Gesundheit!

Oh man, has allergy season hit us with a vengeance.  I feel just horrible!  My throat hurts, my nose is runny, and my head is an achy, foggy mess.  All of that complaining is to say – I missed a lot of pictures this week, many of them of candy and/or coffee because I pretty much had to have a liquid or hard candy in my mouth 24 hours a day.  That said, I got to go on several mid-week dates with the husband and it was actually a pretty great week.

Birthday Cake Coffee And Jelly Bean Gum

Random notes:

  1. A bunch of bites slipped past the camera this weekend, though per usual, the majority of them were coffee and candy.
  2. I had big plans for excitement in the city this weekend and the snow (in March?!  seriously?) throw me off my game.  We did make it to the Lower East Side for a 2nd trip to Adam’s new favorite restaurant though.
  3. I binge-watched my way through the first 9 episodes of “Fresh off the Boat” and thought it was great.  The book has been on my Amazon wish-list for ages, and we recently visited BaoHaus, so it’s safe to say I’m currently infatuated with Eddie Huang.

Eats:

Double espresso with skim milk (over ice) at work.

I’m not super hungry most mornings, but I try to get in a full 8 oz serving of dairy in my coffee.  The 8 grams of protein and 90 – 130 calories usually hold me just fine until my early lunch.  Usually.  I was so hungry all day on Friday that I was practically crying.

But soon after lunch I was miserable.  And I took lunch an hour earlier than usual so it was looong afternoon.  I bought this thing of cheese and crackers from the cafeteria, scoffed at how ridiculously large the serving size was, and finished the whole thing 30 minutes later.

And 30 minutes after that, I was buying coffee and a KIND bar for my train ride.

Plus I ate Easter candy both before and after dinner.

My dinner, that in retrospect definitely could have used more protein, was a good one though, if a bit scattered.

Our pasta bowls were more of the same; pesto gouda and baby spinach, along with tons of caramelized onions – finished with cream sherry! – and whole wheat boxed mac and cheese with a few giant shells thrown in for good measure.

I was still hungry when we went to bed!  Thankfully I felt back to normal by Saturday morning.

My picture-taking motivation went downhill at that point – when I woke up to almost-April snow my plans to go to the gym, clean the floors, and generally accomplish anything all seemed to disappear – but I do have shots of the good stuff.

Adam loved the oatmeal raisin cookie smoothie that I made for my last Recipe Redux post a ton, so this weekend I worked up an official recipe.

Starbucks reached the 20th birthday of the Frappuccino last week and they celebrated with a limited-edition birthday cake flavor… with pink raspberry whipped cream!

I asked for them to make me one into a skim iced latte.  So good.  Still ridiculous, but slightly less ridiculous.

I made Pinch of Yum’s Bourbon Chicken for Sunday dinner, though I trashed mine up a bit by substituting in turkey breast and Jim Beam’s Maple Bourbon.

Served with brown rice and roasted broccoli, under a healthy drizzle of sauce.  My mother – a maple fanatic – bought me the bourbon for Christmas and I have so many cocktail ideas for it.

We had another amazing meal at Pig & Khao.  Adam is obsessed with this place and I don’t blame him.

The husband had a giant plate of pork leg, and I ordered the Khao Soi – red curry, coconut milk, chicken, egg noodles, pickled mustard greens, and shallots.

I don’t even like red curry (understandably, the menu is mostly meats so there aren’t a ton of options for me) but I loooved this.  The flavors are just so balanced; you leave feeling unbelievably satisfied.

We had to make room for Halo Halo though!

Shaved ice, leche flan, ube ice cream, macapuno (coconut), and pinipig (toasted puffed rice).  My favorite desserts are bat ping so, choclados, and halo halo, clearly I am all about shaved ice and sweet milk.

Two For One {Recipe Redux}

And one for all!

From the Redux teamWe’re all about cooking once and eating twice. In short, double dinners are better. Show us how you take a favorite recipe already on your blog – and ReDux the leftovers into a new dish. Or, whip up a new healthy recipe and give suggestions on how to make it a second meal. For example, slow cooker pot roast could become shredded beef tacos; or grilled chicken breasts might morph into chicken salad.

Rather than stretching a dinner, I set my sights on dessert.  Who’s surprised there?!

I am a big rice pudding fan, so my Chia “Rice” Pudding is one of my favorite treats.  This chia pudding is a quicker (tastier!) spin on rice pudding.  Chia seeds replace rice for a pudding that is still chewy, creamy, and sweet.  And since chia seeds are a great source of fiber and omega-3 fatty acids, this is pretty darn healthy for a yummy dessert.

Sadly, my husband is brave enough for chia seeds, but can’t stand good, old rice pudding, so I usually am enjoying the dish by myself.  For this challenge, I morphed the unwanted 2nd serving of the pudding into a quick and yummy cookie flavored smoothie that is packed with fiber.  The smoothie got rave reviews; ironically, my husband said it’s the best smoothie I’ve ever made!  It really does taste just like a liquefied oatmeal cookie.

Chia “Rice” Pudding

Servings: 2; Prep Time: 5 minutes; Cook Time: 10 minutes

  • 1.5 cups skim milk
  • 3 Tbsp chia seeds
  • 3 Tbsp light brown sugar
  • 1 large egg
  • 1/4 cup raisins
  • 1/2 tsp ground cinnamon
  • 3/4 tsp vanilla extract
  1. Bring milk to a simmer in a small saucepan over medium heat.
  2. Whisk chia seeds into milk and continue to simmer for 5 minutes, stirring regularly.
  3. Meanwhile, beat the egg in medium bowl.
  4. Whisk brown sugar into milk mixture.
  5. Slowly stream half of the milk mixture into the egg, whisking constantly so the egg doesn’t begin to cook.
  6. Whisk the egg mixture back into the pan and continue to simmer, whisking constantly, for another 2 minutes.
  7. Remove the pan from the heat and stir in cinnamon, vanilla, and raisins.

The pudding does not need to thicken or set so it can be served immediately.

Oatmeal Cookie Smoothie

Servings: 1; Prep Time: 5 minutes; Hands-On Time: 3 minutes

  • 1/3 cup rolled oats
  • 1 cup milk of choice
  • heaping 1/2 cup leftover chia rice pudding
  • small frozen banana
  • (optional) 2 Tbsp maple syrup or 2 pitted medjool dates
  1. Place oats and milk in your blender and let sit until softened, 3 – 5 minutes.
  2. Add remaining ingredients and blend until smooth.

I recommend trying it without the optional sweetener first and blending that in later at the end if you decide it’s needed.

Weekend Wrap-Up; My Camera Went MIA

Moving to Long Island has done something to my brain!  <– real talk, please let’s just pretend that this problem is a LI thing and not the fact that I turn 30 this year

Prior to 2013, I had lost/seriously misplaced one item in my entire life: a pair of flip-flops at a party in high school.  Also I had to have my dorm keys replaced in college after Adam kicked them into a lake, but those weren’t technically missing, they just weren’t accessible.  But lately?  I’m an absentminded disaster.  Last year, on my very first day at the hospital, I lost a brand-new scarf.  This December, I lost a brand-newish i-pod somewhere between my apartment and the gym.  And this weekend I misplaced my camera.  Not lost, thankfully, because it turned out that I had just left it in the husband’s car, but since he then drove that car to 30 hour shift this is my long-winded way of telling you that I don’t have a ton of pictures from this weekend.  I am missing a lot, especially since I didn’t deem things like the four slices of cinnamon toast I ate for dinner on Saturday instagram-worthy.

How often do you lose track of your stuff?  Someone tell me they left their baby on the bus so I’ll feel better!

The best was clearly brunch at Rabbit Hole with a girl friend.  I got the Eggs Norwegian, aka a Benedict but with lox instead of bacon and served on a biscuit.

Sooo good.  But the drink in the background was even better – Champagne, St. Germaine, and grapefruit.  We both got one and thought that they were just great.

The Blue Bottle in Williamsburg made me my New Orleans with skim milk.  Frankly, I would have accepted almost anything at that point though – first my friend and I stopped at one coffee shop that was out of ice and another that poured me a giant glass of whole milk with a smidge of coffee in it.

I made us great pasta bowls one night.  Box mac and cheese gussied up with canned smoked trout, chopped spinach, sautéed bell peppers and garlic, and tons of caramelized onions.

Weekly Wrap-Up; On The Mend

I am still a teensy bit sick, but thankfully I am feeling much, much better than last weekend.  Hopefully by the end of this weekend I’ll be back to 100%!

I liked the Chobani much more than the one with oats I tried previously.  The pieces of apricot were quite nice.

Jarlsberg recently started making minis and they sent me some to try.

For full disclosure I will tell you that Adam didn’t like the flavor (“too mild”) but I did, and I thought the texture was great (firm bite – you could squeeze it between your fingers and the wheel held its shape – but very creamy).  70 calories per mini wheel, for a nicely portable snack.

I ordered veggie quesadillas for my entrée – Pan Fried Tortillas Stuffed with Oaxacan String Cheese And Zucchini, Peppers, Mushroom, Onion, and Squash. Topped with Salsa Roja, Queso Fresco and Cilantro.

I always cook my quesadillas in a pan, but apparently “pan fried” here meant legit deep fried quesadillas.  They were tasty but also a bit ridiculous; I ate one plus the filling out of the other.

I’m writing this post before dinner on Thursday, but it’s gotten pretty late and I’m leaning towards a big salad and an old-school pb&j.  🙂

It’s Beginning To Look A Lot Like Christmas! Weekend Wrap-Up

It’s only 10 days ’til Christmas!  And Hannukah starts tomorrow!  And it was Adam’s 29th birthday on Thursday!  We had a lot to celebrate this weekend.  The last three days have been fabulous.  Lots of great meals, several at fancy restaurants, and they were usually followed by dessert!

Friday

Friday was a regular work day for me, but I had the excitement of knowing that the husband was coming to pick me up at the end of the day.  The switch to an electronic medical record system has gone fairly well, by the way; fingers are still crossed.

I ran out the door late in a flurry so breakfast came from Starbucks.

Lunch was pretty much the same thing, since I didn’t pack anything and made it down to the cafeteria late in the day.

Adam met me after work and we spent the evening in the city.  Our dinner reservations weren’t until 8:00 so we did dessert first on a visit to the Winter Village at Bryant – Brrrryant! – Park.

OMG.  We have been buying and hating hot chocolate since San Francisco but this liquid gold was exactly what we’ve been searching for. Super thick and rich but not sickeningly sweet.

We had a mile-ish walk to dinner and I’m terribly sad that it was too cold for my camera because I was basically dying at the gorgeous lights along the way.

I got a Queens cocktail – Bootlegger vodka, Velvet Falernum, sorrel hibiscus liquor, pomegranate molasses, and lemon juice.  Yummy, and perfectly balanced.

We shared the scallops with citrus butter, capers, and fried shallots to start. I’ve been having a love affair with fried shallots lately.

None of the entrees jumped out at me so I ordered two veggie sides, crimini mushrooms with blue cheese and basil and broccoli rabe with lemon, garlic, and sea salt.

 Saturday

We had errands to run in SoHo on Saturday, so we parked in Brooklyn and took the train in and spent the day in the city.

There might have been booze in my coffee.

I bought a snickerdoodle lattee from Dunkin and added a healthy pour of Rumchata (aka the snickerdoodle shot) and it was damn good.

While we were in Brooklyn, we split a sardine Bahn Mi from Bahnmigos.

It was great! The little me who grew up in the Caribbean shunning seafood (whyyyy??) can’t believe I eat things like sardines and scallops now.

We did linner (super late lunch) at Freemans Restaurant.

Blue Ridge Fizz = apple brandy, maple, allspice, and champagne.  Freemans is our favorite brunch spot in the city and their cocktails are always magnificent.

I got poached eggs with tomato stewed kale, crispy shallots(!!), and hollandaise on sourdough toast.

We went next door to Morganstern’s for dessert.

We shared a cup of American egg custard and durian banana ice cream. Soo creamy! And the flavors were very true to life.

After a bit more exploring, we did round 2 at Sugar Sweet Sunshine.

Sunday

Sunday was all about hanging out at home.  We would have stayed in our pajamas all day, had my dinner plans gone better.  We cuddled, watched tv, and got up some holiday decorations.

I woke up starving from our early dinner the night before so I made a big plate of eggs for breakfast.

I adore eggnog, and this (vegan, 80 calories per half cup) stuff is at least 90% as good as the real thing.  Enjoyed in both overnight oats and cold brewed coffee.

I didn’t pack lunch for most of the week because I bought a sandwich on Tuesday and got hooked.  Turkey and provolone on an onion roll with mustard, mayo, and spicy banana peppers.

I had tortilla chips – with cheese and fresh salsa – with my sandwich one day and became a woman obsessed.  I ended up making Adam a separate, grown-up person dinner and then eating chips and cheese several nights.

*A new book obsession*

Marion and Shiva Stone are twin brothers born of a secret union between a beautiful Indian nun and a brash British surgeon. Orphaned by their mother’s death and their father’s disappearance, bound together by a preternatural connection and a shared fascination with medicine, the twins come of age as Ethiopia hovers on the brink of revolution.

I finished Cutting for Stone this week and thought it was absolutely wonderful.  Author Abraham Verghese is a doctor as well as a writer and he did a skillful job of portraying the medical scenes in the story in clear and approachable way (most of the main characters are doctors so this came up a lot).  The characters are all flawed but beautiful, and I fell head over heals in love with Ghosh.

Apple Picking; Weekend Wrap-Up

This weekend I got to cross something major off of my fall bucket list – apple picking!

I don’t have much to share for this post, just three things.  I’m a bit under the weather and I spent almost all of Sunday tucked in bed.

A smoothie  – water and meat from a Thai young coconut with canned pumpkin, pumpkin pie spice, frozen banana, and maple syrup – and a Clif Maple Nut bar that I shared with the husband.  The bar was much better than the smoothie, which did not emulsify at all.

Our main course was tuna casserole that I made and froze awhile back, so I don’t totally remember what was in it.  Definitely tuna, barley, spinach, green onions, peas, water chestnuts, roasted garlic and mushroom condensed soup, cheese, and crushed Cheez-Its on top.

Dinner was delicious.  Sweet and smoky squash with cheesy casserole?  You can’t really go wrong!
