I Made Coq Au Vin!

What a day; I’ve been a busy bee since literally the minute I got out of bed!  I realize I didn’t do anything major – and most of you have jobs – but lots of little things added up and I feel accomplished and exhausted.  I don’t loving doing one long post a day but that will probably have to be the schedule once school starts anyway.

I had a scary doctor’s appointment across town this morning which meant I got to drive along the water.

I also got to eat breakfast in the car, in the form of an 18 Rabbits Cheeky Cherry Chocolate Granola Bar.

This was awesome; the perfect amount of chew with a little bit of tang from the cherries and a little bit of sweet from the chocolate.  Plus for 240 calories this was very filling.  I know I live for Cookie Dough Balance Bars and Chocolate Coconut Covered Lara Bars, but when it comes to straight up granola bars 18 Rabbits takes the cake oat.

My doctor’s appointment wasn’t fun, but it wasn’t as scary as it could have been.  I had a bump on my hand that needed a biopsy so 2 needles, 1 scalpel, and a band-aid later I was done.

It hurts a bit, but felt a little better once I could get home and pretty it up.

Did you know we only have children’s band-aids in our apartment?  I’m going to hit up a drug store tomorrow but Adam’s going to have to wash my hair tonight because those cuties are not water-tight.

On the way home I stopped at the gym to complete a workout session for the study I’m participating in.  We fuel with three different drinks and then walk on the treadmill for and hour at our heart rate range and take some notes on exertion levels.  Today I fueled with this 24 oz mystery beverage that I believe was water and apple juice.

I walked on the treadmill at a 5% incline for an hour and 2.9 miles.

I had to hurry to shower when I got home because I was meeting friends, but I was heading back to the gym after lunch.  It was the perfect time to try out the Champion tank every blogger’s been raving about.

I picked this up at Target the other day and I’m in love.  You know I’m all about the blouse-tank.

This may be my new favorite top for play and workouts; it was so comfy.  Plus, two different homeless guys stopped me to tell me I looked hot, so I’m giving this two thumbs up.

For lunch I met up with a few school friends at Coles.  It was so great getting a chance to catch up with a few people I haven’t seen all summer.  I ordered off of the specials menu.

A sandwich of grilled salmon in a sweet glaze with pickled veggies, and french fries.

This was okay, but the sauce was oddly sweet.  The best part was actually the spicy mayo which wasn’t even mentioned on the menu.  I ate about 2/3 of everything.

After lunch I headed back to the gym for my real workout: a running session on the treadmill.  It was pretty hard (being fat isn’t fun!) but I made myself stick to the same goal as Sunday of minimum 5 minutes running, maximum 2 minutes walking.  I did 4 miles in 42 minutes, 22 seconds.  Seven miles in one day probably wasn’t my best idea though, my back is killing me.

I was starving when I got home and dinner took for-ev-a so I ate a few snacks while I cooked.  Watermelon chunks stolen straight from the big container.

And two servings of Trolli Soda Poppers.

P.S. These aren’t bad, but they’re no gummi cola bottles.

1.5 hours later – seriously – it was time for dinner.  I made Coq au Vin!

Casey (who I had an obsessive girl crush on) made this during Top Chef and I’ve wanted to try it ever since.  I used Cooking Light’s Easy Coq au Vin recipe and my only changes were subbing in turkey bacon and using chicken breast instead of thighs and drums.

This was very good, but I’m not sure it was quite good enough to excuse the long cooking time; we’ll have to see how it does as leftovers.  At least the multiple sessions of simmering gave me time to handle my to-do’s around the house.

For my greens I made a tasty side salad.

A romaine base with Newman’s Own Light Cesar, roasted edamame, and roasted buckwheat groats.

The groats might be too savory for yogurt but I think they’re my new favorite salad topper.

I’d like to say I’m going to bed now but Adam’s still not home and I can’t wash my own hair.  But since my husband’s been at the hospital for upwards of 12 hours I guess it’s hard to complain about my day!

Pizza Powered

As planned, we ordered a pie from Just Pizza last night and it was fabulous.

We got a Laura’s Old Fashioned – “The way our Mother used to make it. Made with Extra Thick Dough, a special Sweet Pizza Sauce (fresh sliced Onions in the sauce), Mozzarella & Romano Cheese, topped with Mushrooms.”

Not so fabulous was the way I felt after eating 5 slices this size.

Fat, ill, and irritated with myself for noting getting up an eating a salad.  On the plus side though, it’s sort of like Adam and I were carbo-loading for our run this morning!  If nothing else, our glycogen stores were nice and prepared.

Actually we were prepped all around, this is the run I got to test out my new shoes on.

I’m 90% sure I like them, but I’m going to run in them once more to be sure since my most recent pair sucked so badly.

I also tested out my new favorite shirt;

handmade by ME at last week’s tie dye party.

I think it’s pretty darn cute.

It was a good run to feel cute on, because I was mostly feeling like a jackass that I haven’t worked out all summer.  My planned 3.5 miles were tough.  We had two 1.75 mile loops around Delaware Park and I’m just glad I finished.  I had to take a few walking breaks, but I made sure to run for a least five minutes each time and walk for no more than 2 minutes at a time.  3.5 miles in 40 minutes and 20 seconds.  Followed by a 10 minute walk.

The rest of the agenda was shower ~ ice ~ grocery ~ clean the dirty apartment ~ dinner.  Thankfully our grocery trip was made much more exciting by our plan to sit in the cafe for a few hours so Adam could study.  I got cozy reading Nancy.

Sidenote – I am completely and utterly obsessed with the Nancy Drew books.

And got exciting lunch from the hot bar.

In an effort to save a bit of money, we also supplemented with salads from home.

In the end my meal ended up being arugula topped with carrots, 2 Tbsp of wheat germ, 1/4 cup of roasted chick peas, and 2 Tbsp of tarragon vinaigrette.

Plus roasted veggies, chili garlic eggplant, and veggies picked out of the cashew chicken,

and a few pieces of pineapple and berries.

Delish.  I read my first Nancy and munched and was in absolute bliss.

Unfortunately, the grocery took longer than anticipated and once I added in a last-minute walk to the co-op and the task of packing Adam’s lunches, I plain ran out of time to clean the house.  Tomorrow.  And at least I’m a good wife.

Adam has one rice bowl for each day of the work week.  And I took a good many nibbles that escaped the camera while I cooked.

I also made dinner.

Polenta that turned into a fairly intimidating, but tasty solid,

and huevos rancheros inspired tacos.

I scrambled 5 eggs (with skim milk, salt, and pepper) into sautéed chopped onions and green pepper, and then stuffed them into blue corn taco shells with a bit of sharp cheddar.  I served Adam and myself 3/5 and 2/5 accordingly.

Dessert was 2/3 to 1/3 in my favor though.

A gigantic cowboy cookie I picked up at the co-op.

My entire right side of my body has ached ever since yesterday’s tennis game, so I’m going to go curl up with a book.

Easy Eats

I accomplished so much yesterday that today was actually a bit boring.  I’ll take it though.  And I’ll definitely take the fact that I had to skip today’s workout because my abs were so sore from yesterday’s 90 minute hot yoga session.  Whoop!

Breakfast was easy and summer-y.

1.5 servings of cinnamon Puffins, .5 serving of oats and honey Bear Naked Granola (which is like a Tbsp, seriously?!), chopped plum and white apricot, and skim milk.

For a mid-morning snack I measured out 2 servings of the peanut brittle popcorn my in-laws gave me for my birthday.

This stuff might be dangerous.

Lunch looked borning.

But looks can be deciving.  That’s not pb & j.

That’s a mini kaiser roll topped with Nutty Guys honey roasted peanut butter, crushed up honey wheat pretzels, and a drizzle of honey.

And what goes with a peanut butter (pretzel, honey) sandwich better than milk?

Milk also goes well with cookies.

But those aren’t for me (though I did eat a few cookie’s worth of dough!), I baked them up for The Great Fundraising Act.

Instead of cookies, Adam and I snacked on hummus this afternoon.

Not just any hummus though, Sabra Roasted Pine Nut Hummus that I got to try for free as part of the Foodbuzz Tastemakers’ Program.

Usually I’m too cheap to buy hummus because you can make it easily at home, but I think it’s time to update my policy!  Adam and I both thought this was delicious; creamy with a great roasted flavor.  The pine nut was a great new twist, though Adam thought it wasn’t as zesty as the garlic variety we used to buy.  Plus at 80 calories per 2 Tbsp serving it’s a nutritional steal.

I ate my serving(s) with some baby carrots.

Keeping up the easy eats theme of the day, dinner was leftovers.

I piled the steamed collard greens, millet, and baingan bharta into one bowl, topped with tons of Sriracha.

Easy, like your mother.  Ba dum ching!

Off The Road

I made it!  I was a little nervous about driving 7 hours by myself but it ended up being ok.  Of course I’d rather drive with Adam, but it’s nice to know that I can do it by myself.  Caffeine helped.  A sugar-free Red Bull was brought from home.

I also brought lunch so I wouldn’t have to stop.  Cheese and jam sandwich.

That’s 2 slices of Dakota topped with 2 oz of 50% reduced fat white cheddar and Crofters Concord Grape Spread.

And a baggie of carrots.

I did stop once to pee and I grabbed a half sweet coffee for the 2nd half of the trip.

And then I was there!  My dad took me to rent a bike as soon as I arrived (there’s a path near my grandparents’ house that we’re going to use this weekend) and we went out for a short ride.

Soon enough it was time for dinner.

Baked asparagus,

breaded baked chicken,

a rice mixture,

caprese salad,

and fruit on the side.

After dinner I took my grandpa to a local baseball game and then the whole family ended up meeting for ice cream.

That’s a small twist with marshmallow.

And now it’s bed time.

Doorknob Ankle Cold

Whew, vacation’s not over yet; Adam’s parents are here for a visit!  We spent the day running around with them and it was nice to be the one showing off the city for a change.

Before our visitors arrived, Adam and I set out for the farmers’ market.  We didn’t find any produce we wanted but it was basically a menagerie down there.  Here’s a llama –

That song will be stuck in your head for the rest of the day.  (Remember this one??)

While we were out we snagged breakfast, straw-style.

Organic 3 Cafe is great about letting you customize your juice orders.  This was spinach, carrot, cucumber, kale.

I also grabbed a half-sweet coffee from Wilson Farms.

Soon enough, my in-laws were here and we all headed to Tokyo Shanghai Bistro for lunch.

That’s the a la carte tomago (egg custard nigiri) I shared with my mother-in-law.

The lunch specials (only $6!) came with steamed rice and a cup of soup, I went with hot and sour.

For my main order I got the garlic eggplant with extra veggies.

I’ve been craving garlic eggplant for forever and this totally hit the spot.  It was a little bit spicy but not super sweet or fried tasting.

After lunch we took a movie break and headed to the theatre to see Mr. Popper’s Penguins.  The movie was a lot better than I was expecting, it was great to see Jim Carrey actually act (not just make crazy faces).  My favorite character was definitely Pippi.

We wanted to cash in a Groupon for dinner so we drove out to Hamburg to the Buffalo Street Grill

The husband and I had trouble deciding so we ended up sharing two dishes.

Tortellinni with portobello mushrooms and pesto,

and grouper topped with crab, brie, and roasted red peppers,

which came with french fries,

and a squash medley.

The veggies were seriously delicious, the best side I’ve had in a restaurant all year!

Finally, we took the parents to Anderson’s for frozen yogurt.

I got a baby twist with marshmallow topping.

Mmmmn.

After we said goodnight to my in-laws, Adam and I took a walk to pick up a few things at the Co-op.  It might be 90* in DC but it’s in the 60’s here; we were so cold we ended up sharing a cinnamon dolce steamer from Starbucks to warm up!

A steamer is just steamed skim milk with 1.5 pumps of syrup, but it did the trick getting us through our walk.

Adam is making the opening and closing remarks at a medical school ceremony tomorrow so we’ve got to get to bed and get him his beauty rest!

Gourmet On The Go

We’re back in Buffalo!  We made it home without losing any limbs or luggage and managed to eat only healthy, delicious meals; I call that a winner travel day!

To start the morning my aunt took me to Atwaters, a local bakery her neighbor owns, to buy a loaf of bread and some provisions for our drive.

I also picked up an iced coffee with skim milk.

Adam and I hung out with my family as long as we could (my cousin just got back from study abroad in Costa Rica and had amazing pictures!) but soon it was time to hit the road.

You know we couldn’t leave Baltimore without self-serving one more frozen yogurt.

I got a mix of cookies and cream and taro yogurt topped with strawberries, bananas, Oreo, sprinkles, and rainbow jelly.

The rainbow jelly took my joy over the top, although now I’m going to be missing froyo and bubble tea!

Typically vacation food goes downhill once you get into the car, but today we were ready and we kept things gourmet.  I bought this Tofu Bahn Mi at Atwaters in the morning and it ended up being the perfect brunch.

Bahn Mi is a Vietnamese sandwich made with pickled veggies.  Typically it is very spicy but this one was pretty mild (my only complaint).

Lunch was also a sandwich, but not just any sandwich.

Bee’s Knees Honey Peanut Butter (good), homemade strawberry jam (better), and Dakota bread (best).

Best damn pb & j I’ve ever had!  I’m seriously amazed by how good this bread is each time I eat it.

We were pretty well prepared but sadly I spent the last few hours in the car dying of hunger.  Adam had a huge bag of m&m’s that made the whole car smell like chocolate and it was all I could do not to pour them down my throat.  I managed to wait, but once I picked up our dinner on the way home I could not keep my hand out of the bag of chips.

Many many (way too many) chips were consumed this evening.

We are out of veggies, actually we are out of everything, so I picked up rice bowls from Moe’s for dinner.

My bowl was rice, black beans, tofu, sautéed mushrooms, sautéed onions, sautéed green peppers, lettuce, cheese, corn salsa, and cilantro.

I scarfed that bad boy.

Time to unpack!

Walk It Out, II

Apparently I’ve used this title before…  I don’t think I knew what “a lot” of walking was when I wrote that post; Adam and I (who love love love to walk) wore ourselves out this vacation!  I’m glad we’ve gotten in the incidental exercise though, we need the walking piece to make up for our eating.  It’s definitely been a vacation week!

After breakfast on Tuesday Adam and I dropped my laptop back at the apartment and headed into the city.

Our main destination for the day was the Smithsonian National Museum of Natural History.

We saw all sorts of amazing things but my favorite exhibit by far was “Written in Bone: Forensic Files of 17th Century Chesapeake.”  They recently discovered the burial site for the first settlers of Jamestown and using modern forensics were able to piece together a picture of how those settlers lived and died.  The exhibit was half American history and half forensic anthropology; I loved it!  If you are in DC in the near future I highly recommend you check it out.

We expanded our minds all morning, but unfortunately our stomachs stayed empty.  Failing to plan is planning to fail, particularly when you are visiting expensive museum food courts.  I did delight in seeing all sorts of these though –

and Adam and I split the Luna protein bar I had in my purse.

Even without breakfast or lunch, our next stop was obvious.

FroZenYo!  If my memory is correct, I served myself red velvet, cookies and cream, cheesecake, and tart yogurt topped with kiwi, strawberries, candied nuts, pb, hot fudge, and sprinkles.

It was ridiculous good.  Frozen yogurt was the high point of my day, but Adam was most excited for dinner.

First though we met my best friend for a drink (pink lemonade and Stoli),

and then an iced coffee for our long metro ride.

Finally we arrived at Adam’s heaven our destination.

Chrisfield Seafood has been an institution in DC (technically Maryland) since the 40’s, and it was a big part of my family vacations as a child.  I didn’t actually eat any seafood as a child so Chrisfield’s magic was lost on me, but this time I was ready!

Portions note – I ate about 1/3 of everything shown here; it was a rich meal but I kept it fairly healthy by not stuffing myself silly.  If you do go to Chrisfields (and you should!) and plan on going crazy, I still recommend that you not fill up on bread because your dinner will be worth the wait.

Adam and Nikki ordered a pitcher of Red Hook Ale ($8!), apparently it turns you into a creeper,

but I still enjoyed a small glass.

When we sat down we were served bread,

and a plate of the necessary accoutrements.

Then we sat, and waited, and drooled and plates went by us.  Finally it was our turn to dig in.

When I called my father for menu advice (I wanted to maximize the opportunity now that I finally like seafood) he told me to order either the crab-stuffed flounder or crab-stuffed shrimp.  But when I got to the restaurant the lobster tail was calling me.  Thankfully I found my perfect meal, The Broiled Combo – lobster tail,

stuffed shrimp,

stuffed flounder.

My meal came with cole slaw and french fries as well.

O.M.G.  I think if I’d actually tasted the food as a child I would have been a seafood convert a lot earlier!  My favorite was actually the stuffed flounder, but the husband was more than happy to take over eating my lobster tail.

Stuffed to the gills (ha!) we slept very well that night.

Wednesday morning was spent walking around Georgetown.  Wandering down M Street is my favorite thing to do in DC!  Adam and I actually ended up at an old New York favorite for brunch, Serendipity 3.

I went with a favorite order too, The Summer Bries.

An open-faced turkey sandwich with apples, cranberry mayo, and brie cheese.

My bread was sort of burnt but I ate 2/3 before passing it off to the husband.

I’m glad I saved room, because we discovered a brand new favorite for dessert – Mr. Yogato!

I couldn’t serve myself, but the shop was so cute that it was worth the change.  I ended up with a small original tart yogurt with banana, coconut, and sprinkles.

Did you think I was kidding when I said we’d get froyo every day? 🙂

Guys, the walk back to pick up our stuff was brutal.  It was in the high 90’s and I was carrying my backpack with the laptop and it was just crazy.  Adam actually got so overheated he started to get light-headed!  Thankfully he felt faint right in front of a Walgreens and we could run in for provisions.  I drank 2 liters of water in under an hour!

Once we were back to our car it was time to head to our final destination: Baltimore.  We probably should have eaten lunch first though because as we sat in rush hour traffic we got pretty cranky.  I ended up digging into my packed stash and eating a serving’s worth of honey mustard chip crumbles,

and tons of (craisin, peanut, chocolate chip) trail mix.

When we finally got here my aunt and cousin had a great healthy spread for us to dig into.  Tortilla chips with homemade guacamole,

hummus with fresh veggies from the farmer’s market,

and this huge bowl of cherries that I basically dominated.

Plus a small pour (x 1.5) of sauvignon blanc.

For the protein portion of the meal my aunt grilled up some delicious Indian spiced chicken with yogurt and mint sauces.

It was so tasty I went back for a second piece (that’s a side plate).

Finally, dessert.

My aunt is quite the hostess.  There was dulce de leche Ben and Jerry’s and salted caramel gelato,

plus No Pudge Fudge Brownies and berry crumb bars (the blueberry crumb bar recipe from Bon Appetit made with raspberries and blackberries).

I was so stuffed I ended up leaving one bite of each piece on my plate!

And bringing this super long post full circle, I woke up at 6:30 this morning to go on a walk with my aunt.  She walks a 40 minute loop around her neighborhood most mornings so I happily joined her.  Even after our miles of city walking yesterday it felt good to get up and get my legs moving.

And now it’s time for breakfast!

Housekeeping

The title refers both to all of the cleaning I have to do around the apartment before our vacation and to a few blog housekeeping items; so I guess really the title should be “Apartment Cleaning and BlogKeeping.”

On the apartment front there is –

  • deal with the dishes
  • make a batch of bug deterrent
  • put away loads of laundry
  • make a filling, healthy pre-exam dinner
  • clean the stove

As far as the blog goes there are two reader questions on the agenda –

  1. Do you count calories?  The folks over at EverydayHealth.Com (click on the book photo for more info) offered me an opportunity to review their new book: Everyday Health: My Calorie Counter.  As a future dietitian I’m interested in the resource in general, but since I’m doing the review for you guys I’d like to know more about my audience.
  2. Buffalo bloggers/readers – would you be interested in doing a meet-up this summer?  I actually met my friend Katie through the blog, and when we had dinner yesterday we talked about how much fun a meet-up would be.  If you guys are down, I’d love to schedule one!

I’m glad I had that stuff to take care of because I actually don’t have a lot to talk about foodwise; I had a doctor’s appointment at 1:30 that took up a lot of the day.

Adam and I had a few things to print this morning so we walked over to Buffalo State to use the library.  I think I’ll head back tomorrow (and may even go to the gym!) so that I can check out some books for our trip.  We stopped at the book store and split a skim iced latte.

I also ate a Chocolate Dipped Coconut Luna Bar on the drive to my appointment.

And a plate of baby carrots with blue cheese dressing when we got home.

Now I’ve got to get cleaning!
