I am missing many photos from the start and end of this week, but I did a pretty good job capturing the middle days.

Monday my camera was dead all afternoon and through the evening.  You didn’t miss much though, I ate two grilled cheese sandwiches in bed.  Then I ate a second dinner of Thai take-out.  Also in bed.  Related fact – I have been burning through episodes of “Body of Proof” at an alarming rate.  It’s bad; not just the fact that I’m watching the show obsessively, but the show itself, is bad.

Tuesday was frozen shrimp goyza from Trader Joe’s.

We sautéed broccoli and bok choy with ginger, garlic, rice vinegar, and soy sauce and served our pan-fried goyza on top.

I woke up early Wednesday morning to hard-boil eggs for salad.

This was eggs with minced red bell pepper, mayo and a healthy dollop of sesame gojuchang which gave the salad a great spice and a little bit of smokiness.

Roasted green beans have always been one of my favorite foods but now that I’ve started topping them with sliced shallots they’re on a whole new level.

Thursday night I was way less pathetic, but I still don’t have any pictures.  A Buffalo friend came into town and took me to a wedding.  The event was in LIC at The Foundry and it was beyond gorgeous but way too dark for food pictures.

I ate hummus, cocktails, mini cupcakes, and all the other wedding trappings but the only photo I have is a blurry shot of my friend and me.

I took today off to spend the morning with my girlfriend before she drives home so I have this whole Friday ahead of me to watch Body of Proof do fun stuff in the city!

Weekend Highlights – Rockaway Beach And Roberta’s

We have got to squeeze every last drop of fun out of this summer before fall hits.  We made the most of our weekend with a beach trip and ice cream all day every day.

I’ve been crazy hungry lately so these pictures are just a drop in the bucket, but here are the highlights…

It was amazing, if you were blindfolded you still would totally taste rye bread and thousand island dressing.  If they were kettle chips instead of the flimsy regular kind they’d be my new favorite.

Lemon Pepper Baked Shrimp with shredded Brussels sprouts and barely.

Then we had big salads with red curry turkey burgers on top.

Arugula blend topped with TJ’s Asian Sesame Vinaigrette, sliced cucumber, and baked shredded Brussels sprouts and broccoli.  Two notes – 1) baking the shredded B sprouts is my new favorite thing; 2) I bought TJ’s Thai-style chili and lime cashews to put on the salads and they were so spicy even I couldn’t eat them.

The patties were lean ground turkey with tons of parsley and green onions, soy sauce, rice vinegar, brown sugar, red curry paste, and ground ginger.  Cooked in coconut oil.

We were supposed to have this meal two nights in a row but we snacked on the 1st round of patties while we assembled the salads (and the dog ate an entire patty that fell on the ground!) and there ended up only being enough leftovers for one.  Really I won out though because this chile rellano from TJ’s was darn good.

Criminally Good

Is there some kind of “Criminal Minds” rerun support group out there?  I am a woman obsessed.  I need to finish the old seasons in a hurry so I can start going to bed at a reasonable hour again.

Community Coffee’s Dark Roast (part of a set of free samples that I have continued to love) brewed double strength with low-fat milk, ice, and a scoop of dulce de leche!

It’s obviously no fun that my husband regularly works nights and weekends, but it is nice that his schedule allows us to occasionally go on mid-week breakfast dates.

This week I was all about the sandwiches and I didn’t have many of my usual yogurt bowls so I had to make this one count.  Plum on plum!

Chobani’s new 2% Plum Greek Yogurt with chopped up pluots and KIND maple chia granola.  The yogurt wasn’t bad, but wasn’t as special as I had hoped; a pretty plain base with chunks of plum throughout.

I got an okay sandwich in the cafeteria.

And brought a fantastic sandwich from home.  TJ’s sliced sourdough with Applegate smoked turkey, haloumi cheese, and olive oil mayo.

A kitchen-sink leftovers salad whose components ended up pairing together perfectly.  A big bowl of lettuce topped with TJ’s sesame soy ginger vinaigrette, Applegate chicken hot dogs, peanuts, edamame, and Persian cucumbers.

This meal was super simple but it was the tastiest of the week.

TJ’s frozen gnocchi with tomato sauce and mozzarella didn’t knock our socks off, but for frozen gnocchi that comes together in 7 minutes it was certainly fine.

But this spinach is one of the best damn things I’ve ever made.  Fresh baby spinach (8 cups worth that cooked down into practically nothing!) steam-sautéed with salt and evoo with low-fat sour cream, minced garlic, raisins, and toasted pine nuts tossed in for the last few minutes of cooking.

I seriously would not shut up about how yummy this was – I even paused “Criminal Minds” to rave about it!

Weekend Wrap-Up; Marshmallow Madness

I am not 100% yet, but I am feeling much better. 90%?  Poor Adam, though, has gotten my cold x2, complete with an ear infection.  It’s put a real damper on how much sympathy I’m able to get!  At least we were both in the mood for a quiet, lazy weekend.

Friday at work I had a Coconut Chocolate Chip Clif Bar with WF’s Citrus Blend Italian Sparkling Mineral Water.

Don’t get me wrong, nothing tops Diet Coke, but I am really loving those sparkling waters.  The strawberry flavor is the best.

Then for lunch, Grape Chobani with KIND Raspberry Chia Seed Clusters, an apple, and a Vita Coco Café.

Again, not as amazing as iced coffee, but the espresso coconut water mash-up is damn good.

And I did have iced coffee this weekend.  With skim milk and vanilla creamer.

I made baked shrimp!  Shrimp, chopped bell pepper, evoo, fresh cilantro, salt, smoked paprika, cayenne, lime juice, and a sprinkle of chopped butter, baked at 425* for 12 minutes.  Served on top of jasmine rice cooked in chicken stock.

This was tasty, healthy, and oh-so quick to prepare.  Triple win.

Sunday I started dinner in the car home after the world’s longest trip to Trader Joe’s.  Apparently people are freaking out about our potential blizzard.  By the by, please, please, please cross your fingers that it doesn’t blizzard!

My mother-in-law sent us a cute Valentine’s card and some strawberry Peeps.

They were yummy, but the marshmallow extravaganza was just beginning… we also had a big container of fluff!

So I made the very best brownies I’ve ever tasted.

In the meantime, I did something else with the fluff.

Oh yes, I did.  Malted Marshmallow Coffee Creamer.  If you put skim milk, marshmallow fluff (1:2 ratio with the milk), and malted milk powder (1:4 ratio with the milk) in the blender you can put it in your coffee and pretty much die of happiness.

We used 2 cups skim milk, 1 cup fluff, and 1/4 cup malted milk powder, but as long as you follow the ratio above you can make a smaller or larger batch, no problem.  I highly recommend it!

Goodbye, 2014! Weekly Wrap-Up

I cannot believe that it is almost 2015!  Doesn’t it sometimes feel like life is flying by?  I hate the idea of waking up late and tired in a new year, so our big plans for NYE consist of cuddling on the couch and trying to get in bed extra early.

Weekly Wrap-Up; Coffee Crazy

Soooo, that title probably could have worked for any week this year, huh?  What can I say, the addiction is not lessening.  I will totally cop to the fact that I allot more of my budget to coffees than clothing or shoes {priorities}.

DSC02526I was randomly extra hungry on Thursday morning so I went down to the cafeteria for a late breakfast.  I ended up getting slammed with follow-ups all afternoon and having to skip lunch, and serendipitously my late breakfast kept me from chewing off my own arm.

Gotta start with the coffee line-up!  From worst to best.  Starbucks Hazelnut Doubleshot was very meh.

Adam has a weird obsession with Au Bon Pain and he sweetly brought me home one of the pumpkin bunt cakes he’s been loving recently.
