Hello, 2013

Happy New Year!

I hope everyone had a great first day.  I started my year the best way possible – a long morning in bed with my husband and dog and an afternoon spent cleaning every trace of 2012 away from the apartment.  He vacuumed and put away Christmas decorations and I organized and put away the Christmas presents.  I also did some electronics cleaning; my cell phone, bookmarks, and google reader are sparkling.  I even cleaned up my desktop.

Tomorrow I just have to organize my school stuff from last semester.  I’ve got to start getting ready for the next (last!) semester; I go back to school in 20 days!

We started our day with smoothies for a late breakfast.

For two: 1.5 cups Silk Soy, 1.5 frozen bananas, 1/4 cup sweetened shredded coconut, and 1 Tbsp coconut oil went into the blender.

It was yummy!  I got the coconut oil idea from Jenna Marbles and I think it was a good addition.

Lunch came in snack plate form.  Roasted green beans.

The mouthfuls with almond and brownie were great.  I am not going to post the brownie recipe because it is cobbled together from a few sources but I am working on something similar that should be amazing.

I also had a small coffee – with lots of skim milk and vanilla sugar – when we went to Wegmans in the afternoon.

We may have made a grocery trip, but dinner was still pieced together from random things left in the fridge.  Thankfully, it ended up being delicious.

I marinated pieces of 3/4 of a block of extra-firm tofu in Stubbs BBQ sauce all afternoon and then tossed the pieces in cornmeal (aka raw polenta) and corn starch and sautéed them in a bit of canola oil.  We loved them, the crust was perfection!  I dipped mine in honey.

I cooked 1/2 cup of quinoa, tossed it with 1 cup of canned black-eyed peas {for New Year’s luck!}, the leftover bbq sauce from the tofu, and some chopped green pepper.  It was like a quick and dirty hoppin’ john.

For dessert we opened up the chocolate cream biscuit cookies we bought at Vineeta.

One serving each and I’m excited to eat the last three tomorrow.  They were quite good.

Use Your Noggin

Hello, hello!  The days I’m excited to blog are always the same days I’m utterly exhausted.  Go figure.  Saturday was a symphony of holiday flavors but also a 9+ hour day at work.  Instead of posting last night I had a total tantrum and passed out fully dressed… so here is a 2-day recap.

Remember when I said “Saturday was a symphony of holiday flavors”?  You know, like five seconds ago.  Well, my day went eggnog –> candy cane –> gingerbread; bam!

Nog based overnight oats for breakfast.

I put 1/4 cup oats, 1/2 cup Silk Soy Nog, and 1 Tbsp chia seeds in the fridge overnight, then Saturday morning I added 1 sliced banana and a big dash of Christmas sprinkles.

So festive and delicious.  Also, holy frick, I love chia seeds so much.

My candy cane came in the form of a Peppermint Stick Clif Bar during work.

This is Clif’s best seasonal flavor by far.  The bar has the perfect amount of peppermint.

Gingerbread was a cupcake surprise from the husband.

He had an appointment near Fairy Cakes in the afternoon and he brought me home a gingerbread stout cupcake with cream cheese icing.

It was ridiculous good, maybe the best cupcake I’ve ever had!  The cake had a great ratio of spice to sweet and was so fluffy and moist.  I shared one big bite with Adam but downed the rest with gusto.

The rest of the day’s eats were out of season, but still good.  From fall I borrowed an apple and a Blue Moon Pumpkin Ale.

I split the beer with Adam and ate the apple on my own.

I guess nachos are actually appropriate for any season, right?

Adam and I shared a tray, straight from the oven.  We topped scoop-style tortilla chips with roasted brocoli and green pepper, Newman’s Own Pineapple Salsa, and Cabot Reserve Aged Cheddar.

We loved them.  He was a little iffy on roasted brocoli as a nacho topping but it was delicious.  And I was worried about that type of cheese versus a regular cheddar, but that ended up being perfect too.  And the pineapple salsa is hands-down the best jarred salsa I’ve ever had.

Blah, blah, blah, and then I started having a fit and had to go to bed.  I didn’t get anywhere near enough sleep during the weeks Adam was gone and I’m still really freaking tired.

Sunday was a super hungry day and I ate a ton of crap.  A brunch of sorts, was low-fat coffee yogurt with honey roasted peanuts and honey,

and several handfuls (about 3 servings or 250 calories worth) of dried turkey.

Working with crowds of Christmas shoppers is exhausting but also really rewarding.  Five different people today thanked me effusively for my help and that was a really good feeling.  Actually, one super hot guy told another customer that I was fantastic and I about died!

Bubble tea from Gin Gin!  Best bubble tea I’ve ever had, and I’ve tried a lot.  I got a medium red bean milk tea with regular and popping boba (the purple one is Adam’s taro).

We both swooned over how good they were and finished our drinks in the car long before we made it home.  And we called my mom on speaker on the drive and drove her crazy scraping through our ice for errant tapiocas!

I’m giving my co-workers all pies for Christmas and we are not even close to finished still.  Sorry, husband!

We made smoothies mid-baking for strength.  Frozen strawberries and blackberries blended with So Delicious Mint Chocolate Coconut Milk.

I have a holiday breakfast with work tomorrow and then I’m spending Christmas Eve on the couch with Adam.  I have two days off in a row for the holiday and I am so excited to spend them with my boys!

It’s Begining To Look A Lot Like Christmas

We are four days away and it is starting to snow!  We might have a white Christmas after all.  Also, the world didn’t end today; yay.

Sorry I missed a post last night (after going on and on about how I was “back,” natch) but I was still running errands as the clock neared midnight.  Two crazy days in a row are over and I’m ready to recap.

Thursday’s brunch included two of my best savory recipes.

A Nacho Turkey Burger topped with some Citrus Guacamole.

We even toasted our buns (in a hot skillet with a bit of Smart Balance Light) so the meal felt extra fancy.

I also had a deeelicious drink; 1 cup each Chameleon Cold Brew coffee and eggnog.

I know it’s cold out for iced coffee but I couldn’t resist the chance to pair my favorite coffee with my favorite winter flavor.

I worked 9+ hours and was sooooooo hungry when I got off.  I would have loved to go straight home for dinner but we had errands to run so I ended up getting Moe’s instead.

I got a naked burrito (aka a cheaper rice bowl) with rice, black beans, sautéed onions, green peppers, and mushrooms, lettuce, corn salsa, cilantro, guacamole, and sour cream.

I ate all of the queso, 2/3 of the chips, and 3/4 of the bowl.

When we finally made it home (more than 12 hours after I left!) there were presents from both sets of parents.

It was the perfect bedtime snack.

Friday I started with a salad.  Romaine topped with 1.5 chopped turkey burgers, shredded cheese, a dollop of guacamole, buckwheat groats, and honey mustard dressing (I accidentally used way too much dressing and it was kind of gross, boo).

Also half a honeycrisp with 1 Tbsp each peanut butter and Biscoff spread, melted.

And I drank a Guava Rockstar Punched at work.

I have the best bosses on earth and they surprised us with pizza for dinner mid-shift!  It was too exciting.  I had a a veggie slice and a buffalo chicken slice.

When I got home I made myself eat fruits and veggies first though.  A handful of baby carrots.

Finally, some general updates –

  1. My hair – I’m still leaving the tub purple after every shower and my new hair is a bit lighter than the original photo I showed you guys.  I will have to have Adam snap a picture the next time I’m home during good light.
  2. Christmas – we are not going to visit any family, boo.  But Adam and I are going to have our first ever Christmas with just the two of us; it’s time that our little family started to develop some of our own traditions!

Sunny Sunday Monday

We had a high of 57* today, wheeeeeee!  And tomorrow promises to be in the 50’s as well.  I’m hoping to take the dog on a glorious long walk.

Today’s exam was thing 1-of-6 on the “big things left in the semester” list.  So that’s where I’ve been.

Yesterday I was actually busy being sick.  I woke up with a cough and a constantly running nose and even my boss said I looked terrible.  I didn’t have it in me to make or eat food before my shift at noon.  When I got home at 5, I had some spicy avocado inari.

So flipping good; I love how the tofu skin is a little bit sweet.

I also ate the best dipping plate I’ve had all year.

This apple variety – a hybrid cross between a Japanese Orin and a Golden Delicious was new to me and I loved it.  Perfectly sweet!  I have another one in the fridge and I can’t wait to eat it.

2 Tbsp crunchy peanut butter melted with 1 Tbsp Biscoff for dipping.  Plus a spoonful straight from the jar.

but I was not a fan of the Tofurky Pepperoni Pizza.  The “meat” was way too soft and the “cheese” did not melt.

I could only eat two bites of pizza before calling uncle.  It is worth noting that Adam clearly thought it was fine because he ate the rest of the pizza!

I ended up supplementing my green beans with Chinese take-out.

Crab rangoon was the perfect one-handed dish for study-eating.

Soon after dinner, I realized that the only way I could study was if I had a constant stream of food going.

I also ate a bowl of baby carrots and these sugar-plum candies from Wegman’s bulk bins.

The sugar plums were quite good, I recommend buying some if you spot them at your store.  There really was plum flavor, not just one note of sweetness.

Studying went about as well as could be expected when trying to cram with a sudden cold.  But it was what it was.

P.S. Adam decorated the house for the holidays while I was at work because he is the best.

I got myself up at 6 this morning and {hallelujah!} discovered that I wasn’t actually sick any more.  I don’t know where my cold went but I hope it stays there! {knock on wood}

I drank a mug of hot chocolate while I did some clear-headed studying.

And then I was off to take my exam.  It didn’t go as well as I could have liked (do they ever?!) but it certainly could have gone worse.  Phew!

After my classes I did something amazing…

I worked out!  60 minutes of hot yoga was heavenly.  And the session was nowhere near as hard as I’d worried it would be after more than a month of no exercise.  <– yikes!

I have a 2-month unlimited pass that expires soon so I had to go to yoga today, looming finals or not.  I probably will only go once or twice more in the next two weeks though because I really do have to study.  But as soon as break begins I am looking forward to making the most of my pass!

My six+ hour shift went well, though I did have to deal with a bleeding lip since my body waited until the warmest day of the winter to rebel against the cold.  I got a Starbucks Strawberry Lemonade Refresher while I was out buying emergency Chap Stick.

Finally home, I did eggs for a quick dinner.

– – Cooked 8 oz package chopped seitan in 1 Tbsp Earth Balance until crispy, set half aside for tomorrow.  Add ~ 1 cup frozen spinach, chopped cilantro, 1 tsp evoo, 1/2 tsp sugar, salt,  and a few dashes of Sriracha.  Scramble in 2 large eggs and 1 egg white plus 2.5 oz Cabot’s 50% Reduced Sharp Cheddar. – –

I didn’t get to study today (I needed a day to recover from my exam anyway) but I did put away a load of laundry, do the dishes, and organize my study materials.  Now I’m off to read a book in bed!

Cook Book, Cookies, Chicago Fire

It’s felt like forever since I’ve blogged.  Thankfully (ha!) I was starving all day and ate a ton of food so I have lots to post about.

First things first – I need to announce the cook book giveaway winner.

Breakfast was consumed during class but photographed in Adam’s car.  I waited until 6 am to will myself out of bed to finish writing a paper and was running behind.  Actually, I would have been fine but then I had to cuddle the dog before I took my shower and I ended up needed Adam to drop me off.  Thanks, husband!

A Wegman’s low-fat pumpkin pie yogurt that I was very impressed with.  The texture was perfect and the taste was so good I’ll consider continuing to eat this flavor in December!

Work went well.  We extended our hours for the holiday season which means my shifts are all an hour(+) longer but it wasn’t too painful.  I drank a cup of (Keurig) hot chocolate while at work but didn’t photograph it for obvious reasons.

Dinner was a serving of Seven Layer Casserole.

The recipe’s vegan but you don’t need a challenge to try it; it’s delicious!

Apparently that all wasn’t enough food because I also ate a bag of SmartPop while I caught up on “Chicago Fire.”

Thanksgiving – Pathetic

Our flight landed at 7:30 pm on Turkey Day and while we were thankful for our dinner it wasn’t exactly traditional.  Every single food establishment we called was closed… except for 7-11.  So Adam and I split a bag of chips for Thanksgiving dinner.

Work – Exhausting

I’ve worked in retail on and off since I was 15 years old but Black Friday at my current job was nothing like I’d ever seen.  Friday, Saturday, and Sunday were so exhausting that it’s possible I had a complete breakdown in Wegman’s last night and started weeping in front of the lottery machines because Adam wouldn’t buy me the scratch card with the little bear on the front.  It was not a proud moment.

Vegan Challenge – Cancelled

Friday evening, this series of texts was sent –

Yep, I called it quits on the Vegan Challenge a week early.  My heart has not been in it for most of November (my friend and I have been making jokes about how we’d have to try again in February since the first week) and by Friday night I just really didn’t want to do it.  I think going on multiple trips out-of-town this month made it too hard to go all in; since I’m not actually vegan it would be stupid to skip culinary traveling in Philly and Atlanta and since I was cheating so often it was hard to stay motivated.

Failed vs. Failure – Thoughts

Even though I failed at the challenge, I wouldn’t call the challenge a failure.  I reminded myself that I won’t actually die if I don’t eat buffalo chicken pizza every time I’m hungry.  I remembered all of the tasty meals that don’t involve cheese.  I recommitted myself to, whenever possible, only eating meat that is humanely sourced.  And I really am excited for February!

Life – Good

I feel like this post ended up sounding whiney, but that wasn’t my intention.  I’m actually quite happy.  Balancing an increased work schedule with my upcoming finals will be tricky, but I like staying busy.  The weather is getting frightful, but I’m thrilled about eggnog and cocoa.  We don’t get to see any family for Christmas this year, but I’m excited to carve out some holiday traditions of our own with Adam and Webster.  Life is good.

{Part Of} Tuesday {In Advance}

Hi there!  A computer issue is going to keep me from blogging Tuesday night and all day Wednesday so I wanted to get a quickie post up today.  This content is coming to you from the past (ooooooooohh!) so it’s possible that I’ll miss some unplanned bites.  I don’t plan on recapping, I just wanted to get up an outline of sorts.

Breakfast: A mint chocolate strawberry shake; don’t question the combo, it just works.  1 heaping cup of frozen strawberries blended with 1.5 cups So Delicious Chocolate Mint Coconut Milk.

Lunch: We have clinic in the morning and an internship meeting in the afternoon and I’m hoping for time to grab veggie sushi at Wegman’s in between.

Dinner:  A sandwich thin with cilantro mayo and tofu roasted with maple and soy.  Half of the seaweed flavored potato chips from China Town in Philly.  Half of the Little Duck Organics Apple and Banana Tiny Fruits from my #simplesurvivalkit package.

It’s December, Apparently

Don’t worry, it’s not time to change your calendars; it’s only December in Emily Land.  You see, the other the day at the store I just couldn’t wait.

And today I did something really crazy.

I know that looks more mushy than crazy, but those overnight oats are made with So Delicious Coconut Milk Nog!  Nog in November? Who am I?!

My breakfast was so good it was worth breaking holiday timelines.  1/3 cup raw oats, 2/3 cup vegan nog, and 1 Tbsp chia seeds sat overnight.  This morning I topped it off with a sliced banana, nutmeg, and a little more nog.  Dee-lish-us!

Lunch was more on season with a Thanksgiving classic.

I made cranberry sauce from scratch yesterday!  I used this recipe and it came out great.  Today I ate a bowl with sweet and salty peanuts.

Plus the rest of my peanut butter rice krispie treat from the other day.  {where the heck did this picture go?!}  Maybe a little too much sugar for lunch?  I was buzzing at work.

Speaking of work, I came home from my shift with a present for Adam and myself.

I’ve been eyeing Ghost Blitz for weeks and there was only one box left today so I bought it!  We had such a good time playing this evening.

Adam and I shared a box of Thai spring rolls (with homemade spicy peanut sauce) while we played.

Round two was homemade veggie burgers.  I topped mine with honey mustard.

And the tie-breaker (Adam won!) was 2 servings of Sweet Potato Chips from Food Should Taste Good.

I should have been in bed 3 hours ago.  Boo!
