Matching Meals

There was no Saturday post because I just couldn’t figure out the logistics of it.  Two things were happening yesterday – I was starving and my teeth were killing me.  This meant I started 80 different food items, then gummed at them pathetically before moving on.  I just didn’t know how to blog it without saying “I ate two bites of this, and three bites of that..” a million times.

But today, today was definitely worth blogging.  The husband and I ate matching meals all day!  That’s not to say he didn’t eat several things that I didn’t (or that he was particularly excited about this) but for the most part our meals were twins.

We started our day with hot chocolate.

Made stove-top style with skim milk, sugar, and Green and Black cocoa powder.

I’ve been loving the cocoa lately, and this homemade version might have been my best cup yet.

We also had yogurts.

I ate the Liberte, 0% Strawberry.

The Liberte yogurts are sooooo rich and creamy but they generally have a lot of saturated fat so I was thrilled to find this 0% one.

Then we had matching lunch plates.

Leftover mini cheesy meatloafs with roasted sweet potato fries.

This meatloaf was good the first day, but it definitely got better after sitting in the fridge.

We watched some “X-Files” while we ate, then headed to my campus to get some schoolwork done.  I hit up the gym while we were there. A quick treadmill work out – warm up + run 1mile (9.10) + incline walking – 2.5miles and 35minutes. Followed by a quick stretch and a few planks.

For dinner we went to Cheesecake Factory to use up the last of our Christmas gift certificates.

We shared an order of avocado egg rolls.

If by shared you mean split 1-5 and include Adam growling at me while I ate my one.

Our dinner plates weren’t exactly identical, but we did share many bites.  I ordered my favorite, the fresh vegetable appetizer salad,

and Adam got the spicy cashew chicken.

We had a lot of fun sharing, and we’ve both got lunch leftovers for tomorrow!

Plus we split a cookie dough cheesecake for dessert!

Minimums and Maximums

Minus the fact that I lengthened it by forgetting my lunch until I was a block away, my walk to school actually wasn’t so bad!  I was cold, but not oh-my-gosh-I-think-I’d-rather-just-curl-up-in-the-snow-and-die-cold.

My first day of classes went well (this semester is going to be hard!) and p.s. my packed lunch ended up being delicious and satisfying.  To top off my good day, I even headed to the gym after class.

1mile in 9minutes 10seconds, followed by a quick .25mile walk cool down.

(This next bit is mostly on here for my records, feel free to skip ahead.)  I’m excited to get back to the gym, and I’m even more excited about a fun fitness thing that might be happening the second week of March.  I want to make sure that I am (1) ready, as in, in shape and (2) ready, as in, not injured so I made a loose workout plan for the next month.  In addition to strength training, the following are my minimum and maximum workout goals for each week.

  • 1/24 – 1/30:  run 1 mile; x-train 20-30minutes
  • 1/31 -2/6:  run 1.5 miles; x-train 25-35minutes
  • 2/7 – 2/13:  run 1.5 miles; x-train 30-40minutes
  • 2/14 – 2/20:  run 2 miles; x-train 30-45minutes
  • 2/21 – 2/27: run 2 miles; x-train 30-50minutes
  • 2/28 -3/6:  run 2-3 miles; x-train 30-60minutes

With between 4-6 cardio sessions each week, all done on the treadmill and elliptical.  Basically I want to get back into shape, but to force myself to move slowly so I don’t mess up my legs again.  I can walk as much as I want, but I want to stick to the maximum miles running on any given day.

Anyways.  When I got home this evening I was treated to a killer migraine, but I managed to push through and ended up with a banging dinner.

Lemon-Artichoke Risotto, a la Rachael Ray.

This was my first ever attempt at risotto and it ended up being pretty painless.  Stir, stir, stir, and you end up with a nice creamy dish.

Add leftovers and a few steps on the side, and you’ve got a great dinner.

Scheduled

Hello, future readers, it’s Emily from the past!  In order to share my lunch before I get home at dinner-time I pre-scheduled this post.

Speaking of scheduling, here’s a look at my life this semester –

Hours-wise this should be a bit easier than the fall, but most of my classes are slated to be pretty difficult, so it’s going to be a busy semester.

Today’s plan is to eat lunch between my two nutrion classes, in between dropping of an important application, fingers crossed!

I’ve got a sliced up cucumber,

and a leftover serving of last night’s wonder pizza.

As I munched happily last night I told the husband that this (bbq chicken caramelized onions and gouda) pizza is a 7-out-of-10 on the pizza scale, but a 9.5-out-of-10 on the homemade pizza scale!

I’ve got plans to hit the gym after my last class (finally!) and then this evening should be nice and relaxing since Tuesdays are school-free!  See ya this evening!

STT; Wednesday Afternoon – Thursday Afternoon

As predicted, yesterday afternoon was spent on a swim workout. My mom dropped Adam and me off at Morningstar beach for an hour. We had fun, but also got in a good workout. Adam would swim a distance away from me and then I would swim as hard as I could until I reached him. Repeat.

For dinner we refurbished pad thai leftovers.

Stir-fried with extra veggies – okra, carrot, broccoli, celery – and egg.

We also went to see The Fighter. I got in some fruit with apple slices as a movie snack.

And there was German chocolate cake waiting when we got home.

I had a (big) slice with a glass of skim milk.

Yum, good job mom!

For breakfast this morning I mashed a small banana with cinnamon, and spread it on two mini buns with almond butter.

Made quite the tasty little sandwich set.

The wind has been crazy recently so we spent the morning hiking around The Point and watching the waves crash.

I’ve snacked on a bag of cheez-its,

and split a gingerbread Clif bar with Adam.

Now (after this quick stop at school) the whole family is going for a long walk downtown.  The plan tonight is a belated anniversary dinner, and then tomorrow we fly on home.

STT; Merry Christmas – Sunday Afternoon

I hope everyone had happy holidays!  Adam and I have been feeling extremely blessed.  I’m also feeling busy, I hate how brief I have to make these recaps!

Ok, back to Friday afternoon.  Since we had already paid the daily admission fee, Adam and I headed back to Magen’s beach.  He swam, I read a magazine, and we both clapped in delight over these signs –

On the way back, we had to hit up an island institution.

Going to St. Thomas without making a stop at the dairy is practically criminal!  Adam and I split a Bailey’s Delight, made with rum raisin ice cream, egg nog, and brandy.

Then it was time for the final prep for our big Christmas Eve party.  A family friend who knows we usually just have to scrounge on the 24th brought over turkey chilli with kidney beans for dinner.

The rest of the evening’s eats were indeed party food.  I have no pictures from the actual party, but you can assume I ate at least one of everything, and that it was all delicious!

We were also fully stocked with booze.  I spent most of my evening carrying around a tray of tequilla shots – it’s a Christmas tradition!  And while I did manage to skip that particular tradition, I got so wasted on orange juice with Goldshlager (don’t knock it ’till you’ve tried it!) that Adam had to pour me into bed.

Christmas morning began the best possible way – with a light workout!  Adam and I ran for about a mile near the beach, then hiked the mile home.  It was a short workout, but considering that we had double hangovers and presents to open, I’m pretty proud of us.

A small glass of egg nog was consumed during stockings,

and then a lovely breakfast before presents.

Sidenote – our family does stockings, breakfast, then presents.  Always.  What was your Christmas morning tradition?

Gingerbread coffee with 2% milk,

a small plate of eggs with red and green pepper and Applegate Farms turkey bacon,

and a 0% Plain Chobani with a slice of coffee cake.

I should have given myself a bigger serving of eggs, I gave away most of my bacon/yogurt/cake.  In spite of our refreshing run, I think my nighttime imbibing had made me a little picky.

Not too picky, however, to turn down a big handful of maple sugar cotton candy(!!).

After present opening (which was plentiful – thank’s mom and dad!) there was lunch.

Apple slices and baby carrots,

and crackers with leftover hot pepper peach and spinach dip.

Plus dessert.

Dinner was consumed at my aunt’s house, with a large group of family and friends.

Plus a slice of garlic bread,

and a slice of delicious yellow cake with blueberry jam and vanilla buttercream.

I helped with the frosting, pulling a recipe from Eat, Live, Run that was to die for.

This morning started with another light workout.  Adam and I walked up and down the beach for 45minutes, then hiked the mill uphill homeward.  I wore my heart rate monitor and was pleasantly surprised that our 1hour, 11minute workout killed 290calories.  It’s nice to know that our sand trudging burned up more than the back of my leg muscles.

Lunch was leftovers.

Sidenote – my cousin made the mac and cheese for Christmas dinner and the husband liked it so much he went back for thirds!

I also ate the final serving of Junior Mints,

which helped fuel me up for…. a long nap!

We are at school now, and rest of the day’s agenda is movies, dinner, maybe drinks with friends.  See you soon!

Tastes Like Home for the Holidays

My shower took forever because I couldn’t bear to get out of the warm water!  It’s already 10* outside, I’m a little afraid of what January will bring.

Tonight’s dinner utilized take-homes from my cultural meal project.

Callaloo and dumb bread with cheese!

Callaloo is a traditional Caribbean soup made traditional with callaloo, pumpkin, coconut milk, and okra.  Our version was slightly less traditional, with spinach, butternut squash, and coconut milk.

Still delicious though.  This is the recipe we used.

Dumb bread is a non-yeast-levened bread with shredded coconut scattered throughout.  I topped my serving with extra sharp cheddar.

This flavor definitely took my back to my childhood!  This is the recipe we used.

Leftovers for dinner meant less cooking time and more baking time!

Cinnamon Chocolate Chip Brownies.

I followed the recipe on the Baker’s Chocolate box, but substituted the nuts and vanilla for 2 tsp cinnamon extract and 1 cup chocolate chips.

Quite tasty!  The husband said the cinnamon gave them a warm taste.

Brownies are usually my mom’s specialty but I think these definitely hold their own.  I ate two small ones.

Between the traditional Caribbean flavors and (not)mom’s brownies this meal tasted like home to us; which makes it a good meal for this week because we are gearing up for a trip home!  After all of our exams are done we are heading to St. Thomas for 10 glorious days.  Now I’ve just got two more exams to get through; I can’t wait!

Nog Makes It Nice

I love egg nog.  Like, a lot.  If I wasn’t so obsessed with keeping holidays within their “slots” I’d probably drink it year round.  But then there’s also that whole ‘fitting into my pants’ issue.  Which is what makes this product so amazing.

Silk Soy Nog.  95% as tasty as the original, and the nutritional stats are 95% better than the original.

It is so fabulously tasty, and healthfully low-fat that it even works well as a breakfast staple.  Overnight oats anyone?

Soy nog overnight oats are so good that I’ve basically stopped eating regular o.n.o. the rest of the year!

Yesterday evening I stirred together 1/3cup oatmeal and 2/3cup Silk Soy Nog and put them in the fridge overnight.  This morning I stirred in 1 Low Fat Vanilla Stonyfield and a dash of nutmeg.  Topped with holiday sprinkles, of course!

I ate in transit so I could cram for my test once I got to school.  I think I did pretty well, ~B, there were a few questions on there that we had not covered at all in class so that was frustrating.

My schedule today was class – break – meetings – break – evening class.  I used my first break to study for my upcoming Anatomy practical.  Fueled by Reese’s Pieces.

ET made me do it!  I ate about half of this bag, or approximately 1.5servings.

Just in case you aren’t sure that I’m a dork, I have to show you that I was taking my notes with a peppermint scented red and green striped pen –

‘Tis the season!

My meeting concerned the application process for the program I’m applying to (due the first week of the spring semester) and gave me major anxiety.  I have a lot to do over Christmas break.

My plan for the second break was to get a veggie sub and study for Orgo.  Unfortunately, I didn’t realize that “a little bbq sauce, please” was code for “please dip my entire sandwich in sauce, thereby making it impossible to eat and work at the same time.”

That messy monster contained green pepper, red onion, lettuce, tomato, pickles, pepperjack, and bbq sauce.

Sidenote on the sandwich – what I really wanted was an enchilada burrito from Taco Bell.  I hate most fast food but, not gonna lie, I sort of love Taco Bell.  But I recently realized that just because Taco Bell isn’t McDonalds (eww), doesn’t mean that their chickens are any tortured.  If I only buy “humane” meat to cook at home then I shouldn’t eat “evil” meat just because I’m not at home.  Obviously there are road trips and restaurants and other people’s houses, but I should probably be done with Taco Bell 😦

My night class went quickly, and then I came home to a quick but random dinner.

Actually, we were both starving, so while we cooked the husband and I split a quicksadilla (that’s a tortilla with sharp cheddar microwaved in it).

When I was at my grandparent’s house for Turkey Day, they served the tastiest brussels sprout dish.  I wrote down the recipe – by Cat Cora for a magazine – to make again when we got home.

3 lbs brussels sprouts
1 Tbsp plus 1 tsp kosher salt
1/4 cup unsalted butter
2 Tbsp lemon juice
4 Tbsp capers

Prepare brussels sprouts by peeling off the outside leaves and cutting off the steam.  Using a paring knife, mark the core where the stem was with an X.  Cut the sprouts in half.
In a 4-qt saucepan, bring 2 quarts of water to a boil.  Season with 1 Tbsp salt.  Blanch sprouts for 10minutes or until fork-tender.
In a 10-inch saute pan, brown the butter and add sprouts.  Cook over medium-high heat until caramelized, 10minutes.
Remove from the heat and add the capers and lemon juice.  Season with remaining salt.
Serves 8.  Per serving: 130calories, 5g protein…

I have to warn you about my entrée – it tasted better than it looked.

There was a serving each left of kugel and hoppin’ john…

…so I put them together!

The sweet and spicy mix was actually very tasty.

I’m almost definitely going to have a repeat of last night’s dessert (vanilla ice-cream with strawberries and homemade caramel sauce) but I have a few assignments to tackle so I’m going to say “goodbye” to blogland now and switch into work-mode.  See you in the am!

Nightmare Before Christmas

There was no blog post yesterday because I was so exhausted that I bumbled around all day without really doing anything!  We set our alarms for 8am and at 10:00 the husband was shaking me awake and I had no recollection of turning off the alarms.  Finally the husband remembered – after I told him I couldnt’ study because I was too tired to lift my arms – that I had such a bad nightmare on Saturday night that my moaning and flailing woke him up.  I don’t remember that either, but he told me I looked pretty pitiful.

When I got up today, the idyllic scene outside my window was like something out of one of my nightmares –

Yes, it’s gorgeous.  But – that’s the kind of snow you make cocoa and cuddle by the fireplace in, not the kind of snow you walk 30minutes through to Organic Chemistry!

But after Sunday’s #fail I was determined to make the best of today; even though I woke up at 9:30!  I started my day with some good stretching.  Not gonna lie, then I started my day with this (after brushing my teeth of course!) –

Sorry I’m not sorry (thanks, Rachel), Cherry Coke Zero is my version of the dog with a barrel around its neck.

Then I dressed for battle.

I take the dull out of bundling! (Say that out loud for me, pretty please?)

Oh yes, those are children’s snow boots.

Even my boots couldn’t fully save my trek though, it sort of sucked 😦  When I lived in Brooklyn and everyone walked it was kind of fun, but here, where I’m the only one in the snow, it’s a bit embarrassing.  At least I never really felt cold, probably because I got so sweaty; galumphing is a good workout!

I got to school early to pick up a portfolio (100%, booyah!) and then used the space before class to try to make up yesterday’s lost study time.  While I worked I snacked on a serving of Kugel.

I also drank a medium skim gingerbread latte (half pumps) and got distracted talking with a friend.

During Anatomy (87% with the curve on Friday’s test, booyah!) I slurped down a Revolution Foods Fruit Mash-Up.

As soon as classes were over, and I confirmed with the husband that he could pick me up from school, I got my study on.  I’m disappointed in myself that I screwed around so much it took me until after 7 to finish my notecards.  I’m proud of myself that when I was done at 7 I headed to the gym anyways!

I took my notecards on the elliptical – 35minutes, random, level 6.

We got home close to 9:00 and I’m pretty proud of the dinner I pulled together – fruits, veggies, and dessert!  First was a green purple monster.

This bad boy was a blend of frozen spinach, frozen blueberries, orange juice, Silk Almond Milk, and honey.

I gave the husband the extra and he loved it as well (although his did have a little extra sugar blended into it!).

Next up was a taste of the South.

I randomly picked up this can of Hoppin’ John when it was on sale a few weeks ago.  I’ve never eaten (heard of) Hoppin John before so I pretty much stuck with the directions on the can –

I did a 1/2 batch (one can) topped with Applegate Farms turkey bacon, Sriracha, and a little brown sugar.

I portioned half of it into a bowl, and tried something new.

Pretty good, who knew I liked black-eyed peas?!

Dessert was “new” as well, but there was never any question about liking it.

Oh. My. God.

This, my friends, is a (half)-batch of Jenna’s Caramel Sauce.

Well, that’s what’s left of the batch after Adam and I got to it.  It has a deep, decadent flavor and is sweet and rich.  Make it, make it, make it, make it!

Eaten drizzled (liberally) over a small bowl of vanilla ice-cream with lots of sliced strawberries.

Really it was just an excuse to eat some strawberries 😉

Yum!  Quite a pleasing dinner indeed.

Now I’ve got to hurry to shower so I can get to bed like a girl with an important test tomorrow.
