be and the candies really do taste like candy corn!

Pumpkin Butterscotch Bars.

Exactly what they sound like.  I made a batch on a whim and I’ll be sharing the recipe tomorrow afternoon.

Red velvet hot cakes from Nelson’s Ridge Diner.

“Red velvet hot cakes served with a cream cheese icing, powdered sugar, and whipped cream.”  Adam and I shared a plate and neither of us could stop swooning!  In addition to being amazing, these were the best pancakes I’ve ever had.  We were also pretty intrigued by these….

What was sweet about your weekend?

Food Fun At FNCE In Philly

I’m home!  If you didn’t know, I spent the past five days in Philadelphia attending the Academy of Nutrition and Dietetics’ (AND) Food and Nutrition Conference and Expo (FNCE); alphabet soup, much?!

I went with two fabulous friends and we had a great time.  Our days were packed (I need a vacation from this vacation!) and I am very glad I made the decision in advance not to blog.  In fact, I’m barely going to do a recap.

I would love to talk about the sessions I attended, and all of the things that I learned, but I have homework to catch up on, a shift at work this evening, and a huge test on Friday, so I doubt it’s going to happen.

I do have a few shots of some of the fun food though.

Amazing (2nd only to my favorite place in Brooklyn) eggplant pizza that we had the first night when we stayed with one of my friends from high school.

Taro milk bubble tea.

Hot, spiked, apple cider from a street fair.  We also had pumpkin beer and apple pie shots; we were drinking seasonally this trip.

The expo –

My swag –

It was amazing/ridiculous and my friends and I ended up offering a bag of food to a man I saw digging in a trash can as we were walking from the conference to our car.

Pumpkin pie frozen yogurt.

The best espresso I’ve ever had.

Sidenote – I drank my coffee holding back tears.  We went to eat a vegan cheese-steak on our last day in town and found out that the place was out of seitan!

The Chobani bar at the expo was hands-down the best part.

This Strawberry FrozFruit was a very close second.  My favorite thing in high school was the coconut version.

And a final treat at home – tiny chocolate hamburgers that I brought back for the husband.

Who’s hungry?!

Even My Food Was On The Move!

Oh boy!  I don’t have a lot to show for today because the whole day was crazy.  I was running around like a chicken with its head cut off from 7 am to midnight.  Going out-of-town for five days will make your to-do list a little insane.  And I haven’t even started to pack; mostly I was taking care of school errands.

Breakfast was an energy drink during class.

And I drank 4oz of Chamaeleon Cold Brew coffee over ice with skim milk and a chocolate pb magic straw on my walk to work.

Solid food didn’t happen until dinner; I was honestly too busy to eat all day!

Thankfully dinner was fun, filling, and a line through my to do list birthday goal list.  Adam came into the store just before we closed and told me to hurry because he had a surprise for me.  My bosses guessed a new puppy (if only!), I figured it would be something pumpkin flavored, and my co-worker had her money on booze.

None of the above.  He hurried me over to Delaware Park because he had spotted Lloyd’s Taco Truck and knew a food truck visit was on my list.

Thanks, honey!

I ordered the Tricked Out Nachos and was not disappointed.

White corn chips served with salsa roja, homemade Lloyd queso, chimichurri sour cream, brined jalapeños and pickled red onions, topped with stewed black beans.

Even with a day’s worth of hunger I couldn’t quite finish that monster serving!

For dessert we split the Puddin’ Cup.

Rich chocolate puddin’, dulce de leche caramel, and pumpkin seed brittle.

I guess I got my pumpkin after all!

Are you a food truck fan?  What’s the tastiest item you’ve gotten on the go?

Hello, Pumpkin Month!

I realize that open season on pumpkin began a few days ago, but work with me here.  My first day of the month was so fabulous that I couldn’t skip blogging it, even if a few days have passed.

I did, however, have my giant (soul-crushing) exam that morning so I started my day with a coffee energy drink from the vending machines.

But then I moved on to the juiciest, crunchiest, crispiest Jazz apple of the year.

Once home, I put the first wave into the fridge.

And made myself a salad.

– romaine topped with a heaping Tbsp each ground flax, buckwheat groats, and peanut sauce –

And soup.

– seaweed ramen –

I picked up a short, non-fat pumpkin spice latte on my walk to work.

Adam met me at the end of my shift and we walked over to Blue Monk so I could get the beer I’ve been coveting since September.

Southern Tier’s Pumpking!

It is sweet and squashy and smells like the best dessert you’ll ever eat.  <– which is funny because I actually hate pumpkin pie

And then I was wasted because apparently I’m a light-weight like no other.  In spite of my obnoxiously loud giggles, we forged ahead and got food too.

An appetizer of marinated olives and pickled veggies with sourdough bread.

I ate ~25%.

And we split the veggie burger.

– Artichoke and chickpea patty with fresh tomato jam, cilantro aioli, on a whole wheat bun and sweet potato fries –

I ate 50%, minus most of my bun.

On the walk home we stopped at Spot for fallish desserts.

My caramel apple cupcake was old and stale (I ate ~33%), but it was still a fabulous end to the evening.

….

And then Tuesday was my first clinic day at the hospital and it was ridiculous and I ate all of my meals on the go, with no camera, the end.
