Summer Weekend Excitement

Tomorrow’s the last day of summer school!  It’s also the weekend, as well as the start of 8 weekends in a row of fun/important things.  Starting with this weekend –

  1. We are driving to Ohio to see our niece in a dance recital and stay in Adam’s brother’s new house.
  2. We are flying to the Outer Banks for a vacation with my in-laws.
  3. I’m going on a wine tour with a group of friends.
  4. The Italian Festival is happening.
  5. Adam is taking a really big, important exam.  (And then I celebrate my 27th birthday a few days later.)
  6. My parents are coming to visit.
  7. I’ll be in Ohio visiting my grandma with my parents.
  8. We will be celebrating the 1-year anniversary of Webster’s Buyday.

It’s going to be an amazing summer!  I just have to get through one more day of school first.  I can’t really complain about today though, as we did two fun things.

Early things.  I had to be at my friend’s apartment to carpool at 7:30.  I tried to make a smoothie for an easy breakfast but it didn’t quite work out.

I blended 1.5 cups Silk Vanilla Almond Milk, 1 Tbsp chia seeds, and 1.5 cups frozen strawberries.  Sounds good right?  Not even close.  The texture was there but the smoothie just tasted like watered down milk.  I ended up throwing it out after a few sips.

We started early because our class was taking a tour of the Clinton Bailey Farmers’ Market.

Our next fun activity took us to the kitchen lab.  We practice quantity cooking and made ourselves lunch!

There were more than two dishes but this was all that appealed to me.  Pasta with garlic and spinach,

and a really amazing salad with strawberries, blue cheese, and candied pecans.

Plus sweet tea with lemon and orange to drink.

One group made several batches of cookies and there’s no ac so it was boiling in that kitchen.

When I got home in the afternoon I made myself a glorious snack.

A sliced Gala with 2 heaping Tbsp melted Biscoff Spread.

I shared a few bites of apple with the dog but the only one licking the Biscoff bowl was me!

I tried to take Webster on a walk/run but the husband was at home so it didn’t work.  I adore that dog but sometimes his obsession with the husband is a drag.  If we walk him together he’s perfect.  If Adam is at school and I walk him he’s perfect.  But if Adam is at home and the dog knows Adam is at home, if I try to walk him he sits and tugs as we head away from the house and pulls me off of my feet when we head back.  Ugh.

I got so irritated with the dog the I ended up dropping him back home and going off angrily for a run.  A run-run.

1 mile-ish running + 3 minutes walking + 1 mile-ish running.  2.4 miles and 24:30 minutes.

I am pretty damn proud of maintaining a 10 minute mile pace in spite of the walking, but I am so not ready for run-running.  This basically killed me.  I need to stick with my run/walking plan for a while longer (and more consistently!).

Afterward I walked a bit more.. to the Co-op for a Blue Monkey Coconut Water.

I was soaked by the end of my run and this seemed like the best way to rehydrate.  Plus it was tasty.

Adam and I split a mango.

I’ve officially decided that mangos make my “top three” list for favorite fruits.  I also like cookie dough.

I took 2 – 3 cookies’ worth of nibbles while baking tonight.  I’m making Mini (aka regular cookie-sized) S’mores Monster Cookies.  Not the best dinner, but it worked; I got plenty of veggies at lunch.

Cukoo For Coconut

I know I said this morning that I’d be a grump, but today wasn’t so bad.  Coffee helped.

I got dressed quickly enough that I had time to take Webster on a morning walk and when I met the husband to do a backpack/dog swap he ended up driving me to school.  We got iced coffee with skim milk along the away.

Sidenote – my bladder probably wished I’d skipped the coffee; I also had a breakfast drink, a soda, and a huge bottle of water.  At one point all four were sitting on my desk, which made everyone crack up.

Breakfast was a celebration of coconut.

A Liberte Coconut Yogurt,

and a Zico Chocolate Coconut Water.

I tried the chocolate Zico in Ohio last spring and loved it, it’s like a lighter Chocolate Nesquick!  When I finally spotted some at Wegmans last week I freaked out.

My lunch looked an awful lot like last night’s dinner.

Tempeh and veggie brown rice casserole topped with white cheddar.  I microwaved it at school.

I have one final casserole serving stashed in the freezer and I’m looking forward to remembering it in a few months.

After class I spent time on some job applying things.  <– please cross your fingers for me!  Then I took the world’s hardest nap.  When you wake up from a nap remembering dreams you know you needed sleep.

Dinner was simple but oh-so-good.

  1. Chop the top off of a bulb of garlic, drizzle with evoo, stick in an oven at 400* for 30ish minutes.
  2. Boil ~1.75 cups of bow tie pasta.  Add ~.25 cup frozen edamame and 1 pint frozen mushrooms during the last three minutes of cooking.  Drain and return to pan.
  3. Squeeze roasted garlic into pasta.  Add ~3 Tbsp creamy mushroom soup, ~2 Tbsp evoo, and a liberal sprinkling of salt.  Stir vigorously.
  4. Portion onto two plates.  Dig in.

Adam gave me a bunch a bunch of crap when I told him the dinner plan but we both swooned our way through the finished dish.  Roasted garlic is so flipping creamy.

I’m up late because I was typing up the posts with the pie and dog treat recipes from last weekend.  It was worth it even if no one else tries them out because I will definitely make both recipes again.  In the meantime, I’ll see you tomorrow at noon for some window shopping!

Lunch In The Cafeteria

Hello, again!  Long time no see; or at least it has felt long to me.  There is some stuff going on that has made it in my best professional interest to skip posting, so that’s where I was the past two days.  I obviously can’t share but I promise you’re not missing anything too juicy.  And now I can come back!

This week of summer school we are observing institutional food-service operations.  I’m at the campus dining hall and I’m loving it!  Everyone else is at a health care organization and I was worried about doing something different, but I ended up exactly where I’m supposed to be.  Everything I’ve experienced so far has been amazing and today I basically walked around with my mouth hanging open.  I’ll admit that my expectations were not very high but I’ve actually been beyond impressed.  I went into dietetics more excited about clinical work than food-service and this experience is totally challenging my previous ideas.

Breakfast was eaten on my walk to school.

ZonePerfect recently sent me a sample of their Perfectly Simple line.

Tagline – “A few wholesome ingredients. 10 grams of protein. What could be simpler?”  Sounds good to me!

Unfortunately when I tried the Cranberry Almond flavor earlier this week I ended up throwing it out after just one bite.  The cranberry flavor was too strong for me; but I hate cranberries, so if you’re a fan of them this might be a plus for you.  I didn’t have high hopes for Toasted Coconut but I ended up quite liking it.

I wouldn’t call the ingredient list “natural” but it was nice and short.  The date paste wasn’t hidden but the bar didn’t have the same flavor or stickiness of a Larabar either.  The toasted coconut was tasty.  For 200 calories this was pretty filling (thank you, 10 grams of protein).

I also had a coffee with skim milk on campus.

I’ve always loved the fact that our food court has a Spot Coffee and I learned more about that relationship today.

Lunch was eaten in the cafeteria.  A Zucchini and Squash Blend with Vegetable Egg Frittata.

Plus a skim milk/chocolate milk mix over ice.

I’ve so missed the milk machine from my days of undergrad at UM!

My meal was delicious, by the way.  The food service department here does a really amazing job of using tons of local sourced produce, dairy, and eggs.  Plus they only buy cage-free eggs and antibiotic-free meat.

When I got home in the afternoon I snacked on small bowls of leftovers.

Rice with spicy chicken.  Followed by the last small serving of Tex-mex chicken soup.

I am so sad to see this go!  Especially because Adam said not to save the recipe because it was too spicy for him.

Dinner was pretty similar to my snacks, but Indian.

I topped brown rice and roasted eggplant with a serving of Kohinoor India on a Platter Paneer Butter Masala.

This stuff was fabulous!  My roasted eggplant wasn’t very good (I baked it in Worcestershire sauce and honey and it ended up spicy and chewy) but the sauce was totally able to carry it.

It’s close to bedtime but we are going to walk the dog and we may get some chocolate!

Gluten-Free Cowboy Oaties for Camille

Does anyone remember my gluten rant?  While I hate that gluten-free is “trendy,” I deeply sympathize with anyone who has to follow a GF diet for medical reasons.  People like my cousin Camille – one of the smartest, funniest, people I know, who took her new diet completely in stride.  Her sister is awesome as well so clearly my aunt and uncle are doing something right, but that’s beside the point.

Camille occasionally reads the blog and knows that I like to bake.  Awhile back she texted me a request for a GF update to Cowboy Cookies.  I don’t think I’ve actually ever eaten a Cowboy Cookie but I did some Googling and gave it my best shot.  I’m positive that the texture is different but the taste components of Cowboy Cookies are all there – chocolate, coconut, pecan, and oats.

Gluten-free Cowboy Oaties, yields 12 dozen

  • 2 cups pecans
  • 1/4 tsp salt
  • 2 tsp extra virgin olive oil
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 large eggs, lightly beaten
  • 1 tsp vanilla extract
  • 3/4 cup gluten-free oats
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup shredded unsweetened coconut
  1. Preheat oven to 350 degrees Farenheit.  Prepare a cookie sheet with baking spray.
  2. Spread pecans in a single layer on prepared cookie sheet.  Spritz with a bit of baking spray and sprinkle with salt.
  3. Toast pecans, about 10 minutes in the oven, watching them carefully so they don’t burn.  Remove from oven and allow toasted pecans to cool completely before moving on to the next step.
  4. Place cooled, toasted pecans into food processor along with olive oil.  Process until smooth, 1 – 2 minutes.  You are looking for a consistency similar to natural peanut butter.
  5. Place pecan butter, sugars, eggs, and vanilla in a large bowl and use a hand-mixer to mix until well-combined.
  6. Use a spatula to fold oats, chocolate chips, and coconut into batter.
  7. Line two cookie sheets with parchment paper or Silpat mats.  Roll batter into heaping teaspoons and place in evenly spaced rows on prepared cookie sheets.
  8. Bake 15 minutes at 350 degrees Farenheit, until firm.

If you do not have a food processor you could probably substitute 1 cup of store-bought pecan butter for the pecans but I make no guarantees that this substitution will work.  If you are following a gluten-free diet for medical reasons please make sure that the ingredients you purchase are appropriate for your diet.

AC Would Equal Aleviates Cranky

Hi there.  It’s hot and I’m cranky so I’ll keep this cursory.  Husband, if you’re reading – no, I don’t think we should turn the ac on yet, it costs too much money.  Bite me.  <– see, cranky

Breakfast was a cereal bowl.

A serving each of Honey Nut Shredded Wheat and All Bran Bran Buds with skim milk.

Plus a green pear eaten on the walk to school.

First I went to the gym.  20 minutes on the elliptical at random level 6.  Then 10 minutes of strength and stretch moves.  Between two days of machines at the gym and tennis, my right arm is killing me!

Then I went to get my PPD read.  Surprise… I don’t have TB!  Were you holding your breath?

Lunch was snacky.  First, apple dippers.

A sliced Honeycrisp,

with 2 Tbsp each peanut butter and Heath crumbles.

Then a slice of cheddar.

Finally, two mini bags of popcorn.

And yes, I realize that completely defeats the purpose of mini bags.

My dinner plate looked sort of silly but I just didn’t have the energy for carbs or veggies.  There were veggies in the sauce!

The chicken was tasty though.  It was my version of the Coconut-Tomatillo Pork Chops recipe from Shape.

My changes –

  • 1 lb of chicken subbed for the pork
  • cumin, banana leaves, and bay leaves were skipped
  • 3 Tbsp pickled jalapeños and 1 Tbsp Green Tabasco were subbed for the peppers
  • I only used two cans of coconut milk and 1 of them was light
  • chicken stock was skipped

Part of the reason I’m cranky is because I’ve been hungry all day.  Adam and I have to run to Tops in a bit (he’s bringing breakfast for his team tomorrow) and I’m definitely going to buy a snack while I’m out.  I’ll update later.

Networking and Notworking

I wasn’t quite the productivity machine I was hoping to be, but I did take off that gross brown nail polish.  Baby steps.

I didn’t eat definitive meals today, more like equally spaced random snacks.  Bowl o’ berries.

2% cottage cheese and Siggi’s 2% Coconut Skyr Yogurt topped with blueberries and maple syrup.

The syrup was supposed to be a light drizzle but with my newly opened bottle it ended up being more of a drenching.

Kettle corn.

Magnum Double Caramel Ice Cream Bar.

Tuna salad.

Adam and I split a can’s worth of tuna with Miracle Whip and pickle relish.

I had an everything matzoh on the side for crunch.

My final snack was a glass of Low-fat Birthday Cake Kefir.

I showed a picture of the bottle yesterday and promised to share more.  The Kefir is from Lifeway and it is flipping delicious.

The flavor isn’t exactly cake but it is pleasant.  Every flavor of Kefir I’ve tried from Lifeway has been the perfect balance of sweet over sour but not so sweet that it hurts your throat.  There are 170 calories per 8 oz and it is definitely more filling and satisfying than a glass of milk.

My evening was spent at the Buffalo Centre for the Treatment of Eating Disorders for an informational session put on by the local dietetics association.  I toured the center last summer on my own but it was good to see some familiar faces from my outpatient rotations.  I’m not sure whether or not we’ll stay in the area after graduation but it’s always good to do some networking.

Oddly Amazing

Hello, again!

Did you forget what I looked like?  Yes, that’s a bathroom self-portrait; yes, I’m a bit ashamed.

I’ve been gone because it’s exam week.  I don’t like to lie to you guys, so you’ll note that I cited “exam week” and not “studying for exams” as my reason for blog bailing.  It’s possible that I read two new books yesterday.  They were murder mysteries and they were fabulous.

My first exam was at 7:40 am so a stop for Ashkers on my walk to school was a necessity.

A large coffee with skim milk and sugar.  The coffee was “Jamaican Me Crazy,” a blend I’ve been obsessed with since last spring.  Our nearest Wilson Farms became a 7-11 and I don’t like Wegman’s version of JMC so this was very exciting.

I had one exam at 7:40 and another at 3pm so most of my meals were consumed in the computer lab.  I brought baby carrots,

a Coconut Chocolate Chip Clif Bar,

and a Golden Delicious apple.

And I dug into my gift bag (some of our teachers are so nice!) for a lollipop.

During the 7-hour stretch between exams I also had a diet dr. pepper.  I considered having some Combos but I ate two tubs of popcorn in the past four days and it seemed like maybe it was time to say no.

I did do some snacking this afternoon while I packed the husband’s lunch.  A slice of Applegate Farm’s Honey and Maple Turkey,

and a pack of Gushers.

I made him a snack when he got home too and after we both digested and messed around for too long on the internet we set out on a quick run.  1 mile in 11:33.  Plus a cool down of walking after we went back to the apartment for Webster.  It was pouring out but the dog was due for a bath so we enjoyed a wet walk in the rain.

I’m short on time but I made an amazing, albeit odd, dinner.

First course was salad.

Romaine topped with peanut sauce and buckwheat groats.

Next came the protein and carbs course.

I sliced up two blocks of tofu, coated them in “green sauce” and baked at 450* for 40 minutes.

Green sauce = chopped basil, apple cider vinegar, agave syrup, and green tabasco.

Then I made ridiculously stupendous grilled cheese sandwiches.

Rye bread + (shredded parmesan and 2% mozzarella mixed with mayo and Sriracha) + a bit of butter in a skillet.  The sandwiches were super tasty to the point of almost being unsatisfying because you just wanted to keep eating!

And dessert was 2 Tbsp melted Cookie Butter with a few pretzels dipped in.

I’ve got three exams tomorrow so I’ve got to get back to it!

Healthy or Happy

Healthy and happy.  I started my day with a run.  My day started fairly late because I skipped snoozing and went straight to turning off my alarm clock, but that’s another story.  I ran two loops around the block, 2.4 miles in 24:45.  I did a negative split (by a couple of seconds) and it damn near killed me.

Healthy.  I made myself a rehydration cocktail after my run.

Vita Coco Tropical Fruit Coconut Water and club soda.

It was pretty bad.  I think using plain coconut water would have been better.  But I was so hot that I took a cold shower so I knew I needed the fluid and electrolytes.  I drank 80% before giving up.

It was neither happy nor healthy that I didn’t eat any solid food all day but that’s what happens when you sleep until the last possible minute and then have to hustle so fast to class that you’re practically skipping.

Healthy and happy.  When I got home from school I ate a big pile of baby carrots with homemade 1000 island dressing for dipping.

I’m not sure what possessed me to make so much dressing but I used the leftovers to make Adam a sandwich so it’s all good.

I also ate a Golden Delicious apple.

Happy.  I baked a batch of blondies to celebrate tomorrow being the last day of classes.

I ate three.  Recipe should be up by noon tomorrow.

Healthy.  I ate a salad before dinner.

Romaine topped with ground flax and bbq sauce.

Healthy and happy.  We made homemade Hawaiian pizza for dinner.

We topped a Boboli Whole Wheat Crust with marinara, 2% shredded mozzarella, sliced pineapple, and “ham.”

The “ham” was actually honey turkey that I asked the deli counter to slice 1/4 inch thick.

The end result was very tasty.
