Tired Haus 3

Man, oh man, am I tired!  My insomnia seems to be coming back but for now I’m keeping my fingers crossed that the problem is just the vacation/visiting/excitement.  It’s my mom’s last day in town and we are heading to the airport at 4am.

On a short walk with the dog, Starbucks dopio espresso with the rest of the cup filled to the rim with skim milk.

Veg – roasted veggies, asparagus salad, a piece of chili garlic eggplant.

Protein – a piece of fried tofu and 2 steamed chicken dumplings.

I had to go to two classes today but this afternoon we took a nice walk down Elmwood.

A pear was eaten on the walk,

along with two Buttered Rum Raisin Cookies.

Plus two more cookies that snuck into my mouth while I was in the container.

During our walk we also stopped at Organic 3 Cafe for juice.

My custom blend was carrot, cucumber, double spinach.

We headed back to Lagerhaus 95 for my mom’s final meal in Buffalo.  Good food was eaten, with lots of sharing.  Basil truffle fries.

These were fine as far as fries go but not amazing; nothing like the truffle fries here.

Haus Cheese Board.

The four cheeses were provolone, smoked gouda, dill havarti, and a sheep’s milk cheese.  It was good, but that’s obvious because it’s cheese.

And speaking of cheese, I got the special for dinner – Crispy Duck Mac and Cheese.

The mac was made with smoked gouda and was topped with panko, truffle oil, crispy duck, and goldfish crackers for crunch.

Mmmmmn!  Smoked gouda is always a win and the goldfish ended up being surprisingly nice.  I usually shy away from duck but I did enjoy the few bites I took that included it; it was a lot like beef jerky!  I finished half of the dish or so and the husband is very excited to have the rest for dinner tomorrow.

I also had a few bites of his truffled wild mushroom panini.

And we split a side salad with lemon caper vinaigrette.

The dressing was good but my salad was missing the herbs from last time.  All in all it was a fun “last” meal.  Quite decadent too, what with all the cheese and truffle oil!

And now I’m getting up in 5 hour so I should skedaddle!

Blog Tips and Bagels

We stayed up pretty late last night but thankfully having to move our cars got us up and out of the house for an early walk.

I’m still loving this weather.  Walking weather it is.  Sidenote – a major character died on Stargate: Atlantis last night (the show is off the air, we are watching on Netflix Instant Watch) and I gasped so loudly I’m pretty sure the neighbors heard!

After a post-walk shower (it is sweating weather too!) I hit the caffeine hard.

2 cups of cold coffee with English toffee syrup and Silk Unsweetened Vanilla Almond Milk.  I had a date with a friend so I drank my coffee en route and I helped myself to one of her homemade “energy balls” when I got there.

The balls were a Pinterested recipe with oats, pb, and coconut and they were quite tasty.

Kim invited me over to pick my brains about all things blog.  It’s weird to give advice when Eating Chalk is so tiny and unknown but there are little tips that I think I’ve got figured out.  I taught her about tagging, pages versus posts, and emailing responses to comments, among other things.  I hope I was helpful!

I needed to pick up a few groceries before my mom gets here on Friday and Kim lives one town over from me so I took the opportunity to hit up a different Wegman’s.  There was a Manhattan Bagel along the way and I stopped there too.

I’ve been craving a bagel (a good bagel!) like crazy lately and I’m glad I gave MB a chance.  My jalapeño-cheddar bagel with light garden cream cheese hit the spot.

It was super chewy and spicy.

I cooled down my mouth with a Blackberry Hibiscus Mama Chia once I reached the mecca.

The drink had more texture than flavor, but was very tasty.  My out-and-about food purchase quota for the week has been reached but it was worth it.  Besides, March Back Home March is basically ending once my mom gets here; I’m not turning down “free” food!  🙂

I hit the jackpot with the “new” Wegmans too.  I found all sorts of fun new products to try.  Like these Bissli BBQ and Smokey snacks.

They were super crunchy.  Adam and I split them but I scarfed more than my fair share.

I also ate most of these adorable things.

They were little biscuit cookies with white and milk chocolate.  So tasty!

I spent twenty minutes this afternoon agonizing over whether or not to run (sorry, husband!) but I’m having some foot problems so I decided not to.  After more than a week off (whoops!) what’s another few days when I’m having pain?  I’m not even going to attempt a workout until Sunday, but thankfully we’ll be in Ohio for the weekend and I should be able to run on the neat path near my grandparents’ house.

Not running didn’t mean I was any less hungry though.  I ate a Wegman’s low-fat coffee yogurt with honey roasted peanuts before dinner.

The peanuts were out because I was making the husband some homemade vanilla honey peanut butter.

I took a few licks too, yum!

Dinner was quick and easy.

We need some (turkey) bacon for a recipe tomorrow so I cooked up a batch tonight,

and we scrambled eggs in the same pan when the bacon was done.

Plus roasted asparagus.

It was a very savory meal.

A Bahn Mi Attempt

I forgot to charge my camera and had to plug it in this morning while I should have been photographing breakfast.  It was a good time to be camera-less; my foods were predictable (is anyone even remotely surprised that I ate a big bowl of two ingredient ice cream for breakfast?) and my activities were boring.  I will say though – I don’t know what my neighbor did, but the next time the cops block my entire street and make it take 30 minutes for me to repark my car, I just might go on a crime spree of my own.

So it’s no biggie not to blog breakfast and lunch, but missing dinner would have been a crying shame.

I mean that crying part literally, I went a little heavy on the Sriracha in my spicy mayo!

For dinner we had my best attempt at Tofu Bahn Mi.  French bread topped with spicy mayo, baked tofu, carrots, and cucumber.

For the tofu I cut a block of extra-firm into five slices and then pressed.  I marinaded the dry slices overnight in a mix of sugar, rice vinegar, and tamari.  Then today I baked the slices at 425* for 30 minutes.  While the tofu was baking, I cooked the carrots in the leftover marinade.  Then I stirred together Sriracha and mayo, thin sliced some cucumber, and assembled.

We also had roasted asparagus on the side.

If you’re wondering why my asparagus pile looks so small, it’s because the ‘gus is Adam’s favorite veggie and one of his favorite foods.  I.e. he freaked out and took half of what I served myself to put on his plate.  I’m just glad he’s so in love with something green.

Meanwhile, the dog’s in love with my coats.

And I’m in love with the two of them.  And with 2 ingredient ice cream.

Don’t Go See Haywire

The semester doesn’t even start until tomorrow and I’m already behind!  This is not a good sign.  But it was a good day.

I spent my morning baking.

Aka nibbling.

I had a few of these savory wonton crackers; no recipe to post because I’m still perfecting.

And one of these; recipe coming tomorrow morning because I’m mean.

And I also ate this.

Graham cracker crumbles + shredded coconut + a handful of milk chocolate chips + a marshmallow x stuck in a cup and baked.  Quite good, and a hint as to the recipe coming tomorrow.

We had to run an errand at the mall this afternoon and somehow the husband talked me into seeing “Haywire.”  And now he’s never picking the movie again.  This just might be the worst thing we’ve ever seen; I actually almost walked out.  The only high point was our movie snack.

We snuck in fries.  And with that good call, the husband completely redeemed himself, in spite of his taste in movies.

We had several other errands to run and by the time we got home dinner seemed out of my reach.  I stole several of Adam’s baked asparagus so I could feel like I had vegetabled.

Before sitting down with this bowl of candy while I got myself set up for school tomorrow.

Sugar rush be damned, I powered through setting up an entire new planner.  And with that, I’m ready to take on the world the spring semester!

What’s the worst movie you’ve ever seen?  I remember a year in the late ’90’s when every new film seemed even worse than the last – Breakdown, My Best Friend’s Wedding, Good Burger, Air Bud, Dante’s Peak, Free Willy 3, Speed 2, Volcano, Contact …  And I will confess that I also freaking hated Titanic!

Not Yo Mama’s Turkey Burgers

Three posts in one day?!?  I’m on a roll!  And since I didn’t have it together to eat before late afternoon, this is actually everything I ate today.  Sidenote – my #2 goal for the next 30 days is to blog every single day/eat.  My #1 goal?  Involves my ass and the gym.

Since I waited too long to eat I was absolutely starving.  I ended up eating a 6-inch tuna sub, with vinegar and red onions, while I cooked dinner.

It was tasty, and it kept me from gnawing my own arm off.

Dinner was a good’un.  Quick, delicious, and it involved two brand-spanking-new recipes.

Emily- and husband-approved.

New recipe 1 was Nacho Turkey Burgers, makes 8 small burgers

  • 1 lb 94% fat-free ground turkey
  • 1 large egg
  • 60 grams crushed tortilla chips
  • 1/4 cup medium, chunky style salsa
  • 3/4 cup Mexican shredded cheese blend
  • 1 tsp evoo
  • 8 hamburger buns
  • guacamole (optional)
  • sliced cheddar (optional)
  • hot sauce (optional)
  1. In a large bowl, combine turkey, egg, chips, salsa, and cheese until a homogenous mixture is achieved.  Use your hands to shape into 8 equal-sized patties.
  2. Heat evoo in a grill-pan over medium-high heat.  Working in small enough batches as to not overcrowd the pan add patties to pan.
  3. Cook burgers until browned and fully cooked through; 5-8 minutes on each side.
  4. Serve cooked burgers and top as desired.

New recipe 2 was served atop the burgers, Citrus Guacamole.

  • 2 medium-sized ripe avocados
  • 1 tomatillo, minced
  • 1 small lemon, juiced
  • 1/4 tsp salt
  1. Place avocados in a medium bowl and mash with a fork, leaving some chunks.
  2. Stir in tomatillo, lemon juice, and salt.  Serve immediately.

Both recipes ended up turning out really well!

I love it when my kitchen experiments work out.

I had one nacho turkey burger, on a bun with citrus guacamole,

a serving of rice and beans (just rice with a can of black beans stirred in during the final minutes of cooking) topped with another dollop of guac,

and some roasted asparagus.

The citrus-salt theme was carried nicely throughout the entire meal.

For dessert I nibbled on a few chocolate covered pretzels.

We’re currently making our way through the “Aliens” movies, so “Aliens, 2” was our dinner entertainment.  Webster thought it was thrilling.

He’s such a cutie.

Katie got her cut soon after, and it looked fantastic.  I’d just given to Locks of Love, but after some time enjoying my new hair, I was ready.  What do you think?

I love it!

I’m Like Wolverine

My first day back to humanity was eased along by a lunch date with a friend from school.  In advance – thank you to anyone who gets me out of the house in the next three weeks!  We met at Starbucks (parking!) since the plan was to find a lunch deal somewhere along Elmwood.  One false start at Cecelias (no lunch hours) and we ended up at Wasabi, which was an excellent choice.

The 2-Roll lunch special came with miso soup.

I’m still too chicken for raw, so I went tasty but tame for my two rolls.

and a spicy, crunchy crab roll.

Smothered with wasabi, of course.  Both rolls were totally delicious.  The asparagus had a great tangy, pickled aftertaste and the crunchy in the crab was light and fresh.  I would have licked my plate clean but dutiful wife that I am, I brought home one piece of each for the husband.

Adam was home at a lunch time hour because today was the last day of his family med rotation.  After a final tomorrow he starts psychology on Monday, whoop.  In the meantime though, we are heading to Brewfest tomorrow night.  I’m so excited; our tickets earn us twenty 3oz tastes!

Back at lunch, Donna and I walked back to Starbucks to say goodbye.  I snagged a grande, iced, black tea for my walk home.

I’ve been craving tea like crazy lately, I think I need to whip out my pitcher so I can make some iced at home.

I actually got home from lunch around 3, but I didn’t blog right away because I sustained a major injury –

Apparently I really had to pee, because in my rush to take off my jeans my thumb nail sliced a chunk out of my finger.  I keep my nails pretty short but this sort of thing still happens to me all the time, it’s so frustrating!

Cheesy Peasy

This afternoon I got my Great Fundraising Act contribution ready for mailing tomorrow.

Would you like to see what hand-rolling 30+ sugar cookie balls does to your palms?

Ouch!  But at least it makes it ok for me to get caught red-handed having a reward for my hard work.

My snack embodied sweet, so dinner was savory.

Cheesy Peasy Garlic Pasta (recipe available here and included at the end of this post).

Plus a side of roasted asparagus.

I was so excited about the creation of this recipe – which totally achieved the thick, cheesy sauce I was shooting for – but unfortunately it didn’t really fill me up.  I wasn’t sure if I was really hungry or residually hungry though, so I decided to wait a bit before refilling my plate.  Adam had a volunteering commitment in our neighborhood so I walked with him to deliver a cookie sandwich to the friend he was meeting (hi, Patrick!).

When my stomach was still grumbly mid-walk I decided to stop by the co-op for some protein.  Waldorf chicken salad fit the bill.

It filled me up and pleased my taste buds, yum!  If you haven’t tried grapes in chicken salad yet you don’t know what you’re missing.

Cheesy Peasy Garlic Pasta, serves 4

  • 8 oz uncooked rigatoni
  • 1 cup frozen peas
  • 1 Tbsp extra virgin olive oil
  • 6 cloves of garlic, thinly sliced
  • 2 Tbsp all-purpose flour
  • 2 Tbsp reduced fat cream cheese
  • 1 cup skim milk
  • 4 oz extra sharp cheddar cheese, shredded
  • 2 Tbsp fat-free ricotta
  1. Cook pasta al dente according to box directions.  In the last three minutes of cooking time, add frozen peas to the boiling water.  Drain peas and pasta and set aside.
  2. While pasta is cooking, heat evoo in a large pan over medium-high heat.
  3. Add garlic to the oil and saute for 2 minutes; remove from pan and set aside.
  4. Add flour and cream cheese to the pan and cook 2 minutes, stirring constantly.
  5. Add milk to the roux mixture and cook 3 more minutes, stirring constantly until thickened.  Don’t worry if your mixture still is lumpy at this stage.
  6. Reduce heat to low and stir in cheddar cheese and ricotta.  When the sauce has fully mixed and achieved a smooth texture, remove the pan from the heat.
  7. Add pasta, peas, and cooked garlic to the sauce in the pan; toss to combine.
  8. Season with salt and pepper to taste and serve with a vegetable.

Taste of Buffalo

It’s been a fabulous Saturday!  It’s always great spending time with the husband (he’ll have most weekends off during this section of his clerkship) but it was nice to have fun activities to do as well.

After yoga I had to shower, go to the campus library to do some printing, go to the post office, and go to the bank before I could get my hands on some food.  Thank goodness our first fun activity was the Taste of Buffalo, a food festival with offerings from all the local restaurants.

We bought 30 tickets (ie spent $15) and we’re very impressed with what we were able to get on such a cheap date. 

Buffalo natives – if you haven’t been yet please keep in mind that Adam used more than half of our tickets so my food eaten isn’t totally representative of $7.50 spent.

P.S. I need to be honest about what a fatty dork I am; I printed off the menu from the website and arrived at the festival with a circled, highlighted list –

Adam and I shared and I ended up with many fun bites.  One bite of fried cheese ravioli from Cecelia’s.

One tiny bourbon glazed shrimp from The Grill at the Dome, which was the biggest waste of money of the day.

A small glass of berry chai smoothie that Lipton was handing out for free.  This free sample was actually the 2nd best thing I had all day!

Adam and I split this smoked bourbon chicken sandwich from Chester’s Cajun grill and it was the #1 favorite for both of us.

Half of a gourmet watermelon popsicle from Sweet Melody.  This was delicious and I wish I could have downed the whole thing but it was just too drippy.

Among other things the husband also tried catfish nuggets and a huge cup of Cuban roasted pork.  We definitely discovered a few restaurants that we want to go check out.

We parked near our old apartment and walked to the fair which meant we got in a little more than 2 miles in total wandering.  It was just hot enough that stopping at The Spot for a diet pop on the walk back was pretty damn exciting.

As we talked about our favorite bites we realized that I hadn’t actually gotten all that much to eat (Adam was stuffed!), so I grabbed hot bar when we were picking up groceries.

During our downtime this afternoon I also snacked on a serving of coffee ice cream with blueberries and chocolate syrup.

You wouldn’t expect that combo to work but it totally did.

Dinner was also an expected win.

Breaded buffalo chicken – Marinate.  Roll in panko.  Bake at 350* for 38 minutes.  Eat dipped in blue cheese dressing.

Plus asparagus that we threw into the oven during the chicken’s last 20 minutes.

The chicken was taken totally over the top thanks to a sample of KC Masterpiece Buffalo Marinade from the Foodbuzz Tastemaker’s Program.

I always forget how much marinating does for the texture of chicken, it was like butter!  The marinade itself was tasty too, a nice vinegary buffalo without an excess of spice.

For our evening entertainment we cashed in a Groupon for a Broadway light show at the Whitworth Ferguson Planetarium (conveniently located on my campus).

I really don’t want to share my opinion because Adam and I actually hate most musicals, which obviously colors our review.  I will say that the show was not the most exciting hour I’ve ever spent, and Adam claims to be having Vietnam War-esque flashbacks.  The high point of the activity was that the husband and I got to say planet-AIR-ium to each other a million times.  <– don’t get it?  watch this.
