Thai in a Tizzy

I did take the dog (who was batshit crazy all afternoon) on that walk as planned. I also super productively knocked out some preemptive to dos. But then, in a moment of extreme efficiency, I was knocked out by a sudden migraine. Thankfully I took medicine quickly enough that I was fine in an hour, but my dinner motivation was squelched.

Good thing we had lots to celebrate – some personal good news, a new school year for me, and the start of a new rotation for Adam – it was the perfect night for Thai food.

My friend Kate said that Orchid Thai was her favorite Thai in Buffalo so I put it on the top of my list. Way to go Katie, this was one of my best meals in Buffalo.

We shared an order of the vegetarian spring rolls with sweet and sour sauce to start.

For my dinner I order the tofu Pad Kee Mao, extra veggies and Thai spicy.

O.M.G! Lots of good veggies; plump, chewy broad rice noodles; and I finally (finally!) found a spot in Buffalo that understands the meaning of”4-star spicy.”

I ate half of my meal and was basically quivering with delight. I can’t wait to dig into my leftovers for lunch this week!

Since it was a celebration and all, we ordered dessert. Coconut and taro custard.

This was good, but I guess we don’t love the egginess to custard, this was a little too savory for desert to me. Nonetheless we ate 2/3 of it.

Please excuse the blurry pictures because the lighting was low, but I promise that our plates looked as appetizing as they tasted. Buffalo foodies, Orchid Thai gets two thumbs up from me!

Mood Food

Today’s eats were a little strange, which made them perfect mood food since I feel a little strange.  I’m an odd mix of nerves and excitement about heading back to school tomorrow.  I’m thrilled about getting back on a schedule but I’m worried that I’m planning on working on too many goals (being a better student, getting on a workout schedule, cooking more often).  I don’t want to set myself up to fail by trying to do/change too much.

I spent my morning setting up the office for school and worked right through breakfast.  Side note – trying to figure out which notes to save for registration exam studying is brutal.  I’m not sure whether I’m throwing away things I need or saving so much that it will be overwhelming.

I didn’t want to head to the grocery on a completely empty stomach so I stirred a scoop of protein powder into a glass of skim milk.

It wasn’t very good (it tasted about as good as it looks), apparently I only like our protein powder after it’s been through the blender.

I did get myself a small but delicious salad from the hot bar too.

A spring mix lettuce base with tarragon vinaigrette, topped with a scoop of corn and kidney bean salad,

a scoop of veggie lo mein,

and a tiny piece of smoked salmon and brie.

The whole combo was super tasty, I think I may need to do salad at the hot bar more often.  I really want to like smoked (basically raw) salmon and usually I’m too afraid but today I loved it.

When I got home Adam and I took a quick walk through the Elmwood Art Festival.  We were naughty and snuck in our own beverages.

The Woodchuck Limited Release Winter Hard Cider is wonderful.  It tastes more like a vanilla-scented apple juice than something boozey.  Also when I went to the site to link for you guys I discovered that they make a pumpkin variety!  <– must find

I knew dinner was going to be on the small side, so I made myself a tasty yogurt bowl to supplement when we got home.

Low-fat coffee yogurt with 1oz of honey roasted peanuts and a drizzle of honey.

One of those combos from when I was a kid that I still love.

We didn’t have any set plans for dinner, but I did want to make a batch of Jenna’s Sweet and Spicy BBQ Beans to have for lunches this week.

I used 2+ cups worth of extra kale and it came out fabulously.  This recipe – which really is sweet and spicy – gives the best chew.

We decided to make the beans the bulk of dinner.

Such a good plan!  I topped my serving with shredded Parmesan, more Sriracha, and a dollop of 0% Plain Fage.

Dee-lish!  I sort of ate around the cheese to save it for the end and I was swooning by my last bite.

To round out my meal with carbs I turned to popcorn.

1 serving, topped with melted butter and cinnamon sugar.  I can’t think of a better way to face a new school year than popcorn.

Yesterday

Hello, there.  I wrote this last night and intended to post but Webster was being a psycho and it got too late.  It’s a good thing he looked like this for several hours this afternoon or I might have smothered him.

Since I didn’t eat very much on Monday, I woke up yesterday starving.  I turned to the tuna noodle casserole Adam made while I was away.

Good job, husband! 

This was tasty and it filled me right up so I could work on my Sabra/Foodbuzz contest post.

Many nibbles were taken during the creation of those recipes.

But I still had time for lunch when all was said and done.

A toasted Bagel Thin with spinach and artichoke hummus dip,

plus a bowl of watermelon chunks.

For dessert I made myself 2 s’mores in the broiler.
It’s a lot easier to ignore the fact that your puppy is puking up the carpet he devoured when you’re eating a toasted marshmallow.

I also ate a serving of Raisin Bran Plus later in the afternoon.

This was supposed to be fuel for a free yoga class but since it was canceled at the last minute this ended up just replenishing my saddle bags.

For dinner Adam and I split these nachos.

I specifically said “whole black beans please, no refried beans” but for some reason these were loaded with both.

I still ate my full share though so I guess I shouldn’t complain.

Moving to the present… I just got home from an orthodontist appointment and most definitely ate these cookies on my drive home.

They did impressions and I just can’t stand having that gross chemical flavor in my mouth!

Now I’m off to find some real food.  I’m also headed to school to run a session with some incoming freshmen.  Have a great Hump Day!

Sweetness

It is important to note – 2 hours changing a tire + 2 long drives in pouring rain + 2 late nights staying up talking in your hotel + 3 anxiety inducing days of talking to new people = a very tired Emily.  I like to call other people out when they’re being bat shit crazy, so I’m going to cop to the fact that I had a total meltdown this evening.  Lots of sulking and several tears later, I think I’ll try to keep this post quick.

I knew my monster recap was going to take a little time so I got up bright and early (7:40) with Adam to get working.  I had brunch plans with friends at 11 and I didn’t want to eat breakfast so I made myself a mug of Starbucks hot chocolate (stolen from HLS breakfast).

I finished my post just in time for a final meet up with friends before we head back to school.

Sweetness_7 Cafe is only .9 miles from our apartment so I decided to walk and bring the little dude with me.

This was the first time Kim or Anna have seen Webster and of course he totally stole their hearts.  Sweetness_7 was very sweet about letting me have the puppy on their porch and I was so glad I brought him.  Though it was a little hard to eat with him squirming in my lap.

For lunch I ordered the # 6 without mayo.

A turkey, mozzarella, tomato and caramelized onion panini,

with a simple greens side salad.

I usually forget to add it at home but there was salt on my salad and that definitely elevated it.  My sandwich was good too, nice and melty.  My stomach was feeling funny though (I think from being so tired!) so I ate exactly half and brought the rest home to Adam.

It’s so cool out it is actually cold, so I got to order a hot drink.

I asked for black tea with steamed skim milk and when the barista said “like a London fog?” I just nodded.  Upon close sipping it seemed as if the drink had been sweetened (though steamed milk does taste sweet?!) so now I need to Google London Fog.

Apropos of nothing, I’m going to show you my outfit because I think my new dress is so cute.

This was a J.Crew sale birthday score and the bubble hem makes my heart happy.

I spent my afternoon running errands and getting more and more exhausted.  I tried to hit the ground running from my trip and took care of the bank, post office, tailor, and grocery.  I was starving from my small lunch so I picked up hot bar around 5:30.

Ratatouille plus a few random veggies,

and broccoli macaroni and cheese that was totally swoon worthy.

The broccoli was cooked into the sauce and there was cheese nestled in its nooks and crannies!

Just as the meltdown began I also ate all of the toppings off of this mini sundae.

And end scene on my self-control.  We did manage to take Webster on another long walk, but dinner never happened because I just couldn’t deal with it.  I’m not sure if Adam was hungry or not but I think he’d rather just not deal with me.  And on that note, I’d be silly not to hop into bed!

Birds Eye Take Two

Tonight for dinner we tried the second half of the Birds Eye Chef’s Favorites sample I was sent as part of the Foodbuzz Tastemaker program.  To read my thoughts on the line as a whole (convenience, nutrition, etc) please read this post.

On the left is Lightly Sauced Primavera Vegetable Risotto.

Sadly, this was the one variety I didn’t love.  The white rice/carrot/pea combo reminded me too much of fried rice and it was a bit gummy.  I should note, however, that the husband thought it was pretty good, better than the other risotto in fact.  I only ate half of my serving and he happily finished it off.  Each serving contains 180 calories, 4 grams of protein and 14% of your daily sodium.

On the right is Lightly Sauced Roasted Red Potatoes and Green Beans with a Parmesan Olive Oil Sauce.

I was a bigger fan of this one.  The potatoes were neither mushy nor too firm and the sauce was good without being heaving.  120 calories, 3 grams of protein, and 12% of your daily sodium per serving.

To enlarge our meal Adam and I also split a thing of spicy lump crab roll.

The sushi from Wegmans is shockingly good.

My facial appointment went well this afternoon; definitely not something I would pay a full price for but fun to use a Groupon on.  I’m pretty sure the lotion she used with end up making me break out but the shoulder massage was greatly appreciated.

I had to stop by the co-op this afternoon and I was so hungry I ended up buying a small box of hot bar and inhaling it on the walk home.

Adam confirmed my suspicions that walking whilst eating does make you a fatty but it was totally worth it.  I got waldorf chicken salad and a few tortellini.

I’m going to wrap this post up now because (surprise, surprise) I still haven’t packed.  I’ve got to go figure out what I’m going to wear this weekend!

My Poor, Unfortunate Soles

This morning was a total clusterf**k, but things started looking up as soon as I got home (you’ll see…).

I needed to meet my landlord, a seemingly simple task that devolved into me waiting at the wrong location for 30 minutes – driving to and having to locate the correct location – having to locate parking – backtracking from the car to the office – and then finally having the meeting.

I spent every last cent in the car paying for parking downtown which meant that parking at my campus and driving to Wegmans was out of the question.  What I ended up having to do was park at my house – walk to campus – gym it – walk back to my house – and then drive to Wegmans.  Whew!

While I was at campus I completed a workout for the study I’m participating in.  Treadmill at 5% incline for 60 minutes and 2.9 miles.

While I was at Wegmans I replaced the peanut butter Adam finished even though he knew we need it for dinner and bought myself an iced coffee with skim milk.

I’m done with errands for the weekend minus one this afternoon that will lead to an exciting announcement, whee!

For lunch I ate an Angel Hair Marinara Smart One.

I don’t generally eat a lot of frozen meals and I pretty much hate angel hair in anything else, but I’m totally obsessed with this frozen meal.  The pasta isn’t mushy at all and the veggies taste very fresh.  Plus it’s a super filling serving for less than 300 calories.

I was keeping lunch on the lighter side because I knew what was waiting for me in the oven.

S’mores Brownies!  Am I evil or a genius?  An evil genius?

A buttery graham cracker layer topped with gooey brownie and a toasty marshmallow on top?  Hells yes!

I’m going to end this post on a low note by talking about feet.  Foot blisters to be exact.  Since I was a teen, something about the way I walk has caused me to get fin-like blisters on the bottom of my ring-finger toes.  My right foot has always been worse than my left, but recently it’s gotten out of control; probably not helped by my 7 miles yesterday.

Notice the super hot blood blisters.  I’m okay when I’m barefoot but every step in tennis shoes feels like knives.  I guess I can finally relate to Hans Christian Anderson’s Ariel.  Does anyone else get toe fins?!?

Embarrassing side note – do you remember the scene in “The Little Mermaid” where Ariel gives Ursula her voice?

When I was in 2nd grade I would corner my teachers – daily – and make them listen to me sing that song!

Preppy Provisions

As promised, as soon as I published my last post I found myself some fruit and carbs.

The very last serving of the spinach pesto pasta,

and some watermelon cubes.

This combination was surprisingly delicious.

And since my carb was very green and my fruit was very pink, this combination was a Lilly Pulitzer approved lunch.

Sometimes I wish I dressed preppier but I wore Doc Martins in high school so I’m not sure it’s allowed.

The gym did not happen but I think that was a good thing since dinner didn’t happen either.  Adam and I had some exciting and expensive errands to run (hopefully I have some news to share this weekend) and the night got away from us.  Plus we had a gigantic pointless fight.  We suck.

But to end this post on a positive note; do you know what doesn’t suck?  This sky –

What is the stupidest thing you’ve ever fought with a significant other about?  One time in high school Adam and I almost broke up over a hair crimper.

You’re Getting Sleepy…

Being a medical student’s wife is going to be tricky!  I was awake with Adam past 2am and he got me up before 8 this morning, and this is actually his easy schedule.  When we were in undergrad I’d go to bed in the middle of the night and then bound out of bed hours before Adam had his first class and feel fine.  Now he’s the one who’s unphased and I feel like I’m dying.  I’m not sure when I started needing so much more sleep but I have to assume to that it’s linked to how much better of shape I was in back then compared to now.  If that’s not motivation to step up my healthy habits then I’m not sure what is!

That said, today was definitely a “summer day” of eating.  I didn’t want to go back to sleep this morning (I’m working on getting a school-appropriate schedule going) but I didn’t want to get up either.  Reading Nancy Drew in bed was the perfect compromise!  I stayed in bed until literally the last second before I needed to leave for a meeting on campus so I ended up eating a Chocolate Covered Coconut Lara Bar on the walk for breakfast.

After my meeting I spent the rest of they running (most fruitless) errands.  I’ll be honest, I haven’t really left the house much this summer and I don’t think I realized how fricking hot it’s been outside?!!  I actually took a mid-afternoon break and saw “Friends with Benefits – alone, for the 2nd time – because I wanted to curl up in the dark with ac and a big diet coke!

Once I was back on mission I ended up at Target with the Ben and Jerry’s flavor I’ve been lusting after staring me in the face.  And they had it in a single-serve mini.  But I had more errands to run and the car was, of course, too hot.  What to do, what to do?  I bought it and ate it right in the car.

Best decision ever.

I’d like to think it was the ice cream that powered me through a much-needed apartment cleaning session this afternoon.  But it was probably the bowl of H2O-melon I had waiting to cool me off.

This wasn’t the best melon but even only ok ones are still pretty great.

I also made myself a 200 calorie bowl of popcorn; because I’m realizing that I don’t need to always eat popcorn by the bucket but I find that the 100 calorie bags just piss me off.

I topped my ‘corn with some melted butter and a few tsps of sugar for a lazy girl’s kettle corn.

I had grander plans for dinner, but when I realized I’d misread the cooking time by more than an hour we decided to go with Thursday’s planned meal instead.  Easy peasy mac and cheesy.

Adam and I split a box of Annie’s Organic Classic Macaroni and Cheese with frozen broccoli tossed in during the last few minutes of cooking.  I topped my portion liberally with Sriracha.

Spicy!  I was super hungry when we sat down to eat and I knew that kicking up the heat would help this meal to be more satisfying.  Now all I’ve got to do is get Adam in bed!
