In The Zone

My plans for the evening got a little thrown off when I decided to go to the gym come hell or high water.  And my plans for dinner got a little thrown off when Adam ate himself sick snacking while he waited for me.  Everything worked out in the end though.

I was in the study zone this afternoon, working until 6pm before I decided to head to the gym.  Side note – we have a ton of busy work assignments this semester so don’t expect me to do well or anything just because I’m working a lot!  The gym was quick and easy, 30 minutes on the elliptical at random level 6.  I had to stay up super late studying because I went (obviously, you guys see the timestamp!) but I’m glad I got in some movement before our 7-hour drive tomorrow.

I had to go buy notecards and we walked around Elmwood trying to feed me for a while and it got pretty late.  At least I discovered a new favorite when I ended up in front of Zonies.

I split with Adam but gave the larger half to myself (that’s a small plate).

The owner was super nice and let me combine two different calzones in one; they make each order fresh.  I got the eggplant parmesan (baked eggplant, mozzarella, marinara) with spinach and broccoli added in.

The bread was nice and doughy, the marinara was zesty, and they provided me with veggies; I call that a new favorite.

I also bought this Tazo black tea and mixed it with lemonade we had in the fridge for an Arnold Palmer.

We had to wash the dog, and I still have to wash myself!, and by the time I finished with all of the work I planned it was pretty darn late!

Speaking of school, my goal is to read over all my class notes (and make notecards where needed) at the end of every week.  Since I’m doing that, I thought it’d be fun to compile some of the more interesting things I’ve learned each week to share with you guys.  Welcome to –

Fun Fact Fridays

  • Iatrogenic is a term that means inadvertently induced by medical treatment.
  • The preventative and traditional approaches to health involve reducing risk factors before disease occurs or after symptoms appear, but the wellness approach involves positive lifestyle choices that enhance physical and mental well-being.
  • Food Processing is the largest manufacturing industry in the US.
  • In the 1800’s “smouch,” made of dried ash leaves, was routinely added to tea leaves to extend the food profits and supply.  Pea flour or mustard husks (aka “pepper dust”) were also added to pepper.
  • Probiotics naturally live in our guts but need regular replenishing.  Want to replenish yours?  Stonyfield contains four more active cultures than other yogurt brands.

P.S. Can any one who’s ever seen Eurotrip hear the phrase fun facts without thinking of this quote?  “Here’s a fun fact – you made out with your sister, dude!”

English Toffee and Cream Soda

I drove to campus this morning which was exciting because it meant that my iced coffee was actually still iced when I reached class.

Adam brewed me coffee last night and I stashed it in the fridge in a glass jar; all I’ll have to do in the mornings is add ice and skim milk.  This cup was extra exciting because I also added 1 Tbsp of English Toffee syrup.

I’m going to go ahead and deem this best purchase ever.  I don’t drink coffee all that regularly but whenever I’m in the mood I’m tempted to purchase it out because it seems more exciting.  Now that I’ve got my favorite flavor of syrup at home I can stick to only “buying” coffee from home.  <– minus the obligatory seasonal stops at Starbucks for pumpkin spice and gingerbread, of course!

I ate my breakfast during my first class.  My final new class by the way, it’s Medical Terminology and I’m pretty jazzed about it.  I think everything dealing with Greek and Latin roots is fun.

An Orange Creamy Crawler Lifeway Probugs Organic Kefir.

Mmmmmn!  I bought these before when I was living in the city but it took me a while to find them in Buffalo.  This flavor was creamy and almost fizzy; it tasted like an orange cream soda!

I also tried the lemon meringue crunch Balance Bar.  Whenever I rave over the cookie dough BB people always recommend this flavor so I wanted to try it out.

Good, but sorry, not even close to cookie dough.

My second (and last) class on Fridays is a food lab which means Friday’s lunch will often be supplemented by class assignments, weee.  We let out early today which means I had time to do some work in the computer lab and go to the post office before I had to go home and get Webster.

He is such a good walker!  If he would just stop ripping up the pee pads we’d be in business.  The two of us made a .66 mile loop around Elmwood.  I’m not sure I’ll take him on many more mid-day walks, he was hot, hot, hot.  I walked barefoot for a bit to make sure his feet were ok but when I picked him up to carry the last few blocks he was like a little oven!

Midday walks aren’t great for me either because they mean I have to wait for lunch.

Since it was 2pm and I was starving I tried out the new Asian Entrée line from Dr. McDougall that I bought on sale at Wegmans last night.

I loved that the container only had one serving size because similar products have two 500 calorie servings stuffed inside and it drives me crazy (and this was a ton of noodles for 200 calories).

I also loved that I could recognize every last ingredient.

But it didn’t taste like Pad Thai.

The dish wasn’t bad (6.5/10) but it wasn’t quite the flavor I was hoping for.

I also had baby carrots on the side,

and a sliced yellow plucot.

The noodles may not have been Pad Thai but the plucot was exactly the flavor I was looking for.  If you haven’t tried a plucot (or pluot) yet this summer be sure to get your hands on one.

I’m hoping to make it to the gym this afternoon but I’ve got some studying to do first that takes priority.  Hopefully I won’t take a cue from Webster and I’ll be able to keep my eyes open!

Long Run, Long Day, Short Post

My semester won’t be impossible but it does look like shorter posts will probably become a regular thing.  I think adding a dog and adding (back) exercise to my life at the start of a new semester was not my most stress-free idea!

Adam drove me to school this morning – his current rotation is the psychiatric facility that’s near my campus so we’ll probably be carpooling a lot the next few weeks – so I was thrilled that my teacher suggested a 10 minute walk around campus at the beginning of class.

It was fun to get moving and in a 4-hour class any minute out of the room is a godsend.

My breakfast pie held me over pretty well but I did start to dig into my packed food a couple of hours into class.

A sliced apple topped with the 90-calorie Barney Butter packet from my HLS swag bag.

I’m typically not an almond butter girl so I was expecting to be unimpressed but I actually loved the roasty flavor and smooth texture of the BB.  I guess the other bloggers have been onto something!

I also ate this snack pack of raisins,

and a chocolate from my candy box.

Fuuuuun!  I think I’m going to make chocolate boxes a more regular part of my life.

After our class ended I actually hit up the part-time job fair.  I gave a couple of resumes out so please keep your fingers crossed for me, though I’m not sure adding a job to my life is the answer right now.

I ate lunch with friends and grabbed this snack pack of hummus with pita crackers from the book store.

There isn’t a convenience store on campus (or the C Store like we called it in Miami!) but the book store does have some pretty healthy offerings.  My friend Kim was heading to the mall so I group of us ended up going for funsies.  I didn’t buy anything but it’s always fun to walk around.

When I got back to campus, it was time for the gym.  It wasn’t easy, and it wasn’t pretty, but I achieved my goal.  Through a strange mix of walking and running I did 7 miles in 79 minutes.  Booyah.  I drank a fruit punch Gatorade-2 and I definitely think it helped fuel me through the longer workout.

Speaking of fueling, Adam went to Saigon Cafe for a work lunch and he brought me home his Pad See Eiw leftovers.  I pounced as soon as I walked in the door.

After a walk home and shower I was ready to face my replanned evening.  We are going to visit my grandparents for the long weekend (fun) but I just found out that I have a responsibility for class on Monday night that will be pretty time-consuming (not fun) so I needed to move around some things.  We ended up heading to the grocery store tonight which will hopefully make my weekend run more smoothly (my responsibility involves making chili).

I shared this frozen coffee with Adam while we shopped.

And made myself the quickest dinner I could think of when we got home, tacos.

I scrambled a big scoop (1/2 cup?) of corn relish into two eggs and then stuffed them into taco shells.  Topped with spicy salsa and a dollop of light sour cream.

I almost never eat tacos, especially hard tacos, but lately they’ve been rocking my socks.

We had to take Webster on a long walk, which took even longer than planned, so clearly I’m not getting up to workout tomorrow.  I’ll have to work on that goal next week.

This wasn’t really a short post was it?  It’s possible I’m verbose.

Pie for Breakfast

I want to tell you about how I’m doing on my bedtime goals, but you just want to hear more about that title.  I’ll be quick, I promise; and then I’ll get to the good stuff.

bedtime

Baby steps on this goal, baby steps are needed.  I got in bed at 10 (which isn’t great) and up at 6 (which isn’t horrible).  Since I’m not going to the gym until this afternoon I technically don’t need to be up early.  But since I wasn’t doing homework or watching exciting tv I didn’t need to be up late.  <– I love how I’m calling 10 late now; I was up until at least 1am watching “Charmed” all this summer!

pie breakfast

I know that this don’t look like pie,

but it sure tastes like it!  And for those of you who count calories but want to make this (you are going to make this at home?), I calculated and came up with 270 as an upper estimate.

Key lime?  Creamy?  “Creme Fraiche?” Crunchy graham cracker crumbs?  Check, check, check, and check.

And it took me about 3 minutes to get into a bowl this morning.

Plate bowl the yogurt.  Whisk together sour cream and sugar in a separate bowl.  Crumble graham crackers on top of yogurt.  Top with sour cream.

This breakfast doesn’t have all that high of a calorie or protein content (13 grams, I checked that too) but hopefully it will help to carry me through me long day.  For those of you who asked, Mom, here is my school schedule for this semester –

I realize I only have one class today so that’s technically not long, but 4 hours in one room does feel pretty brutal!  My day is mostly long though because I’m attempting a longer run at the gym this afternoon.  Wish me luck!

Impulse Control

I’ve made it to hump day and school is still going ok, phew!  I’ve attended 5 out of my 6 classes now and it seems like this semester is going to be doable.

We have a super long lunch break on Wednesdays so a group of friends and I decided to take advantage of the time and took a walk down Elmwood to lunch at The Spot.  We ended up walking a bit more than 2.5 miles round trip, booyah!  Between that and walking to and from school and with Webster I think I can practically count walking as a workout for today.

Lunch was a fun mix of flavors.  I can’t believe my Thai leftovers even lasted this long!

There’s less there than it looks, sad face, maybe about 1 cup’s worth of veggies and broad rice noodles.

Still nice and spicy though, I had to buy a cup of skim milk from The Spot to save my tounge.

I also packed some leftovers from last night’s dinner.

2 oz of Black and Blue Dip,

with celery and green bell peppers dipped in.

This was a great lunch, I love meals with lots of little pieces.

We got out just early enough from our final class that I had time to hurry home, cuddle Webster, and drive to the post office before it closed so I could mail a book I sold on Amazon.  While I was out I also picked up a few necessities from Target.  Including this impulse purchase –

Actually, I spotted a display of candy boxes at Wegmans on Sunday and have been obsessing about them ever since, so I’m not sure you can exactly call this an impulse purchase.  Definitely a good purchase though, look at some of those flavors –

Yum!

After taking Webs on a walk the husband and I threw together the quickest dinner ever.

It helps to keep things speedy when almost every item on the plate is a leftover.

Like these leftovers tacos.

We spread a thin layer of the Black and Blue Dip on corn taco shells,

added a layer of the sautéed veggies from last night (onion, red bell pepper, and mushroom),

and topped with a layer of this Newman’s Own Medium Pineapple Salsa.  <– divine

The seemingly random combo of flavors actually went together really well.  The dip is pretty savory and the salsa is a bit sweet and the texture of the veggies went perfectly with the crunchy taco shells.

Plus a serving of bbq kale and beans on the side.

I actually single-serving froze the rest of those leftovers so I have them for lunches later on.

You know what our after dinner plans were.

Another cup of red velvet tea with skim milk and a serving of chocolates.

Adam and I mostly split them but I kept the bananas foster flavor all to myself.  I’m actually finishing up my snack and we speak type.

What was the last thing you impulse purchased?

Window Shopping Wednesdays

I am not much of a shopper, much to my mother’s chagrin.  The woman can spend days at the mall, while I start to feel itchy after just a few hours.  It’s not that I’m not materialistic, I totally am, it’s just that the thought of adding more stuff to my life makes it hard to breathe.  But I like the idea of things.  So I’m an avid window shopper.  I browse catalogs I’ll never buy from and hold my breathe when I pass the window at J.Crew.  So while I’m stuck at school all day Wednesdays, I thought we could have some fun via blog.  Let’s window shop!

Here’s what I’m coveting this week –

1. momofuku’s cereal milk mix.

I’ll never stop kicking myself for not visiting momofuku while I lived in New York.  This houseblended mix makes your milk taste the milk at the end of a bowl of cereal, and we all know that’s the best part of a bowl of cereal.

2. “bearskin” coasters from perpetual kid.

My nickname for Adam is Bear – and I often threaten to turn him into a rug when I’m angry – so I think these are adorable.

3. Maybelline Baby Lips Lip Balm.

I basically only wear lip balm – and it must have spf – which makes it hard for me to find lip color.  This line has spf 20 and color to boot.

4. Gracious Granola from 18 Rabbits.

I am completely in love with the 18 Rabbits bars so I know this would be amazing.  It has pecans, almonds, and maple; swoon.

5. The ruffle foldover leggings from So Low Style.

I’m pretty sure there’s not an item with ruffles that I don’t want!  There was also a (even cuter!) ruffle sports bra but it wouldn’t support my boobs across the living room, let alone on a run.

What are you coveting this week?

Two Things

My alarm went off and 5:50 this morning and … I got up!  This morning was a little easier because of two things –

  1. The husband was already out of bed.
  2. I knew I didn’t have to go to the gym, I could eat breakfast and read blogs instead!

Of course, with Webster around I didn’t get to do much any blog reading but I did get to eat breakfast.

A yogurt bowl.

I’m still not really hungry this early in the day so I kept my yogurt bowl small.  A half serving of 0% Fage with a drizzle of maple syrup, a chopped yellow plucot, and a half serving of Bear Naked granola.

Plus some red velvet tea with skim milk.

I’m not sure about this flavor yet (I love the color!) but I’d like to try it with a little sweetened non-dairy milk.

Have a great day! P.S. I have a fun post series coming up; look for it around noon.

Dip for Dinner

I finished all of my schoolwork for this week, wrote an article for the Dietetics newsletter, and made a deeply delicious dinner.  Go me!

The first round of dinner felt oh-so-sophisticated, dip and crudities.

The dip was my newest recipe creation, Black and Blue Dip:

Yield: 14 ounces; Prep Time: 10 minutes; Cook Time: 0

  • 15 oz can black beans, rinsed and drained
  • 2 oz (or 1/2 cup) blue cheese crumbles
  • 4 Tbsp light sour cream
  • 3 Tbsp A-1 steak sauce
  1. Place beans into the food processor and pulse until mostly smooth.
  2. Add blue cheese, sour cream, and steak sauce and pulse until well-combined, scraping down the sides of the food processor as needed.

The black beans and blue cheese are a fun flavor combo, the A-1 adds spice and depth, and the sour cream helps to smooth out the flavor.  Adam described this as meaty (and fun for all vegetables!) so I guess this had umami!  Each 2 oz serving had only 106 calories so this would be the perfect dip to bring to a party where you were hoping to keep things healthy.

I ate a 2 oz serving,

with baby carrots, green pepper, and celery dipped in.

Adam and I both agreed that this was a fabulous appetizer.

The second half of dinner was brinner.

I used 2 Tbsp of butter to saute 1 pint of sliced mushrooms, 1 sliced red bell pepper, and 1 Mayan onion.  We pulled out half of the cooked veggies for later use and scrambled the rest into 3 large eggs.

This dinner ended up being a little small but it’s bedtime so what can you do?  Meh.

What is your favorite thing to dip into blue cheese?  Baby carrots are good but pizza crusts are better!
