I’m Not Crabby About It

Highlights from the week…

Coffee combo = Trader Joe’s Kona with chocolate milk.

IMG_5383

My snacks were all 10/10 this week!  TJ’s newest candy bar – white and dark chocolate with mini gummi bears.  I love the chocolate + gummi combo.

IMG_5362

CoolHaus milk and cookie crumb.  CH is quickly becoming my favorite ice cream brand.

IMG_5401

A Monster smoothie at Juice Laundry – cacao, cashew butter, banana, dates, and almond milk.

IMG_5440

Crazy good buffalo chicken pizza from Whole Foods.

IMG_5465

My dinners were not bad either.  I made crab salad!  Lump crab meat with mayo, dijon, lemon, paprika, and celery.  Served on butter toasted whole wheat hot dog buns.  Plus sauteed kale with lemon, celery, and onion.

IMG_5431

I turned my leftover salad into an okonomiyaki-esque crab pancake with flour, water, ginger, and eggs.  Plus roasted green beans on the side.

IMG_5468

Another night I stuffed a hot dog bun with two turkey dogs and ketchup.  Plus rainbow cauliflower (a frozen bag from TJ’s sauteed with taco seasoning, lime, and butter) and potato wedge fries from Wegman’s hot bar.

IMG_5444

Finally, we made cauliflower quesadillas that actually turned out pretty yummy.  Plus a side of fajita veggies.

Weekend Warrior

Last weekend we visited my family at their cabin in Solomon Island Maryland.  We got to see my dad, Webster went swimming, we ate crab cakes and rum and cokes… it was a perfect visit.

IMG_29371

This weekend I’ll be taking another trip.  I’m working a half day today and then heading to Charlotte, North Carolina for a nutrition support conference.

Five highlights from this week…

{1} Coffees in cans.  All three were good but the Madrinas vanilla cappuccino was my favorite.

IMG_5293

{2} Pie mixed in yogurt is my favorite dessert iteration.  And this combo was such a winner – Siggi’s guava and leftover key lime pie from the weekend.

IMG_5306

{3} Snow Cone Pouch!  In birthday cake!  The texture and flavor were both great, I highly recommend snagging one of these if you spot them.

IMG_5333

{4} Whole Foods hot bar dinner.  Thai green bean salad // baked beans // macaroni and cheese // steamed broccoli // tofu // orange chicken // Asian cabbage salad.

IMG_5328

{5} Chicken and rice soup.

IMG_5337

Berries In My Sandwich And My Beer

Five fun things from this week…

{1} Blanchard’s holiday blend coffee with sweetened condensed milk.  And the next day I made a shakerato!

IMG_5237

{2} A duo of fruity ales.  I did not care for the tea taste of the Suncrush but the Troegs bosenberry tart ale was super interesting and packed with flavor.

IMG_5276

{3} A toasted pb&j with this winning combo.  FYI: toasting your peanut butter sandwiches is the way to go.

IMG_5254

Served with the classic pb&j sides – baby carrots and apple slices.

IMG_5264

Plus a new favorite – chicken and waffle chicken chips.

IMG_5246

{4} Dinner from Got Dumplings.  Tofu dumplings, kimchi, and peanut noodles.  Plus guava and mango tea with boba and lyche jelly.

IMG_5221

{5} I made tom kha gai.  And it was good!

IMG_5285

Tastes Of The Tropics

Tropical tastes from the last week include – coconut, Cuban food, rum, soursop, starfruit.

The best things I ate last seven days…

Caramel spice latte in a can.  My brain won’t accept that I hate coconut milk in coffee yet but this did smell amazing.

IMG_5069

But I loooooove Kirt’s marshmallow ice cream blended into iced coffee.

IMG_5103

These 7-11 gummies were rainbow sherbet, cotton candy, and starfruit flavored.

IMG_5098

We ordered chocolates from Bon Bon Bon – an adorable candy shop in Detroit – and the packaging alone filled me with glee!

IMG_4986

IMG_5001

IMG_5005

Plus the bon bons were inventive and delicious (and adorable!!).

IMG_5020

IMG_5026

IMG_5033

Cocktails at Vitae, an amazing little local craft distillery.  I had a Flower Sour – barrel-aged rum, lavender, simple syrup, lemon, egg white, and lilac.

IMG_20190519_134035_746

And we brought home a bottle of golden rum and made yummy cocktails at home too – rum, soursop, and club soda.

IMG_4962

A duo of IPAs.

IMG_5115

We had a sampler of beers at Random Row. We did not do well at trivia, but had a wonderful time.

IMG_5148

Lunch at Ace BBQ.  I had a biscuit with pulled jerk chicken and pimento cheese.  Plus coleslaw and a grape soda.

IMG_5140

IMG_5144

Sheet-pan – aka one pan – hash.  You cook everything on the same pan, starting with the hardiest vegetables and added the more delicate things as time goes on.  This was Japanese yam, purple sweet potato, bell peppers, green onion, pinto beans, and cojita cheese.

IMG_4969

Topped with baby heirloom tomato, cilantro, and homemade guacamole.  This was fantastic!

IMG_4978

And my leftovers – additionally topped with hot sauce and a fried egg – were somehow even better.

IMG_5038

Thai chicken pizza.  I made a sauce out of tamarind, peanut butter, and ginger and we topped it with shredded chicken, mozzarella cheese, and carrots, green onion, and cilantro.

IMG_5065

Simple sandwich night – Trader Joe’s white whole wheat topped with mayo, yellow mustard, colby cheese, and smoked turkey.  Plus baby carrots and chicken and waffle chicken chips!!

IMG_5158

Adam had to travel near Richmond this weekend for work and I tagged along for dinner at Kuba Kuba, a great Cuban spot.  Cafe con leche with condensed milk.

IMG_5075

Codfish cakes with enchilada sauce, fried eggs, and Cuban toast.

IMG_5078

And we shared flan and tres leches!

IMG_5082

Best dinner of the week award goes to this plate – chicken salad made with toasted almonds and kimchi / potato pancakes with paprika and ginger / roasted green beans.

IMG_5130

Have a great week!

IMG_5134

Flan And Floats

Five fun things from the past weekend:

{1} My cousin graduated from VCU with her doctorate like a total badass so we had family in town for celebratory fun.

IMG_20190511_114653_009

{2} We had an amazing meal at Little Star, culminating in the best flan I’ve ever tasted.

IMG_20190511_203925_135

{3} My hair is pink(ish) thanks to this temporary tint spray.  It is subtle, but there’s more color than I was able to capture in a photo.

IMG_20190512_132740_552

{4} Adam and I had the best snacks.  Wegman’s mint chocolate chip yogurt.

IMG_4912

Super meta – smoked gouda pimento cheese dip scooped with pimento cheese chips.

IMG_4941

We made root beer floats with what turned out to be the best ice cream of all time – CoolHaus’ The Best of Both Worlds vanilla tastes like a marshmallow dream.

IMG_4951

{5} I made a tasty dinner.  Chicken tenders (cooked similarly to this) with whole wheat panko and silk chili // dipped in homemade honey mustard // with honey glazed brussels sprouts.

IMG_4925

We sipped on this surprisingly good Three Notch’d sugarcane pecan all while we cooked.

IMG_4921

Vino + Virginia Visitors

We had a great weekend being tourists in Charlottesville + the surrounding area because my mom was in town.  She came up for a quick visit and we all had a blast!

We celebrated May the Fourth…

IMG-20190504-WA0002

Went on wine tastings…

IMG_4813

IMG_20190504_154125_582

Explored the farmer’s market…

IMG_4796

IMG_4792

IMG_4794

Five fun highlights were –

{1} Charlottesville City Market.  We saw someone hand-pressing tortillas so obviously we had to get a chicken taco.

IMG_4784

Plus I never turn down Vietnamese iced coffee.

IMG_4787

{2} Rocket Coffee in Crozet.  I had a great iced latte plus a bagel (<– shipped in from H&H in NYC!) with cream cheese.

IMG_4808

IMG_4807

{3} Spirits from Vitae.  We loved it here!  So many Caribbean flavors and they did a theme menu for May the Fourth.  I had a taster of paw paw liquor plus a Cantina Punch – golden rum, mauby syrup, pomegranate juice, lemon, and aloe juice.

IMG_20190504_104639_863

{4} Dinner at Maya.  I didn’t snap any pictures but it was the best meal of the weekend!  I had the crispiest, most succulent duck confit of my life and we shared a s’mores torte with housemade marshmallow fluff!

{5} Dinner at Tillmans.  Greek salad plus pimento cheese served with red pepper jelly and crostini.

IMG_4818

Hope it’s a great week!

BBQ Chips, BBQ Beans, BBQ Nachos

Highlights from the last week include several new (to me) things…

I don’t usually show my at-work meals, but I wanted to share one of the perks of working in the South – biscuit breakfast sandwiches in the hospital cafeteria.  This had turkey chorizo sausage, a cage-free fried egg, and cheddar.

IMG_4497

These Don’t Go Nuts granola bars have the best texture, almost like a streusel.

IMG_4458

Other snack highlights include this assortment of bbq flavored crisped chickpeas and corn.

IMG_4439

Chocolate beers and hibiscus drinks.  I loved the s’mores beer, liked the tea, and hated the other two.

IMG_4433

IMG_4470

My aunt shared a recipe for Chicken Provencal Soup with us and we loved it for dinner.  It’s packed with potato, diced tomato, onion, carrot, and celery.  I dipped some naan in my broth.

IMG_4455

We made fantastic bbq bowls another night.  Collard greens and celery (sauteed with lemon, garlic, butter, and harissa hot sauce) // shredded chicken (cooked in the crock pot with ketchup, yellow mustard, brown sugar, cayenne, paprika, and red onion) // baby heirloom tomatoes // and smoked paprika candied pecans.  Remind me to cook more collards!

IMG_4482

We turned our leftovers into something fantastic with the help of these two products.  1) Hickory BBQ kettle chips that Boulder Canyon sent me to sample.  FYI – Boulder Canyon chips are – certified gluten free – trans fat free -vegan – kosher – made with green energy.  They had a good amount of smoke and tang and weren’t greasy at all.  Bonus, my bags, at least, had tons of foldsies!  2) Borlotti beans that we bought at Mekelburg’s just because the box was so pretty.

IMG_4518

BBQ kettle chips + beans + leftover chicken + roasted corn + sharp cheddar + smoked paprika = nachos!

IMG_4530

Bowls On Bowls

Seven wins from the past seven days…

{1} Peeps coffee creamer!!  It tastes like vanilla marshmallow!!!  But they should have made it pink.

IMG_4372

{2} Speaking of marshmallow, I made cereal bars with Trader Joe’s neapolitan cereal.  I brought them to a work event and they were a hit.  I used my go-to recipe but took things up a notch with the addition of vanilla bean paste.

IMG_4384

{3} I placed a super exciting order with the Mexican Candy Lady.  The standout so far has been these flan gummies.

IMG_4387

{4} Berry breakfast bowls.  Liebe strawberry quark (<– this was 10/10, btw, super creamy and delicious!) / fresh blackberries / granola / cacao bliss.

IMG_4402

{5} Cava bowls are currently our favorite take-out, there are a ton of toppings to choose from.  This was greens / tzatziki / crazy feta spread / harissa / roasted vegetables / grilled chicken / pickled onion / cabbage slaw / chopped cucumber / kalamata olives / and green harissa dressing.  Plus a side of really yummy house-made pita chips.

IMG_4397

{6} I made my own bowls too.  Roasted sweet potato / bok choy sauteed with garlic and green onion / candy salmon / fried egg.

IMG_4414

{7} A take on okonomiyaki – pancakes stuffed with roasted cabbage and corn.  Topped with mayo and Sriracha.
