Monday Felt More Super Than Sunday

Hello, work week!  Did you watch the Super Bowl yesterday?  Were you happy with the outcome?  I will admit to not watching a single minute.  And in fact, Adam and I were a bit under the weather this weekend and did not eat or do a single thing worth mentioning!  Today I’ve managed to get almost back on track and eat some good food.

I had an orthodontist appointment early this morning; nope, I’m still not done with retainers.  My plan was to drive straight to school from there but after two parking lots worth of circling there were still no spots to be found.  Instead I drove to Wegmans and banged out a bunch of work at their comfy booths.  Plus I got a coffee for fuel.

With soy milk and 2 sugars.

My coffee was paired with breakfast from home.  A Coconut Chocolate Chip Clif Bar.

and a baggie of purple seedless grapes.

They aren’t perfect but I did them free-hand so I’m pretty darn proud.

I did work at Wegmans, drove home, walked to school, did work at school, went to class, did work at school, got picked up by Adam, and ended up back at Wegmans for a late lunch.

Some lo mein with a piece of lemon pepper tofu and 1.5 vegan meatballs.

Veggies (mostly mushrooms and carrots with a few green beans).

This hit the spot.

Dinner took a while to cook (you can only fit two trays in our oven at a time) so we arrived home from the store we got right to work on the next meal.

My plate had 1/4 cup of sweet brown rice,

pieces of my Asian Orange Tofu Bake,

and roasted broccoli.

Everything was delicious!  The sauce on the rice and veggies is leftover tofu marinade that I cooked down quickly in the rice pot.  The tofu recipe is from way back in 2009.  I made it again to update the recipe page, still good!

After dinner I managed to drag myself to an 8pm hot yoga class.  Woot!  90 minutes of hot yoga felt so dang good!  I haven’t gone to many classes on this 30-day pass, but I’ve cherished every minute I’ve gotten.

The Whole Dang Day

It looks like this might be a cranky week!  I’ve just got to roll with it.

Last night’s popcorn turned into fries when I had to leave the house for the cell phone I forgot in the car.

Waffle fries do not make me cranky.

What does make me cranky, is the fact that the shoes I wore to the hospital on Tuesday shredded my feet and left me with big painful spots by each heel.  When I went to put on my sneakers this morning I cried out in pain, so clearly a run was not going to work.  Not only did I have to skip a much-needed workout, but I still had to drive to school at 8am so I could park.  Ugh!

I parked my car for easy access to driving to the hospital this afternoon and headed to the library to do some printing.  (I have some complaints about that too but I’ll keep them to myself!)  Then I stopped by the bookstore for a tall, soy chai latte for the walk home.

Funky mood or not, I have to admit that vanilla soy milk definitely adds a little something extra to a chai latte.  And the warmth in my belly helped me through the cold walk home.

I ate this Crispin apple while I cooked,

but that was the end of the “breakfast foods.”  Instead breakfast looked like this –

I chopped up half a large eggplant and sautéed it in a little evoo and chipotle oil, then poured in some water and covered it to steam.  Then I added in a big handful of chopped okra and ~ 1/2 cup of marinara sauce.

While a bit strange at 9am, the eggplant, okra, marinara skillet is one of my very favorite meals!

This afternoon I have statistics, then clinic, then my night class.  Since it’s a cranky day week, I think I’ll be best served by leaving class at 8pm and hopping straight into a shower and bed.  So I’m sharing my dinner now!

Strawberries And Cream, Squared

Adam stayed up later than planned last night which meant I stayed up later than planned last night.  At least it meant I got to catch the dog building a cave.

That is one of the very cutest things that he does!

I also ended up having a snack.  A small but amazing cookie,

and a big pile of grapes.

I may not be a med student, but I did manage to wake up with the husband this morning too.  By 6:30 am we were in our cars and I was heading to the gym.  45 minutes on the elliptical, level 6 random.

I left my car on campus so I could drive home this afternoon, and hurried home on foot for breakfast.

This bowl puts my last attempt at Berries and Cream Oatmeal to shame.

  • 1/2 cup each skim milk and water
  • ~ 1/3 cup (frozen, defrosted) strawberries
  • 1/4 cup oats
  • ~ 1 cup 1% large curd cottage cheese
  • ~ 2 Tbsp strawberry cream cheese

The strawberry cream cheese really helped put a bow on the berries and cream theme.

Toasted Is Like Frosted

I made it over the hump, it’s time to wind down the week.  I know it’s pathetic but I’ve got to admit – three days of actually doing things has left me exhausted!

I did have to hurry, but I managed to leave the house to walk to campus for my two afternoon classes on time.  We learned about Diabetes Mellitus for two hours, and then had the introduction to our class on integrative medicine/nutrition.  My packed lunch was a little weak though.  A mini box of Brown Sugar Quaker Oatmeal Squares (a HLS sample).

And a huge cup of iced coffee with skim milk and English toffee syrup.

Not enough food and too much caffeine made me very shaky and cranky!  Adam picked me up for a quick grocery trip after class and I’m surprised he didn’t strangle me in the frozen aisle.  It’s possible that I stood and stared embarrassingly longingly at the hot bar.

A Coconut Chocolate Chip Clif Bar did the trick when I got home.

This new flavor is an easy cranky killer.

I also had a handful of sliced cucumber.

Cucumber slices with a sprinkle of salt are legit better that potato chips, and I say that as someone who really loves potato chips.

Dinner started with a salad course.

Romaine lettuce with chopped cucumber and yogurt Caesar dressing.

Then more salad and veggie.

Roasted green beans.

And a salad of crock pot chicken, mayo, green grapes, and toasted pecans.

Guys, toasted pecans are ridiculous good.  And I’m telling you that because I told Adam three times during dinner and he hates me.

It’s been a back-and-forth sort of day.  My travels included –

  • home to school
  • school to the WNY Food bank (in a friend’s car)
  • WNYFB to the Broadway Market (carpool)
  • Broadway Market back to school (carpool)
  • school to the post office
  • post office to Wegmans
  • Wegmans to Batavia!
  • Batavia back home
  • home back to school
  • and finally school back to home

Whew!  Way too many miles for my poor little gas tank.

For our last class of the semester, my coordinated program group took a field trip.  We donated the money we earned from the Chili Sale to the Food Bank of Western New York, so we went there today to take a tour and give them our check in person.  The tour was fascinating; a staggering amount of food (1.5 – 2 million pounds) is moved through the food bank each month.

I also packed an Oatmeal Cranberry Pecan Cookie for everyone in the car.

Good reviews all around!

Our next stop was the Broadway Market.

It was fun to see, but I doubt I’d go back.

One of my classmates bought a fig cookie from one of the stands a shared a bite with me.

Shockingly for me, I actually found this to be too sweet.  But the sprinkles were fun.

When we got back to school I had time to print of the last of my notes for final exams before I was off on errands.  I stopped at Wegman’s at 12:30 for a 15-minute lunch.

Food, that wasn’t very good.

I had two different types of brussels sprouts and both were basically raw.  Plus the German Potato Salad (on the right) ended up being more cheese than potatoes.  I’m not saying it wasn’t tasty, but I am saying it wasn’t healthy.

And a coffee with skim milk and two sugars that I dumped down the front of my shirt while driving on the highway.

I’ve had better lunches.

I was driving out to Batavia – 50 minutes each way – for a job interview.  They won’t know for a few weeks and a lot of other (more qualified) people have applied, but nothing ventured, nothing gained.

My long drive was made exponentially more pleasant thanks the new-to-me Ingrid Michaelson CD my friend Kim burned for me.

I loved it!  The sound reminded me a lot of Regina Spektor’s 2nd album, Far.  And there were several songs that I had previously enjoyed but not recognized as Michaelson’s.  Her song “Snowfall” has been my favorite Christmas (or anytime!) song since I heard it on Bones last year. 

How gorgeous is that?

I had enough time before my final event to run home to take a quick shower and make Adam and I the world’s fluffiest smoothie.

For two – combine 1 cup skim milk, 3/4 cup h2o, 3 Tbsp malted milk powder, and 1 scoop chocolate whey protein.  Blend for far too long and you get chocolate malted air.

That big glass literally felt like nothing was in it, but at least it tasted good!  And my 150 calorie serving was surprisingly filling.  Oh the power of protein.

I was back on campus because my friend Janessa and I volunteered to run a nutrition table at the relaxation fair our college was putting on.

We were there two hours and were very pleased to see many students take an interest in our table.

I snagged a popcorn bag from a neighboring snack table,

which sparked the craving for this snack when I got home.

I’ve actually been munching my way through the bag while I typed this post!  Plus two unphotographed cookies that snuck in after I hooked up the camera.

Better Late Than Never

Yesterday I got productive and created two fabulous, must-share recipes … and then I feel asleep (fully dressed, on top of the covers) at 8:45pm.  I’m not going to recap blog but I will share those two important recipes; better late than never!

I was well-rested this morning, but it didn’t keep me from packing food for school that was sort of strange.  Like cooked zucchini.

I ate it, cold, at 8am and loved it.

I also packed a baggie of red grapes,

and two Oatmeal Cranberry Pecan Cookies.

Those were fabulous dish#1, but I’m actually not going to share the recipe until tomorrow (it’s been a busy day).  Adam says they are the best oatmeal cookies he’s ever had and I promise they are worth check back for tomorrow.

My packed food proved inadequate for getting me through 8:00 – 2:00, and I ended up eating these Cheez-Its.

I also ate two more cookies when I got home,

plus these candies from a birthday package Adam opened (he turns 26 on Sunday!).

He also opened some birthday $ and decided that we are going to dinner at Moe’s!  I’m not going to blog dinner because I’ve got to get some school work done, but I will share yesterday’s dinner, aka fabulous dish #2.

Pineapple Upside-down Chicken, serves 4

  • 1 lb boneless, skinless chicken breasts, divided into 4 even pieces
  • 20 oz can pineapple rings canned in pineapple juice, juice drained and reserved
  • 4 slices 2% provolone cheese
  • 4 maraschino cherries
  • 2 tsp light brown sugar
  • 2 pinches salt
  • 1 tsp tamari soy sauce
  • 2-3 dashes hot sauce (I used Sriracha)
  1. Place chicken in a large, flat container and cover with pineapple juice. Cover and place in the fridge for 2-3 hours to marinate.
  2. Preheat your oven to 350 degrees Farenheit. Prepare a casserole dish with baking spray.
  3. Remove chicken from juice (return the juice to the fridge) and place into the casserole dish. Bake 30 minutes.
  4. Remove chicken from oven and top each piece with one slice of cheese and one pineapple ring. Place a cherry in the center of each ring. Sprinkle rings evenly with brown sugar and salt. Return to oven and continue to bake for 10 minutes.
  5. Meanwhile, pour juice into a small skillet over high-heat. Add tamari sauce and hot sauce.
  6. Bring to a boil and cook until reduced by half. ***Because the juice was in contact with raw poultry it is essential that you keep it at a boil for at least 5 minutes!
  7. Pour sauce evenly over cooked chicken.

I’ve never actually had pineapple upside-down cake (I know!) but the flavor profile has always sounded appealing to me. So why not apply it to dinner? We learned in food chemistry that pineapple contains Bromelain, a protease that is used commercially to tenderize meat.  As soon as I heard that I spent the rest of the class brainstorming ways to cook chicken with pineapple.  I’m glad I did too, because Adam and I both loved this recipe!  The chicken was very tender and there was a good balance of flavors.  The sauce was scrumptious, but be sure to remember to boil it for at least 5 minutes.

I Was Told There’d Be Book Club

Book club was a success!  And Adam got off of his shift early and got to spend the afternoon with me, so it was a great day all-around.

I got up early to do some final cleaning (when people come over I like to pretend that we’re not slobs) and snacked on a bag of popcorn and a slice of 2% provolone while I worked.

I also did some major 2-for-me-and-1-for-the-bowl-ing while I prepped the fruit salad.

At 10 my friends arrived and we feasted.

We may not have really talked about the book (I Was Told There’d Be Cake) but at least we had some good eats!

My plate had potatoes,

fruit salad,

cheesy baked eggs,

and a crepe (so cool!) with Biscoff spread on the inside.

We also made hibiscus mimosas.

It was all great fun.  No people pictures though because we suck at remembering to take them.  I always have my camera with me (duh) so I need to do a better job at snapping candids.

We book clubbed until after 3pm and then my cultural meal pattern group and I baked some Irish soda bread to bring to our presentation tomorrow.  By the time they left I was starving again and my study motivation was seriously waning.  But I have an important cumulative exam – spanning two semesters and material from 2 courses – tomorrow.  What to do, what to do?

Somehow the husband and I decided that the solution was to go out to dinner and study at the table while other people prepared our food!

We went to an all-you-can-eat sushi spot that has a longish wait between courses and it was actually perfect.  I’m not prepared for tomorrow by any means, but I got a lot more done than I would have at home.

I also ate a lot.  I just plain don’t have time to break the pictures down, but here’s a shot of what I ate.

Wow!  Highlights included edamame, tamago (sweet egg) sushi, and tempura zucchini.

And we stopped at Wegmans for a candy cane for dessert.

Blood From A Stone

I stayed up until past 1:30 last night!  I didn’t really get much work done but I did have fun eavesdropping on the boys’ funny poker smack talk.  I planned on staying in bed for 8 hours but the husband got up with the dog and lured me from under the covers with farmers’ market trips and coffee.

He made me a warm to-go mug with Silk Almond Milk and English Toffee Syrup.

We bought a few things at the market but we did some giving too.  Adam gives blood regularly and when he spotted the donation truck we popped in.  I’ve never been able to give blood because my veins are tiny and wimpy – the last two times I’ve had to have blood taken for blood panels I had veins in both arms popped!  One time I tried to give in college and the man meanly told me he wouldn’t be able to do it without a children’s needle and that I should work out more!  But guess what I did today –

Booyah, I’m finally a blood donor!  They had to (carefully) use a vein in a sort of odd placement – Adam said it was probably a branch of the cephalic vein – but I managed to produce a full pint!  I think being a donor is really important, I’d also like to donate marrow in the future, and I am so excited to finally join the ranks of big kids who give blood.

When we got home I made a fantabulously tasty cereal bowl.

A serving of Barbara’s Vanilla Almond Shredded Wheat topped with a sliced plum, a sliced plucot, and more almond milk.

This combination of flavors and textures may actually be my favorite thing ever; the types of sweetness play off of each other so well.

I did a tiny bit of work in the morning and then Adam and I had errands to run.  Our fridge was basically empty, which lead me to one of my more “creative” concoctions.

The last Tbsp of light sour cream with the last Tbsp of blue cheese crumbles, a few capers, and a dash of A-1 Steak Sauce.  Spread on top of a Bagel Thin.

I actually thought the end result wasn’t bad, but Adam was in love with it so I ended up sharing most of the bagel with him.

I also ate this big bunch of grapes.

And this 2 oz mix of yogurt covered raisins, peanuts, and pretzels.

I needed more of a lunch though because I thought I was going to pass out from hunger by the time we got home. Thankfully we had 7pm plans so there was an excuse to have an early bird’s 5 o’clock dinner.

I am pretty much done with Saigon Cafe because their “Thai spicy” is apparently my mild and bland, but we had a Groupon so I gave it one last shot.  Crisp tofu to start.

For my meal I ordered the tofu tamarind, Thai spicy, with extra veggies.

And, I’m done. Saigon Cafe does ok noodles dishes but their meals are always disappointing. I ate about half of my dish with two bites of rice and two stolen bites of Adam’s Pad Thai.

It was a double Groupon night and our main activity was Art By You.

They provide the materials and a quick lesson and you provide the talent, or not.

Adam thought it was fun too, and it was great to do something artsy with him.

We weren’t ready for the fun to end so now we’re cuddling on the couch and watching “That ’70’s Show.”  I’ve been hungry all day so I did dinner take 2 from Moe’s.

That’s a kid’s quesadilla with corn salsa, plus chips with queso dip.  I also snagged most of the husband’s chips too.

I’d like to say that I’m done but Adam put a frozen pizza in the oven and I’m pretty sure I’ll end up having some.  I’m putting away the camera for now though.  I’ll end with my favorite shot of the day.  Whenever we leave him alone too long Webster gets into our reusable bags like an asshole.  When we got home this evening he was stuck in one of them and wearing it like a cape.

I thought Adam and I were going to die laughing!
