Better Late Than Never

Yesterday I got productive and created two fabulous, must-share recipes … and then I feel asleep (fully dressed, on top of the covers) at 8:45pm.  I’m not going to recap blog but I will share those two important recipes; better late than never!

I was well-rested this morning, but it didn’t keep me from packing food for school that was sort of strange.  Like cooked zucchini.

I ate it, cold, at 8am and loved it.

I also packed a baggie of red grapes,

and two Oatmeal Cranberry Pecan Cookies.

Those were fabulous dish#1, but I’m actually not going to share the recipe until tomorrow (it’s been a busy day).  Adam says they are the best oatmeal cookies he’s ever had and I promise they are worth check back for tomorrow.

My packed food proved inadequate for getting me through 8:00 – 2:00, and I ended up eating these Cheez-Its.

I also ate two more cookies when I got home,

plus these candies from a birthday package Adam opened (he turns 26 on Sunday!).

He also opened some birthday $ and decided that we are going to dinner at Moe’s!  I’m not going to blog dinner because I’ve got to get some school work done, but I will share yesterday’s dinner, aka fabulous dish #2.

Pineapple Upside-down Chicken, serves 4

  • 1 lb boneless, skinless chicken breasts, divided into 4 even pieces
  • 20 oz can pineapple rings canned in pineapple juice, juice drained and reserved
  • 4 slices 2% provolone cheese
  • 4 maraschino cherries
  • 2 tsp light brown sugar
  • 2 pinches salt
  • 1 tsp tamari soy sauce
  • 2-3 dashes hot sauce (I used Sriracha)
  1. Place chicken in a large, flat container and cover with pineapple juice. Cover and place in the fridge for 2-3 hours to marinate.
  2. Preheat your oven to 350 degrees Farenheit. Prepare a casserole dish with baking spray.
  3. Remove chicken from juice (return the juice to the fridge) and place into the casserole dish. Bake 30 minutes.
  4. Remove chicken from oven and top each piece with one slice of cheese and one pineapple ring. Place a cherry in the center of each ring. Sprinkle rings evenly with brown sugar and salt. Return to oven and continue to bake for 10 minutes.
  5. Meanwhile, pour juice into a small skillet over high-heat. Add tamari sauce and hot sauce.
  6. Bring to a boil and cook until reduced by half. ***Because the juice was in contact with raw poultry it is essential that you keep it at a boil for at least 5 minutes!
  7. Pour sauce evenly over cooked chicken.

I’ve never actually had pineapple upside-down cake (I know!) but the flavor profile has always sounded appealing to me. So why not apply it to dinner? We learned in food chemistry that pineapple contains Bromelain, a protease that is used commercially to tenderize meat.  As soon as I heard that I spent the rest of the class brainstorming ways to cook chicken with pineapple.  I’m glad I did too, because Adam and I both loved this recipe!  The chicken was very tender and there was a good balance of flavors.  The sauce was scrumptious, but be sure to remember to boil it for at least 5 minutes.

I had an important test today (it didn’t go well, but that’s another story) so I got up early to do some studying at Starbucks.  Just as I was about to head out, Adam called.  He’d left his pager at home and needed me to wait for him.  At first I was annoyed; I needed every minute of studying I could get.  But then I realized that he had a pager because he’s going to be a doctor, and that’s amazing.  So I got over it.

When I finally did get to Starbucks at 6am I got myself a gingerbread latte.

Actually, I ordered a plain non-fat latte and added 1 Tbsp of gingerbread syrup from home.

Shhh.

When I left at 7:30 I did buy an actual fancy drink though, a short, non-fat, salted caramel hot chocolate.

The flavors in this feel very complex and gourmet for a coffee joint, but it’s pretty rich so the short size is perfect.

I also ate some leftover fruit salad.

Then I failed took my test, got myself in a tizzy applying for several jobs and internships, and did my group presentation on cultural food patterns.  Our country was Ireland so we all dressed in green.

We also brought in Irish soda bread for the class to try.

In addition to my slice I ate a Peppermint Stick Clif Bar.

This flavor was good, but not great like I was hoping it would be.

After class I had so much nervous energy I needed to burn off that I actually went to the gym!  30 minutes on the elliptical, level 6 random.

I got home at 3:30 and had to unpack, shower, change, and eat dinner before my 4:15 orthodontist appointment, so this meal was quick but good.

My amazing turkey sandwich was 2 slices of toasted rye with cranberry relish, 2 slices of Applegate Farms roasted turkey, and 1 oz of reduced fat cream cheese.

Cream cheese on a sandwich is where it’s at.

I also had a pile of roasted green beans on the side.

I had less than 8 minutes to shovel my food in and this still tasted good!  And I’m glad I did an earliest bird dinner because my teeth don’t feel like chomping with my new retainer set.

Webster and I are going to take a walk down Elmwood to pick up a friend and then she’s coming back here so we can work on yet another presentation.  Exam week won’t be fun, but I still going to be so relieved when we have our last class of the semester on Thursday!

I Was Told There’d Be Book Club

Book club was a success!  And Adam got off of his shift early and got to spend the afternoon with me, so it was a great day all-around.

I got up early to do some final cleaning (when people come over I like to pretend that we’re not slobs) and snacked on a bag of popcorn and a slice of 2% provolone while I worked.

I also did some major 2-for-me-and-1-for-the-bowl-ing while I prepped the fruit salad.

At 10 my friends arrived and we feasted.

We may not have really talked about the book (I Was Told There’d Be Cake) but at least we had some good eats!

My plate had potatoes,

fruit salad,

cheesy baked eggs,

and a crepe (so cool!) with Biscoff spread on the inside.

We also made hibiscus mimosas.

It was all great fun.  No people pictures though because we suck at remembering to take them.  I always have my camera with me (duh) so I need to do a better job at snapping candids.

We book clubbed until after 3pm and then my cultural meal pattern group and I baked some Irish soda bread to bring to our presentation tomorrow.  By the time they left I was starving again and my study motivation was seriously waning.  But I have an important cumulative exam – spanning two semesters and material from 2 courses – tomorrow.  What to do, what to do?

Somehow the husband and I decided that the solution was to go out to dinner and study at the table while other people prepared our food!

We went to an all-you-can-eat sushi spot that has a longish wait between courses and it was actually perfect.  I’m not prepared for tomorrow by any means, but I got a lot more done than I would have at home.

I also ate a lot.  I just plain don’t have time to break the pictures down, but here’s a shot of what I ate.

Wow!  Highlights included edamame, tamago (sweet egg) sushi, and tempura zucchini.

And we stopped at Wegmans for a candy cane for dessert.

Hello, Bob

So, this morning I looked like this –

and now I look like this –

I like it, I think!

I always sort of hate my hair whenever I get it chopped, but I’ve gone short several times now so apparently that’s not holding me back!  I ended up having 14 inches to give to Locks of Love, which is great.

A friend and I went during a long break between classes and it was fun to see people’s reactions when we got back.  “Wait, didn’t you have a pony-tail this morning?!?”  I surprised Adam too.  He picked me up from school and his mouth fell open when I walked out to the car!

BC (before the cut) I ate half of this Coconut Chocolate Chip Clif Bar for breakfast.

And AC (after the cut) I bought a great green juice.

This was blend of spinach, kale, carrot, and cucumber; from a new spot just blocks from my apartment.

This was so good, and “only” $4.  I predict I’ll be there more often than I can afford!

Adam picked me up after school so we could make a quick grocery trip.  We each picked something from the cookie bar for funsies before we did boring stuff like toilet paper.

I chose cinnamon nut rugala and I’m now on the hunt for a rugala recipe to make at home.

While I was fixing Adam’s dinner I snacked on some canned pineapple over 1% cottage cheese.

My dinner was supposed to be some of Monday’s “leftovers,” leftover.

A heaping bowl of pasta, shredded chicken, and tons of peas, topped with parmesan, cranberry relish, and a drizzle of evoo.

I love this bowl so much more than I do anything I eat on Thanksgiving.  But I got up to do something halfway through and when I came back there was a dog face in my bowl!  Webster’s sort of an asshole.

Instead I ate this Smart Ones Brocoli and Cheddar Roasted Potatoes.

Not as good as the dinner I shared with the dog, but not as bad as it looks either.

“Leftovers”

Did everyone have a fantastmic Turkey Day weekend?  (I did!)  We had a great last 1/2 day in Miami, including brunch with one of my best college friends, but got back into town late enough and with enough to do that I knew I was better off not blogging.

I didn’t have it together to pack food this morning but, though I got a little cranky around 1:00, I managed to make it through the school day without food.  Fueled or not, I am so proud of myself for making it to the gym during the break before my last class.  35 minutes, level 6 random, on the elliptical.

I had an after-school errand that made me have to wait longer to eat, but I was ok with it.  I was off to see a boy.

Love him.  And I was so proud, when I went to the vet to pick him up they told me that he was perfectly behaved and everyone was going to miss him.  I took him on a quick walk when we got home and he hadn’t forgotten any of his training during our five-day absence.

He’s a genius.

He’s also shedding like a mad man.  When Adam got home we went out for a lint brush to remedy the winter coat/dog fur situation and also dealt with the food issue.

It’s worth not eating all day to get Wegman’s hot bar for late lunch.  I got a heathy mix of fruits,

and veggies.

Delicious.  I haven’t made brussels sprouts at home in ages but they are always my favorite thing on the buffet line.

Dinner was a winner as well.

Who says you need Thanksgiving leftovers to have a day-after-Thanksgiving inspired dinner?  Into our bowls went a serving of pasta, some shredded rotisserie chicken, peas, a bit of parmesan, and a big dollop of cranberry relish.

I made an extra serving too and I’m excited about having this again as leftovers.

I tried to do some drinking with dinner.

But this Angry Orchard Hard Cider was too sour (it tasted almost rotten!) for me and I only managed a few swigs.

Best Ever

It’s a good thing I decided not to blog after dinner yesterday because we ended up staying out for drinks!  It was a late, fun night.

We started our evening with dinner at Las Culebrinas, Adam’s favorite Cuban place on the planet.  They have rolls with the best garlic butter.

We also ordered some appetizers to share.

Fried plantain with shrimp in red sauce and mozzarella sticks.

For dinner I got Mahi Mahi crusted in corn flakes and topped with a honey mustard sauce.

It was a little too fried for me but the sauce was so good.

And it came with a side salad with great dressing.

We did lots of sharing (though no one went near Adam’s beef because he was moaning so loudly – and whispering sweet nothings to his chocolate flan – and we were all a little afraid).  I ended up eating the equivalent of 3/4 of my plate.

Afterwards we walked around Coconut Grove for some more people watching.  And somehow ended up at Uncle Moe’s for drinks.  Like the Cow Tipper.

My mom and I split this one, obviously.  It was tasty, but not as strong as it sounds.

Which is good, because I was feeling good this morning.  I decided to skip the hotel breakfast, which was lackluster yesterday, and get in a quick gym trip instead.  15 minutes on the treadmill for a bit over a mile.

I ate my stolen pear for breakfast.

Along with a NuGo Dark bar packed from home.

And we stopped by our old favorite Thai place for a bubble tea smoothie.

So freaking good!

Plus a few peppermints for freshness.

Amid the day’s exploration we also spent some time at the mall. I know shopping seems like a strange vacation activity, but my parents live on an island so it’s more exploratory for them than the beach. My dad shared a pretzel with me while we were there.

I ate about x2 what’s pictured. We were practically frozen so I also bought an earl grey with steamed skim milk.

A few stops later, and we were at my favorite place on the planet.

Where I made the biggest cup of froyo I’ve ever eaten.

Everything chocolate and caramel, smothered in marshmallow.

Heaven. Pure heaven.

And the evening only got better. The plan was to go to Joe’s Stone Crab, but a 2-hour wait scared us away. The disappointment was very serendipitous, because we ended up having a best ever dinner at Joe’s less formal take-away spot next door. You ordered your food at a counter and brought it to the booth yourself and it ended up being just perfect.

To start, Adam and I split a seafood bisque.

It was creamy and tangy with big chunks of fish.

Then the four of us split an order of stone crab.

Stone crab is like the best crab you’ve ever had, on steroids. It is meaty, yet tender and buttery.

I got most of two claws, dipped in butter and mustard.

I drank a spicy bloody Mary with my food but I was too excited about the crab to remember to photograph before a few sips in.

For the rest of the meal, my mom and I split two sandwiches.

The shrimp po boy and the lobster Reuben.

The po boy was good, though I mostly ate the shrimp out of the bun, dipped in remoulade.

The Reuben was out of this world. Everything that’s good about a Reuben but with the added amazingness of lobster.

Everyone kept laughing at me for chewing with my eyes closed but I just couldn’t help it. The big pieces of meat were absolutely perfect.

I thought I couldn’t be happier, but then Adam bought me this t-Rex juice container.

Best trip souvenir ever.

My favorite activity in any city is bike riding, and for the hour after dinner that’s just what we did.

It was so much fun, though our times in the sand basically left my thighs burning! Then we spent another hour walking down the club strip on South Beach for the ultimate people watching. It was the best vacation day ever.  The best.

Delirious Dinner

I’m going to go ahead and apologize in advance for the plethora of typos that will most likely pepper this post.  Between my 4+ hour sleep deficit and wracking my brain all day for answers to two major tests, I’m a bit off my game.  And the husband was on a 24-hour shift last night and he’s wrecked as well.  Our joint delirium made for an interesting afternoon.

But first, lunch.

Despite appearances, that’s not a yogurt.

It’s also not a 6oz container but a big guy, stocked with last night’s roasted dinner leftovers.

These were still good cold, but I had to shovel them in at 10am which felt a little odd.

I want to think my tests went well, but honestly I’m not sure I even remember.  Thanksgiving break is going to be all about catching up on sleep.

When I finished my make-up exam at 3, I picked up the husband so we could do a quick grocery restock.  My gnawing hunger led me to the gingerbread men.

Such a good idea.  Adam ate his buttons, and thought this was so funny he made me snap a picture.

I told you we’re tired.

Except that tired is the understatement of the century.  Between bad luck, Adam’s distraction, and my complete and utter confusion at life, we went to three different grocery stores and somehow ended up with nothing more than a bag of pears to show for it.  Frick.

Some complaining, more confusion, and lots of aimless driving later, and we managed to end up at a Chinese buffet for dinner.

We were totally drawn in by the bubble tea.

Adam and I split this Taro one.

The food wasn’t necessarily good, but it certainly wasn’t bad either.  Not healthy at all and a miserable lack of vegetables, but overall we had a nice dinner.

Green beans, baked salmon, 2 stuffed mushrooms, and a crab rangoon.

Sushi, chicken with broccoli, and some cheesy crab salad that blew my freaking mind.  It was so rich I couldn’t even eat all of what’s shown but I was seriously in heaven.

Tiramisu, pineapple, glazed banana, pudding, coconut gelatin.

I had lost steam by dessert and shared .25 – .5 of this with Adam, but I did devour the coconut jell-o.

I love buffets because getting to try little bits of lots of things makes my soul happy.  If I could find a buffet with actual healthy options I think my heart would explode with joy.

And sleep in 3, 2, 1 …

No Sleep Makes Strange Cravings

Hello, hello. It’s been a long time (48+ hours!) since I’ve posted and it’s felt even longer. It’s been a crazy couple of days. My meals since I last blogged have been anything but impressive, but it kind of made me want to post all the more since I’m trying to put it all out there. I will add the disclaimer though that this is a *do not as I do* post 😉

I didn’t tell y’all last time, for obvious security reasons, but Monday was Adam’s 1st 24-hour shift at the hospital. It went very well, but I’m still glad that he’ll get to sleep at home most nights this year! I was tired, he was tired, the dog was tired.

I had a ton of schoolwork to catch up on and was worried about sleeping without Adam so I pulled a bit of a 24-hour shift myself and only slept 2 hours on Tuesday night. <– this was a terrible idea, but more on that in a minute. I studied mostly standing at the mantle, which was lovely, and had a civilized midnight snack of tea with skim milk and dark chocolates.

Since I packed lunch before my all-nighter, Tuesday’s meals got off to a good start. I mixed together a Stonyfield 0% Chocolate Underground Yogurt with pumpkin puree and the end result was pretty amazing.

I also packed some citrus.

I ended up eating just the tangerine and giving away the orange.

And I bought a coffee – with tons of skim milk and a sprinkle of cinnamon – during a break in class.

Brunch was tasty, but not very filling, so when I came home to my sleeping family I stole a slice of Adam’s Newman’s Own White Pizza.

I also ate this fruit packet.

Wednesday (today) involved a major test and a major paper, so working on practically zero sleep Adam and I knew to grab hot bar for dinner Tuesday night.

An Indian dish and some tofu,

which included some “Asian” Brussels sprouts that we so wildly good I almost drove back to Wegman’s to buy more!

I also snacked on a bowl of pretzels and coffee & cream malted milk balls.

And then the evening took a turn South. It’s possible I had a full-scale meltdown and confirmed that I’m now too old to pull all-nighters. Writing my paper involved such dramatic sobbing that I had to reprint a copy of my article because I got it wet with tears. Pathetic, I know.

When I did wrap things up, around 2am, we both celebrated with bowls of Lucky Charms.

Thanks for the cereal, husband, and for loving me in spite of me!

Tuesday I was too tired to be tired (if that makes sense) but today I felt every single missed hour of sleep. Meet breakfast –

Why, yes, classmate wondering why I’m photographing two bags of combos at 10am, I do write a healthy living blog.

But my paper was turned in and my test was at least passed, so today wasn’t a total fail. All I wanted to do at 4:30 when class finished was go home and sleep, but instead I headed to work. Tonight was my final shift which was actually sort of sad. I suppose I won’t miss random strangers calling me an asshole and hanging up, but the whole getting paid thing was nice.

When I got out at 9, I picked up Adam so we could fulfill the strangest food craving I’ll ever have – a McDonald’s Fillet-O-Fish Sandwich.

I hate McDonald’s. I’ve never even tasted this sandwich before. But for some reason I was smelling it all afternoon and it was driving me crazy.

This wasn’t even good (I was right, McDonald’s is gross) but at least I can move forward now.

P.S. I still have to shower (it’s after midnight) and tomorrow I have to *start* studying for Friday’s giant test so if you think tonight’s post was whiney and/or incoherent you probably should wait to read again until this weekend!
