Minus One Bite

My lunch didn’t quite cut it so this afternoon I ate a leftover slice of jalapeño pineapple pizza.

Dinner was my AnTEAoxidant Pasta.

I updated the page for that recipe today too.

Not my absolutely tastiest dish ever, but definitely one of my healthiest ones.

Dessert was supposed to be my horchata can.

But it didn’t suit my fancy and I ended up swapping with the husband for two cookies.

Much better.

Since I didn’t go to the gym today I did some strength training intervals throughout the afternoon/evening instead.  I told myself I had to complete 20 minutes total for it to count as a workout.

In two-minute blocks I did 2 sets of arms, 4 sets of abs, 5 sets of legs, and 3 x 1-minute planks for 25 minutes of strength training total.

Fun fact about the husband – when eating any food by hand, ie french fries or sandwiches, he always leaves behind the part his fingers were touching.

We Don’t Need No Stinking Plates

We’ve been warned about inclement weather and woken up to 40+ degree days so many times this winter that lately when the forecast calls for snow, I just chuckle. 

Dear Weather Gods – I am so sorry I scoffed.  Please make it stop.

This morning I woke up to this –

but that is beside the point.

Actually, I woke up to pitch black because when the husband left the house at 4:30 a.m. I got up with him.  Well, not got up necessarily, but woke up and pulled my laptop into bed with me.  I spent an hour or so doing computer work things, an hour or so doing computer fun things, and finally an hour or so finishing sleeping (we got in bed after midnight!).

When I woke up for good at 8:40 I took one look at the window and decided to skip the gym for the day.  Unfortunately, by the time I realized that I had to go outside and move my car it was too late to change into workout gear without getting a ticket.  But it was just as well in the end because when I drove past school the main road that leads to the gym was totally untouched by both snow plows and tire tracks.  Since I had to circle the block to repark my car I took a quick detour to Wegmans and came back with goodies.

I’ve had an intense craving for creamy drinks lately; my fingers are crossed that it’s not a sign that I’m getting sick!

Speaking of which, has anyone tried the International Delight Iced Coffee yet?

I’ve been obsessing over it for days but I can’t bring myself to shell out 5 bucks without knowing if it’s good.

Breakfast was waiting in the fridge for me at home.

What do you do with an almost empty jar of Biscoff?

Quietly weep until you buy more make overnight oats.

Last night I combined 1/3 cup oats, 1/3 cup skim milk, 1 Tbsp chia seeds, and 1 dash cinnamon with the last 1 Tbsp or so of Biscoff left in the jar.

Before serving this morning I stuck it in the microwave for 30 seconds and the Biscoff got all perfect and melty.

My drink was also served in a jar.

I chilled the coffee, then put it in a big jar with the So Delicious Vanilla Coconut Milk and 2 tsp of sugar, and shook shook shook.  Plus ice and a straw.

I’m thinking shaken coffee might be my “thing” until this creamy beverage craving is licked.

In another meal without a plate, lunch was consumed straight from my mini casserole dish.

Into the dish, baked at 450 degrees Farenheit for 30 minutes, went layers of –

  • 1 sliced zucchini
  • 1/2 cup marinara sauce
  • 1/4 cup parmesan cheese

It was similar to my cheesy eggplant bake, but this got a little bit watery.

Still good though.

I’m hoping to continue my productive streak with work on school stuff and my binders project, but with new episodes of Grey’s and Bones available we’ll see how it goes!

They Were All The Best

What was the best thing you ate today?  If you’re a normal person you probably answered that pretty quickly.  But if you’re me, every single thing you ate was “the very best thing you ate today!”  If pressed, I guess I’d say the juice.  But that choice wasn’t easy.

My morning started off perfectly with a 60 minute hot yoga class.  I picked up a 30-day unlimited pass to Evolation Yoga on Groupon and I am so excited to get my yogi on this month.  Minus one child’s pose during the camel pose, I managed to huff and puff my way through the entire hour.

It’s a good thing that working out kills my appetite for a bit, because my day got away from me and food didn’t happen until the afternoon.  The husband was home from a night shift when I got back from yoga and I just couldn’t resist crawling into bed with him and the dog.

At 1:30 my friend Kim came by to pick us up and we set off for the hospital that we’ll be doing our clinical practice at this upcoming semester.  We’re all getting pretty nervous and we wanted to do a walk through to set our minds at ease.  I even put on my working-lady clothes so it would feel more like the real thing.

When we got home, the husband and I headed out to Ashker’s.

My mother-in-law had to mail me a gift receipt and she sweetly included some fun $ with it.  As you’ll see, we took full advantage of it.

Ashker’s was great about letting me go off-menu and build my own juice.

Kale + spinach + cucumber + carrot.

So dang good.  Veggie juice might be the only thing on the planet I find more refreshing than diet pop!

Then we got Chinese take-out.  Beef and broccoli for Adam, a ridiculously giant plate of crab rangoon for me.

Holy frick you guys, I love crab rangoon so much.  Too much, in fact; I ate it at least once every other day during the first week of the new year.  Now you know why I wasn’t blogging much then 😉

My late afternoon was spent on Pinterest.  I’ve been trolling people’s pages for weeks, it was high time for me to finally create my own account.

I made myself feel so full and disgusting with Chinese food that I thought I’d never be hungry again.  But several hours later we were out running errands and suddenly I was ready to gnaw my own arm off.  I made a 1 oz bag of trail mix and devoured it before I could even think about getting home to my camera.

The mix included sesame sticks, peanuts, and honey roasted sesame seeds.

And when Adam found a $10 pizza deal for any pizza with any toppings, I totally bit.  And totally ate a slice in the car on the ride home!  We had a nice dinner.

Mug Shots

It was another day without a workout, but I was very productive on the seated tasks front.  Plus, I snuck in a walk and a few planks, which is always better than nothing.

For breakfast I tried one of the new Chobani flavors.

0% Apple Cinnamon did not disappoint.  Now I’ve just got to locate the passionfruit flavor.

Lunch was a rerun of last night’s dinner.

A bowl of chili topped with a sprinkle of parmesan,

and a side of homemade olive oil crackers.

Just as good in leftover form.

I woke up late (I’ve got to get a handle on that before school starts in 11 days!) and spent several hours working on Window Shopping Wednesday posts.  Those suckers do not just write themselves; I can’t even imagine how time-consuming it would be to write a blog with actual content!

Around 2:00, I hopped into a much-needed shower and then headed off to the post office on foot.  Who is that girl with the long, blonde hair?

I finished my journey back to the apartment just in time to catch the husband coming home for a 2 hour break. We hopped in the car and ran a few errands. During our travels we split a grape cola slushie.

Slushies make me ridiculously happy. You can’t get them where I grew up and on our college trip my junior year of high school I must have bought at least one a day.

I’ve spent my evening during school work and I’ve got a magazine project lined up for when I’m done.  I had to update my clinic book and professional portfolio and write several professional goals.  It wasn’t as bad as I thought it’d be, but I understand why I’ve been putting it off.

Dinner was a vegetable fest.

Veggies roasted with cooking spray and salt, dipped in tons of ketchup.

I had a small pile of okra,

and a huge pile of green beans.

Both were delicious.  As I get more and more comfortable in the kitchen, roasted veggies are still the most comforting thing I know how to make.

A vegetable fest (note, fest not feast) is on the lighter side for an evening meal, but I knew that dessert was in my future.

Window Shopping Wednesdays

I am not much of a shopper, much to my mother’s chagrin. The woman can spend days at the mall, while I start to feel itchy after just a few hours. It’s not that I’m not materialistic, I totally am, it’s just that the thought of adding more stuff to my life makes it hard to breathe. But I like the idea of things. So I’m an avid window shopper. I browse catalogs I’ll never buy from and hold my breathe when I pass the window at J.Crew. So while I’m stuck at school all day Wednesdays, I thought we could have some fun via blog. Let’s window shop!

Here’s what I’m coveting this week –

1.  The test tube vases from Chive.

The style shown is the “pooley 2 8 tube classic,” but I think they are all pretty fun.  You could put as many or as few flowers as you like and I love the idea of single stems versus classic arrangements.  I’m not sure how it would look empty, but I bet it would be fantastic with a few feathers in the interims without blossoms.

2.  The pink cuckoo clock from Patina.

This is so fun and kitschy.  I think it’d be great in a kitchen, though definitely not in the same room as the test tube vase.  Random fact – Adam and I have actually never owned a clock, other than our alarm clock.

3.  A delivery of “crack pie” from Momofuku.

Now that I’ve tasted my mom’s and my efforts, I’m dying to try a slice (or pie!) of the real thing.  This pie is sweet and chewy and gooey and perfect.

4.  A bottle of Chameleon Cold Brew.

From the website – “We brew each batch low and slow for more than 24 hours at a controlled temperature to produce a super smooth, extra caffeinated concentrated coffee with less acid than traditional hot-brewed coffees. We only use 100% organic, Fair Trade Arabica coffee beans and filtered water. The rest is up to you.”  I want this, lots of ice, a big pour of Silk Vanilla Almond Milk, and a straw!

5.  The surprise pan from Chicago Metallic Bakeware.

The cupcake pan has skewers in the middle of each cup so things you put in the middle of your cupcake won’t fall to the bottom.  I’ve been dreaming of vanilla bean cupcakes stuffed with Lindt truffles for weeks and this would be so helpful.  The possibilities are endless.

Moss No More

Hello again, long time no see!  After a solid month of basically being a sloth, today was my first productive day in a long time and it felt good.

I spent four hours shadowing an RD who does nutrition counseling for some of the local public schools.  Such a neat job!  I got to sit in on several sessions, including one with a parent.  I had a great time learning more about another new job possibility, but I have to admit that being back in a public school setting did make me miss my teaching days.  Actually, lately I’ve been thinking a lot about teaching.  I’m not sure where I’ll end up at this point, but I do know that I have to finish this degree before anything else happens!

I did have time to eat before I left, but when I got home Adam and I split this persimmon.

This anniversary gift was finally ripe.  We scooped the flesh out with a spoon.

Very tasty, though not quite $5 tasty.  I’m glad I got to try this guy as a present.

I also had a salad for greens.

A romaine base topped with peanut sauce, craisins, and buckwheat groats.

And I did a bit of nibbling while I cooked up dinner.

Tonight’s meal was a blog-inspired affair!

Sweet Chicken Chili from Iowa Girl Eats topped with a bit of parmesan.

Those girls are so good, both recipes were delicious.

I’ve made the chili many times in the past (even the beef chili from the chili sale was inspired by the recipe) and I am so glad that I decided to be brave and try the crackers.  They had the perfect balance of crunch and chew!

After dinner I cuddled up to this bag of popcorn.

And now the kitchen is officially closed for the night and my retainers are in.  I’m off to paint my nails!

Mom’s Egg Casserole

I wasn’t going to blog at all today – the whole getting out of bed at practically noon thing – but we made my mom’s egg casserole for dinner and since several of you have asked for the recipe I figured it would be a good thing to post.

We made a few tweaks, as we are wont to do, so I’m going to post both the original recipe and our version.  Neither are healthy.  Like, at all.  But both are tasty.

Mom’s Egg Casserole, serves 6 – 8

  • 16 slices white bread, cut in squares with the crusts removed
  • 6 large eggs
  • 2 cups milk
  • 1/2 tsp salt
  • 8 oz shredded cheddar
  • 1/2 cup melted butter
  1. Prepare a 9×13 inch casserole dish with cooking spray.  Whisk together eggs, milk, and salt.
  2. Starting and ending with bread squares, layer bread and cheese into casserole dish.  Pour egg mixture over bread and cheese.  Drizzle melted butter on top.  Cover with foil and place in the fridge overnight.
  3. Preheat oven to 375 degrees Fahrenheit.
  4. Bake casserole, uncovered, for 45 minutes.

Mom’s Egg Casserole, Kicked Up A Notch, serves 6 – 8

  • 12 slices white bread, cut in squares (crusts intact)
  • 6 large eggs
  • 2 cups skim milk
  • 1/2 tsp salt
  • 1/2 tsp smoked paprika
  • 8 oz shredded extra sharp cheddar
  • 1/2 cup melted butter
  1. Prepare a 9×13 inch casserole dish with cooking spray. Whisk together eggs, milk, salt, and paprika.
  2. Starting and ending with bread squares, layer bread and cheese into casserole dish. Pour egg mixture over bread and cheese. Drizzle melted butter on top. Cover with foil and place in the fridge overnight.
  3. Preheat oven to 375 degrees Fahrenheit.
  4. Bake casserole, uncovered, for 45 minutes.

pro tips

  • DON’T FORGET THAT THE CASSEROLE NEEDS TO SIT OVERNIGHT!!
  • Shredding your own cheese will take a little bit longer, but you’ll end up with a better product than if you use pre-shredded packaged cheese.
  • If you’re not a cheddar fan, substitute an equal amount of goat cheese or gruyere.  If substituting Parmesan, reduce amount of cheese by half.
  • If you’re looking for more kick, whisk in a 1/2 tsp of your favorite hot sauce.
  • Stack bread and cut 4 slices at a time to move more quickly.

The above is one of my favorite quotes from one of my favorite movies, “Mallrats.”  If you have yet to see that 1995 classic I urge you to put it on your to-do list.  That movie is all sorts of fabulous.

I thought of the quote today because I spent my afternoon wandering aimlessly around the mall.  I wasn’t there to shop, I wasn’t there to work, I was just there.  (<– movie tagline)

Backing up to this morning, I discovered that two wrongs can make a right.  The fact that I woke up after 10am made it way less weird that I started my “morning” by popping a Rolo pretzel bite into my mouth.

One of the boys brought the bites to Poker last night, thanks Patrick and Michelle!  I’d be feeling slightly more grateful if said poker game hadn’t run past 1am, but what can you do?

I continued the theme with a Zone Perfect Cashew Pretzel Bar for breakfast.

We were in the car because Webster has chewed through every single one of his toys in record time and we needed to make an emergency run to PetSmart.

Then Adam and a friend went to see a movie and I joined them for a trip to the mall! “Mission Impossible #2,458” took a little over 2 hours so I had plenty of time to mall-walk.  I didn’t snap any pictures, but I do have a couple of take-away tips:

  1. The samples at The Gourmet Chef are out of control while they roll out new products for the new year.  I didn’t snap any pictures for stealth’s sake, but I ate at least a mini meal’s worth.
  2. Bath and Body Works is having a gigantic sale right now.  I snagged some great smelling hand soaps for less than $3 a pop.

After my loop, I settled in with a book for lunch.  Lunch’s location was an unexpected bonus – Five Guys!!!

Five Guys’ fries make the top 20 list of things I miss most about living in Brooklyn.  They did not disappoint today either.  Squishy yet crispy, a proper amount of salt, and with the option of endless bottles of malt vinegar.

I ordered a medium but that bag was basically stuffed to the brim!  I didn’t finish them all, but I did a good enough job to make myself a little ill.  Totally worth it.

I also got a veggie sandwich.

The veggie option is basically just a hamburger bun with any/all of the available toppings.  You can also get it with cheese.  I ordered mine with mayo, lettuce, tomato, sautéed onions and mushrooms, and jalapenos that I eventually admitted defeat to and peeled off.

I passed the lunch hour munching and reading (my fourth Kathy Reichs book this week) and it was just great.  This afternoon brought more of the same, only this time the dog read with me.

Dinner was easy.

A salad of Romaine, chopped celery, tomato, and 1.5 Tbsp of peanut sauce, topped with some leftover chicken (cooked in the crockpot with a gooseberry sauce from back home, then shredded).

And an onion roll with a bit of SmartBalance Light.

We watched the impossibly sad returning episode of “Grey’s” while we ate.

And I ate a Pep Bar (the British/Canadian version of a York Peppermint Patty) for dessert.

Now I’m looking forward to cuddling with the husband and catching up on Private Practice and Modern Family as well, with big bowls of popcorn in our laps.
