Smoothie, Sandwich, Stir Fry

Y’all will not even believe what I did this morning … Started my day with a trip to the gym!  It wasn’t a long visit – 25 minutes on the elliptical, level 6 random – but after my month+ hiatus it felt good to be back.  Now I need to hurry to bed so there’s a possibility of me making it back to the gym tomorrow!

I didn’t have much time when I got home, but between showering and peeling the dog off of my boots I managed to make Adam and myself tasty smoothies.

The secret ingredient was MANGO.

I’ve been eyeing that can of sweetened mango pulp at Wegmans for months.  I’d been resisting, but once I remembered that we had some frozen peaches to use up I finally bit.  For two servings I blended –

  • 1 cup mango pulp
  • ~ 1 cup frozen peaches
  • ~ 1 cup Stonyfield Plain Fat-free Yogurt
  • ~ 1 Tbsp honey

They were delicious.

I wish breakfast had been a bit more filling though, because lunch was a long time coming.  I had to get through three classes and a group meeting first.  Since I decided to stay on campus until my shift at work I ended up having to buy food in the bookstore coffee shop.

I know that sandwich looks divine, but I sort of hated it.  I ordered the (pre-made, then toasted) turkey with cheddar and chipotle mayo and regretted it every bite.  There was way too much turkey, way too much cheese, and the cheese had a gross plastic texture.

I ate 2/3 of it, sadly.  Normally, my rule is that I do not eat anything that I don’t a) love or b) need for nutrients; but I was stuck, starving, and not about to drop down more cash for something else.

I should have just gone home anyways because between tiredness and hunger I didn’t get a damn thing done.  I actually curled up with my backpack and took a nap; shhhhh!

After a good shift at work, I came home to stir fry veggies for dinner.

No pasta or egg this time, just veggies, since my massive sandwich gave me a dose of carbs and protein.

The vegetables are always my favorite part anyways.  (Have you tried my riceless stir-fried rice?)

Shoulda Known, Part II

I should have known that the puppy would be a bad influence.

A sleeping Webster on the couch meant I read blogs until Adam came home instead of studying.

I should have known that the gym is always the best stress reliever.  I spent 30 minutes on the elliptical and all my test worries just slipped away.

I should have known to give Adam better instructions.

He didn’t have to go in until a bit later today so I left him instructions for putting dinner in the crock pot.  The recipe called for 3/4 cup of creamy peanut butter which we didn’t have.  We did have chunky peanut butter (which I thought he’d use) and honey peanut butter (which he actually used).  I gave him some serious grief this afternoon, but …

I should have known that the husband is always right.

The soup was delicious.  We made the African Peanut Stew from Make It Fast, Cook It Slow.  We skipped some of the spices, used honey pb, and only used half of the chicken the recipe called for.  It ended up being delicious.  Plus asparagus.

It was a good dinner.  And I even had dessert.

I should have known that I’d end up eating even more calories than I burned.

I’ve been eyeing these M&M blondies ever since the semester started and when I spotted one in the bookstore on the way home from the gym I just had to get it.

I should have known that “She’s Out of My League” would be funny and cute.  My ratios of watching to studying aren’t quite where I’d planned!

I just can’t stop singing!  It’s possible I’ve hummed straight through my day.  Other than “Aladdin,” “The Lion King” was the Disney movie with my favorite music.

Backing up to where we left off yesterday, I spent some time (not enough) with these –

I popcorned while I studied.

I hated it.

Plus 100 calories worth of Ghirardelli Midnight Reverie 86% chocolate topped with a smear of Biscoff spread.

Adam was in surgery until late so the meet-up plan involved friends picking me up and all of us getting together with Adam whenever he could make it.  The husband had told me to be ready at 5:45 so a bit after 4 I took Webster out on a long walk.  We were heading home around 5 when I got a call from our friend Patrick – “Eithan said to tell you he’s running late, they’ll probably get you around 5:30.”  5:30 you say?  Whoops! 

Thankfully I’d already showered in the morning so I didn’t take all that long to gussy.  I even managed heels and mascara.

Ready on time, we set off to Pearl Street Grill and Brewery for dinner before the show.  Thankfully, Adam got out early enough to meet us for dinner so we did a little sharing.  I ordered the Gobbler (turkey burger) with a side salad subbed instead of fries for veg.

I was not expecting such a large plate of greens though!  In the end I ate ~ 1/3 of the husband’s chicken fingers and fries,

all of the salad (with brown sugar rum vinaigrette!),

and 2-3 bites of the turkey burger.

Adam was more than happy to take care of the rest for me.  We were with a great group of friends – 2 couples of regulars plus another 2 couples who were friends of friends – so even dinner was fun.

Getting to the theatre was a bit of an ordeal – it’s possible all of the girls had to sprint 2 blocks in high heels! – but all that really matters is we made it.  This was my first time seeing “The Lion King” and I thought it was great.  Knowing the music from the movie and being able to sing along (silently!) definitely helped to keep me engaged.  My favorite part of the show was actually the visual appeal; the costumes for the elephants and giraffes were truly breathtaking.  I’m so glad we had the opportunity to go.  Though now Adam and I are desperate to see the movie to hear the songs again!

It wasn’t the earliest bedtime and my 6am alarm felt a little … rough.  Thankfully I thought ahead so all I had to do was put on shoes, grab my bags, hop in the car, and stumble to the gym.  My notecards and I spent some time on the treadmill, more for a wake up and study review than workout purposes.  2 miles walked, 35 minutes.  A quick change and face wipe bath later and I was ready for my exam.

Before the test I ate this White Chocolate Macadamia Chewy Nut Bar Odwalla sent me to sample.

This was sweet, but not too sweet, and a little bit nutty.  I couldn’t savor it the way I would have liked because our test was about to begin, but it did hold me over well through the morning.  210 calories and 2 grams of saturated fat for 25% each daily value of calcium and folate (<– important for baby making).  The white chocolate macadamia flavor will be hitting stores this month; look for it!

My test went alright, not great but not terribly either.  The subjects covered included the clear liquid diet, parenteral feeding, and Latin roots for medical terms, among other things, so no matter how the test went I know it’s all material I will be seeing again. 

I had time for a quick break and then it was on to class #2 and a group presentation.  Our non-nutritive sweeteners group had to present our findings from the last test lab as well as information on the options available to our future clients.  We were the very first group to go which was a little nerve-wracking but the TA said we did a good job.  We also did our 2nd set of sampling today, this time with commercially made products. 

The class had to analyze original and sugar-free versions of cola, yogurt, ice-cream, jell-o, and chocolate syrup.  Normally we can just take small tastes in lab but since I’ll have to write up a report for this one I needed to take really good notes which meant eating all of the samples, even the nasty ones.  And most of them were nasty.  <– Word to the wise – don’t even waste your time with Hershey’s sugar-free chocolate syrup, yuck city. 

Since I didn’t have time to photograph everything I ate (which ended up having to be a lot) I gave myself the afternoon off from blogging as well.  I will note though, that lunch included many handfuls of salty nuts and a big bag of chips to help balance out all that sweet!  And other than eating and dog walking I didn’t accomplish a blessed thing.  We have two huge exams and a paper due next week and I needed some time for tv watching before my long-weekend study session begins.

Dinner was similarly low-key.

The Tandoor Chef veggie Pad Thai is seriously better than most of the Thai available in Buffalo.

Adam’s mom sent us a haul of cookies!  It’s taking a lot of self-control but we are going to wait until the coffee caramel is finished before having at them.  And on that note, we are off to have sundaes!

Post Means After

I was poised for an early bedtime last night and just as I was about to get off the couch my phone dinged with a final e-mail regarding changes for the upcoming chili sale (<– a big, important class project).  So I spent another hour on my computer, scaling the recipes and creating a market list.  In total, the chili sale project involves creating, testing, choosing, and scaling recipes; advertising; budgeting; shopping; cooking; and selling chili.  Plus writing a summary paper afterwards!  Needless to say it has us all in a bit of a tizzy.

In spite of hitting the pillow after 11:30 I was able to keep my morning together with a little planning.  I slept fully dressed and when my alarm beeped at 5:20 5:40 6:00 all I had to do was slip on shoes and head out to my car.  I spent my workout on the elliptical with my notecards.  30 minutes, level 6 random.

I managed to shower and get ready quickly enough that I still had time to walk to school too, yay!  Plus, breakfast was already packed.  My jar of overnight oats was delicious; I always forget how much I enjoy chia seeds and their tapioca pudding texture.

We spent most of our 4 hour class discussing case studies, which were fascinating.  All of today’s related to pregnant women.  One subject was 15 (married!) and had dropped out of school and rarely left the house; another was living in poverty and pregnant with her fourth child, and the last was a socialite with disordered eating patterns who was still drinking heavily 6 months into pregnancy.  It was so interesting discussing counseling for all three women, but so frustrating too.  Some of the (imaginary) people you just wanted to smack, like the middle women who eats almost no fruits or veggies because her husband “just doesn’t like them,” or the final one who was thrilled with only gaining 2 pounds over the course of her pregnancy.  I’m considering working with WIC once I have my degree so this was more interesting to me than some of our food service discussions.

I stayed after class for a club meeting with lunch.

I grabbed a veggie wrap (lettuce, tomato, pickle, cheese),

plus a few banana peppers and chips which I ate within the sandwich.

After I walked home and worked up an appetite folding laundry I ate the 2nd half of lunch, leftovers from last night’s dinner.  Actually, I was already reheating the bowl when I realized that the husband wouldn’t have dinner until late tonight and he can’t have take-out.  So I put that meal away for him.  I’m going to have popcorn instead, and perhaps a beer.

We’ve got some fun, last-minute plans for tonight; our friends could get us cheap tickets so we are going to Shay’s Theatre to see “The Lion King.”  I am so excited!  But I’ve also got to get studying for tomorrow’s test!  I’m not going to blog again this evening but I’ll see y’all tomorrow after my exam.

The Pumking and I

Has October become synonymous with winter in your neck of the woods too?  It’s so freaking cold here I’m actually blogging in bed!  We aren’t planning on switching our summer for winter wardrobes until next weekend and I’m not quite sure how we’ll get through to then.  I’m keeping this post quick before my laptop dies.

I did not get near enough schoolwork done this afternoon.  I did drink some milky tea,

and get in a session at the gym.  30 minutes on the elliptical, random level 6.  I started to read The Help while I ellipticized.  I’m only 5 pages in but I’m already loving it.  I’m not loving that it’s 500+ pages long; normally that would thrill me but I have to finish it by next Friday for book club!

For weekend fun, we met up with two other couples at The King and I for dinner.  People have praised The King and I as the best Thai in Buffalo for years; I’m so glad we finally got a chance to go.  And the food was pretty dang delicious.

I stole several bites of Adam’s Tom Yum soup.  The famous Thai soup, slightly sour and spicy with fresh mushrooms, tomato, chili, lemongrass, galangal, and lemon juice with cilantro, scallions, and chicken.

I loved how tangy this was, totally umami.

My tactic to trying out a new Thai spot is to order either the Pad See Eiw (my favorite meal on Earth) or an extra spicy dish (to gauge what they deem “spicy”).  Tonight I went the spicy route.  I ordered the vegetarian Pud Met Ma Muang.  Steamed tofu sautéed with cashew nuts, mushroom, bamboo shoot, bell pepper, onion, broccoli, baby carrots, and Thai basil leaves in a hot chili sauce.  I ordered 5-star spicy and extra veggies so they added chili, Napa cabbage, and zucchini.

Loved it!

I would only call this 3-star spicy but I’m rating the dish 5-stars for satisfaction since the veggies were so good.  Other Thai places in Buffalo load up their dishes with onions, it was great to have an actual plate of vegetables!  Plus everything, tofu included, was cooked perfectly.

I basically licked my plate clean, plus several scoops from the communal rice bowl.

We will definitely be coming back soon.

None of the couples were ready for the night to be over so we all headed to Dolci for gelato.

The worker graciously let me taste several flavors (including Sriracha-coconut!!) until I came upon two that made my heart sing.

Burnt caramel and Pumking Ale.  The burnt caramel was obviously the best because you just can’t top that flavor but the Pumking Ale was amazing as well, and the combo was divine.  The Pumking had just hints of booze and pumpkin and it was almost fizzy!  I totally confirmed my suspicion that I can’t make it through this October without some Southern Tier.

Wegman’s Jackpot

We didn’t get in bed until past 11pm and the dog snuggled me awake 10 different times during the night but somehow I did manage to get in a 6am gym session.  Woo-hoo!  30 minutes on the elliptical at level 5.  My feet kill and I was moving pretty slowly, but I got some movement in and spent some time reviewing my notecards.

When I got home I grabbed a coffee for the road but didn’t bother taking a picture because the dog ate my camera cord.  Coffee, English Toffee syrup, Silk Plain Almond Milk.  I think y’all know what that looks likes.  Instead, here is a picture of Webster the Destructor –

I had a nice break between class 1 and 2 because my test only took half of the alloted time.  The test went well, probably not an A but definitely not an F.  We’ve had mostly multiple choice questions for the past year so I need to get used to the short answer, matching, etc. format.

I ate my breakfast on the break (I uploaded my photos after I packed lunch last night).  Mini box of raisins,

and a Trader Joe’s applesauce packet.

I ended up going ahead and eating my lunch during the same break (phone pic).  I packed a frozen serving of leftover kale and beans which I plated and stuck in the campus bookstore microwave. 

There was a bit of tofurkey sausage and parmesan on the bottom too.  Even frozen and defrosted the bbq kale and beans were still delicious!  I’m sad this is all gone and plan to make another batch soon.

Eating lunch at 10am left me pretty hungry come my second break but I distracted myself with some computer time.  <– I even started writing this post!

After school I had to run to Bagel Jays to pick up some halvah for a school presentation later this week.  They were all out, but the cashier did have a suggestion of where I could find more.  And an epic journey to the Wegmans 25-minutes away with an international section ensued.  In the end that hour was completely worth it though; I ended up finding all sorts of goodies that I haven’t spotted elsewhere in Buffalo!

Adam and I have been searching for everything matzoh every since we left Miami!  And I was excited to eat a snack find right away.

Pizza flavored snacks (chips? crackers?) from Bissli.

Adam and I split the package and we both loved them.  The flavor was pretty mild but the texture was unlike any snack I’ve ever had, very hard and crunchy!  When I turn my epic Wegman’s journey into a monthly event I will definitly be buying more Bissli products.

I also drank a Wegman’s diet root beer and pretty much died and went to heaven.

Sidenote -I don’t show you all of the diet soda I drink (I’d never get off the computer!), just the interesting ones.  Diet cola is my favorite thing on Earth but other sugar-free sodas tend to make me gag.  I’d sooner dehydrate than put Diet Sprite in my mouth.  But this root beer was amazing; perfect balance of sweet and spice, no aftertaste.  This actually was the best root beer I’ve ever had, diet or regular, period.

We ate our snacks on the road because we were out searching for a camera cord replacement.  Many (many) stops later we finally had success.  By the time I had the ability to photograph dinner Adam and I were completely demoralized.  He actually called my mom and begged to charge dinner!  She’s the best lady ever, so out we went.  And wouldn’t you know it, we wandered into restaurant week.

How serendipitous!

My pictures of dinner are all terrible.  I’m hoping it was the lighting because if I need to buy a new camera right after I sprang for a new cord I might just cry.

Course 1 was soup;

a jalapeno cheddar corn potato chowder.

This had a nice spice to it but was too rich for my taste.

For my entrée I ordered the tortellini ratatouille.

That’s not it.  I was two bites in I was complaining about the lack of veggies when I came to a startling realization – this was the tortellini Bolognese.  Pros – my entire pre fixe meal was comped.  Cons – I ate a cow!!?!

Our waiter was apologetic about the mishap and soon enough I had my ratatouille.

Much better, this had tons of veggies.  I ate 2/3 of my meal and brought the leftovers home for a happy husband.  He ordered steak with a Stilton crust and was thrilled.

For dessert I ordered peach cobbler with Grand Marnier and chantilly cream.

I never really consider the cobbler but this was a lot of fun to eat.  I finished all of the peaches and cream and 3/4 of the cobbler.

Not so fun is the fact that my stomach started hurting halfway through dinner.  It was bad enough that the pain was making me sweat (though not bad enough that I’ll skip dessert, apparently!).  The issue was probably the creamy soup, but I’m going to blame the beef!

Are there any foods you don’t eat?  When was the last time one slipped into your meal?  Veggies – how do you react when you accidentally consume some flesh?

Shrimptastic

I can’t even tell you how freaking good it feels to be back to blogging.  I know I don’t always blog everything (though if I blog for a day than I include everything that goes in my mouth) but going extended periods without posting just feels strange!

I’ve got a busy week ahead – 3 tests and 2 projects by Friday – so I set my alarm for 8am to get working.  I got a little distracted by house organizing and puppy training but I got a good bit of work done too.  I was extra fueled by coffee.

Into my big mug (thanks Janetha!) went 2.5 cups of coffee, 2 Tbsp English Toffee syrup, and a big pour (~3/4 cup?) of Silk Plain Almond Milk.

Hello, dog.

I went unorthodox for breakfast because I found the last serving of bacon, corn, and shrimp chowder lurking in the back of the fridge.

Food safety regulations would have called for tossing this but it tasted great and I feel fine.

Around 12:30 I headed over to Delaware Park for a run.  Running at high-noon wasn’t my best idea but this ended up being a terrible workout in general.

  • ran 1.75 mile lap in 19:30
  • paused break for peeing and stretching (I drank a big cup of water with my big cup of coffee; slosh city)
  • “ran” 1.75 mile lap in 24:30
  • walked 1.75 mile lap in 43:30

That’s 3.5 miles in 44 minutes plus 1.75 miles more walked.  This run was pretty much a shitshow.  9 minutes into my second lap my feet went completely numb and I had to walk to avoid twisting my ankle.  Adam had tightly tied my shoes for me but loosening them didn’t help and I wasn’t off pins and needles until I actually took my shoes off.  I wanted to finish my last walking lap because I had my notecards with me to review so I ended up doing 1.75 miles barefoot.  It seemed like a good idea at the time but my gigantic, excruciating blisters indicate that it was actually a terrible idea.  Ouch!

I was at least cheered up by my shower thanks to this lavender soap my mom sent me –

When I was a kid my mother loved lilac (which smells like cat pee, by the way) but my dad and I couldn’t get it together so we’d always buy her tons of lavender-scented goodies.  I teased her for years about being an old lady but in the last year or so I’ve become completely obsessed with all things lavender.  Guess I’m the old lady.

Adam offered to help me hobble through the grocery store so I did a quick-lunch out of hand.  A black plum,

and a Sweet Tango apple.

Holy crisp and juicy, Batman!  I was so thrilled to loudly munch through a fresh apple; Sweet Tangos are divine.

We did Wegmans and the co-op and when I got home I hungrily dug into this container of Dr. McDougall’s Spicy Kung Pow Noodles.

Pretty darn good.  The was a nice amount of spice to these and it felt like a ton of food for 220 calories.

Dinner involved more shrimp and tasted better than it looked.

On the left is a small serving of Cooking Light‘s Bombay Shrimp Curry.  My changes to the recipe included using ground mustard instead of mustard seed, skipping the cilantro, and using a veggie mix with peas, corn, carrots, lima beans, and green beans.  I also skipped the rice because I had just eaten pasta.

Unfortunately, we hated it.  Adam and I both could barely choke this down.  The flavor was strangely flat and it was spicy in an unpleasant way.  Do not recommend.

I know the stuff on the right looks bad, but I promise it tasted sooooo good.

Cheesy baked eggplant!  Using this Italian eggplant I picked up at the farmers’ market last week.

For two – into my mini casserole dish went a thin layer of marinara, a layer of thinly sliced eggplant, a sprinkle of salt, a thick layer of marinara, and 2 slices of 2% provolone cheese.  Baked at 450* for 45minutes.

Gah; this was unbelievable!  The eggplant got soft enough to cut with a fork and baking the cheese intensified its flavor x100.  We are going to make this again as a main meal very soon.

For dessert I used Mixchief Jell-O Mix to make Cherry Coke Jell-O.

How fun!  It wasn’t as strong as I would have liked but I would try it again and substitute more cola for water next time.

That bowl had 2 servings but I only ate one.  To be honest I’m feeling pretty unsatisfied; I think I will most likely end up adding enough dessert to this day while I study.  I’ll update later if I do.

How often do you update your blog?  Does it feel strange to take breaks.

***Updated to add – I did have a 2nd (fiberific) dessert; 1/3 cup of All Bran Bran Buds with 2 tsp of crushed Heath bar.  No picture because the dog chewed through my camera cord.  <– ugh!

Oh, Balls

Oh.  Hello there.  Are you here to hear me talk about my balls?  Well calm down, I’m getting to that.  I do have some exciting ball news but there was lots of excitement today.

Like my discovery of my new favorite smoothie of all time.

I know it doesn’t look like much but this new combination was freaking amazing.  I put 1 cup of lemonade and 2 Tbsp of chia seeds in my blender and left them to soak.  Five minutes later I added 1 cup of frozen strawberries and then blended like crazy.  Here’s an outside picture so you can really see the color –

Un-be-leave-a-bull!  The chia seeds mostly blended but still left a nice chew and their nuttiness was the perfect foil to the sweet and sour of the strawberry lemonade.

Even better, my smoothie actually held my stomach through my 4 hour class.  I attribute this to the chia seeds.  My 2 Tbsp of chia seeds gave my smoothie an extra 140 calories, 5 grams of protein, 11 grams of fiber, and 7 grams of polyunsaturated fats (mostly omega-3s).  source

That’s not to say I wasn’t ready for lunch though.  We had a “welcome back” department lunch today, complete with food.

I took a slice of mushroom pizza,

a few fresh veggies,

and some amazingly fresh strawberries and watermelon.

I also grabbed a 2nd slice later on.

In other lunch news I finally had an apple month win!

This caramel apple iced coffee from my school’s coffee shop totally hit the spot.  I did only drink half of that monster (I thought I was ordering a small) but I definitely made sure to get every last lick of caramel out of my cup.

Fully fueled, I headed to the gym for a L-O-O-O-N-G spells long workout.  I had a time goal and a length goal and I ended up hitting my time goal long before my length one; ie I took too many walking breaks and was slow!  I did a looong warm up and looong cool down with walk/run intervals in between that ended up being a lot of walking. 

In the end I covered 9 miles in 1 hour and 53 minutes.  As slow as you can move and still call it running but the distance at least is nothing to sneeze at.  P.S. I’m having some issues with the bones in my right foot but my legs feel great; yay!

Alright already, let’s talk about the balls.

S’mores Oat Balls.  Click here for the recipe link.  I swear to God this recipe was inspired by the S’mores Quaker Chew Bars and not my desire to say the word balls repeatedly after eating and rewatching Schweddy Balls.

The recipe was simple but the end result was delicious yet subtle.  Part s’more, part oat, totally acceptable for breakfast!  I resisted any nibbling while I assembled but I did eat two balls as soon as they were formed.

Make them at home, I promise you’ll love my balls.

Since we ate dessert first dinner needed to be a 15 minute affair.

I prepared 2 servings of spirals pasta, stirring frozen spinach and peas into the mix in the last few minutes of boiling.  Then I made Emily’s Nutritional Yeast Sauce and tossed everything together.

Yum, I thought the nutritional yeast was really good; though that could have been my love for peas with pasta talking.  Head over to The Daily Garnish (recipe link) to see all the benefits of nutritional yeast, but suffice to say dinner was healthy.

Adam has a test tomorrow and I have a really hard time sleeping when he’s not in bed (the upcoming surgical rotation should be fun!) so I’m going to stay up with him.  Studying, blog reading, perhaps a shower; who knows what I’ll get done.
