Can You Guess

Having a (soon to be) doctor husband is great, for obvious reasons, but there are a few drawbacks.  Like the nasty bugs he wears home from the hospital, particularly if he’s been on a pediatric rotation.  He was sick last week, I’m sick this week; as long as the dog is healthy next week it’s all good.

In spite of my sore throat and late bedtime (<– I’m an idiot), I did manage to start my morning with a workout.  My goal for today was completing the route from Monday 30+ seconds faster.  Not quite.  I did the first loop (1.2 miles) in 12 minutes and 50 seconds and I could tell that my form was terrible because my knee was killing me.  So I stopped and picked up the dog for the 2nd loop.  We had to do some walking with our running but I was so impressed with him, 1.2 miles in 14 minutes and 40 seconds.

When I got home I ate the other half of my Vanilla Almond Luna Bar.

I’m glad I stuck with my breakfast goal because all I’ve eaten since then is three cookies!

I’m not going to tell you what they are because I’m sharing the recipe tomorrow.  I will tell you that they’re good!  I’ll give you some hints, can you guess what I made?

Humbolt Fog

Last night’s sleep session was a disaster.  Usually my sleep issues are related to falling asleep but lately if I get woken up I can’t fall back to sleep either.  The dog woke us up in the middle of the night and it took me at least another hour of tossing and turning to get back to rest.  The husband brought home some sort of bug from the hospital and my throat was killing me.

I overslept today and the morning was rushed but I managed to do what I needed to do, mostly.  I was heading to the gym after 9 am so sticking with my monthly goal I ate a small breakfast before I left.  A few sips of strawberry Powerade Zero,

and a half of a Vanilla Almond Luna Bar.

I didn’t have much time at the gym but something was better than nothing.  20 minutes on the elliptical at random level 7.

After a quick walk home and an even quicker shower I made a Lemon Cookie Smoothie for breakfast.

The last time I made it was apparently a dark and stormy night and I wanted a chance to get some better less awful photographs for the recipe page.

It probably wasn’t my best use of time though; I made it halfway through my smoothie before I had to throw it away and rush out the door.  I didn’t have time to pack lunch and having half a smoothie digesting in my stomach just made my hunger stronger all afternoon.

I got out of clinic a bit early and when I spotted a Manhattan Bagel on the drive home it felt like an oasis in the desert.

I was eating the chips that came with my meal before I was even out of the parking lot.

But chips only seemed to anger the beast (aka my stomach) and I ended up eating my bagel on the ride home!

Eating while driving is sort of nice because instead of dreading red lights you can use them to shove food into your face.  And my bagel was quite enjoyable; I got a veggie sandwich on a rye bagel.

Red onion, lettuce, tomato, banana peppers, veggie cream cheese, and a little bit of chipotle mayo.  I thought the veggies were pretty weak but the bagel was super chewy and good.

I had my 2nd to last shift at work this evening and then I came home to an easy salad dinner.

I needed a vehicle for a veggie, a fruit, and this amazing looking cheese, and salad fit the bill.

This Cypress Grove Humbolt Fog Chevre was delicious.  Sadly the blue cheese and goat cheese were in layers and not the hybrid mixture I was hoping for, but both were quite tasty.

Along with chunk of cheese I had romaine lettuce, groats, chopped honey crisp apple, and Stubbs BBQ Sauce for dressing.

Those ingredients sound strange together but it worked.

One In The Hand…

…is worth two the in the bush.  Or $1 if you’re holding a silver dollar.  Or a quick blurb if you’re reading this post.  What I’m trying to say is, pictures in this blog post will be accompanied by a quick blurb.  I’m tired.

Our larders are bare and as I said, I’m tired, so today’s meals were tricky.  My food consumption was very strange, fairly processed, and eaten entire by hand (minus two dishes by chopstick).  I ate small bits consistently throughout the day and that seemed to work.  It wasn’t the healthiest day of all time but for this day I’m pretty proud of how I did.

Always a favorite.  I’m amazed every time I eat this at how well they managed to balance the coffee flavor so that it’s not too intense.

The final two Buttered Rum Raisin Cookies.

So sad to see these good, they are for sure in my top five recipes list.

Note – I also had a large handful of unphotographed Reese’s Pieces.  We used them for a problem in Statistics and then were allowed to nibble.

Trader Joe’s Wasabi Roasted Seaweed Snack.

This was good but super spicy; I was crying before I was even halfway through.  Crunchy, spicy, and a bit strange means this was something I loved; I really wish I had bought more.  And for 30 calories you were snacking for a long while, definitely a volume food.

A Pepsi Next.

This 60 calorie soda is Pepsi’s answer to Coke Zero.  Sadly I wasn’t a fan, it tasted too much like regular Pepsi to me (duh, Emily!).  If you enjoy regular soda but want to cut back on calories you should probably check it out.  I wish they would make a regular soda that simply contained less sugar, rather using fake sugars.  I love the flavor of diet but know that I could do without the chemicals.

A Mango Passion & Banana Buddy Fruit packet.

I love these so much!  One pack equals one serving of fruit and the blend was delicious.

A mini pretzel bagel with some of the leftover cheese from last night’s cheese plate.

It’s hard to go wrong with the pretzel and smoked Gouda combo.  Eating these side-by-side rather than sandwich style felt gloriously simple.

A So Delicious Vanilla Coconut Milk box.

Meh, I prefer the Silk Vanilla Almond Milk.  I like the idea a vegan milk box though and I’ve had this product in chocolate in the past and enjoyed it more.

Dinner was eaten by chopstick and gets no blurb.  Seaweed salad and a brown rice veggie sushi roll.

What can I really say about that?

But dessert?  Oh my gosh, dessert.  A Trader Joe’s Dark Chocolate Bar filled with Speculoos Cookie Spread.

Why didn’t I buy more of these?!  I am kicking myself now.  The chocolate was creamy and a little bit bitter, the filling was sweet and gritty, and I was basically swooning.  I actually did buy two bars but I gave one to a friend who’s similar obsessed with Biscoff and I’m feeling pretty darn generous right about now.  But I do, at least, have a jar of TJ’s Cookie Butter waiting for me.

Triple “O” Long

Today was a lo-o-ong day!  Out of the house from 9 am to 11 pm; whew.  Not necessarily an exciting day, just a busy one.  Class –> driving my mom to the mall –> clinic –> picking my mom up from the mall –> work –> Target for Easter basket goodies, the one fun stop of the day.  I felt bad abandoning my guest all day but she did apparently have a very fun dinner at Moe’s with the husband.

Since our fridge is beyond bare and I was basically too busy to eat all day this recap will be quick.  I ate a Peanut Honey Pretzel Luna Bar during Statistics.

It was good but not ridiculously good like I was expecting it to be.

And I inhaled a sandwich from the campus book store before work.

“Bourbon maple turkey, cheddar cheese, and herb and spinach spread on a whole wheat lavish bread.”

And a Starbucks Double Shot Energy in Coffee was split with the husband.

I’m a fan.

Tomorrow bring on all the food, especially the produce!

Spring Break Has Begun!

Actually it began yesterday, but I didn’t get a chance to blog until today.  I don’t have any big spring break-y plans, but it’s always enjoyable to get some time off.  My mom is coming to visit next week for her spring break though and we are driving over to Ohio to visit my grandparents.

Yesterday morning I walked to school in just pants and a long sleeve T-shirt (spring came just in time for its break!) and ate breakfast during class.  A GoGo Squeez Apple Strawberry pouch,

and a Peanut Butter Pretzel Mojo Bar.

Both were good and the combo of salty and sweet was great.

For lunch I had a Simply Asia Spicy Mongolian Noodle Bowl.

I guess it was the morning of packaged foods?

Other than the sodium content (which is something I don’t really worry about within my diet) the nutritionals on these bowls are pretty good and they allow you to get food in a hurry when you’re hungry.  1g of saturated fat and 13g of protein in under 3 minutes?  I’ll take it!

The afternoon included an unsuccessful baking attempt.

My goal was Guinness Chocolate Cupcakes with Bailey’s Buttercream for a St. Paddy’s Day treat.  But I hate chocolate cake and I really hate Bailey’s Irish Cream so it actually wasn’t too big of a loss.

Since we won’t be telefundraising over break I volunteered to work the final shift last night.  I drank a ProBugs Strawnana Split Kefir on the walk back to campus.

Work went well and at 8:30 it was officially the start of spring break!

Adam and I cashed in a meal out (and a Living Social deal) for dinner at Lagerhaus 95.

There, I drank water at a German beer house like a total loser.

We had an amazing meal and are planning on going back next week with my mom.  Adam and I split three things to maximize tastes.  We started with the Camembert Fondue – Franziskaner infused camembert wheel / crisp apple slices / crusty sesame bread.

Fondue is Adam’s and my favorite dish to share at new restaurants and this one did not disappoint.  The Camembert was served on top of sautéed sweet onions and the flavor mix was magical.

Next we had the special, a Crab cake Sandwich.  It was served with vinegary cole slaw and crisp green apples on a brioche bun.

I hate crab cakes that are full of breadcrumbs and this guy was super meaty and perfect.  The bun was almost sweet which was an interesting contrast.  It came with a trough side of clam chowder that Adam devoured.

Finally we had the Truffled Wild Mushroom Panini – Haus blend of fresh wild mushrooms / white truffle oil / cippolini onions / fresh arugula / gorgonzola / pressed on foccocia.

Everything was great,but this was the best dish of the night, hands down.  Adam doesn’t have a sense of smell and I was dying the whole meal that he couldn’t experience the scent coming off the truffled mushrooms.  The earthiness with the creamy gorgonzola – which was far creamier than any other gorgonzola I’ve tried – was great.

The panini came with a side salad that was also impressive.

There were several herbs, I couldn’t identify which ones, mixed into the lettuce and it had the most unique flavor.  The honey mustard champagne vinaigrette (unpictured) was nice too.

Overall we had an amazing experience at Lagerhaus 95 and I can’t wait to go back!

Sometimes great flavors seem to make you even hungrier for more and Adam and I stopped on the way home for a box of chocolates.

I ate half of every flavor, or two servings.  A little excessive because they weren’t even that good but I kept thinking each flavor would be better.

This morning I tried a Chobani 2% Passion Fruit Yogurt.

So good, my favorite Chobani yet!  I love passion fruit in general but this one had the perfect balance of sour and sweet.  If you’ve never eaten a passion fruit before the crunchy seeds might seem a little strange but I promise it’s worth a try.

Now I’ve got to shower and then I’m off to get my green on and make a trip to the grocery store.  Are you wearing green today?

March Came Marching In

Hello, from a new month!  My March came marching in; I have a feeling that this is going to be a good month.  But even if the rest of the March sucks, I’ve been more productive just today than I was all of February!

After my morning post, I headed to school for Statistics.  We have our first test next week; I’ve had a firm grasp on all of the material so far but I can’t help but be a little nervous.  Next  I picked up my carpool buddies and we drove to the hospital for clinic.  Funny sidenote – we couldn’t find street parking and the one spot we saw that was too short but would have been fine if the front car had pulled up a bit more … was behind the husband’s car!  I could have moved the offending vehicle but I don’t have the key to Adam’s car on my key chain!

I ate a Chocolate Dipped Coconut Luna Bar at the hospital.

I know I say it every time, but I still can’t get over home much this bar tastes like a samoa.  Speaking of which, there’s a samoa recipe I dreamed up during Vegan Month that I can’t wait to share with y’all!  I seriously rub my hands together like an evil villan every time I think about it.

Clinic went well, I had my first patient at the new hospital today.  He was being discharged as I went up to the floor so I didn’t get to do much, but I got to look through the chart and ask a few questions.  This hospital doesn’t have a screening/assessment form like the last one so I created my own and our instructor liked it so much she told me to make copies for everyone.  We don’t get to do a whole lot yet so getting praise for even the littlest things is still exciting.  And even more exciting was getting out early, woot.

I planned on working out after night class but I knew that would be a major drag so I took advantage of the extra time and hurried to the gym before class.  The CT10k workout for today called for 10 intervals of 2:30 walking/2:30 running (25 minutes total each), but I didn’t have quit enough time so I had to reconfigure.  I ended up doing 8 intervals of 3 minutes walking/5 minutes running (15 minutes walking and 25 minutes running total).  3.5 miles and 40 minutes.  First workout in two weeks?  Done!

Night class went well because we got out of that early too!  Found time is the best time.  We finished so quickly that I even got to eat my packed dinner at home.

In the repurposed jar is 1 serving of leftover Tempeh Brown Rice Casserole.

I pulled dessert from the freezer too; I finally got to try my Jordan Almond Cookies!

They were great, I wish I’d saved more for myself.

With my found time, I finally finished my notecards for tomorrow’s exam.  Better late than never?  I probably should go review those, huh?

By The Clock

Thank you, Thursday, for being fabulous in a strange and wonderful way.  I was in a good mood all day.  I was busy with easy to do tasks, I had simple but tasty meals, and little bonuses kept popping up.

8:00 – Wake up with Adam still in bed.  He had a study day before an exam and I got to start my morning making a pile with him and the dog.

9:00 – Quick meeting with my Statistics teacher.  All of the homework I’ve done so far has been correct!  Plus she let me sit in on an earlier class session to accommodate a change in clinic schedule for the afternoon.

9:20 – Eat a Cappuccino Lara Bar for breakfast.

This is my favorite flavor LB for sure.  It’s not too strongly coffeed and it’s less date-y than other flavors.

11:00 – See the husband mid-day (squee!!!) when he graciously offers to drive me to UB for the lecture I’m attending.

12:00 – Attend a 1 hour lecture on diabetes mellitus and pharmacology.  We didn’t learn much that we can actually put into clinical practice, but it was a fascinating topic.

13:00  – Stop into Jimmy Johns for a large fountain soda – diet coke with a shot of cherry coke – with ice.  Swoon.

14:00 – Lunch.

My Seven Layer Casserole was the #2 best thing to come out of last year’s vegan month (and I’m making numero uno this weekend!).  It is packed full of veggies but tastes like a big mouthful of tortilla chips.  True Story – the reason we went to Moe’s on Tuesday was so I could take home the free chips for this recipe.

16:30 – Finish the writing assignment (due this evening, whoops) that’s been buzzing around my head all month.

18:00 – Dinner in class.

Holy frick, this sandwich, holy frick.  It’s simple, just a Sandwich Thin with mustard, SmartBalance Light, and raw tempeh, but it blew my mind.  The perfect combo of flavors.

Plus a baggie of roasted green beans.

These are actually sort of embarrassing to eat in class because they are squishy and you end up having to cram them in your mouth.  I own it though.

19:30 – We get dismissed from class 30 minutes early!

20:30 – Blog.

21:00 – (planned) read magazines in bed.  <– heaven

Monday Felt More Super Than Sunday

Hello, work week!  Did you watch the Super Bowl yesterday?  Were you happy with the outcome?  I will admit to not watching a single minute.  And in fact, Adam and I were a bit under the weather this weekend and did not eat or do a single thing worth mentioning!  Today I’ve managed to get almost back on track and eat some good food.

I had an orthodontist appointment early this morning; nope, I’m still not done with retainers.  My plan was to drive straight to school from there but after two parking lots worth of circling there were still no spots to be found.  Instead I drove to Wegmans and banged out a bunch of work at their comfy booths.  Plus I got a coffee for fuel.

With soy milk and 2 sugars.

My coffee was paired with breakfast from home.  A Coconut Chocolate Chip Clif Bar.

and a baggie of purple seedless grapes.

Curious about my nails?  They are pink glitter French tips!

They aren’t perfect but I did them free-hand so I’m pretty darn proud.

I did work at Wegmans, drove home, walked to school, did work at school, went to class, did work at school, got picked up by Adam, and ended up back at Wegmans for a late lunch.

Some lo mein with a piece of lemon pepper tofu and 1.5 vegan meatballs.

Veggies (mostly mushrooms and carrots with a few green beans).

This hit the spot.

Dinner took a while to cook (you can only fit two trays in our oven at a time) so we arrived home from the store we got right to work on the next meal.

My plate had 1/4 cup of sweet brown rice,

pieces of my Asian Orange Tofu Bake,

and roasted broccoli.

Everything was delicious!  The sauce on the rice and veggies is leftover tofu marinade that I cooked down quickly in the rice pot.  The tofu recipe is from way back in 2009.  I made it again to update the recipe page, still good!

After dinner I managed to drag myself to an 8pm hot yoga class.  Woot!  90 minutes of hot yoga felt so dang good!  I haven’t gone to many classes on this 30-day pass, but I’ve cherished every minute I’ve gotten.
