I work all this weekend but we do have some fun Long Island dinners planned. Highlights from this past week included – lots of take-out and homecooked meals better suited for fall!
Smoothie time – plain Greek yogurt, frozen strawberries, chocolate almond milk, and taro powder.
I made beer bread, which meant I spent the week very happily snacking on beer bread with cheese.
Adam and I were both fans of this kettle corn.
Chinese take-out leftovers – sesame noodles and fried tofu.
Wednesday Adam and I both worked exceptionally long days and we salvaged the evening with a cocktail walk and an agressive amount of Mighty Quinn take-out. The leftovers made a great lunch. Burnt end fries, corn fritters, and mac and cheese fritters.
Homemade soup. Chicken, broth, tomato paste, urfa chili paste, diced tomatoes, kidney beans, and zucchini.
Sheet pan hash. Japanese sweet potato, zucchini, fennel bulb, sweet onion, chicken kale pesto sausage, sharp cheddar, and pesto.
Hi, there! It was a great week in snacks and eclectic dinners. We also ate an obscene amount of late-night pizza take-out but I took no pictures.
Highlights included…
Fruit salad! Fresh blackberries and Golden Nugget Mandarins dressed in maple and key lime juice.
Peanut-themed bars. Both were great.
Sparkly beverages. Both were good but not unmissable; surprisingly I prefer the original hibiscus water.
I recently bought coconut caramel from a Filipino store and, of course, it featured heavily in this week’s snacks.
Like kaya toast – whole wheat toast with coconut caramel, banana, and cinnamon.
And in yogurt bowls with blackberries and Whole Food’s Vietnamese coffee granola.
Boba milk tea mochi. These had just enough sweetness and just enough chew, I would definitely buy them again.
Adam is pretty sure he loved this Whole Food’s cinnamon bun kettle corn but he can’t be certain because I ate all of my portion and the majority of his too!
Cheeseburger inspired pasta bowls. Whole-wheat rotini / ground turkey cooked in a sauce that included tomato paste and yellow mustard / roasted baby tomatoes / baby spinach / chopped pickles / chopped white onion / smoked cheddar cubes.
Insanely good turkey meatloaf seasoned with hoisin sauce, cheddar cubes, and roasted sweet onion. Plus roasted purple and orange cauliflower.
Daring vegan chicken nuggets (10/10!) / roasted zucchini and brussel sprouts sautéed with a spicy black bean and nut butter sauce / homemade honey mustard.
Highlights from this week included – Trader Joe’s sourdough sliced bread, Apple Month stuff, vegan junk food, end of summer veggies…
Cinnamon apple chia oats. <– I also had a(n unphotographed) bar with chia seeds this week, I need to remember to eat more chia, it’s delicious!

Salted maple kettle corn and freeze-dried fuji apples. P.S. The Trader Joe’s freeze-dried fruits are superior to all others.
Not apple-themed but still amazing – these Snacklins vegan pork rinds. I scooped crab dip with them and it was my favorite snack of the week!
Bacon egg and cheese sandwich for brinner. Toasted sourdough with mayo, yellow mustard, honey-maple sliced turkey, sharp cheddar, turkey bacon, and a fried egg. Plus yellow peach and heirloom tomatoes. Plus on-theme chocolates.
This was supposed to be a roast beef sandwich but our stores were all out?! Sourdough with pastrami-style turkey (probably better than my original plan!), black garlic and horseradish mayo, and sharp cheddar. With roasted orange and purple cauliflower.
Vegan chicken nuggets and roasted zucchini and yellow squash dipped in Bitchin’ Sauce.
Adam and I celebrated our 12th wedding anniversary(!!!) with a trip to Hawaii and had an absolutely fantastic time. We chose to spend our entire trip in Oahu – versus island hopping – and ended up being very happy with that decision. We walked a ton, stuck our toes in the ocean, ate a million delicious things, and saw a billion beautiful things. I did not even take as many photographs as I usually do but I still need to split my recap into multiple posts!
I’ll share more about the amazing restaurants we visited in a later post, for now, here were some of the best Hawaiian bites…
** Chicken katsu musubi – seasoned rice with seaweed and fried chicken.
** Shrimp okonomiyaki – a savory Japanese pancake.
** Garlic butter shrimp plates from the food trucks out on the North Shore.
** Butter mochi – cake made with glutenous rice flour.
** Dole Whip – blended frozen pineapple.
** We ate shave ice practically every single day of the trip! The standouts are in a later post but these were still pretty darn good! Both of these were Japanese kakagori style versus the more traditional Hawaiian style. From Ice Monster – coffee ice with brown sugar jelly, panna cotta, and cookies and cream gelato.
From Snow Factory – cookie butter ice and butterscotch ice with mochi, coffee jelly, and condensed milk.
