Bubble, Bubble

There was no weekend post because I worked Friday, Saturday, Sunday and life felt a little hectic.  Things are definitely starting to ramp up at work (and that’s with some of my units closed due to Covid still!).  I have my eye on some fancy cocktails for this weekend.

Highlights from the past week…

My new favorite coffee combo – the Cafe Bustelo is perfectly extra-dark and roasty to pair with the sweetness of the condensed milk.

IMG_3172

My best snacks this week were bubble tea themed things and fruity beers.  Also ranch-flavored roasted chickpeas mixed with Trader Joe’s olive and herbed mixed nuts.  I eat five full handfuls straight from the bag, why do I bother to put it in that little bowl?!

IMG_3212

These brown sugar boba ice cream bars are truly the best frozen treat I’ve ever had!  If you spot them – buy them!

IMG_3155

IMG_3163

We also had some boba-inspired gummies.

IMG_3196

Guava gose brewed with coriander and Himalayan salt // pineapple shake IPA brewed with vanilla and lactose.

IMG_3188

Hazy IPA with hibiscus and dragon fruit.

IMG_3220

We made chilaquiles for dinner.  Topped with fried eggs, plain yogurt, cheddar, and Crystal hot sauce.

IMG_3184

Trader Joe’s cauliflower gnocchi with roasted baby tomatoes and garlic and gruyere smoked chicken sausages.

Cola In My Beer And Oats In My Coffee

We officially went back at the hospital full-time this week and I’m not going to lie, the transition was rough.  Sitting in the ICUs means I have to wear an N-95 mask all day long which comfortwise is a big change from charting in my kitchen next to an iced coffee.  Thankfully I had a few days off mid-week so I was able to ease into it.

Highlights…

This week’s coffee combo was Starbucks cold brew with the super marshmallowy Chobani chocolate oat milk.

IMG_3104

On my days off I brewed my Cafe Nguyen Phin coffee.  <– still loving this

IMG_3135

Lemon & lavender yogurt with blueberries and white chocolate macadamia granola.

IMG_3141

I went grocery shopping mid-week which meant our Trader Joe’s snack stash is fully stocked.  I recommend this new nut mix.

IMG_3145

IMG_3111

The homemade coffee cookies and cream ice cream went away quickly.

IMG_3125

Cherry cola beer from Evil Twin.

IMG_3105

Channa masala with cauliflower rice.

IMG_3119

Whole-wheat spaghetti with pasta sauce, kale, and TJ’s soyrizo.

IMG_3148

Thai take-out; cashew chicken with basil fried rice.

IMG_3094

Brinner Tacos

This week’s best:

{Coffee} Trader Joe’s cold brew with cookies and cream milk.

IMG_3026

{Lunch} Leftover buffalo chicken pizza with roasted zucchini.

IMG_3032

{Snack} Coca-Cola Tic-Tacs.  How did they get the flavor so spot-on??!

IMG_3019

{Dinner} Egg tacos.  These are amazing; I’ve been eating them all week and I’m still not sick of them!  Pan-warmed tortillas // sauteed corn and kale with paprika and TJ’s umami powder // soft-scrambled eggs with gouda // homemade salsa (I made a big batch loosely based on this recipe).IMG_3042

Take Me Out

This weekend we: Ate all the take-out.  Took the dog on several long walks.  Washed the dog and turned him into an adorable woolly mammoth.  Did our grocery shopping for the next two weeks.

I also went on a really great run and started re-watching America’s Next Top Model.

Highlights include…

Obsessed with these Trader Joe’s bbq popped chips.  I prefer a smoky bbq flavor and this fits the bill.

IMG_2824

Even more obsessed with this Evil Twin pink pineapple IPA.  Served in a go-cup because we took a cocktail hour walk with Webster that knocked our socks off.

IMG_2828

We got great take-out from a local Mediterranean spot.  Tons of pita bread with all of the smokey eggplant dips.  Plus bulgar with tzatziki and chicken (plus roasted broccoli).

IMG_2843

And we ordered all of their desserts!

IMG_2834

We also got great take-out from a local Szechuan spot.  I had kung pow tofu with veggie rice noodles and Chinese cabbage with peppers.

Painkillers In Quarantine

Highlights from the weekend…

Cold brew with chocolate milk.

IMG_2633

Cinnamon coffee.

IMG_2660

I ate my first apple in months – a very crispy Lady Alice – and it was delightful.

IMG_2667

Cookie butter Greek yogurt – with granola and chocolate chips.

IMG_2671

Beer!  The Grimm was too ear waxy for my tastes but the Kills Boro Amethyst sour IPA with blueberries and lavender was very drinkable.

IMG_2641

We were supposed to be back home in St. Thomas for carnival this weekend; instead we consoled ourselves with homemade Painkillers.  Nutmeg, pineapple juice, orange juice, rums, and I substituted low-fat coconut milk and sweetened condensed milk for coconut cream which worked out great!

IMG_2678

Leftover buffalo chicken pizza – with honey and Korean chili flakes – with baby carrots and blueberries.

IMG_2646

Roasted veggie bowls – broccoli, bell pepper, and cojita – topped with fried egg and Crystal hot sauce.

IMG_2649

Double Dry Hopped

Highlights from this week include…

Cafe Bustelo with chocolate milk, aka one of the best espresso-roast coffees with the best chocolate milk.

IMG_2573

Yogurt bowls!  Working from home means I can make a fresh yogurt bowl every day and I have been loving the crap out of having berries around.  Very excited that we are going to the store tomorrow and can restock.  Icelandic-style coffee yogurt with blueberries, blackberries, and coconut chips.

IMG_2580

Plain Greek yogurt with cinnamon, berries, honey maple granola, and TJ’s flax and chia seed peanut butter.

IMG_2599

Plan skyr yogurt with cinnamon, maple syrup, berries, and almonds and candied walnuts.

IMG_2624

Korean snacks from this month’s Snack Crate.

IMG_2584

Vanilla pineapple IPA brewed with lactose.  I’m pretty sure I want every single beer that Collective Arts sells.

IMG_2609

Other Half Double Dry Hopped Broccoli.  This was insanely drinkable and mellow.

IMG_2619

Buffalo chicken pizza.

IMG_2628

Ground turkey with shiitake mushrooms, onion, tomato paste, and sour cream on a bed of roasted cabbage.  This dish had so much umami!

IMG_2605

The best dish of the week = roasted cabbage // topped with seasoned baked tofu // and esquites.

IMG_2594

Back At It

Big news I’ve been waiting to share – I went back to work this week!  I finally found a job that is a good fit for my experience; I’ll be responsible for the ICUs at a hospital in Queens.  Great timing, right?!  I actually will be able to do some work-from-home days but this week I had to go into the hospital for training.

Food highlights from this week include…

This week’s coffee combo.

IMG_2385

I made Adam and myself dalgona coffees and he is smitten now too.

IMG_2388

Usually I don’t keep a ton of candy in the house but now that I’m unable to pop out for an ice cream whenever I wish I’ve started building up a stash.

IMG_2414

Amy’s chile relleno bowl with hot sauce.  <– my 2nd all-time-favorite frozen meal

It’s Not Delivery, It’s Trader Joe’s Pizza Dough

I made some damn delicious meals this weekend; all of my dinners were winners.  I am midway between my bimonthly grocery trips now though so we’ll see how next week goes.

Highlights include…

Phin coffee.  We are head over heels for this system, the results are so velvety!

IMG_2357

We ate yogurt bowls as a family.  Mine had 2% Fage, honey, candied walnuts, cinnamon, espresso powder, and blueberries.

IMG_2361

TJ’s vegan tikki masala.  9/10.

IMG_2373

Leftover turkey meatballs.  This simple batch – seasoned with salt, pepper, TJ’s umami powder, and Korean chili flakes – turned out so good.

IMG_2341

We made Hummingbird High’s small batch brownies and they were hands-down the best brownies I’ve ever eaten.  Insane.  I added espresso powder and didn’t have any cocoa powder and they were next-level fudgy.

IMG_20200410_105751_383

Greek veggie bowls.  Cucumber, baby tomato, roasted chickpeas, olives, fresh mint, TJ’s Greek feta salad dressing, and TJ’s zhoug.

IMG_2354

Pizza salad!  Romaine, Greek feta dressing, roasted tomatoes, sharp cheddar, and pepperoni croutons (aka turkey pepperoni that I baked until crispy).  Plus homemade garlic knots.

IMG_2369

I made stromboli!  With turkey, turkey pepperoni, and mozzarella.  Plus roasted green beans.

IMG_2375

Important update – this is how the dog likes to spend most of his time, on my lap, under a pillow.
