Five things from the past week —

{1} I really enjoyed these two cans from Nitro Coffee Company.  The nitro gives them a super velvet-y mouthfeel.

{2} A very hydrating cocktail.  Vodka with lime, watermelon juice, and watermelon seltzer.

{3} We made twice-baked potatoes that were delicious.  Stuffed with butter, sharp cheddar, turkey bacon, green onion, Kewpie, and fish sauce.

{4} A very loose take on homemade okonomiyaki.  Made with shredded brussel sprouts!

{5} Did I mention yet that we adored Space Force?  We also loved the new SF-themed ice cream from Ben & Jerry’s.

Bridge + Brigadeiro

Highlights from this week include…

Adam and I were both off on Tuesday and we had a great city/social-distancing date!  Walks across the Manhattan Bridge.

And take-out lunch in Seaport.  Brigadeiro iced latte from Cafe Patoro.  <– one of the best lattes I’ve had in awhile, even aside from the fact that the cup was slathered in Brazilian fudge sauce!

My homemade dinners don’t look that exciting but were totally delicious.  A cheesy, crunchy, veggie-filled casserole with cauliflower rice / ground turkey sauteed with smoked paprika, sweet onion, and orange and yellow bell pepper / black beans / Trader Joe’s pineapple salsa / and a topping of buttery crushed tortilla chips and sharp cheddar.

Ground turkey with gojuchang, Korean chili flakes, and green onion on a bed of roasted cabbage.  I went back and topped the whole thing generously with Kewpie and Sriracha and loved every bite.

We made fantastic daiquiris this week!  Cruzan rum and soursop nectar with lime juice and sweetened condensed milk.

Is it even summer in New York yet if you don’t eat an Italian ice?  I got toasted marshmallow with key lime and I’m pretty sure that’s going to be my combo for the rest of the summer.

Cola In My Beer And Oats In My Coffee

We officially went back at the hospital full-time this week and I’m not going to lie, the transition was rough.  Sitting in the ICUs means I have to wear an N-95 mask all day long which comfortwise is a big change from charting in my kitchen next to an iced coffee.  Thankfully I had a few days off mid-week so I was able to ease into it.

Highlights…

This week’s coffee combo was Starbucks cold brew with the super marshmallowy Chobani chocolate oat milk.

I went grocery shopping mid-week which meant our Trader Joe’s snack stash is fully stocked.  I recommend this new nut mix.

Three things from the weekend –

{1} Is it even a work-day (Friday) if I don’t eat a giant yogurt bowl?

This one had honey vanilla Greek yogurt, espresso vanilla granola, and fresh blueberries.

{2} We got our most exciting beer delivery from Evil Twin yet.

Sour ale brewed with milk sugar, caramelized barley, vanilla, dark cherry, and cola syrup // sour ale brewed with milk sugar, vanilla, and orange soda syrup // sour IPA brewed with raspberries.

{3} We got curbside take-out from Comfortland and it was everything I’ve ever dreamed of.

I got a biscuit sandwich with egg, cheddar, and turkey bacon.  Plus a pineapple guava doughnut that knocked my socks off!  And we had frozen painkillers and frozen New Orleans iced coffee with oat milk.

Yogurt bowls!  Working from home means I can make a fresh yogurt bowl every day and I have been loving the crap out of having berries around.  Very excited that we are going to the store tomorrow and can restock.  Icelandic-style coffee yogurt with blueberries, blackberries, and coconut chips.

This was my first week of work-from-home and it’s definitely been an adjustment.  When I’m at work-work I tend to skip lunch 1-2 days a week because I’m busy or just not that hungry but home apparently my appetite works just fine!  I ate all the snacks.  <– all the snacks, like I can’t do a repeat performance next week because I ate all of the ice cream that was supposed to last until our next grocery trip 🙂

Thankfully we had some really good snacks on hand!  Here were the highlights…

Phin coffee with sweetened condensed milk (10/10, would recommend).

Sheet-pan fried cauliflower rice.  Very similar to this recipe but with cauliflower rice and smoked turkey breast.  It was wonderful!

Back At It

Big news I’ve been waiting to share – I went back to work this week!  I finally found a job that is a good fit for my experience; I’ll be responsible for the ICUs at a hospital in Queens.  Great timing, right?!  I actually will be able to do some work-from-home days but this week I had to go into the hospital for training.
