Shades Of White

My 2nd day as a soon-to-be surgeon’s wife was good but busy.  I have a gigantic quiz tomorrow and we have to score at least a 90% on it to remain in our program.  <– yikes!

No breakfast again.  I do have some bars in my cabinet but the mornings are my busiest hours and I don’t remember to eat and even if I did I wouldn’t have the time.  Instead I just really enjoy my lunch.

On today’s menu – a (2 Tbsp of) chunky peanut butter and (2 slices of) turkey bacon sandwich (Thin).

I also grabbed a coffee.

A mix of regular and decaf with hazelnut creamer.  I started adding a scoop of ice to my cups – after watching a classmate do it the other day and being impressed with her genius – and it makes my coffees so much more enjoyable.  I definitely prefer my “hot” beverages luke-warm.

In the afternoon I snacked on a scoop of 1% cottage cheese with half of a Liberte coconut yogurt and a sprinkle of shredded coconut.

<– Sidenote:  I’ve decided that my first foray into fiction is going to be a book titled 50 Shades of White, the pendulum swing from 50 Shades of Grey.  It will be 500 pages of a waspy couple having missionary-style sex and peeing with the door closed.  You’d read that, right?  😀

{Inspired by this recipe}  We put two slices of turkey inside each of our muffin tin cups / filled the bottoms of chopped sautéed mushrooms and green onions and shredded cheese / topped each cup with an egg / then baked for 30ish minutes in an oven preheated to 350 degrees.

I spent the rest of the evening cramming and I’ve got to get back to it.  Tomorrow’s quiz is on the macro- and micronutrient values for the serving sizes per food group for a diabetic and renal diet.  Lots and lots of numbers to know; we can’t all lay around on the job…!

Poor Puppy

I had a few silly things to complain about, but the dog had another seizure today so that kind of all pales in comparison.  He’s doing ok now but we are going to have to meet with the vet soon and possibly rethink our strategy.

Regardless, it’s been a long day and just want to go to bed.  Keeping this quick…

Day One Of Thirty? {Again}

Complaints first – The chance for 8-hours of sleep passed before I even started this post.  All of my end of internship assignments are due on Friday and I’m freaking out.  I ate two snacks after dinner and I am still flipping hungry.

Complaints aside, it wasn’t a bad day.  We got lots (and lots) of shipments at work so I was nice and busy.

The morning started with smoothies.

For two: 1 Thai young coconut, ~1 cup frozen blue/blackberries, 1 medium frozen banana, and 2 Tbsp Hey Shuga!  <– don’t forget, you still have another ~hour to enter my giveaway!

I didn’t have a lot of time for lunch so I kept it simple.  A Garuka Bar (from my yumvelope).

The sweet peanut butter coating was addictively good; I planned on snacking on it throughout a task but every time I tried to walk away I took another bite instead!

I also had a Fage 0% Greek Yogurt with Cinnamon Apple Raisins.

The flavor isn’t listed on the Fage website and I’ve only seen it at Target.  The apple compote was good, but nothing can really compare to the pure decadence of the honey and strawberry flavors.

I only had an hour between work and night class so Adam and I cashed in a coupon for Subway for dinner.

6 inch turkey with lettuce, tomato, green pepper, banana pepper, red onion, and honey mustard on Italian herb and cheese bread.

I knew my sandwich wouldn’t quite fill me up and I shared this peanut butter spoon with Webster when I got home.

I ended up dipping my “fries” in yellow mustard.  And then I had a big glass of water; methinks I’m a bit dehydrated!

Weekend Highlights

Hello, Monday!  This is my last week of “break,” but I don’t even care because I had such a good weekend.  The past three days have been packed full of fun; we did so much on Saturday that Adam even said I wore him out!  Other than some short shifts at work, every moment has been exciting.

I only have time to share the highlights, but I will make this note – we ate like we had the wallets of our future and the metabolisms of our past!

I tried this dark chocolate and soft caramel Nunu bar (from the Yumvelope subscription my mom got me for Christmas) and fell in love.

We ventured out to Franks Food Truck at 1:30 in the morning.

Last Friday Night

I spent Friday night getting a little drunk.  Mind you, not so drunk that I would actually want to listen to Katy Perry’s “Last Friday Night.”  We did watch some bad stand up comedy on Netflix though.  <– Tim Minchin, not as funny as this joke would lead you to believe.  (It’s so dirty, don’t click, Nana!)

Friday morning started with a Chocolate Dipped Coconut Luna Bar on the way to the hospital.

I had plans for a morning gym session but when I saw the weather report I decided to sleep in instead.  We got really lucky here, the snow was annoying but not anything dangerous.

I had a nice day at the hospital in spite of the weather.  I got to chart on several interesting patients and had a little more practice with doing pediatric TPN orders.  I love the nutrition support aspect of dietetics but children are really different from what I’ve done with adults.

Lunch was a simple salad.

So flipping good.  And it was a good thing I got in a healthy snack because my responsible food choices took a downhill turn during the rest of the evening.

Sips Lavender Lemondrop Sparkling Cocktails!  This was so fun, and quite delicious.  I described it to my coworker today as “Kate Spade’s Four Loco.”  I would definitely buy them again.

I worked today, but only a half shift, so I had time to get lunch from Wegman’s hot bar.  Some tofu and veggies in mushroom dashi with two pieces of inari.

I did lots of Googling, and as far as I could tell mushroom dashi is just mushroom stock, so I’m still not sure what that yummy sauce was.

We made tofu for dinner too.

A bed of cabbage —a bag of “Asian Slaw” mix cooked with a bit of Earth Balance with caramelized onions tossed in towards the end— topped with walnuts —cooked in a skillet with salt and sugar— and tofu —super firm tofu cooked in the skillet we used for the onions, finished with a sauce of tamari, rice vinegar, sesame oil, Sriracha, honey, and orange juice.

I was glad I added the nuts at the last-minute to help break up the texture.  The flavors were spot on though.

Breakfast In A Jar And Dinner On The Lam

Adding in exercise is making blogging very tricky this week.  When you leave for the gym at 9pm, all you want to do when you get home is sleep.  Especially if you have to run errands at Target on your way home from the gym.  Especially if you were too busy all evening to eat dinner.

I started my day with packet of Spiru-Tein S’mores protein powder shaken with 1 cup of Naked Vanilla Oat Milk.

I was pretty amazed that the powder was vegan (minus honey which I’m not worrying about for the Vegan 20 Day Challenge).  It wasn’t the best tasting thing I’ve ever had, but I was impressed with how thick it got.  I shook it up in a recycled jar, making this a very easy to-go breakfast.

I’m having a good week at the hospital; it’s starting to feel like I’m hitting my stride.  If there is one thing I’ve learned so far from this rotation it’s this – I knew absolutely nothing about pediatric nutrition.

I did make it to the gym though.  30 minutes on the elliptical at level 6 random.  Certainly not the most intense workout ever, but a far cry better than what I wanted to do (sit on the couch).

And now all I want to do is go to bed!

The First Of The Last

{Technically speaking} today was the first day of my last semester of undergrad!  Yays!  Instead of the hospital, I spent my day on campus for orientation.  It was also the first day of my night class.

Orientation was definitely not as exciting as my days at the hospital.  Cue medium non-fat latte.

Caffeine gave me the jitters though; I should have just waited for the adrenaline to kick in once we learned how busy this semester is going to be!  On top of full-time internship hours there are many projects to be done.  I’m the only person in my program who is taking a non-major class (my night class is a history to fulfill my final graduation requirement) this semester and balancing everything is going to be pretty nerve-wracking.

I spent my lunch break running around like a chicken with its head cut off trying to get all of my campus tasks done (applying for graduation, registering my history class as pass/fail, buying books).  When I did finally get to my sandwich it was worth the wait.

You guys are geniuses – I actually heated the water (3 minutes versus 90 seconds in the microwave) and my tea was much stronger!  I still didn’t love this cup but I think the tea itself was to blame (a pumpkin chai sample).

I did an easy, early dinner before I had to head back to campus for my history class.  Leftover roasted brocoli with marinara sauce.
