The Final Location

Today we traveled to the final location of our winter vacation.  It’s good to be “home” for good!  The last two days were spent with cold-like symptoms.  Hence the no-blogging, no-working, no-working out, and no-resolutioning.  Well, that’s no entirely true.  I have read a book a day from Kathy Reich’s Temperance Brennan series.  Each one is better than the last, I swear.

Anyway though, today, we were headed to Toronto. The morning got off to a rough start – I am feeling less than 100% still and it’s possible I’m cranky – but by 12 we were on the road. And by 12:30 we were back home getting our passports. But then, we were on the road.

A Big Gulp of Cherry Coke Zero did a lot to raise my spirits.

As did starting another Temperance Brennan book.

And before I knew it, we were there.

Our plan was to head to a neighborhood with froyo and then hunt for a late lunch there.  We weren’t certain what we would find, so we were thrilled to come across a cheap, all-you-can-eat sushi joint.

Just what the doctor ordered!  What?  Adam’s practically a doctor.

Everything was delicious.  I had … A small bowl of green salad.

Cheese wontons split with the husband.

A piece of tomago sushi (egg).

Two rolls split with the husband.  The Rock and Roll white fish, salmon, pepper, masago, cream cheese, tempura, eel sauce.  The Fire Roll crab meat, avocado, cucumber, masago, spicy mayo, tempura, eel sauce.

A Sakura Roll avocado, tempura bits, hot sauce.

Fried tofu split with the husband.

A piece of butterfish sushi.

Some baked eggplant and grilled veggies.

And finally spicy crab, tempura, and california hand rolls.

We got our money’s worth but weren’t too too stuffed; a perfect all-you-can-eat experience.

To clear some stomach room before froyo, we took a short walk down ultra-cool Bloor St.

And then finally it was time for Menchies.

I topped plain tart and hot chocolate yogurts with small amounts of Skor bar, hot fudge, Smarties, and crunchy pb, and large amounts of rainbow sprinkles and popping bobba.

Perfection.

We had an uneventful drive home and now the boys are over for a game of poker.  I’m banished to the office so it’s possible I’ll get a jump on some schoolwork, but it’s doubtful.  It’s looking like our late, big lunch with count for dinner, but if I end up munching on anything I’ll update.  Otherwise, catch you in the am!

What Was Lunch?

I felt like today’s dinner and lunch sort of became an ambiguous blob that spread out across the afternoon.  I kept eating different pieces and it was hard to tell where one meal ended and the other began.  As you saw, I had a plate of cheesetastic mac and cheese around 2:00.

Then a while later I had a salad.

This was an especially good salad too.  A romaine base with 1.5 Tbsp of peanut sauce, 2 Tbsp of bloody mary peanuts, and a huge handful of chopped celery.

A while after that, I ate ~2 cookies’ worth of dough while helping Adam with some baking.

Next, I ate a bowl of leftover Hoppin’ John.

And finally I dipped Adam’s pizza crusts into diet pop, but didn’t snap a picture so you’ll have to use your imagination.  I’ll be honest that I planned on eating a bowl of ice cream too, but somehow that one got away from me.

Cheesetastic

Last week, we made pasta with a cheese sauce that was delicious.  It was ooey, it was gooey, it was cheesy.  But I wanted to go for the er.  Ooey-er, gooey-er, cheesier.  It had to be done.  I needed to make a cheesetastic mac and cheese.

We included red onion and green chilies to add a bit of flavor, but overall this was cheese on top of cheese.  Awesome.

Cheesetastic Mac and Cheese, serves 4

  • 3 tsp olive oil
  • 1 large red onion, chopped
  • 1/4 tsp salt
  • 4 oz can diced green chilies, drained
  • 4 Tbsp butter
  • 4 heaping Tbsp all-purpose flour
  • 1 and 1/2 cup skim milk
  • 8 oz sharp cheddar, shredded
  • 2 and 2/3 cup prepared short-cut pasta  (we used gemelli)
  • 1/4 cup panko bread crumbs
  1. Preheat oven to 375 degrees Fahrenheit. Prepare an 8×8 inch casserole dish with cooking spray. Heat 1 tsp oil in a large pan over medium-high heat. Add onion and salt to pan and cook 7-10 minutes, until softened and beginning to brown. Stir in green chilies during last minute of cooking. Remove to a large bowl to cool.
  2. Reduce heat to medium and melt butter in pan. Whisk in flour to form a roux.
  3. Raise heat to medium-high and carefully whisk in milk, working in 1/2 cup batches. Add all but a medium-sized handful of cheese and stir until melted.
  4. In a large bowl, toss together peppers and onions, cooked pasta, and cheese sauce. Carefully pour into casserole dish. Top with panko and remaining handful of cheese. Drizzle remaining 2 tsp of oil over the top.
  5. Bake for 30 – 35 minutes, until bubbly and browned.

pro tips

  • cook pasta just to al dente because it will continue to cook in the oven
  • don’t burn your roux, but don’t pull it off the heat too early either; the browning gives it flavor
  • want more kick? whisk a few tsp of hot sauce into your cheese sauce

What are your tips for really good mac and cheese?

The Pizza Problem

About last night …  After all of my excitement,

the skillet cookie didn’t pan out (ba-dum ching!).

It was more of a cookie cake, which I hate. But the husband ate it. And now I’ve got this cool little skillet.

But I was left without dessert.  And after my first hour of complaining about wanting a cookie, I realized that what I actually was, was hungry.  For food.

So we set out.  As we left the house at 8, I said to the husband “we’re going to drive around for hours and not get food, and you’ll be mad and I’ll cry.”  That statement wasn’t entirely correct, but mostly.  Instead of tears, we came home at midnight with pizza.  And we watched “Bride Wars” and stuffed our faces and all was right with the world.

This morning it felt like breakfast should be nutritious.  We had errands to run so we were looking for an on-the-goal meal that was packed with vitamins.  Enter smoothies.

Into the blender went frozen blueberries, strawberries, a bit of orange juice, and a handful of ice.  I blended, but instead of a smoothie all I got was rock hard fruit chunks sitting in a pool.  So I continued to blend, adding in a bit of club soda to move things along.

But it seemed that no matter how much liquid I added, I just couldn’t get the substance in the blender to reach a liquid state.  And that’s how our smoothies came to contain two cups of club soda.

They were disgusting.  Shocking, right?

I made myself drink a bit more than half for the nutrients, and ate a piece of pizza when I got home.

And now I never want to see another piece of pizza ever again for at least week.

Off With A Thud

2012 started off with a resounding … thud!  We headed out this morning for a grocery trip, ran over a nail and saw blade (wtf?!), and spent the rest of the afternoon changing the husband’s tire and getting it patched.  Whoops!  In the spirit of being a more positive person, I found a few Pollyanna-type takeaways from our flat –

  1. Thank goodness the tire wasn’t rusted to the axle like the ones on my car, and we were able to change to the spare by ourselves (in the Wegman’s parking lot!).
  2. Since we were spending the afternoon at Mr. Tire we took my car in as well for winterizing, a task we had been putting off.
  3. I probably wouldn’t have spent the day cleaning the entire house, working out like a madman, or changing my entire life anyways; and having the excuse of being stuck with the car means I don’t have to feel bad about not doing those things!

Before the bad thing happened, I made myself a cup of White Christmas tea with skim milk.

I was starving at the grocery store and I’m glad I managed to grab some food from home before we headed out for three hours at Mr. Tire.  Adam and I each got a 1 oz serving of Lord Nut’s spicy bloody mary peanuts.

The nuts were a Christmas gift from my mom.

They were good; the flavor was spot on but not too spicy for Adam.  My 2nd snack was also a Christmas gift.

Lara Bar kindly sent me some samples of their newest flavor, Cappuccino!

I think it is actually my newest favorite flavor.  This tasted the least like dates (my only complaint about Lara Bars is that some flavors are too strong with date) and the coffee flavor was there without being overwhelming.

We spent part of our wait-time wandering around outside in the rain, and ended up at Mustachio’s for slices of cheese pizza.

Also fun, when we stopped at the Co-op on our way home I managed to snag a sample of mint swirl brownie.

Sweet!

Since 2012 didn’t have the most auspicious start, I’m glad we ate a dinner geared towards bringing us luck.

We followed Jenna’s recipe for Hoppin’ John, with a few changes –

  • mixed everything together rather than making a relish
  • replaced two of the plum tomatoes with tomatillos (<– I highly recommend this change, it gave the dish a nice citrus flavor)
  • substituted brown rice with forbidden black rice for extra luck!

And if it wasn’t lucky, at least it was healthy and tasty.

Our plans for the rest of the evening include Netflix Instant Watch and this skillet cookie my sister-in-law gave us for Christmas.

2012, bring it on!

How’d you spend the first day of the new year?

It’s A New Year, 2012 Resolutions

Even though my 2011 resolutions didn’t all go as planned, I still love fresh starts.  This year, I tried to think about what I hope to achieve in 2012 as I wrote my resolutions.  Getting pregnant and moving closer toward my degree both came to mind, as did trying to be my best possible me.

I picked four main goals to work on this year.  The second two aren’t very specific (not recommended for goal setting) but I think all four are things worthy of my time and effort.

  1. Workout a minimum of three times per week.
  2. Continue to read at least one book a month, for a minimum total of 30 books this year.
  3. Put the time and effort into my school work that I can be proud of each week.
  4. Continue working on being a positive person.

Are you making any 2012 resolutions?  What are they?

You Say Pizza, I Say Piazza

It was another great day here in Ohio.

Our last day, unfortunately.

For breakfast I poured a bowl of my grandma’s cereal mix (Cheerios, Special K, and Crispix by the looks of it) with some vanilla almond milk.

Lunch was a big salad – romaine, cherry tomatoes, and an Asian sesame dressing – with cold truffle mac and cheese crumbled on top.

Leftover mac is officially the new crouton.

I also had a glass of almond milk,

and a turtle for dessert.

We spent the afternoon switching out Christmas decorations, and the boys found a minute for a quick nap.

Then we were off to the movies.  We saw “We Bought a Zoo,” and all three of us thought it was great.  Very funny and touching.  My grandma handed me a mini York patty mid-movie that hit the spot.

Dinner was tasty as well, La Piazza in Troy.  I started with a house salad with honey mustard dressing,

and two slices of bread with garlic dipping oil.

For our main meal, Adam and I split two entres.  We shared, but both ate a larger portion of our “own” plates.  He had Smoked Chicken Ravioli (stuffed with smoked chicken, herbs, cheeses, tossed with tomato basil cream),

and I got the Eggplant Parmigiana (fresh eggplant sliced and baked with tomato basil sauce and three cheeses).

All the dishes were good, but now we are feeling a little weighed down with cheese.  In fact, I’m going to blame my heavy dinner for my complete and utter exhaustion at 9:45 pm.  Good night!

2011 Resolutions, Looking Back

Last year I made 5 resolutions for 2011.  Let’s see how I did –

1. Officially lose the 10 lbs I gained when we moved to Buffalo.

Fail.

I didn’t gain any weight (and I even lost a little) but 2011 was not the year of healthy habits!  Regular gym visits were sorely needed.

2. Create a written record of my experience as a teacher.

Tossed.

I started working on an outline, compiling memories chronologically, and thinking about my memoir early on in the year.  But those two years were a really hard time in my life and unfortunately I just can’t think about them in great detail without getting sad.  And really angry.  Which wasn’t good for goal #4.

3. Run another half marathon; one for which I’ve actually trained!

Fail.

Think this and #1 might be related?  I actually did make it through 8 miles on a training plan before I lost steam.  But by the time I gave up, running had become a chore and not a joy, so I doubt this resolution will be repeated for 2012.

4. Work on becoming a less negative person.

Work in progress.

There were some really terrible things happening in my department this last year (which I didn’t blog about for obvious reasons) and I think I did a fairly good job of staying positive.  But I could have done better.

5. Read at least one new book each month.

Smashed.

I read at least 1 book a month, and am ending the year with 26 books finished! I am going to try my hardest to beat this number next year.

Even though 2011 wasn’t my best year for resolutions, I know that it was a good year overall.  And I’m going to think about why these resolutions did or didn’t work when I think about my goals for 2012.

Were you successful in achieving the goals you set for 2011?
