Toasted Marshmallow Cheesecake Oatmeal (For Dinner)

My book and beers were great last night but I woke up in a funk.  Adam and I both just didn’t want to get out of bed.  I snoozed for so long that suddenly there wasn’t enough time to both go to the gym and make the fun breakfast I was looking forward to.  I knew I had to get it together before my bad mood ruined the whole day so I tried to pinpoint what was making me cranky – I was cold, I was tired, I was hungry.

Time to problem-solve!  I decided I would make a mug of hot chocolate (calories, warmth, caffeine), go to the gym (endorphins), and eat my fun breakfast for dinner (anticipation).

The cocoa was pretty weak but my workout felt rewarding.  10 minutes on the treadmill (1 mile) and 20 minutes at level 6 random on the stationary bike (7 miles).

I had to hurry, but somehow my hair air-dried perfectly today!

Often one side curls under while the other flips up so this felt very fortuitous since I had to look nice for clinic.

For breakfast I cashed in the last of my Ashker’s smoothie Groupon on the walk to school.

I got a Lemon Zinger sans ginger; aka a carrot, peach, mango, and lemon smoothie.  It was great!

Lunch included more carrots so it’s a good thing I’m a fan.

Also a Cinnamon Raisin Bagel Thin with two slices of Applegate Farm’s Smoked Turkey and a wedge of Light French Onion Laughing Cow.

And a 120-calorie pack of Skinny Cow Dreamy Clusters.

These were on super-sale so I took a chance and I ended up quite liking them.  The serving was small but the caramel was nice and I liked the bit of crunch.

But I probably should have packed an additional item for lunch because I was inhaling this 100-calorie bag of kettle corn the minute I walked in the door at the end of the day.

My clinical hours today were at a Diabetic Education Course.  The RD let me teach the portion on reading nutrition labels.  She said I seemed knowledgable and confident which is awesome because on the inside I was screaming my head off!  I’m considering becoming a certified diabetes educator (cde) some day so it was neat to get a taste of the experience.

I had to get through night class and then I finally had my much-anticipated breakfast dinner.  What combination was I so excited about?

Toasted Marshmallow Cheesecake Oats!

So flipping good.

cooked: 3/4 cup skim milk, pinch salt, 1/4 cup oats

stirred in: 1/2 cup 1% cottage cheese (cheesecake), 4 toasted marshmallows (marshmallow!)

topped: 1 Tbsp melted Trader Joe’s Cookie Butter (crust)

The toasted marshmallows stirred into the mix and the bowl was like a giant, toasty, marshmallow!

When I originally planned this meal for breakfast I wanted to make sure it was nutritionally ready to get me through the day so I plugged the ingredients into an online calculator –

Not bad, not bad at all; especially for something that tasted like dessert.

The Have Nots

I am so flipping excited to be back to blogging!  In fact, I’m excited about doing pretty much anything.  You see, I’m getting over a case of the “have-nots.”  It was a nasty one.  The past week I have not:

blogged ~ washed my hair ~ cooked ~ done any school work beyond what was immediately due ~ worked out ~ read any books ~ cleaned my house ~ eaten anything with any real nutritional value ~ been nice to my husband ~ taken a moment to appreciate my life

I told you it was bad.  I finally got so sick of myself that this morning I started getting back to doing.  I did three hair washes in the shower.  I made and ate two healthy meals.  I took a walk.  I went to school.  I finished a major assignment.  I pre-made Adam’s dinner.  I took a moment to reflect.

My plans for the weekend are big but doable – 1. spring clean our storage containers.  2. switch out our summer and winter wardrobes.  3. eat lots of fruits and veggies.  4. get in some strength training.  5. make notecards to start prepping for exam week.  6. read the 2nd Hunger Games book.  #6 is the only task that’s really urgent 🙂

Back to blogging?  This morning breakfast was pink, pink, pink.

I blended together 1 cup of skim milk, a 0% plain Yoplait Greek yogurt, 1 cup of frozen blackberries, and 1 Tbsp maple syrup.

Tangy but tasty.  I froze a bunch of blackberries when they were on super-sale a few weeks back so I expect to have this again soon.

When my class was over this morning it was too pretty out to go home so I extended my walk up Elmwood to the Co-op.  I perused some fun looking products but came away with only one.

A Relax drink from Solixir.  With blackberry, chamomile, passion-flower, jujube, lemon balm, and hibiscus.

It didn’t really have much flavor but for 50 calories and no added sugar I’m not complaining.

My food was feeling preppy so to go with breakfast’s pink lunch was green.

I started with a Crispin apple.

Then I had a green-on-the-inside twice baked potato with basil and cheddar.

Recipe is down below.  But I have to show you what I used for my basil –

I bought this Gourmet Garden Basil Herb Blend the other day on a whim but I think it’s going to become a kitchen staple!  So much easier than cutting up my own basil or throwing out my own basil when it rots in the crisper.  I see a lot of herbs in this week’s meal plan future.

Finally a big pile of roasted green beans.

Better than french fries!  <– and I can tell you that for certain because I ate french fries for dinner two nights this week *whoops*

Basil and Cheddar Twice Baked Potato

  • 6 oz baking potato
  • 1 heaping Tbsp finely chopped basil
  • 2 oz 50% reduced fat sharp cheddar
  1. Microwave potato to desired doneness according to your microwave’s specifications.  (my potato took 7 minutes at full power)
  2. Cut two thin slices of cheddar, about 0.5 ounce worth, and then roughly dice the remainder of the cheese.
  3. Cut potato in half and scoop out the flesh, taking care not to get too close to the skin so that the potato can still hold its shape.
  4. Mash potato insides, basil, and diced cheddar.  Spoon filling back into potato skins and top each side with a slice of cheese.
  5. Bake for 25 minutes at 425 degrees Farenheit.

Loop De Loop

I’m going to apologize in advance just in case this post makes no sense.  I’m tired, and sick, and pretty damn loopy.

After my run and cookie consumption I started the day cautiously optimistic that I would keep feeling good.

To eat in class I packed a green pear,

and a 2% Pineapple Siggi’s.

I loved the 2% fat content of this yogurt but the pineapple was pretty weak.  There was no pineapple flavor and the pieces of fruit were few and far between.  But the yogurt itself was wonderful.  I enjoy the original Siggi’s and the 2% variety was a little sweeter and the texture very creamy and less stiff.

Adam was done at the hospital around the same time I finished my classes so I walked home to meet him for a date before work.  I’m not even gonna lie – he took me to dinner at my school’s food court and it was the best damn date I’ve ever been on.  I love spending time with the husband so much!  First we stopped in at Ashker’s for smoothies since we have a Groupon.

I can’t remember my exact selection but I know that it had a few fruits, carrots, and ginger.

It would have been fantastic except that I forgot that I freaking hate ginger.  The texture was spot on but it was just way too spicy for me.  I could only drink a third or so but the husband happily finished off the rest.

Then we walked back to campus.  I work in the basement of a dorm building so Adam clearly couldn’t hang out with me but I’m a total creeper so the simple fact that he was in the same building as me was exciting.

We were both starving (like gnaw your own arm off starving) so we hit up the food court and ended up discovering a new, totally adorable, perfectly priced “asian” kiosk.  We split a Vietnamese coffee for 99 cents.

And I got a tasty lobster roll.

It was good!

We are bottomless pits so we got pizza too.  $4 for two slices packed with toppings; apparently college food courts are the place to go for a cheap date!

My veggie slice came with banana peppers, roasted red peppers, and black olives.

Tonight was my last shift at work (the calling sessions only last for a month) and I was sad to say goodbye.  Of course there are people who are total jerks to tele-fund-raisers but most people were really nice!  I had several older alumni sweetly tell me that they loved talking to me.  I’ll miss it!

I’m not sure anyone will miss me after tonight though; today’s sickness levels hit their peak mid-shift and I basically hacked up a lung in the corner all evening.  By the time I met Adam I could barely talk.  The loopiness had set in at that point so it’s possible I also told bad jokes and laughed like a hyena the whole walk home but I can’t really blame that on the sickness.

But it definitely was my sore throat that demanded a strawberry milkshake.

Mmmmn, if I could set up a constant stream of icy beverage down my throat that would be excellent.

I had to stay up to set up my class schedule for next semester (I can register tomorrow morning) but now it’s clearly time for bed.  So goodnight!

Humbolt Fog

Last night’s sleep session was a disaster.  Usually my sleep issues are related to falling asleep but lately if I get woken up I can’t fall back to sleep either.  The dog woke us up in the middle of the night and it took me at least another hour of tossing and turning to get back to rest.  The husband brought home some sort of bug from the hospital and my throat was killing me.

I overslept today and the morning was rushed but I managed to do what I needed to do, mostly.  I was heading to the gym after 9 am so sticking with my monthly goal I ate a small breakfast before I left.  A few sips of strawberry Powerade Zero,

and a half of a Vanilla Almond Luna Bar.

I didn’t have much time at the gym but something was better than nothing.  20 minutes on the elliptical at random level 7.

After a quick walk home and an even quicker shower I made a Lemon Cookie Smoothie for breakfast.

The last time I made it was apparently a dark and stormy night and I wanted a chance to get some better less awful photographs for the recipe page.

It probably wasn’t my best use of time though; I made it halfway through my smoothie before I had to throw it away and rush out the door.  I didn’t have time to pack lunch and having half a smoothie digesting in my stomach just made my hunger stronger all afternoon.

I got out of clinic a bit early and when I spotted a Manhattan Bagel on the drive home it felt like an oasis in the desert.

I was eating the chips that came with my meal before I was even out of the parking lot.

But chips only seemed to anger the beast (aka my stomach) and I ended up eating my bagel on the ride home!

Eating while driving is sort of nice because instead of dreading red lights you can use them to shove food into your face.  And my bagel was quite enjoyable; I got a veggie sandwich on a rye bagel.

Red onion, lettuce, tomato, banana peppers, veggie cream cheese, and a little bit of chipotle mayo.  I thought the veggies were pretty weak but the bagel was super chewy and good.

I had my 2nd to last shift at work this evening and then I came home to an easy salad dinner.

I needed a vehicle for a veggie, a fruit, and this amazing looking cheese, and salad fit the bill.

This Cypress Grove Humbolt Fog Chevre was delicious.  Sadly the blue cheese and goat cheese were in layers and not the hybrid mixture I was hoping for, but both were quite tasty.

Along with chunk of cheese I had romaine lettuce, groats, chopped honey crisp apple, and Stubbs BBQ Sauce for dressing.

Those ingredients sound strange together but it worked.

Vegan Month Challenge

Ugh.  Today was day 3 of no diet soda and I’m seriously cranky.  Also, when I woke up there was no food in the house (vegan or otherwise) and I’ve been starving all day.  It was one of those situations where I waited so long to eat that I never got full, even now.  Oh, oh, oh!  And I’m annoyed because I have projects I want to start and we haven’t been given all of the information that we need yet.  Okay, I think that’s it for the complaints!

Breakfast was a smoothie.

I found this Vega Tropical Tango smoothie mix (HLS sample) in the cupboard and blended it with 1 cup of orange juice and 7 oz of frozen soursop pulp.

It tasted better than it looked.

My classes went well, though I was cranky the entire time.  Thinking about my newest reason to love Kristen Bell helped.  I made sure to run to Wegmans for an emergency grocery stock-up the minute class was over!

I ate this handful of peanuts x 3 when I got home.

Dinner was stir fry.

We stir fried a bunch of veggies – frozen brocoli/carrot/cauliflower mix, plus more frozen broccoli, plus canned stir fry mushrooms, and canned baby corn – with stir fry sauce and topped with a few toasted cashews.

Tasty, but it didn’t even make a dent in my hunger.

Next I had a huge (2 cups, aka 2 servings) bowl of Wegman’s Berry Corn Crunch Cereal with Silk Unsweetened Almond Milk.

And a huge spoonful of Dark Chocolate Dreams pb.

And now I’m going to go have some popcorn.  I swear that all of vegan month won’t be like this, it’s just that I waited to long to eat and I let my hunger get out of control!

February = Vegan Month Challenge

We’ve done this so many times now that this announcement feels like it doesn’t require much fanfare.

During February of 2012, Adam and I will be doing a 1-month vegan challenge.  No eggs, no dairy, no meat, no honey, and no products containing any of the aforementioned.  No, we didn’t choose February because it’s the shortest month.  Yes, we are excited.

Over the years I’ve done three different challenge introductions and three different challenge recaps (see the links above) on my blog and I feel like there’s no new way to explain why we are choosing to do this.  Basically –

While I think a vegan diet can be healthy for some individuals, I don’t think it is healthy long-term for everyone.
I think that everyone can be healthier if their diet includes more vegan meals and less meat.
Adam and I have both been in a healthy diet rut recently and a month of vegan meals will force us to spend some time with vegetables again.
1 month is a good way to remind myself that not every dish needs cheese.

It Ain’t Easy Being Green

Physical activity is a funny thing.  I went to a 60 minute hot yoga class today.  I was dreading it all morning, and sure enough, when I got there it sucked.  I felt like I was going to pass out the entire time and spent most of the class in child’s pose.  It was my worst practice to date.  But by the time I was done, I was so happy that I went.

When I got home from the yoga class that was both frightful and fantastic, I made a smoothie for breakfast.

1 cup skim milk, 1/2 cup low-fat cottage cheese, 1 frozen banana, 7 oz frozen soursop pulp, and nutmeg (for garnish).

The flavor wasn’t quite right but the texture was luscious.

And nutmeg on creamy drinks, especially piña coladas!, is the best.

Adam and I ran a few errands in the snow and then it was time for a double-decker lunch.

On a hamburger bun with schmear of sour cream, 2 nacho turkey burgers topped with 1 oz of melted sharp cheddar.

It was totally swoon-worthy.  The burgers are nice and juicy but have this great chew from the chips too.

I’m glad I made the patties small and stackable.

For dessert, Adam and I each had a mug cake.

I followed the basic recipe, with the inclusion of a handful of chocolate chips.

Dinner was one of my older recipes that I decided to revisit.

Green Tuna Enchiladas!  I updated the recipe page too.

I had two enchiladas and some roasted brocoli on my plate.

It was a good, green meal.

But I wasn’t feeling satisfied.  In fact, I’ve had a gnawing hunger all day, and I know it’s not thirst in hunger’s clothing because this pitcher and I have been fast friends all day.

That h2o is spiked with limes and sugar cane, fyi.

So I honored my hunger and  finished up my dinner with some leftover beans and rice with sour cream and cheddar cheese.

Now I’m done.

What do you do when you’re hungry when you “shouldn’t be?”

The Pizza Problem

About last night …  After all of my excitement,

the skillet cookie didn’t pan out (ba-dum ching!).

It was more of a cookie cake, which I hate. But the husband ate it. And now I’ve got this cool little skillet.

But I was left without dessert.  And after my first hour of complaining about wanting a cookie, I realized that what I actually was, was hungry.  For food.

So we set out.  As we left the house at 8, I said to the husband “we’re going to drive around for hours and not get food, and you’ll be mad and I’ll cry.”  That statement wasn’t entirely correct, but mostly.  Instead of tears, we came home at midnight with pizza.  And we watched “Bride Wars” and stuffed our faces and all was right with the world.

This morning it felt like breakfast should be nutritious.  We had errands to run so we were looking for an on-the-goal meal that was packed with vitamins.  Enter smoothies.

Into the blender went frozen blueberries, strawberries, a bit of orange juice, and a handful of ice.  I blended, but instead of a smoothie all I got was rock hard fruit chunks sitting in a pool.  So I continued to blend, adding in a bit of club soda to move things along.

But it seemed that no matter how much liquid I added, I just couldn’t get the substance in the blender to reach a liquid state.  And that’s how our smoothies came to contain two cups of club soda.

They were disgusting.  Shocking, right?

I made myself drink a bit more than half for the nutrients, and ate a piece of pizza when I got home.

And now I never want to see another piece of pizza ever again for at least week.

Primed to Party

We have got –

a) a problem
b) a packed to-do list
c) a party
d) a profound preference towards alliteration
e) all of the above

If you guessed (e), you’re correct!  Adam and I have the problem of being crazy people because we stayed up past 2am doing absolutely nothing.  This morning got off to a late, rough start, but our day was packed full of to-do’s to prep for tonight’s party.  We are almost set up and I’m all packed for tomorrow to boot.

Today was a double smoothie sort of day.  First, another round of berry chocolate mint.

For two, 2 cups chocolate mint soy milk, 2 cups frozen strawberries, 1 scoop chocolate protein powder, and 6oz 0% plain Greek yogurt.

My second smoothie was a (soy) nog delight.

For one, medium frozen banana, 1 cup Silk Soy Nog, 3 Tbsp malted milk powder, and a handful of ice.

Plus nibbles while we got ready for the party.
