Waffley Glad

We had a really amazing time in Hawaii (several posts are coming soon!) but I am awfully glad to be back home with Webster!

IMG_1092

I didn’t make it the grocery until Sunday afternoon but we still managed to eat some yummy things this weekend.  Highlights include…

My new favorite yogurt bowl = Trader Joe’s plain Skyr yogurt with maple syrup, blueberries, banana, and blistered peanuts.

IMG_1101

Extra spicy, extra veggies hand-pulled noodles from our mall’s fancy food court.

perfect snack.

We thought this frozen kunefe from Trader Joe’s was fantastic.  Highly recommend buying if you spot it.

IMG_1062

Waffle flavored chicken bites with baby carrots and maple sriracha aioli.

IMG_1083

My new favorite veggies bowl = a base of cauliflower rice with soft scrambled eggs, sauteed baby tomatoes, and avocado (topped with Cholula).

IMG_1110

The night before we left for Hawaii we celebrated our anniversary at Bowery Meat Company and the night we returned we feasted on leftover duck lasagna.

IMG_1065

Aloha, 17 Years

I hope that all my readers who celebrate had a merry Christmas!

IMG_1047

Three fun things from this week –

I bought chestnut paste – which basically tastes like Christmas! – and used it in amazing yogurt bowls.

IMG_1024

With cocoa granola and fresh strawberries.

IMG_1034

These bougie almond butter cups were surprisingly delicious.

IMG_1039

We made easy but great pasta bowls: boxed macaroni and cheese / canned smoked trout and anchovies / roasted broccoli and baby zucchini / topped with Kewpie and Sriracha.  Plus a side of sauteed baby cauliflower.

IMG_1048

Current excitement?  It is our 12 year wedding anniversary today!  And since we got married on our 5 year dating anniversary, that means we’ve been together for 17 years (aka half our lives!)!!  To celebrate, we are heading to Hawaii tomorrow!!!

Hot Sauce And Cinnamon Gum

Flavor themes from this week include – hot sauce, coffee, chocolate.

Highlights…

Fun in coffee.  Iced with fancy egg nog.

IMG_0813

I had forgotten how much fun it is to have a milk frother!

IMG_0851

This bottled New Orleans coffee was delicious and contained 10 grams of protein.

IMG_0873

Seasonal fun at Doughnut Plant – a marzipan star and a mint tree filled with chocolate pudding.

IMG_0897

Still obsessed with these cookie dough Perfect Bars.

IMG_0855

Plain2% Greek yogurt bowl with chocolate sunflower seed butter and fresh blueberries.

IMG_0880

Just before I left VA one of my officemates got me hooked on cinnamon gum and lately I have been loving this version from Mentos.

IMG_0807

It was Adam’s birthday this week!  He got multiple cakes at work and brought me home a delicious slice of s’mores cheesecake.

IMG_0884

Amy’s tortilla casserole with black beans frozen meal.  Topped with copious amounts of Cholula.

IMG_0825

Shredded potatoes with smoked mackerel salad and soft scrambled eggs.  Topped with furikake.

IMG_0861

Breakfast cheese fries.  Sweet potato waffle fries with cheddar, eggs, maple chicken sausage, broccoli, and shishito peppers.  Topped later with Kewpie and Sriracha.

IMG_0893

My current favorite sheet-pan hash is Japanese sweet potato + bok choy + green onions.  Plus salmon candy and cashews on top.  Topped with furikake, Kewpie, and Sriracha.

IMG_0844

I made a yummy version of this baked Spanish rice recipe.  I added fish sauce and green olives and subbed in vegan soyrizo for chorizo.  Topped later with Cholula.

IMG_0870

FYI – there will be no post this weekend for the best reason ever: I am going home for a few days with a couple of NY friends!  Ocean, rum, and warm weather, here we come!

First Family Weekend

So obviously the best thing about being back with my boys was this –

IMG_20191208_093401_412

But we also had a ton of fun out of the house too!  This weekend Adam and I ran a thousand errands / saw Knives Out / met up with friends for dinner in Astoria / walked around Cold Springs Harbor appreciating their holiday decorations and Christmas carolers!

IMG_0793

Edible highlights included…

Shakeratos with fancy coffee.  I just now writing this post realized that I make these with coffee + sweetened condensed milk and half and half versus SCM and simple syrup but they still turn out great.

IMG_0757

During our Cold Springs Harbor morning we stopped at Sweetie Pies on Main for a quad nonfat iced latte and a rainbow cookie cake.  Every single pastry in this shop looks next level.

IMG_0791

A yogurt bowl with Trader Joe’s egg nog Greek yogurt, vanilla spiced sunflower seed butter, and giant blueberries.

IMG_0768

S’mores cookie from Chip.  FYI – these are very graham cracker forward, I much prefer their other flavors.

IMG_0799

Sweetened condensed milk and cookies ice cream from Spot (an H-Mart find!).

IMG_0805

We stupidly went to Target at dinner time but these impulse buy chocolate covered cashews ended up being amazing.

IMG_0776

Between the four of us during dinner at District Saigon we tried and loved a lot of the drink menu but I think the clear winner was this spiked Thai iced tea made with cachaça, absinthe, Angostura bitters, sweetened condensed milk, and egg whites.

IMG_20191207_194550_036

Frozen meal I am in love with = Amy’s chile relleno casserole bowl.  Paired with leftover chicken nachos.

IMG_0787

Good Tidings And Cheer

Is everything I have to share this week celebratory in nature?  Yes!  Thankfully I have a lot to celebrate.

IMG_0693

In ongoing goodbye festivities… Some coworkers and I went out for a very dietitian-y lunch at Roots.  I had a kale salad topped with miso chili tofu, eggs, and other goodies.

IMG-20191126-WA0029

And some coworkers and I went out for a much more on brand happy hour at Vitae – in addition to our cocktails we also got to taste-test some marshmallow simple syrup!

My cousin and her fiance hosted an absolutely fantastic Thanksgiving dinner.  There were 14 people in attendance but the platter of nachos I made for our appetizer was probably a still bit excessive!

IMG_20191128_152853_677

Most exciting morning of the week?  I had eggnog Greek yogurt, cranberry seltzer, and a peppermint mocha.

IMG_0703

In yogurt bowl fun… Vanilla bean Greek yogurt with cranberry sauce and granola.  And a holiday cheer kombucha on the side.

IMG_0719

IMG_0715

Wegman’s eggnog Greek yogurt with cinnamon Chex and a banana.

IMG_0725

Fluffy GBS

I don’t have a ton of photos to share from last week because I ate a bunch of celebratory meals sans camera.  By the time I leave for real next week it is going to feel fairly anticlimactic!

A work friend and I went out for drinks at Vitae {highlights include a maple cinnamon sour with smoked rum}.

A big group of co-workers took me out for lunch at Asado {highlights include a smoked chicken quesadilla}.

And my team took me out for dinner at Junction {highlights include a rum and coke with allspice syrup and charred baby carrots with goat cheese and carrot top chimichurri}.

Other highlights include…

Eggnog and coffee!

IMG_0669

A vanilla coffee can with a peanut butter chocolate chip Perfect Bar.

IMG_0660

The cortadito from Gaurijos is excellent.

IMG_0676

Vanilla bean yogurt with maple pecan granola and cranberry relish.

IMG_0667

S’mores pie and a cortado at Pie Chest.

IMG_20191124_115331_074

IMG_0681

Hardywood has released their Fluffy GBS – a toasted marshmallow gingerbread stout!

IMG_20191124_125046_546

My cousin took me out for excellent Thai food.  My drunken noodles were super spicy and loaded with veggies (including cauliflower!).

IMG-20191123-WA0001

Have a great week (and a happy Thanksgiving, all of my American readers)!

Pumpkin Oolong

Cold weather fully hit Charlottesville this weekend so I kept things pretty low-key.  I did talk a walk around the neighborhood to stretch my legs on Saturday but then I spent the rest of the night huddled under the covers!

Amazingly, my food highlights from the weekend were not soup and hot chocolate…

Still loving plain Greek yogurt bowls with cupcake almond butter, MadeGood granola, and loads of fresh berries.

IMG_0581

I also enjoyed a bowl with this new Chobani flavor, caramel mocha.

IMG_0572

Whole Foods hot bar with a side of journal reading.  Best bites were the popcorn chicken and Spanish-style brussel sprout salad with sherry vinegar and yellow raisins.

IMG_0587

Pumpkin oolong milk tea(!) with boba and Oreo.

IMG_0560

I made the best sheet-pan hash.  Preheat the oven to 420 degrees Fahrenheit / prep a sheet pan with foil and baking spray / bake chopped Japanese sweet potato for 20 minutes / add chopped bok choy and green onion and bake another 25 minutes / top with smoked salmon candy / add kewpie mayo and Sriracha if desired.

IMG_0596

Candy break.
