Happy Hanukkah!

I know I’m a day late on the holiday wishes but 2nd-out-of-8 is not so bad.

I’d love to tell you that I’ve been in a flurry of studying, but in fact I worked almost 22 hours between Friday and Saturday.  I am exhausted, cranky, and not as prepared for tomorrow’s exam as I’d like.  But it is what it is and I’m just glad I have a job.

Some Friday/Saturday Highlights

What I Was Up To Today (Sunday)

Other than oversleeping and wasting some time in the morning, today was nice and productive.  Apparently my body just doesn’t want to study before noon!

I was excited to try this Oro Blanco for breakfast.

Whenever I spot something I haven’t heard of before at the grocery store I just have to buy it.  Adam and I used to love Ugli fruit when we lived in the city and I was hoping this would be similar.

The Oro Blanco had a very thick layer of skin and pith like the Ugli fruit, but the flavor was not my favorite.

It was bitter in a way that made my stomach hurt and I ended up throwing it out after three segments.

Instead I split a Mike’s bagel sandwich with a friend.

The Mike’s sandwich is a bagel topped with cream cheese, provolone, and a fried egg.  It is amazing and ridiculous.

We spent almost six hours at The Spot so the sandwich was only the first of three orders.  I also had an iced coffee with skim milk.

And shared a slice of cheesecake (with a pretzel crust and chocolate ganache!) with a friend.

I just have to say – thank goodness for my great groups of friends or I would not have accomplished a damn thing today!  We went through the notes as a group and it was so helpful.  Not that I’m feeling all that great about a comprehensive exam in one of the hardest classes I’ve ever taken!

Both of the dinner components were very tasty.  I bought a bunch of frozen vegetables on my last grocery trip and I’m actually looking forward to using them.  And I have half a box of blintzes left that for which I need to purchase sour cream.

Dessert was very unnecessary, but also fun.

Biscoff Buddies!  I have a special version of “puppy chow” in the works and since I’ve never actually made puppy chow before, I wanted to do a trial run with a single serving batch.

For this version I used: 3/4 cup honey squares, 1 Tbsp semi-sweet chocolate chips, 2 Tbsp Biscoff spread, and 1 Tbsp powdered sugar.

Who else thinks I shouldn’t be blogging at midnight when I have a giant exam at 7:40 am?  Whoops!

Sunny Sunday Monday

We had a high of 57* today, wheeeeeee!  And tomorrow promises to be in the 50’s as well.  I’m hoping to take the dog on a glorious long walk.

Today’s exam was thing 1-of-6 on the “big things left in the semester” list.  So that’s where I’ve been.

Yesterday I was actually busy being sick.  I woke up with a cough and a constantly running nose and even my boss said I looked terrible.  I didn’t have it in me to make or eat food before my shift at noon.  When I got home at 5, I had some spicy avocado inari.

So flipping good; I love how the tofu skin is a little bit sweet.

I also ate the best dipping plate I’ve had all year.

This apple variety – a hybrid cross between a Japanese Orin and a Golden Delicious was new to me and I loved it.  Perfectly sweet!  I have another one in the fridge and I can’t wait to eat it.

2 Tbsp crunchy peanut butter melted with 1 Tbsp Biscoff for dipping.  Plus a spoonful straight from the jar.

but I was not a fan of the Tofurky Pepperoni Pizza.  The “meat” was way too soft and the “cheese” did not melt.

I could only eat two bites of pizza before calling uncle.  It is worth noting that Adam clearly thought it was fine because he ate the rest of the pizza!

I ended up supplementing my green beans with Chinese take-out.

Crab rangoon was the perfect one-handed dish for study-eating.

Soon after dinner, I realized that the only way I could study was if I had a constant stream of food going.

I also ate a bowl of baby carrots and these sugar-plum candies from Wegman’s bulk bins.

The sugar plums were quite good, I recommend buying some if you spot them at your store.  There really was plum flavor, not just one note of sweetness.

Studying went about as well as could be expected when trying to cram with a sudden cold.  But it was what it was.

P.S. Adam decorated the house for the holidays while I was at work because he is the best.

I got myself up at 6 this morning and {hallelujah!} discovered that I wasn’t actually sick any more.  I don’t know where my cold went but I hope it stays there! {knock on wood}

I drank a mug of hot chocolate while I did some clear-headed studying.

And then I was off to take my exam.  It didn’t go as well as I could have liked (do they ever?!) but it certainly could have gone worse.  Phew!

After my classes I did something amazing…

I worked out!  60 minutes of hot yoga was heavenly.  And the session was nowhere near as hard as I’d worried it would be after more than a month of no exercise.  <– yikes!

I have a 2-month unlimited pass that expires soon so I had to go to yoga today, looming finals or not.  I probably will only go once or twice more in the next two weeks though because I really do have to study.  But as soon as break begins I am looking forward to making the most of my pass!

My six+ hour shift went well, though I did have to deal with a bleeding lip since my body waited until the warmest day of the winter to rebel against the cold.  I got a Starbucks Strawberry Lemonade Refresher while I was out buying emergency Chap Stick.

Finally home, I did eggs for a quick dinner.

– – Cooked 8 oz package chopped seitan in 1 Tbsp Earth Balance until crispy, set half aside for tomorrow.  Add ~ 1 cup frozen spinach, chopped cilantro, 1 tsp evoo, 1/2 tsp sugar, salt,  and a few dashes of Sriracha.  Scramble in 2 large eggs and 1 egg white plus 2.5 oz Cabot’s 50% Reduced Sharp Cheddar. – –

I didn’t get to study today (I needed a day to recover from my exam anyway) but I did put away a load of laundry, do the dishes, and organize my study materials.  Now I’m off to read a book in bed!

Friday-Saturday Frenzy

I worked 9.5 hours on both Friday and Saturday, so the weekend has felt a little frenzied.  Basically ever single thing I ate was on the go, covered in cheese, or both!  Quickly, because I have to get up tomorrow and study for my giant exam before work…

The Best Thing Ever

Howdy!  It was bedtime hours ago is bedtime but I’m bubbling over with good cheer so I wanted to blog.  Spread the love and all that.

Note 1 relates to note 2.  Note 1 – Please ignore my crazy hair and old lady scarf and focus in on how fabulous my giant puffy sleeves are.

Love them!  I bought this top back in my teacher days and it always made me feel like a professional city lady.

Note 2 – I got to Google Video Chat with Adam tonight and it was the best thing ever.

My husband is the most handsome man on the planet!  And me…. well, I’ve got my great sleeves.

Adam has been/will be traveling a lot for interview this year and suggesting that we use the video chat today is the smartest thing he’s ever done.  I can’t even tell you how good it was to see and hear him while we said goodnight.  And this best thing ever is actually a silver lining on what seemed like a terrible situation.  You see, yesterday Adam broke his cell phone.  And if he’d had his phone with him on his trip today we wouldn’t have been on Google Chat at all.  The money and time we are going to lose fixing it and the hassle of Adam having to navigate a new city tomorrow sans phone all pale in comparison to how wonderful it was to video chat this evening.  <–silver lining

Don’t get me wrong, all of the travel has been/will be hard.  A lot of his interview dates are right on top of one another and they make our busy schedule even more hectic.  For example – he got to the apartment at 2am this morning and was heading to the airport by 6am.  This meant I got 3 hours of sleep last night.  Ugh.

It was a double pizza day.  Making a smoothie meant getting out of bed five minutes earlier so instead I breakfasted on the cheese slice Adam brought me from our favorite pizza place in Brooklyn.

Amazing and also a bit sickening.

Clinic went well today, even though I was tired.  In the morning I partnered with another student to chart on a tube feed and in the afternoon I shadowed a RD on the renal transplant floor.

Lunch was a mix of food from home and $2 spent at the salad bar with our great nutrition department discount.  A ‘Thanksgiving leftovers’ sandwich of sliced turkey, homemade cranberry sauce, and cream cheese on a Sandwich Thin.

Plus Food Should Taste Good Sweet Potato Chips.

And salad bar with cherry tomato, cucumber, carrot, red onion, and honey mustard dressing.

I always have to really talk myself into salad at home but when I’m out and about it tastes so good!

Dinner was round two of pizza since I was stuck on campus working on a group project.

A buffalo chicken slice that was nowhere near as good as Zetti’s.  And I dropped a greasy piece of chicken on my nice pants.  I clearly should have gone with another salad instead!

Finally, I ate 2 oz of chocolate covered kettle corn nuts while I puttered around the house this evening.

They are good, but not as good as they were inside cookies.

How do you stay close to your loved ones when you are physically far away?

Froyo Flavors Playbook

The husband was out of town on an interview yesterday so I ate a single lady dinner of cookies and popcorn.  Then I ate a big bowl of cereal (with melted peanut butter and vanilla almond milk!) in bed.  <– Shhhhh, Adam would be so mad.

Speaking of skipping posts, exam week is coming and I am flipping out.  I want to try to keep up blogging, since it’s not like I use every last minute of my time studying anyway, but I’m not sure how that will work out.  Exams are in 13 days!  I honestly thought that we had another week and didn’t realize how close they were until I checked my planner in the middle of class and gave myself a heart attack.

Anyway.  When I wasn’t freaking out, I also ate breakfast in class.  A Chobani Honey Banana Flip.

That yogurt is my favorite Chobani product.  The bananas add the perfect amount of texture and sweetness to lighten up the Greek yogurt.

I also had an apple.

And a Target Candy Cane Chewy Cocoa Granola Bar in between class 1 and 2.

I had to hang around campus after lab to work in the computer lab and I ended up buying these Sea Salt Smart Fries as a snack from the book store.

This was my 2nd time trying the Smart Fries and I think I can officially say that I like them.  The texture is a little like a packing peanut but I mean that in the nicest way possible!  They are really satisfying to crunch through and you get a big serving (~65 pieces) for 110 calories.

I had a run errands this afternoon (you might notice that I didn’t actually do any exam studying today) and got a small container from the salad bar around 5:00.  A lettuce mix with some dressing (I don’t remember the flavor but it was sadly really bad) topped with cucumbers, cider glazed carrots, roasted brussels sprouts, and a giant scoop of chicken salad.

The chicken salad scoop was about half as mayo-y as it looks and two times as big as it looks.

I actually just got home a little while ago because I was out with friends.  We wanted to go see “Silver Linings Playbook” and it is only showing in one random theatre here so we made an excursion of it.  An exciting stop along the way…

FroYo Culture had their holiday flavors out!

I got gingerbread, eggnog, and Heath yogurts with crumbled gingerbread, Heath bits, shredded coconut, x-mas m&m’s, and marshmallow sauce.

Too exciting!  The gingerbread flavor was actually too spicy for me but the eggnog was perfect.  I’m pretty sure I’ll be going back to Willaimsville before the season is over.

The movie was worth the drive as well.  All three of us loved it.  The plot was a nice mix of funny, wrenching, and sweet.  Bradley Cooper, Jennifer Lawrence, and Robert DeNiro were all amazing.  And there’s even a Julia Stiles cameo.  We laughed on the way home that it was funny to watch Julia Stiles play a support role in a dance movie.  <– “Save the Last Dance” still remains a favorite of mine.

And I ate a serving of Sun Chips while I wrote this post.

Food-food instead of snack-food would probably be a good thing tomorrow!

Cook Book, Cookies, Chicago Fire

It’s felt like forever since I’ve blogged.  Thankfully (ha!) I was starving all day and ate a ton of food so I have lots to post about.

Breakfast was consumed during class but photographed in Adam’s car.  I waited until 6 am to will myself out of bed to finish writing a paper and was running behind.  Actually, I would have been fine but then I had to cuddle the dog before I took my shower and I ended up needed Adam to drop me off.  Thanks, husband!

A Wegman’s low-fat pumpkin pie yogurt that I was very impressed with.  The texture was perfect and the taste was so good I’ll consider continuing to eat this flavor in December!

Work went well.  We extended our hours for the holiday season which means my shifts are all an hour(+) longer but it wasn’t too painful.  I drank a cup of (Keurig) hot chocolate while at work but didn’t photograph it for obvious reasons.

Dinner was a serving of Seven Layer Casserole.

The recipe’s vegan but you don’t need a challenge to try it; it’s delicious!

Apparently that all wasn’t enough food because I also ate a bag of SmartPop while I caught up on “Chicago Fire.”

I’m Typing With One Hand…

…so I’ll keep this short.  Speaking of keeping things, Adam will have to keep me, my surgery went off without a hitch!

It wasn’t a big deal – I just had a benign keratosis removed from the back of my hand – but they sure were dramatic about it.

I had to wear a gown, and get wheeled into the OR.  And look at my giant bandage –

they called it a “sympathy cast!”  I’ll have my stitches in for ten days and then I’ll be right as rain.  But unfortunatly they told me that I’m not allowed to work out while my stitches are in.  I know I haven’t been working out anyway but I really was excited to start again!  Ten days…

They told me to take it easy after surgery but I actually had to head over to a friend’s house to work on a group project.  At least I got some Moe’s out of the deal.

I got a naked burrito (aka a less expensive rice bowl) with black beans, lettuce, green pepper, onion, mushroom, corn salsa, and guacamole.

Delicious.  Moe’s is a great option for Vegan Month.

Resting up didn’t happen the rest of the weekend either, I worked both Saturday and Sunday.  Saturday morning was rough (on top of everything else we started an hour earlier than usual), but at least my shirt matched my bandage!

I ate an apple on the walk to work.

And a drank a Rockstar to help keep myself awake in spite of my pain medication.

My medication makes me feel pretty funny – nauseous and tired and all sorts of loopy – so I never ended up getting lunch at work.

Dinner was a buffalo seitan wrap from the co-op.

Plus a roasted potato.

Those fries are cut so nicely because the husband did it for me.  He’s been so nice helping me while I fumble around!

I did manage to catch up on some sleep this morning.  Thank goodness for Daylight Savings.  Even with the extra hour, all I managed to accomplish today was a shift at work and switching out my summer and winter wardrobe.

Breakfast was an amazing bowl of cereal.  Blackberries with cinnamon sugar, 1 serving each All Bran Bran Buds and Cascadian Farm Dark Chocolate Almond Granola, and Blue Diamond Unsweetened Vanilla Almond/Coconut Milk.

I had the granola from the HLS and have wanted more ever since!

A very late lunch was purchased at the co-op after work.  Broccoli salad and vegan mac and cheese with veggies.

The mac was so tasty that I almost made Adam walk back and get me more!

Instead I was basically stoned on pain meds all evening and was a total weirdo.  Dinner just didn’t happen, though I did eat multiple desserts.

Webster’s First Halloween

You can tell that this post was a terrible decision since it’s 2 o’clock in the morning.  I’ll try to keep it quick.

You can tell that tomorrow is the first day of Vegan Month because I managed to eat two yogurts, buffalo chicken pizza, cheesecake, and a milkshake.

You can tell that it’s Halloween since I pulled out all of the stops some of the stops.

Before the exam, I got up and had breakfast.  A big bowl of Liberte Coconut Yogurt plus 1% large curd cottage cheese.

When I got home – my exam went ok, my quiz went not ok, our lab activity took forever – I had more yogurt.  Apple Cinnamon 0% Chobani with honey roasted peanuts and a drizzle of honey.

I ran a few errands the afternoon.  The most exciting was the orthodontist appointment; not only am I cleared for 12 more weeks of nights only, but I won a contest!

$30 to Best Buy.  I was so excited, I never win anything!

Lunch was pizza.

I tried to really think about the foods that were going to tempt me during November. A buffalo chicken slice from Zetti’s,

with baby carrots and blue cheese for dipping.

Halloween candies for dessert.

Then it was time to dress my favorite dog up in his first costume.  We went meta this year…

Webster was flipping adorable – several cars honked and gave us thumbs up! – but it was cold and wet and he was so mad at me by the time we got home!

Thankfully Adam’s arrival (he was away on an interview the past two days) cheered us both up.  He came bearing cheesecake!

That was literally the best slice of cheesecake I’ve ever tasted but I already had my sights set on something else so I took a few bites and left the rest for the husband.

My plan for dessert?  Pumpkin Coffee Caramel Chocolate Milkshakes!

Ben and Jerry’s Caramel Coffee Buzz blended with skim milk and pureed pumpkin (with chocolate syrup on the glass).  It was delicious and just what I needed to power through the last two hours of working on a final project.  The perfect way to end my dairy consumption for the month.
