This Post Is {Pea}Nuts

We got home from Philadelphia after midnight on Monday and Tuesday morning definitely felt a little rough.  I had clinical practice all day so I had to solider through, but I became pretty much worthless the minute I got home.  Same story this evening.  However, I promise that if you make it through this post there will be two tasty peanut-y recipes waiting for you at the end!

Caffeine was a necessity Tuesday morning.  My friend and I shared this Silk Dark Chocolate Pure Almond milk in our coffees.

My other hospital eats included… An Apple Cinnamon GoGo Squeez.

An Enjoy Life Rice Milk Chocolate bar.

And a KIND Almond & Apricot Bar.

The KIND bar was the best.  The name only references almonds and apricots but the base was pure coconut!  It reminded me of a macaroon.  I bought another one at the store today and I’m pretty jazzed about it.

When I got home I had a serving of Cascadian Farms Dark Chocolate Almond Granola with Blue Diamond Almond/Coconut Milk and fresh blackberries.

Plus a serving of Rice Divine Mud Pie Ice Cream with peanuts on top.

My 2nd tasting of this ice cream left me with the same impression as my first; it’s awesome.

Dinner was awesomely quick and easy.

A microwaveable Punjab Eggplant dish from Trader Joe’s (I ate the whole package),

with a serving of pita chips for crunch.

I ate another serving’s worth of chip crumbles straight from the bag.

Wednesday’s meals were even better than Tuesday’s, but they did get off to a late start.  I’ll skip a long story about my unsuccessful breakfast and just say that I didn’t get to eat today until I got home from school.  And I got home after class, lab, and several hours working on a group project.

I was hungry as hell and thrilled that my dinner plans could come together in under 15 minutes.

I updated my Easy Peasy Peanut Noodles recipe (shared at the end of this post) and was pleased with the results.

If we call that my “3pm breakfast,” then the food I ate from the hot bar while we were grocery shopping was lunch.

Both were quite tasty.  This may have been the first time I’ve ever eaten farro and I enjoyed how creamy it was.

Dinner was snacks and beer.  I got out my food processor for some peanut grinding took several taste tests at every stage of peanut butter production.

This honey roasted peanut butter comes together in a snap but it is one of Adam’s favorite things that I make (recipe is shared below).  I also made Webster some pupsicles; if I have to clean the food processor I’m going to make sure I really use it first!  <– let’s be real; I’ve never cleaned the food processor, Adam always does it

We split a Wolaver’s Pumpkin Ale that was the perfect blend of sweet and spice.

Then we started a Dogfish Head Punkin Ale that I didn’t enjoy and passed off to Adam.

You would not even believe how many pumpkin beers I still have left!

As promised, recipes…

Easy Peasy Peanut Noodles, serves 2

  • 4 oz dry linguine
  • 1 cup frozen peas
  • 2 cups frozen broccoli
  • 2 tsp canola oil
  • 4 Tbsp peanut butter
  • 2 Tbsp tamari
  • 2 Tbsp  rice vinegar
  • 2.5 tsp sugar
  • (optional) dash red pepper flakes
  • (optional) 1-2 Tbsp peanuts
  1. In a small bowl, whisk together peanut butter, tamari, vinegar, sugar, and red pepper flakes if using.  You may want to microwave the bowl for 30 seconds or so to help loosen the peanut butter.
  2. Cook pasta according to package directions.  When 5 minutes of cooking time remain, add frozen veggies to the boiling water and stir.  Drain and set aside when pasta is finished.
  3. Once pasta is cooked, heat canola oil in a large pan over medium heat.  Add cooked pasta and veggies to the pan.  Cook 3 – 5 minutes, until the noodles start to get a bit crispy.
  4. Pour sauce over pasta and toss to combine.  Continue cooking for 5 – 7 minutes, until desired consistency is reached.  My family likes to cook it until the sauce starts to form a crust on the pasta, but this dish is ready to serve as soon as everything is tossed together.
  5. Serve and top with peanuts if desired.

Honey Roasted Peanut Butter

  • 1 lb honey roasted peanuts (I highly recommend Trader Joe’s if you can get them)
  • 2 Tbsp canola oil
  • 2 Tbsp honey
  • 1/4 tsp salt
  1. Put peanuts into food processor and process 1 – 3 minutes until mostly smooth.
  2. Add remaining ingredients and process until fully combined.

Vegan Visit

A road trip is not an easy time for a restricted diet, but with a combination of preparation and an understanding family I made it work.

I made sitting in the car for six hours work by dressing in comfy-cute clothing.

Plus my driving moccasins.

Food from home was for breakfast.  A sandwich of tempeh, Smart Balance, and strawberry jam (a killer combination) on a Sandwich Thin.

And a sugar-free Red Bull from a gas stop.

I have been seriously tired lately; I need to make sleep a priority next week or I should basically just buy stock in energy drinks.

For lunch I was jazzed to spot a Sheetz.

I had a medium soy milk latte with marshmallow syrup.

I’m doubtful that the syrup was actually vegan but I’m taking a loose approach to the challenge on this trip.  The coffee was delicious with tons of foamed milk and I was glad I got it, vegan or not.

Plus a veggie burrito.

This was not delicious.  I made myself eat half so I wouldn’t be too hungry for dinner but if there had been other options I probably would have tossed the whole thing.

For dinner we got Italian food with my in-laws.  P.S. We are staying with Adam’s sister and her husband and getting to spend time with my two nieces is making my ovaries hurt; they are so flipping cute!

I’m Typing With One Hand…

…so I’ll keep this short.  Speaking of keeping things, Adam will have to keep me, my surgery went off without a hitch!

It wasn’t a big deal – I just had a benign keratosis removed from the back of my hand – but they sure were dramatic about it.

I had to wear a gown, and get wheeled into the OR.  And look at my giant bandage –

they called it a “sympathy cast!”  I’ll have my stitches in for ten days and then I’ll be right as rain.  But unfortunatly they told me that I’m not allowed to work out while my stitches are in.  I know I haven’t been working out anyway but I really was excited to start again!  Ten days…

They told me to take it easy after surgery but I actually had to head over to a friend’s house to work on a group project.  At least I got some Moe’s out of the deal.

I got a naked burrito (aka a less expensive rice bowl) with black beans, lettuce, green pepper, onion, mushroom, corn salsa, and guacamole.

Delicious.  Moe’s is a great option for Vegan Month.

Resting up didn’t happen the rest of the weekend either, I worked both Saturday and Sunday.  Saturday morning was rough (on top of everything else we started an hour earlier than usual), but at least my shirt matched my bandage!

I ate an apple on the walk to work.

And a drank a Rockstar to help keep myself awake in spite of my pain medication.

My medication makes me feel pretty funny – nauseous and tired and all sorts of loopy – so I never ended up getting lunch at work.

Dinner was a buffalo seitan wrap from the co-op.

Plus a roasted potato.

Those fries are cut so nicely because the husband did it for me.  He’s been so nice helping me while I fumble around!

I did manage to catch up on some sleep this morning.  Thank goodness for Daylight Savings.  Even with the extra hour, all I managed to accomplish today was a shift at work and switching out my summer and winter wardrobe.

Breakfast was an amazing bowl of cereal.  Blackberries with cinnamon sugar, 1 serving each All Bran Bran Buds and Cascadian Farm Dark Chocolate Almond Granola, and Blue Diamond Unsweetened Vanilla Almond/Coconut Milk.

I had the granola from the HLS and have wanted more ever since!

A very late lunch was purchased at the co-op after work.  Broccoli salad and vegan mac and cheese with veggies.

The mac was so tasty that I almost made Adam walk back and get me more!

Instead I was basically stoned on pain meds all evening and was a total weirdo.  Dinner just didn’t happen, though I did eat multiple desserts.

It’s 10-11-12!

I’m blogging a two-day recap from a blanket nest with a killer migraine, so please excuse any typos.  I was hoping to be back on a “normal” blog schedule by now, but I’m not sure that’ll ever happen this semester!

Going back to yesterday… Wonder of wonders, I made it to the gym!  20 minutes on the elliptical; random level 6.  The machine was out of water so I drank a fruit punch g2 while I worked.

It was embarrassing to have so much fuel for such a short workout but I ended up being very thankful that I had it.  I guzzled most of it during my workout, then refilled the bottle with water and drank all of that on the drive home.  I guess I came back from Philly a little dehydrated.

From my trip to the gym, I came back short on time.  Thank goodness Adam had the day off yesterday; he drove me to school and packed my breakfast.  FNCE expo samples were heavily featured.  An iced coffee with skim milk.

I was a big fan of the (pinto bean and flax-seed) chips.  They were nice and crunchy with just a touch of spice.

I’m also a big fan of things working out in the lab.  Look at what I made in Microbiology – spread plates and pour plates!

Adam’s undergrad degree was in Microbiology Immunology and sometimes it is downright embarrassing to show him my class-work!

I had several to-do’s after lab, but I made it home in time to make dinner before work.  My mid-day meal was pretty lame.  2 small corn tortillas microwaved with ~1/4 cup shredded cheese.

Plus a 2% Fage with Peach.

And the last two Buttered Rum Raisin Cookies from the batch I brought my friend.

We are getting in all of our Christmas stock now and work was more like a workout; I carried boxes up and down the stairs for my most my shift.  I was very glad to have dinner already finished when I got home.

Green Tuna Enchiladas; serves 4-6

  • 1 tsp evoo
  • 1 medium green bell pepper, finely chopped
  • 1 medium red onion, finely chopped
  • (2) 10 oz cans tuna
  • 1/2 cup plus 1 cup green tomatillo salsa
  • 12 small corn tortillas
  • 4 Tbsp light half and half
  • 3/4 cup reduced-fat shredded taco or Mexican-style cheese
  1. Preheat the oven to 350 degrees Farenheit.  Heat evoo in a large pan over medium heat.
  2. Add onion and peppers to oil and brown, about 7 minutes.
  3. Add tuna and 1/2 cup salsa to veggies and cook 2 more minutes.  Remove from heat.
  4. Spoon 2 T filling into each tortilla and place into a 8×11 inch casserole, seam-side down.  Too keep tortillas from cracking and breaking, it is helpful to cover them with a damp paper towel and microwave for 30 seconds.
  5. In a separate bowl, stir together the last cup of salsa with half and half.  Spoon mixture over enchiladas.
  6. Sprinkle cheese evenly over casserole and bake 20 minutes.

Dinner did not fill me up like I was hoping.  I ate a huge spoonful of Skippy Natural Super Chunk with Honey; aka the very best peanut butter ever.

And I had dessert.  I am working on a hot chocolate recipe so I’m not going to share the ingredients now, but I will tell you that this batch included a serving of Caramel Apple Milky Ways for funsies.

It was ridiculous good.  Ridiculous.

Moving on to Tuesday… Today had a productive start but has steadily gone downhill.  I had a difficult time getting out of my warm bed and ended up eating breakfast on the walk from my car to the hospital.  A Sweet Tango apple,

and a Full Moon Brownie Z-Bar, which I actually hated.

I couldn’t put my finger on what the problem was specifically, but the taste of the bar was not good to me.

Today was my busiest day at clinic yet.  I had a patient on my own in the morning, then worked on another in a group later in the afternoon.  We had our first practice with tube-feeds today and it was both fascinating and frustrating.  We’ve learned a lot in school but it’s all been in isolation; in the real world conditions overlap.  For example*, you might have a patient in End Stage Renal Disease that has increased protein needs for wound healing and is also a Diabetic. *just an example, this wasn’t a specific patient that we worked with today

Also, my friend Janessa and I offered to turn-key some of what we learned at FNCE, so we did a short presentation on ketogenic diets for epilepsy.  The group had to stay late so that we could present and I love them all for still being interested in what we had to say.

I ate a late lunch during my afternoon errands.  Vegan pecan cornbread stuffing from the co-op.

Buffalo peeps – run to the co-op to get some of this stuffing, it had the perfect blend of flavors and textures.

Then hot bar at Wegman’s while I ran through my notes before shopping.

I did three types of vegetable stir-fry.

I am glad that I got in veggies and time studying, because both were in short supply when I got home.  Minutes after walking in the door, I got an immense migraine.  It came on much more quickly than they usually do and made me unbelievably nauseous.

Adam brought home pizza for dinner and I ate a big plate once I was able to get out of bed.

Now I have to go try to study for tomorrow’s giant exam.  <– so screwed

Crazy Cakes

Crazy-cakes is one of my favorite expressions and for the post title I’m using it both figuratively and literally.  It is crazy stupid that I’m blogging at 1:30 a.m. on a Sunday.  Things have been crazy busy and the next two weeks are only going to get crazier.  Finally, I fulfilled a birthday list goal and made a crazy good cake.

The past few days have been crazy on the healthy living front but I want to blog them because I don’t live a healthy living blog, I live my life.  And in my life 90% of what I’ve consumed in the past week has been pizza.  I’ve decided that attempting to work out over the next week would actually be unhealthy because I’m already getting so little sleep (my planner is workout-free until October 10th).  I’m super stressed and not doing the best job of balancing school work with too many hours at my job.  But again, this is my life.

As I prewrote these posts in my head I had a lot to say, but now that it’s been 4 days since I last blogged I think we shall go WIAW-style for the recaps.  Note – there is no recap from Thursday because I took the day off from everything, took no pictures, caught up on “Awkward” and “Covert Affairs,” and ate pizza and Chinese food for dinner.  It was both necessary and delightful.

The Next 2 Weeks

  2. (9/27)  the 4 major assignments from my community clinical rotation are due
  3. (9/28)  I’m presenting a journal article for my research methods class.  It is a 25 minute Powerpoint presentation and it makes up a large percentage of our grade.
  4. (9/28)  we have our first Microbiology test
  5. (10/1)  we have our first MNT test <– it is going to be so difficult that our teacher recommended that we all quit our jobs if we can
  6. (10/6)  two friends and I are driving to Philly for 4 days for a professional conference  <– fun, but also holy frick, when am I going to pack?!

Cake!

One of my goals for my 27th year was to bake a cake from scratch.  I figured I’d only do this once, so I wanted a recipe that was delicious but didn’t call for cake flour.  After much pondering and Googling, I settled on this Hummingbird Cake recipe from Serious Eats.

If you’ve never had Hummingbird Cake before (I hadn’t!), it is a yellow cake with chopped pecans, crushed pineapple, and mashed banana in the batter that is frosted with cream cheese icing.  This combination of ingredients ends up being amazing.

I made the following changes to the recipe and they all worked out –

  • light brown sugar instead of dark brown
  • low-fat buttermilk
  • canola oil instead of vegetable oil
  • 1/3-reduced fat cream cheese

I baked the three cakes when I got home from work on Friday night.  This activity, of course, included a sprint to purchase more eggs at the co-op 10 minutes before it closed.

Then Saturday morning I layered and frosted helped Adam frost the cake.

His surgeon’s hands came in very handy.

It ended up being a big success!

I brought the cake to book club and it got two-thumbs up all around.  If I ever have to make another cake in the future I will definitely think of hummingbirds.

Both of my book club offers were pineapple-based, because I also made my Tropical Fruit White Sangria.

This batch was made with –

  • 2 cups chopped pineapple
  • 1/4 cup granulated sugar
  • 1 cup Cruzan Guava Rum
  • 1 bottle Rosebud Gold (a local sweet white wine)
  • 10 oz lemon seltzer water

Saturday

Eaten before my 10 am shift at work because I had been up since 5:00 frosting and studying.  Leftover bbq chicken pizza and sliced apple.

Appletastic

Today was a much better day!  Mostly because I accomplished tons and ate a healthy and amazing tasting dinner.  Also, I’m a little drunk.

Yesterday wasn’t the best day and it was clear from my post that I was a little depressed.  Several of you commented on my consumption of Halloween candy pre-Pumpkin Month and all I can say is “it won’t happen again.”  I’m so ashamed!  🙂

For breakfast I packed a sandwich to eat in class.  A slice of 2% colby and 2 slices of Applegate Farms turkey bacon on a toasted Cinnamon Raisin Bagel Thin.

It was a little dry but oh-so-tasty.

Plus the last serving of my caramel apple sugar babies.

These guys win as my #1 favorite Apple Month candy.  But eating them at 9am did make me a little sick.

I got a ton accomplished this morning, between a break in class and the time after my Micro lab, I polished off several school to-do’s.  I am way (way, way, way, way, way) behind on studying but it felt good to make a dent.

Then I went to a orthodontist appointment.  My last full-time-retainer-wearing orthodontist appointment!

I screamed when I heard the good news and scared the crap out of my orthodontist.  Then I told him I was going to go swish coffee.

I didn’t actually get any coffee because I had another appointment, but I am looking forward to leisurely sipping through my morning class for the rest of the semester.  It’s also worth mentioning that I didn’t have time for coffee or lunch.  <– remember that when I remind you that I’m drunk a minute from now

My 2nd appointment dealt with a recall on my car.  It turned out I did have the defective part and I was very glad that I could get it fixed for free.  I guess when I called them “stupid errands” yesterday I spoke too soon!

I worked at The Spot for an hour or so before I headed home.  Then I made us an appletastic dinner, complete with on-theme booze.

Adam and I split this Crispin Honey Crisp Hard Apple Cider while we cooked.

The “soft” cider was even more amazing though; we also took swigs of this Red Jacket Fuji Apple Cider.

It was so perfectly sweet!  We loved it.  And it helped make dinner amazing.

  1. I melted 1.5 Tbsp butter in a large skillet over medium-high heat.  Then I sautéed 1 pint sliced mushrooms and 1 small chopped Sweet Mayan Onion, with a sprinkle of salt.
  2. Next I added 4 cups cole slaw mix and 1 cup apple cider and cooked until the cabbage was soft.
  3. I removed the veggies from the pan, added another 1/2 Tbsp butter and 8 oz sliced Naysoya Super-firm Sprouted Tofu.
  4. I cooked the tofu until crispy in 1 tsp apple cider vinegar, 1 tsp maple syrup, and a sprinkle of salt, then put it on top of the cabbage.

Soooooooo good.  The veggies were sweet and savory and the tofu had the best texture.  That ‘fu is going to be my go-to from now on.

Now I’m off to hopefully kill my buzz with popcorn.

If I can get myself together, I’m going to try to bang out another hour or so of work tonight.

Crazy Week Was Crazy

Phew, am I glad that’s over!  Ha!  Not really; this week was crazy but the year is bound to only get crazier.  And I didn’t even have that much going on with school last week.  I did, however, work every single free day.  Also, the husband’s residency applications went out today.  <– giant stressball

Here’s what’s been going on:

  • I haven’t blogged since Wednesday
  • I didn’t work out a single time last week (insert major sad face here)
  • I didn’t do any enough school-work
  • I worked my butt of at work-work
  • I put in a lot of hours helping the husband to finalize his application and edit his personal statement
  • I had to videotape myself giving the husband a nutrition education (it was hilarious)
  • I didn’t eat anywhere near enough the past few days and I’ve been out of control cranky
  • I went to the co-op and stocked up on organic ramen so I never have to skip so many meals again (I was truly that busy)

I don’t have time to do a proper recap but I have taken a photo of every food item that’s passed my lips so I am damn well going to blog them!

Thursday

My clinical group toured the food bank as part of our community rotation.  I car-pooled with a friend and we used a BOGO coupon for iced coffees with skim milk along the way.

We discovered that Got Milk’s Magic Milk Chocolate Peanut Butter Straws turn iced coffee into something magical.

So flipping good!

We spent the 2nd half of our food bank visit sorting tomatoes.  It was nice to help out but I had to squelch some major throwing urges.

Lunch was plain yogurt with 2 Tbsp flax and chopped plum and nectarine.

Dinner was Jenna’s Baked Polenta with Mushrooms, Gorgonzola Cheese, and Tomato Sauce.

I made a bunch of changes but the basic recipe was still hers.  My updates –

  • made 4 servings
  • 1 cup of polenta (cooked without butter)
  • 2 pints mushrooms (sautéed in 1 Tbsp butter 1st)
  • 1.5 cups marinara
  • 1 cup gorgonzola
  • cooked 20 minutes

It was really, really good!

Friday

I ate a strange lunch-breakfast in class.  A 2 slices of Applegate Farms turkey on a Sandwich Thin with yellow mustard and 2% colby sandwich.

Roasted seaweed.

An apple.

And apple month candy.

This didn’t fill me up at all and I ate lunch an hour later.  And by ate I mean shoved into my face in under two minutes.  A Wegman’s Low-fat Honey Yogurt.

And a Justin’s Chocolate Hazelnut Butter squeeze packet.

That Justin’s isn’t even like Nutella, it is frosting!!

Saturday

…was ridiculous.  0% Chocolate Oikos.

However – I ate all three of those items at work.  And then I didn’t eat anything else all day.  My day went – get up. work, work, work.  edit Adam’s applications.  bed.  He may have slept on the couch.

Sunday

Two breakfasts to make up for yesterday’s lack of calories.  1 serving of Special K Vanilla Almond in Blue Diamond’s almond/coconut milk blend.

Nature’s Path Apple Pie Crunch Plus Chia Bar.

I only bought this because I was having an Apple Month frenzy, but I actually loved it.  The bars were crunchy without being too crumbly and the apple spice flavor was subtle.  Plus, 3 grams each protein and fiber.

I bought a Raaw Passion Fruit Wheatgrass drink at work.

I used to love Jamba’s oj and wheatgrass shots with a passion (ha!) and I adore passion fruit so this was the perfect thing for me.  If the co-op keeps stocking them I will certainly buy one again.

Adam handed me three gummi mice this afternoon.  (His nickname for me is Mouse.)

We had to videotape our interview when I got home from work and it ate up most of the afternoon.  More time was spent giggling than recording!

I had my class review at The Spot this evening so I had another iced coffee with skim milk and a magic straw.  I didn’t manage to photograph but I imagine most of you can use your imaginations.
