Monday Tuesday

The post title is supposed to reference yesterday’s, and the fact that I am finding myself completely unable to write a blog post.  I just feel like I have a case of bloggers’ block.  There are two upcoming posts that I’ve promised to do and I am practically incapable of getting them done.  Both are on my to-do list for tomorrow and for today I’ll keep it quick.

Breakfast was a total success.

I stirred together Wegman’s Vanilla on the Bottom Super Yogurt with a biiiig dollop of 1% small curd cottage cheese.  Then I topped with sliced plum, sliced nectarine, and a chopped up cookie dough truffle.

I needed something that would keep me full through the early afternoon and this did the trick.

Lunch was snacky.  A GoGo Squeez Apple Strawberry pouch.

And a Peanut Honey Pretzel Luna Bar.

The first time I tried this bar I didn’t know my socks off but today I was much more impressed.  I could really taste each flavor; the peanuts, honey, and pretzels somehow all managed to stand out from within the mix of flavors.

Dinner was cheesy chicken and rice.

Plus 2 servings of potato chips (bacon cheddar, but not really, these were still vegetarian) a few hours later.

And that’s all she wrote (ha!).

I Swallowed (A Wine Tasting Recap)

What a fun day!  It included booze, friends, and cookies, so you know it was a winner.  I didn’t do the best job photographing but today was one of those days when it is more important to live it than blog it.  I guess that’s true for all days really!

I have no excuse for the past two days because I think blogging a recap would have been my most exciting event, sadly.  I was lazy not busy.  But I do have two new recipes to share this week.  Two recipes for two days seems fair.

We had to do a major cleaning job on the apartment this morning but we did find time for a dog walk.  Breakfast on the go.

Adam and I split this Mango Noosa Yoghurt (there are two servings per package) and we were both big fans.  So thick and creamy!

I read up on the company and I really like their policies.  I just wish the ‘gurt was available in low-fat.

Today my friends and I cashed in a big group Living Social deal and hopped in two town-cars for a winery tour.  We got picked up at my place so every one came up for some sweet treats first.

We had (unphotographed) “virgin mimosas” of oj and vanilla club soda and I baked two treats.  How Sweet Eats’ Chocolate Drenched Coconut Oatmeal Squares.

And cookie dough truffles (recipes is one of the two promised for this week).

Both were big hits!  HSE is basically a genius; I subbed in unsweetened coconut but otherwise I left her recipe alone.  Adam complained about helping me bake on Saturday night but after he tasted the goods he shot me death-eyes when I tried to send friends home with leftovers!  I ate two of each all total for the day.

Then we were off for three hours of wine tasting.

We hit up three wineries, all of which had a great selection.  Between the seven of us there was a large range of preferences.  Rachel likes super dry and I like super sweet so the two of us ended up swapping glasses a couple of times.  I don’t really drink wine so it was nice to have little tastes to see what I like; I even tried a couple of reds!  The craziest ones were Schulze Wines’ crackling sweets.

I especially liked Niagara Landing’s Rosebud line and even came home with a bottle.

And I paid $2.50 extra at one spot for this mini glass of ice wine.

All total I had 13 tastes and I didn’t spit once!  I probably should have though, it wasn’t an insane amount of alcohol but all 13 were sweet and I felt pretty sick by the time I got home.

I ate a mac and cheese muffin (the 2nd recipe),

and then crashed hard on the couch.

When I forced myself up two hours later I knew there was no way I would be cooking the soup on my meal plan.  Instead we went to Moe’s.

My vegetarian burrito had rice, black beans, sautéed mushrooms/peppers/onions, cheese, corn salsa, and guacamole.  It was just what I needed.

I’m feeling loads better now.  But I am hoping to turn in early because I’ve got a busy to-do list for tomorrow.

The Last Three Days

The last three days have been great. Summer school is over! I’m a senior! (again!) We went to Ohio! Yep, I wasn’t blogging because the summer of weekend fun has officially begun. Let’s back up to Friday morning first.

I stayed up late on Thursday (Adam was studying and I was doing nothing) so waking up was rough. Somehow I did manage to get out of bed and make it to the gym. And then I did strength training! I walked on the treadmill for 7 minutes to warm up and then spent 30 minutes rotating though a cycle of strength machines plus stretch moves on the mat.

Since I actually did weights work it seemed like the perfect time for the Honey Core Power protein drink I bought on sale.

It was fine, not great, but 26 grams of protein in a few minutes is nothing to sneeze at.

To celebrate our last day, our teacher brought in garden chili.

I had a bowl topped with cheddar,

and another glass of lemon sweet tea.

When the day was over a few friends and I celebrated on our own. First we grabbed the dog,

and then we walked to Dolci,

for bourbon cinnamon gelato.

Eeeeee, this tasted so good! The cinnamon was pretty subdued and it had the best texture, almost airy.

Then Adam and I were in the car for weekend #1 of summer fun.

I packed us leftovers for dinner.

Buffalo Chicken Baked Pasta.

We both agreed that this dish is one of best things I make.

Saturday morning I managed to sleep until 11:30 …on the living room floor …while people screamed at the top of their lungs playing Battleship! Tired much?

For lunch I did my best to pick and choose a meal from McDonald’s.

Two packs of apple slices,

and a fruit and yogurt parfait.

Plus a (mini) S’more Monster Cookie for dessert.

I thing I like these cookies even better when they are regular sized.

We spent the afternoon at our niece’s dance recital. There were kids of all ages, including a class of three-year olds twirling around in giant tutus. And now my ovaries hurt!

Dinner was re-dic-u-lous.

All you could eat. Apparently I could eat five clusters. And then I was very, very full.

Though not too full for candy at the movies a few hours later.

We saw Prometheus and I do not recommend it. The “Alien” nerds on all of the forums were right, the characters are dumb and I didn’t care what happened to them.

The parents made us all breakfast this morning before we had to hit the road. I had a glass of skim milk,

and a pancake (with butter and syrup) and fresh fruit.

The opposite of fresh, Adam and I snacked on this cookies and cream Chex Mix on the road.

I ate ~2 serving’s worth.

We had to stop at the mall on the way home to get the husband new sandals so we got froyo too.

I got a tiny bit of tart yogurt with tons of fruit and popping boba.

We we’ve been home about an hour and I’ve already eaten two of the Hawaiian rolls that Adam brought home.

Clearly it’s time to rustle up dinner!  See ya tomorrow.

Peanut Butter Cheddar Pupsicles

This post has gone to the dogs!

Calm down, Cheech, I know you’re hungry.

Hey, over here!

There we go.

My dog, like all dogs, loves peanut butter.  My dog also, like all German dogs, gets hot quickly in warm weather.  These factors mean that he is a big fan of Purina’s Frosty Paws frozen dog treats.  He gleeked out over them but my wallet wasn’t as excited; those things aren’t cheap.  And because dachshunds are prone to back troubles with weight gain the large serving size means he can only have them as an occasional treat.  Plus, Webster is not a one-note dog, he likes cheese too!

Since I love the dog almost as much as he loves peanut butter, I set out to make a treat that works for both us.

These Pupsicles are full of protein from his favorites – cheese and peanut butter – and made with low-fat yogurt that is good for his tummy.  They are cheap and easy to make and the smaller size means I can treat him more often, which makes us both happy.

Peanut Butter Cheddar Pupsicles; yields 20 frozen treats

  • 4 oz sharp white cheddar
  • 2 cups plain low-fat yogurt
  • 1/2 cup creamy peanut butter
  1. Cut the cheese into fourths and use a food processor to crumble it.  (You can probably make these in the blender, just shred your cheese first.)
  2. Add yogurt and peanut butter to the bowl and process until well-combined.
  3. Spoon the mixture into clean ice-cube trays and freeze until solid.

Note – I based this recipe off of similar ones that I know have been vetted (ha!) by the AKC.  Please ask your vet what foods are appropriate for the breed before giving your dog any new foods.

Cukoo For Coconut

I know I said this morning that I’d be a grump, but today wasn’t so bad.  Coffee helped.

I got dressed quickly enough that I had time to take Webster on a morning walk and when I met the husband to do a backpack/dog swap he ended up driving me to school.  We got iced coffee with skim milk along the away.

Sidenote – my bladder probably wished I’d skipped the coffee; I also had a breakfast drink, a soda, and a huge bottle of water.  At one point all four were sitting on my desk, which made everyone crack up.

Breakfast was a celebration of coconut.

A Liberte Coconut Yogurt,

and a Zico Chocolate Coconut Water.

I tried the chocolate Zico in Ohio last spring and loved it, it’s like a lighter Chocolate Nesquick!  When I finally spotted some at Wegmans last week I freaked out.

My lunch looked an awful lot like last night’s dinner.

Tempeh and veggie brown rice casserole topped with white cheddar.  I microwaved it at school.

I have one final casserole serving stashed in the freezer and I’m looking forward to remembering it in a few months.

After class I spent time on some job applying things.  <– please cross your fingers for me!  Then I took the world’s hardest nap.  When you wake up from a nap remembering dreams you know you needed sleep.

Dinner was simple but oh-so-good.

  1. Chop the top off of a bulb of garlic, drizzle with evoo, stick in an oven at 400* for 30ish minutes.
  2. Boil ~1.75 cups of bow tie pasta.  Add ~.25 cup frozen edamame and 1 pint frozen mushrooms during the last three minutes of cooking.  Drain and return to pan.
  3. Squeeze roasted garlic into pasta.  Add ~3 Tbsp creamy mushroom soup, ~2 Tbsp evoo, and a liberal sprinkling of salt.  Stir vigorously.
  4. Portion onto two plates.  Dig in.

Adam gave me a bunch a bunch of crap when I told him the dinner plan but we both swooned our way through the finished dish.  Roasted garlic is so flipping creamy.

I’m up late because I was typing up the posts with the pie and dog treat recipes from last weekend.  It was worth it even if no one else tries them out because I will definitely make both recipes again.  In the meantime, I’ll see you tomorrow at noon for some window shopping!

Early Mornings

Two 5 am wake ups in a row make me a grumpy girl. But you’ve gotta do what you gotta do; particularly if you haven’t been doing what you have to do!

Monday morning the alarm rang at 5, I was up at 5:10, and I was finished working by 8. I even had time for breakfast.

A 0% Plain Oikos Greek Yogurt with 1 cup of Erewhon Cocoa Crispy Brown Rice Cereal, a sliced nectarine and a tsp of honey.

Adam will have eaten all of the cereal (which was bought with a free coupon from HLS) before I can pour another bowl, but this combo was great.

We went on a tour of the Meals and Wheels facility for class. They make more than 1,600 meals a day at the site we visited! The size of the kitchen equipment was insane.

The weather was warm enough to skip a cardigan and cool enough not to sweat like a river so it was the perfect opportunity to rock my frilly sleeved top.

That shirt is so fun.

Lunch was fun too, but also a failure.

The Strawberry Push Pop was great (duh!).

But they reformulated the Cool Mint Chocolate Clif Bar and I’m not a fan any more. It had a strange aftertaste and I ended up throwing it out halfway though.

The great pear made up for it though.

I swear that it tasted like vanilla!

I also bought an iced Americano with skim milk.

We stayed at school later than usual and even with my coffee I was off the charts cranky by the time I got home. Thankfully I had this face waiting for me to get home and take it on a walk.

Don’t mind if I do, Webster.

The husband’s laptop broke recently and we’ve had to spend a lot of time and money (more than we can spare of both!) at the mall getting it fixed. The silver lining is that there’s froyo at the mall.

I got coconut and plain tart topped with lots of fruit and popping boba.

We ate grape leaves (two each) as an appetizer of sorts.

And had casserole leftovers with evoo and white cheddar for dinner.

When we ate this dish the first day I sort of hated it, but the taste has gotten significantly better with each serving.

I sat and stared at my computer for a while last night but I knew I wasn’t going to make any headway. Around 10 I determined that my best bet was to set another alarm for 5 and get myself to bed.

I slept, I got up (30 minutes later than planned), I worked, I finished, I’m ready.  But since my presentation is on dress code and personal hygiene I should probably go shower and gussy up!

Father’s Day

Did everyone have a happy end to their weekend?  Things have been quiet around these parts, mostly because the husband caught a summer cold.  Poor boy!

I did get up at 6 am to start my book club recipe but then I spent half the day napping to make up for it.  And we did start our second morning (at 10am!) with a quick Fur-Fathers’ Day walk.

I love those guys.

The tree outside of our house is sprouting cherries!!!!

Would it be crazy to eat them?

Brunch was a veggie scramble.  I cooked chopped poblano and broccoli into four eggs (split between the two of us).

Plain yogurt and creamy mushroom soup were also in the mix.

I rounded out my meal with some tasting as I spent my afternoon in the kitchen.  A puppy treat and a people treat were made and I’ll be sharing the recipes this week.

I’m not feeling so hot either and cooking was basically my only accomplishment this weekend.  I spent half my day moping because I’m just so tired of myself.  It would have been too flipping easy to get my stuff done in advance and instead I’m waking up early tomorrow to plough through things last-minute.

We had salads in the afternoon.

Romaine topped with 2 Tbsp of Wegman’s peanut sauce and 1 Tbsp each buckwheat groats, tamari almonds, flax, and white cheddar.

It was really good.

I stocked Adam up with leftovers and I ate dinner at book club.

We didn’t actually read a book this month but it was good to get together and talk (and eat!)

I had bruschetta, cheesy artichoke dip, and strawberry guacamole with blue chips.

A small glass of wine.

Roasted veggie enchillada.

And (messy, tasty) pie.

Wakeful Weekend

In solidarity with the husband I kept his vampire/emergency room doctor schedule and stayed awake all Friday night.  I ate a big bowl of popcorn, discovered Solitary, read a book… it was great.  Except that the rest of the weekend ran together in a big fog so I guess it was not so great.  I didn’t do much, but here’s what I ate Saturday and Sunday.

Saturday.  I ate a bowl of Maple Brown Sugar Frosted Mini Wheats and All Bran Bran Buds with skim milk for breakfast.

Split a PB & J’s candy bar with Adam.

This was super fun.

Made a to-die-for bagel sandwich.

A toasted Cinnamon Raisin Bagel Thin topped with a wedge of Laughing Cow Garden Vegetable Cream Cheese Spread (two thumbs up), turkey pepperoni, and melted white sharp cheddar.

Discovered another new froyo place.

I got coffee and coconut yogurt topped with toasted coconut, oreo, marshmallow cream, hot fudge, and candy-coated sunflower seeds (<– freaking awesome topping idea!).

And I ate a big thing of black bean nachos for dinner but was so tired at that point that I forgot to take a picture.

Sunday.  Here is how Adam’s Sunday morning went – drive home from the hospital / say hi to me and tell me about how his night went / fall asleep in bed without covers because I had all of the sheets out with me on the couch

Here’s is how my Sunday morning went – wake up and realize it’s light out (think “don’t freak out) / check my phone and see that it’s 9:30 am (think “don’t freak out”) / notice a 6:30 am text from Adam saying he was heading home / freak out / scream, waking up the husband in the bedroom

Apparently I was talking to him in my sleep!  I used to do that a lot of mornings in college but back then it was more inconvenient than scary.  I still don’t remember talking to him but I am so flipping glad that he was home safe.

For breakfast I made the husband some “I’m Glad You’re Not Dead Honey Roasted Peanut Butter.”

1 lb of TJ’s honey roasted peanuts, 3 Tbsp canola oil, 3 Tbsp honey.  I took several taste-tests for quality purposes (about 2 Tbsp worth) and it was delicious.  I washed it down with a pear that I somehow didn’t photograph.

Lunch was an Annie Chun’s Pad Thai Noodle Bowl.

It was good but not “60% of your daily value of sodium good,” yikes!

I spent the afternoon exploring the Allentown Art Festival with a friend.  We didn’t buy anything but it was fun to wander; almost six miles were covered on foot!

Dinner was leftover soup.  Topped with tons of lime and a dollop of plain Greek yogurt.

We have one more serving left and I’m looking forward to it.

I’m not quite full though and if I finish tomorrow’s assignment in time I’m going to grab a snack.
