Cinco De Mayo Surprise

I had big Cinco de Mayo themed plans for today but unfortunately they fell through.  It was a good day regardless, just not themed.  <–  I love a good theme, I sort of can’t believe I didn’t rush a sorority in college

Friday was good in a “day-off” sort of way.  Thursday night was ridiculous; I woke up a little bit before 4am and never went back to sleep.  I tossed and turned, got up to pee, got up to get a drink; nothing worked.  Which is how I ended up eating blondies and watching “Private Practice” at 6am.  I knew I would be cranky and unproductive so instead of trying to fight it I spent my day eating Indian food, watching dramatic tv, starting the latest Kathy Reichs book, and going to see “The Avengers.”  Sidenote – “Avengers” was great, I am thrilled that I got to see two Joss Whedon pieces in the same month!

I spent this morning finishing up Flash and Bones in bed (loved it!).  My mood threatened another day off but I knew I needed to get my butt in gear and face the world.  I set out on errands and ultimately finished most of next week’s to-do’s as well!  I was out later than expected and ended up grabbing lunch at Moe’s.

I didn’t eat 90% of my chips and queso but they were nice to have after particularly spicy bites of burrito.

I had a blondie when I got home.

Adam came home from his shift at the hospital this afternoon with his black dress shoes completely spent so we headed off to the outlet mall.  It was crazy and crowded but we rewarded ourselves for our efforts with Ben and Jerry’s.

I got a small cup of Schweddy Balls and Coffee Coffee Buzz Buzz Buzz.

During our travels I also had these Jalapeño Cheddar Combos.

Our evening plans included a surprise party for our friend Ethan.

The event was held at Torro, a local tapas place.  They brought us bread with oil and vinegar upon arrival.

And Adam and I split the Tempura Shrimp – “skewers with napa salad, miso dressing, and sweet Korean chili dipping sauce.”

This dish was great!  I ate two with sauce, plus all of the cabbage.

Of course there was cake.

I had half of that small piece, I’m in more of a savory than sweet mood.

We’ve had tapas before, so we were aware that one plate wouldn’t be enough for two people but there was an issue and we never got our 2nd plate.  No big deal though, the boys all came back here for an impromptu poker game so I’m cuddling up with some chips and dip.

Double Sushi Day

Hello from yesterday!  I had a good evening (mostly) but didn’t get a chance to post until today.  My clinic hours went well; it is always great to get a chance to talk with professionals in my field.  The RD I was with yesterday owns her own private practice and she had lots of great advice.  She also helped talk me down a bit about next summer’s certification exam.

As I headed out the door around 4 pm yesterday I was so hungry I thought I might have a fit.  I knew we had plans to grab an early dinner before the health fair but I also knew that I might drive off the road if I didn’t get something to eat.  I ended up taking a Mint Chocolate Chip Luna Protein bar from the cabinet.

Yuck City!  This is the 2nd flavor I’ve tried from that line and both bars had an awful “fake protein” taste to them.  I love Luna but I think I’ll stick to their normal line.  I was so hungry that I did eat the whole thing though.

I was glad that I choked down the bar because dinner ended up being pretty lame.  We stopped at Wegmans for hot bar but there wasn’t much time and I panicked and grabbed my 2nd serving of sushi for the day.  A Thai sweet potato roll with brown rice.

With a (half decaf) coffee with skim milk and two sugars.

While we were at the health fair another RD who was doing a cooking demo brought me over a small plate of her black bean dip.

It was good and our table was nicely situated to watch her work.  She does the cooking classes at Tops Grocery, a job I would love to have some day.

The health fair wrapped at 9pm and as I was driving home I felt like I was going to burst out of the seatbelt because my stomach was so full.  I had to drive home to pick up Adam and then we ran to the store for a quick errand (he accidentally took my cottage cheese container for lunch instead of his leftovers!) and by the time we were home for good I was practically in tears.  I don’t know whether it was the protein bar, the decaf coffee, or the double dose of sushi rice but my stomach was super bloated and painful.  Ugh!  I felt so sick that I brushed my teeth and then jumped straight into bed.

Thankfully today I’m feeling good.  I even started my morning with a run.  1.2 miles in ~12 minutes.  I left my keys with the husband so I only had time for one loop but then I went back and grabbed the dog for a quick walk.  Followed by a short session of strength and stretch moves.  I’m hungry!

I’m Relleno

Hello from Ohio.  We’re not here for a happy reason but I’m happy we made it here safely.

We stayed up late catching up on TV last night and I got hungry again.  I served myself a big bowl of cereal with skim milk; Cheerios and some raisin/bran/crunch thing.

I had breakfast food for my late-night snack and dinner food for breakfast.

A grilled cheese with Cabot 50% Reduced Sharp Cheddar and Sriracha mayo,

and a sliced honey crisp.

This meal was great but my next bite was terrible.  I stole a piece of Adam’s chicken bites from McDonalds –

Ewwwwwww!  So fried tasting and gross.

My dad flew into Buffalo this afternoon and we picked him up at the airport and headed off on our road trip.  Since we had a “road-guest” we stopped for an actual dinner.

Torero’s served us some damn fine Mexican food!  Pretty healthy too!  Here was my plate –

and the Vegi-chiladas.  “Steamed carrots, mushrooms, broccoli, yellow squash and zucchini rolled into two flour tortillas, topped with our salsa Mazatlán and garnished with Monterrey Jack cheese.  Served with sour cream, lettuce, and tomatoes.”

I ordered my enchiladas sans cheese because I also had a chile relleno waiting for me on my dad’s plate.

Stuffed peppers are usually my favorite Mexican dish but this guy was a little too fried for me.  I ended up eating about a third of everything, except I ate 1.25 tortillas and every single bite of vegetable.

I ate two Samoa Jumbles in the car for dessert.

Still good.

My Meal At T.G.I.Friday’s

Disclaimer – I was given the opportunity to sample the new menu at TGIF free of charge.  As always, my thoughts are my own.

The other day I had the opportunity to try the new menu at T.G.I.Friday’s.    The new menu is currently out in Buffalo, Minneapolis, and Denver and a group of local bloggers were given the opportunity to come and taste some of the new dishes.  I brought my friend Kim along and we had a really great time.

There is a T.G.I.Friday’s across the street from campus at UMiami and there was a year in undergrad when Adam and I were going pretty much weekly.  I’d get the pecan crusted chicken salad, every single time.  But it’s been awhile and I’ve not had very good luck with chains locally.  I have to be honest that when the offer came in I wasn’t expecting to be all that impressed.  But here’s the thing – everything we tried was great!  Like, everything.  And I realize that those dishes were being put out specifically to serve to a group of local food bloggers, but I was impressed enough that I plan on going back on my own.

You can read about the items here so I’m not going to waste your time by regurgitating the menu.  Instead, I’ll share a few of my thoughts.  We had the opportunity to ask questions and I did my best to ensure that vegetarian dishes were truely vegetarian.  I loved how many options were available for non-meat eaters.  There were also some good-looking beef dishes added to the menu, but since I didn’t taste them myself I’m not going to comment on them.

Peach Sweet Tea.

This was made with peach puree, agave, and black tea.  I’m not the hugest sweet tea fan but this wasn’t too-too sweet and you could taste that the peaches were not fake.

Heavenly Hummus Dip

The hummus was made with roasted red pepper paste which gave a nice layer of flavor under the tahini.  It was topped with goat cheese crumbles which is not a combo I would have expected.  The flavor was good, but very garlicy so be aware if that’s not your thing.  We were told that the hummus is made fresh every day.  It was served fresh with pita toasts that seemed very fresh as well.

Warm Pretzels with Beer Cheese Dipping Sauce

This was my favorite appetizer (duh!).  I know that not everyone is as obsessed with movie theatre pretzel bites as I am, but I promise this app feels fancier than that.  The pretzels are supremely soft and they are brushed with a basil butter that gives them this great, unidentifiable taste (I had to ask).  The beer cheese sauce wasn’t gritty or too sour.  Ask for no bacon on top if you don’t eat pork.  They recently changed from cooking the sauce with bacon to sprinkling it on top so that this accommodation could be made.

Ahi Tuna with Avocado Crisps

I took a bite of this expecting to spit it out and ended up eating the entire thing.  Seared ahi tuna is served on top of tortilla crisps with Sriracha, guacamole, lemon vinaigrette, and a fresh jalapeño.  The blend of flavors and textures really helped me get over the fact that I was eating raw fish.  I loved the fresh jalapeño on top; it gave great crunch and the guacamole helped to mellow out the heat.

I don’t have a photo of the Sedona Black Bean Burger but I wanted to mention it because it was amazing.  It’s a black bean burger topped with chipotle mayo, avocado, and great thick-sliced pickles.  The burger had a nice texture and held together perfectly and the sandwich had just the right amount of spice.  This felt nice and meaty but is actually a good vegetarian option (it’s not vegan because egg whites are used in the bean patties).

Grilled Vegetable Dagwood

I should say right now that the three sandwich options were my three favorites.  This sandwich was fantasmic and Kim and I both made ourselves a little sick because we just couldn’t stop taking bites of it. Two pieces of extra-soft pita were stuffed with spinach, goat cheese, roasted veggies (eggplant!), and mango chutney.  You never see mango chutney on American menus and it really adds a lot of flavor to any dish.

Turkey Cranberry Rueben

What, what?!  It’s a Rueban… and it’s made with turkey so I don’t have to request a menu change… and it has cranberries?  Sign me up!  Actually the cranberry component was in cranberry jalapeño slaw and cranberry jalapeño thousand island dressing, which is even better.  I liked that it had a Goldilocks amount of turkey on it (not too little or too much) but I do recommend requesting that it be grilled without butter.

Victory Garden Pasta

Whole wheat penne with veggies (brocoli, mushrooms, olives! and more) and goat cheese in a lemon sauce.  If you request no goat cheese this one would be vegan.  The pasta was not my cup of tea but that’s just my taste preference because it was Kim’s favorite.  I love the throwback name.

Overall, I was very impressed the amount and variety of veggies that made it onto the new menu.  And I like that the prices are still pretty low in spite of some “fancier” additions, i.e. avocado and goat cheese.  It’s sort of awkward to write a review that doesn’t say anything bad because I think my readers will assume that I’m lying, but I promise that my experience was genuinely just a good one.  If you get try the new menu for yourself please let me know what you think!

Some Thoughts from Yesterday

  1. I finished the last published book in the Temperance Brennan series from Kathy Reichs and I’m devastated. There’s a new one coming out this summer but that’s not soon enough! I get really into what I’m reading and when a good book is over it’s like a friend has moved away.
  2. I want to also be sad that this is the final season of “House” but honestly I’m not sure how they’d top this season. The most recent episode was amazing! While I love books (Duh!), I also get really moved by good tv. I always tell Adam and if I had watched more as a kid I probably would have grown up to work in television. I am genuinely awed by people like Hugh Laurie, Emily Deschanel, Joss Whedon, and Hart Hanson. Anyway though, “House,” I’m loving the character development. Thus week House and Chase grew in ways that were both amazing and realistic to the characters.

A Few Things Done Today

  • A CT10k workout. Week 1.2 was 9 sets of 3 minutes walking, 2 minutes running. With 5 minutes of cool down for 50 minutes, 3.85 miles.
  • I met with a friend to work on a group project. Sometime next month we are doing a nutrition education session for a group of preschoolers. Not the age range I’m used to but it should be fun.
  • I bought a Groupon for 2 unlimited months at Evolation Yoga!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!  I’ll have to wait a bit to activate them (I can’t get as much out of them as I’d like and also put the time I need into the CT10k running plan) but I am so flipping excited.
  • Not my schoolwork.  Like the paper due tomorrow that’s going to ruin my Thursday.

What I Ate Today

1.  Lunch for breakfast.

In the bowl was a concoction just crazy enough to work.  Leftover Smokey Maple Baked Beans, roasted butternut squash, 4 oz of chopped up tempeh, and a dousing of Anchor Bar’s Medium Wing Sauce.

Delicious, but I was crying and snotting after every bite.  I was glad I had this onion bagel with SmartBalance Light to help break up the spice.

2.  Dinner, from Wegman’s.

Veggies with a piece of tofu,

plus a small serving of noodles with cabbage.

And grape leaves.

I had three.  We bought the ‘leaves because Adam tried to order some at his lunch today and they came stuffed with meat and covered in a cream sauce.  Weird!  I’ve never ever seen them offered like that before.  Pretty annoying too that the menu didn’t mention either of those additions.

3. Snack.  I stole the last two servings of Adam’s Somersaults.

Somersaults are his favorite snack item (he basically squealed when we discovered them on sale at Wegman’s) so I want to feel bad for eating them, but they were downright delicious.

Free Means It’s Extra Romantic

Did everyone have a good day of flowers and chocolate boxes shaped like hearts?  Let me just tell you, there is almost nothing I wouldn’t do right now for a box of chocolates!  We are exactly halfway through Vegan Month today and I foresee a big candy purchase come March 1st.

Clinical practice went well today, I think my red shirt must have made me seem extra confident.  I worked ahead on our assignments for the semester and when I finished screening my assigned patient our teacher actually threw an emergency screening my way.  It stinks to have to do an extra set of SOAP notes but I felt really good that she trusted me to take on something extra.

I had a free coupon so our romantic Valentine’s Day dinner was … Moe’s!

In addition to (way too many of those) chips, I got a veggie burrito.

Inside was a little bit of rice, pinto beans, grilled mushrooms, lettuce, corn salsa, pickled jalapeños, and lots of guacamole.

It ended up being maybe the best burrito I’ve ever had.  I was thrilled to take a closer look at the toppings menu and discover pickled jalapeños as an option.  I think my dream burrito would be mahi-mahi, cabbage, pineapple, pickled jalapeños, and some sort of cheese.

I Need A Plan

I’m a girl who needs a plan. I am obsessed with my day planner. I make weekly meal plans in bed as I fall asleep. As you’ve seen, if my workouts don’t follow an exact schedule they tend not to happen.

That’s why, without a 10k in sight on the day planner, I’ve decided to follow this Couch to 10k Plan. Not because I’m signing up for a race, but because I hope it will get me back to the gym and back in my running groove. I decided to start at week 4 because I was reasonably certain that I could handle 2 minute spurts of running.

But I also need to follow the plan. I didn’t this morning and it cost me an hour of time and aggravation. I had three things to do in the morning – errands, moving my car, and my first CT10k workout – and the plan was to leave with Adam. But I had weird, vivid dreams all night and a 6:30am rousing made me feel like throwing up. I ended up waiting in bed until 8:50, getting up just in time to move my car. I drove to school, no spots. Went on one errand and back, no spots. It wasn’t until my third return to school that I finally found a place to park. Arrgh!

But my treadmill workout went great. Week 1.1 was 11 sets of 2 minutes running, 3 minutes walking. With warm up and cool down it came to 63 minutes and 4.5+ miles. I don’t know the exact distance because a guy walked by and kicked the plug out of my machine just as I was finishing up.

The rest of my morning/afternoon involved a lot of hurrying to get to class on time and not a lot of feeding myself.  Whoops.  After class I had a mock interview to go to.  The interview was required for a class assignment but I’m really glad to have the experience.  It was video-taped (holy crap, that zit on my chin!) and getting to actually see myself in action was helpful.  My interviewer said I was great, by the way.  Woot!

Then Adam picked me up and this happened –

Hello, lover.  Going two weeks without diet soda wasn’t impossible but it wasn’t fun either.

But while we were at 7-11 something scary happened too.  A major head-on collision right across the street, complete with fire and explosions.  Adam run over to help and I’m not going to lie, it was kind of sexy to see him in action.  (<– I can say that now because everyone involved was ok)

Adam reeked of smoke and I hadn’t eaten all day so we told ourselves we were in shock and headed out for Thai food.  Such a good decision!  And they must have still had lunch pricing going because it was super cheap too.

The husband and I split two dishes, pretty much equally.  Cashew nut tofu, which came with rice.

And Pad See Ew, without egg.

Both dishes were great.  You seriously can’t go wrong with broad rice noodles.  Both dishes were sadly lacking in veggies though, and I was glad that this meal was “lunch” and not “dinner” so I could squeeze more produce into my day later on.

Several hours and some school work afer my late lunch, it was time for late dinner.

I had a baked potato topped with Smokey Maple Baked Beans.

And a side of roasted green beans.

Much better.

Peanut Butter Practice

It’s been a good weekend!  Good food, good fun, good friends.  Not much activity on the school-work front, but we’ve got a 4-day weekend coming up next week so it was hard to motivate myself.  Plus Friday’s 3am session of book reading hit me pretty hard.

I’m so glad I did it though, this was the first book club where we all finished reading on time and we finally got to talk about the book!  So much fun.  I wasn’t an English major/teacher for nothing, I love analyzing literature.

The food wasn’t bad either.  Janessa made vegan 7-layer bars.

And Anna brought this big bowl of fresh fruit that pretty much had my hand planted in it all evening.

My offering fit both the dessert and fruit categories; peanut butter pretzel banana pie.

It got good reviews all around and I’m excited to share the recipe with y’all tomorrow.  But that could have been the booze talking too.

Lemonade, club soda, and Firefly Sweet Tea Vodka (to fit with the book!).  I had that glass x2.

I got home after midnight and was very excited both to get in bed and stay in bed late this morning.

Breakfast was a toasted onion bagel with SmartBalance Light.

Plus a cup of lemonade and club soda.

I left the vodka out today, but had that glass x2.

Today was another round of fancy lunch and easy dinner.  Lunch was healthy, vegan, and included a new recipe to boot.

The beans weren’t quite Southern bbq good, but for quick and vegan I’d say they’re pretty great.  Here’s a link to the recipe.

While Adam and I watched “Grey’s” this afternoon I ate this bowl of popcorn x2.

And then headed to yoga on a full belly.  90 minutes of hot yoga will make you wish you’d done more water and less salt.  This class was the very last practice of my 30-day pass and I’m pretty devastated.  I’ve come to enjoy yoga so much more than I ever thought possible.  I’m still not very good, but every shaky, sweaty minute is filled with glee.

I picked Adam up for a “cookie walk” and we came home with peanut butter cups from the Co-op.

It was good but I wish it had been a bit smaller, even this sugar fiend couldn’t finish her serving.

Dinner was peanut butter laced too.

I promise that bowl was as tasty as the picture is crappy.

Into the skillet with evoo went leftover pasta, leftover (pre-cooked) yellow squash and broccoli, and my peanut sauce.  The noodles get all crispy when you stir-fry them and the sauce forms a crust that’s pure heaven.

Now it’s back to the grind.  Hopefully this weekend of play has left me rejuvinated for work!
