My Goodness My Guiness

I hope you’ve already entered my giveaway, because I’m going to rave about the nuts now 😉  Just to remind you; Sahale Snacks sent me these products to celebrate the fact that 2oz bags of Sahale Snacks are now being sold at Seattle’s Best Coffee.  I am a fan of the company because the ingredients are always real and the nutritionals are excellent (duh, they are just nuts!).

I couldn’t eat lunch today because of the door maintainance debacle, so I grabbed a mixed baggie of all three varieties to eat during Orgo.

I just want to say, in general, that whomever came up with the idea to throw cheese into the mix should probably get a medal!  Perhaps one carved into a blog of cheese….

Barbeque Almonds with Mild Chipotle + Ranch

These had a good amount of spice, I think too much on an almond would be overwhelming; they had a bit of sweetness that helped to balance them out.

Tuscan Almonds with Parmesan + Herbs

This kind tasted the most cheesey.  The coating was thicker, and gave them a candied nuts texture.  These were the husband’s favorite – he described the flavor as robust.

Southwest Cashews with Chili + Cheddar

This kind was my favorite, probably because it used cashews.  These were definitely the spiciest.

After Orgo and Anatomy classes were finished I headed to the library for an hour and then to the Anatomy Lab for a 2hour review session.  Our big exam on Thursday includes skeletons, cat muscles, and sheep brains; all of which were out for us to review this afternoon.  I didn’t leave until after 6 and I’m finally feeling a bit more at ease, although still pretty darn nervous!

The nuts held me over for a long time, but from 12:30 – 6:30 they did not!  I grabbed 1.5 Butterscotch Pumpkin cookies the minute I walked in the apartment.

By the way, Adam is pretty picky about “strange” desserts and he loved these.  He took some to school today and said his friends were fans as well.  If you’ve been eyeing Rachel’s recipe, make it!

For dinner we made Mushroom and Provolone Patty Melts from Cooking Light.

We followed the recipe pretty closely, but made a few changes –

  • we used 94% lean turkey meat instead of sirloin
  • we subbed white button mushrooms for cremini
  • ate the topping in 2 servings (doubling the amount)
  • I ate my melt deconstructed, with the bread on the side

We used Guinness for our dark beer which was a nice touch, but overall the recipe was pretty flavorless.  Honestly, my favorite part was the side (2servings) of Simply Rustic Bread from Pilsberry (I had a free coupon from BlogHer).

I was starving all evening so I did a lot of snacking while we cooked.

I’ve got an early morning tomorrow, and tons of studying to be fresh for, good night!

What is your favorite kind of nuts?  I’d probably go with cashews or brazil nuts.

Tough Transitions

I did not get enough done today (don’t I say that every day?!?!) so I’ll keep this post simple.  I did accomplish a walk to the farmer’s market/co-op for some local goodies.

And a trip to Wegman’s to complete the groceries.  We had a hot bar coupon so the husband and I got lunch.

I filled up on an assortment of veggies,

with sesame tofu and chicken.

Not even an hour after eating I felt empty.  The feeling was so bad I ended up walking to get a (ginormous) slice of bbq chicken pizza.

Post-pizza I had a Double Fudge Brownie mini ice-cream.

And then I was FULL.  I ate my 2nd lunch around 3:00 but I ended up calling it dinner because I haven’t gotten hungry again!

I am finding the transition back to school to be much harder than I expected; and I didn’t think it would be easy!  I think part of the issue is that I didn’t just quit my job and go to school, but rather worker bee –> unemployed –> student.  Do you have any advice to help me become a student again????

Top it Off

I am leaving to pick up the husband in exactly 29minutes so I’ll try to do this Speedy Gonzalez style.

This morning had all the components to make me cranky – I overslept and I didn’t get a chance to read and I was dropping everything I picked up.  Does that ever happen to you?  I think the main reason I don’t really wear make-up is because I’m always irritating myself by dropping the brushes!  Nothing a big smoothie can’t fix though.

1 banana + 1cup frozen blackberries + 2T unsweetened shredded coconut + 1cup So Delicious Vanilla Coconut Milk + 1t xanthan gum + 6ice cubes = filled to the brim.

The coconutty flavor in this was awesome, I don’t think there’s anything that isn’t better with coconut.

We actually got our 1ominute break in soc today (hallelujah!) so I took the opportunity to snack on a bag of Peeled Snacks dried pineapple.

Best dried pineapple ever!  I don’t think I’ve ever seen dried pineapple sans added sugar before (maybe at Trader Joe’s?) but this bag was just fruit, and since it’s available at Starbucks I don’t need to make a trek to NYC to get more!

After class I stopped in at Cafe59 – the coffee shop on my street – to get caught up on my reading.  While I worked I ate a delicious salad for a late lunch.

For a set price, they offer a build-your-own salad in which you get to pick lettuce, dressing, and 5 toppings.  I adore BYO in general, but this might be one of my best combinations yet.  I choose romaine lettuce and balsamic dressing with sundried tomato, green olives, Portobello mushrooms, marinated zucchini, and roasted garlic.

The flavor combination was kind of fantastic.  The big pieces of roasted garlic really made it.

The husband and I have some fun plans for the evening, I’ve just got to go get him!

What are your favorite salad toppers?  I’m partial to carmelized nuts and goat cheese, mmmmn!

Sick Can Equal Super

So I don’t know what the deal is with my tummy, but it turns out it wasn’t hunger.  I felt queasy all afternoon (I’m NOT preggers) and when I went to lay down I actually fell asleep before I could even set the alarm, Adam had to take the train home from work!  I really hope that it’s something random and I’m not getting sick because I don’t even know how I would deal with that with summer school.

We rescheduled our run for tomorrow and when we went out to pick something up at UPS we got dinner from Wegman’s hot bar instead of cooking.

I’d be lying if I said I’m not always excited about hot bar, even in spite of a tummy ache!  And tonight’s selections seemed especially tasty.

Wok seared veggies,

steamed broccoli,

roasted sweet potato,

and it turned out that awesome vegetarian meatballs from the other day are vegan as well, sweet!

In the end dinner was perfectly filling and super tasty, almost worth the bellyache.

When I got home I got straight to work reading for Sociology, and I’ve got to hurry and get showered and bedded so I can continue in the morning.  See ya tomorrow afternoon!

Successful Sunday

Finally, some productivity!  Actually doing something today was a nice change from Saturday’s pace.  Although I did sleep in still 🙂

Lunch was very, very orange.  An everything Bagel Thin with extra sharp cheddar and a honey tangerine.

With a serving of Guylian chocolate shells for dessert.

Followed by a run.  In today’s workout one bad turn deserved another; I ended up running further than planned once I realized how stupid it was to have gone without sunblock.  I really do have to stick to my pace plan and up my time gradually, but it did feel great.

2.6miles in 26minutes.

Afterwards a trip to the mall with Katie was in order.  I wish I could tell you I was excited about my purchases, but basically I had to buy clothes for summer school because my pants don’t fit.  Woot.  More on that in tomorrow’s post.

The mall trip took longer than anticipated (why the frick are all the pants at BR/J.Crew/Gap so cheap and thin looking right now?!) and it was easy for Adam to talk me into hot bar for dinner.

It turns out I went a little too vegetarian because this wasn’t all that filling.  I ate a cookie dough Balance Bar when I got home to finish filling up.

And I’ve been working on my binder project ever since.  I’m going back to immerse myself in blissful filing, hope everyone else had a great weekend!

Boo Hoo Hoo

The husband got up extra early for school today so I decided to get up too ….. and watch some tv!  Seriously though, I watched the season finales for “Mercy” and “Private Practice” and sobbed at both.  I am not even much of a crier but for some reason these both really got to me!

Between tears I ate a nice juicy breakfast.

0% Oikos with blackberries, a bit of honey, and fresh mango.

This combination was perfect, my berries are a bit under-ripe and very tart but the sweetness of the mango helped to balance it out.

Breakfast also helped fuel me for another treadmill visit.  10minutes walking + 5minutes jogging + 10minutes walking = 1.64miles and 25minutes.

Afterwards I headed home and put lunch into the oven before I did 25minutes of strength training and final packing.  While I continued sweating, some fresh green beans with salt and a portobello mushroom cap with balsamic vinegar were roasting up in the 450* oven.

and my ‘shroom was served sandwich style on a ww bun with miracle whip and a sprinkle of 2% Colby cheese.

Now I’ve got to hurry up and shower before I make us late!

What was the last tv show or movie that got you teary eyed?

My “First” Run

It’s a late evening, but I’m not that worried about bedtime because Adam and I actually took a long nap this afternoon!  We haven’t been sleeping very well and it felt great to catch some daytime zzz’s.

Post-nap, we headed over to the gym for my 1st run in 2months!  I hopped on the treadmill for 5minutes walking, 5minutes at a slow jog, and 5minutes of walking for 1mile and 15minutes.  I can’t even tell you how hard it was to make myself stop running!  I ended with 15minutes of strength training.  My fracture didn’t hurt at all, but I had a twinge higher up in my leg so I did use a cold pack when I got home.

I was dying to eat dinner, so I snaked on a big handful of dried apricots while I waited.

Dinner was mostly an excuse to demolish my daily veggie goal.

Here is the recipe link, but I basically topped thin ww spaghetti with roasted broccoli, mushrooms, and tomatoes.

Delish!  P.S.  I also ate a small serving of dark chocolate whilst Buffy watching.

The Blind Side

It was a grand, grand Sunday!  No schoolwork ever made it into the picture, but that would have just mucked up the fun anyways 🙂

At 4:20 we finally made it in to see “The Blind Side.”  Love, love, love.  It was a true story about a Southern white family that took in a struggling, homeless black boy.  There were lots of y’alls, football, laughs, and touching moments.  Sandra Bulluck is one of my favorite actors, particularly for how well she does in roles like this.  I highly recommend seeing this movie.

I had a lick of Adam’s Maple Bacon Lollipop (brought back from Foodbuzz),

and we ate some of these Milkata candies.

When we got home at 7 I was so hungry!  I ate a delicious spoonful of Justin’s Maple Almond Butter.

Then we made the quickest-tastiest dinner of all time.

4 ingredients, 3 minutes of prep, 20minutes in the stove, 1 very very happy housewife!  I linked to the recipe here.

I was so so pleased with this idea.  Thanks for the pesto, Foodbuzz!  The crunchy bits of pasta were my favorite.

After dinner we walked over to Walgreens to pick up a few things.  And you know I made a big bowl of ‘corn when I got home!

I’m going to snuggle up with Adam and do some munching and tv watching, have a good night!
