Weekend Wrap-Up; October Is Here!

Now a little bit about the end of September…

I’ve only got one meal to share here, in contrast with the full “dessert” section (whoops!).  Adam had a “golden weekend,” aka both Saturday and Sunday off, so we spent our mornings catching up on sleep.

This breakfast was more of a brunch, but either way it was a winner.

DSC04769Did you know that I used to sell starfruit when I was a kid?  We had a tree in our backyard and I would take the harvests to the local grocery stores.

The freeze-dried pineapples were part of a sample box from Crispy Green.

DSC04647I received these samples free of charge.  I was not provided further compensation for this post.  All opinions are my own.

Crispy Green is a company that sells freeze-dried fruits.  They are vegan and certified kosher and the ingredient list is nice and simple – just fruit.  What really sold me was the texture, I swear that the apples and pears were almost juicy!  More on them in a minute though.

DSC04677Acorn squash.  I baked half of my squash for 30 minutes at 350*, cut side down, then flipped it over and filled the cavity with pistachios, raisins, and maple syrup, and baked for another 20 minutes.

Less nutritious but still delicious, Taco Bell.

DSC04740I got a vegetarian Cantina Bell burrito and was actually very impressed.  The burrito had fresh corn and great guacamole.

DSC04696A box of Annie’s Shells and Aged Real Cheddar gussied up with TJ’s smoked trout, frozen edamame and a greens mix, and 1 oz of Chevre.

A cider soaked meal.

DSC04728I marinated some extra-firm tofu in TJ’s Spiced Apple cider (plus honey and hot sauce) before burning baking in the oven.

DSC04730Shredded cabbage was sautéed in the tofu marinade and then topped with salty peanuts.

DSC04734And this lovely squash was sprinkled with salt and cinnamon and roasted alongside the tofu.

DSC04724DSC04738I filled in the space in the center of the plate with Dinosaur Roasted Garlic Honey BBQ Sauce for dipping.

A meal out on the town.

DSC04775We finished our two-day weekend with a dinner out on the town at Luigi’s.

We were brought an amazing basket of fresh bread.

DSC04782I got handmade Papardelle with shrimp and lobster in a fresh plum tomato cognac cream sauce from the specials menu for my meal.

DSC04787DSC04784It was delicious!  The homemade pasta had great bite and the seafood was juicy and perfect.  Plus the portions were huge; I shared many tastes with Adam and still came home with a full serving of leftovers.  {Mom and Dad, we want to take you here when you visit!}

Adam went out to celebrate a birthday with his fellow interns and he brought me home cake.

I brought him home vegan ice cream sandwiches.

Ice cream sandwiches are Adam’s favorite and he was very impressed with how close to the original this (minty) version came.

To finish the post – the best thing ever.

DSC04772Adam and I split an ice the other day to celebrate the first day of fall.  Dulce de leche topped with pumpkin pie.

DSC04770Oh. My. God.  The pumpkin pie ice was ridiculous!  The best tasting ice I’ve ever had and those brown areas were crunchy streusel that was just over the top.  We were both swooning!

Weekly Wrap-Up; Lots Of Repetition

Let’s start with dinner first and work our way backward, since lunches were all some form of leftovers from dinner.  Usually my meals are all over the place, but this week there was a lot of repetition.

First – and this is the meal that spawned the lunches – we made pineapple stir-fry over brown rice.

We kept things very simple which I think was a major improvement over stir-fries we’ve made in the past.  Pineapple, broccoli, and straw mushrooms with baked tofu (400* for 40+ minutes, drizzled in honey and soy sauce) in a quick sauce of pineapple juice, chili garlic sauce, soy sauce, and corn starch.

Usually I get sick of our stir-fries after the first few bites, but this dinner I enjoyed the whole way through.

One night I made easy eggs.  I don’t remember what Adam ate, but definitely not this; he’s not the biggest Korn corn fan.

2 large eggs scrambled in evoo with corn (Trader Joe’s frozen fire-roasted corn, that I adore by the way.  Cooked with a little sugar and Sriracha), dried basil from my grandma’s garden(!!), and shredded parmesan.

I have two lunches to share this week, both stir-fried rice.  I know that on Monday I drank a third sugary iced coffee in leu of lunch, but I cannot for the life of me remember what I ate on the fourth day?!  Whenever we would discuss food recalls in class I always thought it was silly that people had such a hard time completing them, but now that I’ve stopped daily blogging it has become much harder to recall my meals!

First up, a traditional.

Leftover brown rice with pineapple, peas, carrots, soy sauce, rice vinegar, and 1 large egg.

The pineapple got sort of caramelized and was fabulous.

Next, fried rice that was a bit out of the box.

I really thought that this iteration was going to be amazing but somehow the flavor ended up being pretty dull.

A friend had some good news to share early this week, and we celebrated with beer and bubble tea (of course).  The beer was that nougat beer I keep prattling on about, so I’ll just show you a picture of my gorgeous tea.

Another afternoon, the family took a walk to get ices.

I went with a sour cherry and cola water ice.

Not as good as the strawberry-cola combo I had the last time.

Now evening treats.  The froyo place near our Whole Foods gives a discount if you bring a receipt from the Starbucks next door and that’s what spawned this idea – the sort-of affogato.

A little bit of vanilla froyo topped with a drizzle of fudge sauce and a solo shot of espresso.

Finally, caramel corn.

I cannot stop eating this, so I guess it’s time to give you the recipe.  It is too simple.

Caramel Corn, serves 1 – 2

  • 1 Tbsp butter
  • 1/4 cup brown sugar
  • 2 Tbsp sweetened condensed milk
  • 4 – 6 cups (popped) popcorn
  • salt, to your tastes

Heat the butter and brown sugar in a saucepan over medium heat, until melted.  Stir in SCM and continue to cook until thickened, 40 – 75 more seconds.  Drizzle over prepared popcorn and salt to your tastes.

I’ve made this recipe in larger batches and you can too; all you have to do is keep the ratios the same while increasing as needed.  The leftover caramel corn stores great in a sealed container on the counter for up to 5 days.

Like lunch, these pictures are all pretty similar.  In fact, the base of these three breakfasts stayed the same the whole week!

Overnight oats: 1/4 cup dry oats, 1 Tbsp chia seeds, and 3/4 cup vanilla almond milk; stored in the fridge overnight in an almost-empty nut butter jar (~1 serving left).  Topped with blueberries before serving.

The only thing that changed was the jars.  Barney Butter Crunchy Almond Butter.

Me Eat Food

We are 36ish hours away from finding out where we are going to live for the next 5ish years, so clearly I can’t think about anything else.  I’m not even going to try to make this coherent.  Food good.  Me eat food.

I skipped breakfast and packed too light of a lunch and my poor planning for the first half of the day left me starving for the 2nd half.  Whoops.  At least my protein-light mid-day meal was tasty.  Leftover turkey egg cup filling (sautéed mushrooms with green onion and shredded cheese),

Shades Of White

My 2nd day as a soon-to-be surgeon’s wife was good but busy.  I have a gigantic quiz tomorrow and we have to score at least a 90% on it to remain in our program.  <– yikes!

No breakfast again.  I do have some bars in my cabinet but the mornings are my busiest hours and I don’t remember to eat and even if I did I wouldn’t have the time.  Instead I just really enjoy my lunch.

On today’s menu – a (2 Tbsp of) chunky peanut butter and (2 slices of) turkey bacon sandwich (Thin).

A mix of regular and decaf with hazelnut creamer.  I started adding a scoop of ice to my cups – after watching a classmate do it the other day and being impressed with her genius – and it makes my coffees so much more enjoyable.  I definitely prefer my “hot” beverages luke-warm.

In the afternoon I snacked on a scoop of 1% cottage cheese with half of a Liberte coconut yogurt and a sprinkle of shredded coconut.

<– Sidenote:  I’ve decided that my first foray into fiction is going to be a book titled 50 Shades of White, the pendulum swing from 50 Shades of Grey.  It will be 500 pages of a waspy couple having missionary-style sex and peeing with the door closed.  You’d read that, right?  😀

{Inspired by this recipe}  We put two slices of turkey inside each of our muffin tin cups / filled the bottoms of chopped sautéed mushrooms and green onions and shredded cheese / topped each cup with an egg / then baked for 30ish minutes in an oven preheated to 350 degrees.

I spent the rest of the evening cramming and I’ve got to get back to it.  Tomorrow’s quiz is on the macro- and micronutrient values for the serving sizes per food group for a diabetic and renal diet.  Lots and lots of numbers to know; we can’t all lay around on the job…!

I’ve made it halfway through the first week of this rotation and I only sort of want to nap for a million years.  The teachers have warned us for years that this is the placement that makes everyone get in bed at 9 pm.  I’m crazy, so I’m still staying up ’til midnight, but I’m definitely tired!

I’ve been eating breakfast at the hospital but I need to figure out a new system because the cost of bars is going to add up.  This one was a free sample at least.

Cider House Run

Let me apologize in advance for what is sure to be a post riddled with typos.  I’ll do my best, but I can’t make any promises.  I’m two days in and I’m going to have to agree with my friends who were in the previous rotation – this placement is exhausting.

Breakfast was a Pirouette Cinnamon Pecan Barre.

This bar was in my Yumvelope shipment.  The ingredient list is great – dates, walnuts, pecans, agave nectar, hemp seed, rolled oats, hemp protein, ground flax-seed,brown rice protein, vanilla, cinnamon, sea salt, peanuts – but I wasn’t a big fan of the final flavor; too much date.

Plus hospital coffee with 2% milk.

The McKenzie’s Seasonal Reserve Hard Cider was great.  It had notes of cinnamon that were quite tasty.

I headed straight from Cole’s to meet my friend for a gym visit.  I’m back to the Couch to 10k plan, right where I left off, though obviously I’ve got to stick with it this time.  2 minutes of running/3 minutes of walking, x 10.  I am fat, I am out of shape, I was still a little drunk – my workout was so flipping hard!

In spite of my extreme tiredness and Adam’s messing up our meal plan by eating while I was at the gym, I managed to cobble together a good dinner.  I was worried about not having enough to eat, but I think I ultimately went a bit overboard!

Poor Puppy

I had a few silly things to complain about, but the dog had another seizure today so that kind of all pales in comparison.  He’s doing ok now but we are going to have to meet with the vet soon and possibly rethink our strategy.

Regardless, it’s been a long day and just want to go to bed.  Keeping this quick…
