Way Back Wednesday

In spite of the title, I’m actually going to start with a bit of prognosticating.  Prognosticate: to predict according to present indications or signs; foretell.

If you knew what that word meant and are offended that I thought you might not, I’m sorry.  If you didn’t know what that word meant and are offended that I think it’s common knowledge, I’m sorry.

Apologies aside, what I’m trying to say is that I posted this lunch in advance.  While you’re reading, I’ll currently be eating leftover roasted green bean fries.

In a baggie for traveling ease.

Plus an eggnog flavored Nutrament.

I used to love these drinks as a kid, they are so tasty and good!  Plus they have the calories/nutrients to count as a meal, and with my big important test following lunch I need a meal I can sip.

Finally, I packed some dried kiwi and hibiscus to snack on during the break before my night class.

This will be my first time eating a Nutrament as a meal (rather than just for funsies because they’re delicious), so I’m hoping that’s enough food to get my through my looong day.

Since Wednesdays are both my long school day and a day I always pack a lunch, it makes sense to do a pre-lunch post.  Pre-posts are a little less interesting to me, so I’ve decided to spice them up with a new weekly blog series – Way Back Wednesdays.  Every Wednesday for the foreseeable future, I’m going to include a few pictures from LBL (Life Before Blogging) for your – and my! – enjoyment.

This week’s WBW, a few fun shots from our senior year of college at University of Miami (the U!).  Like a trip to the zoo on one of my parents’ visits.

Or this shot from Adam’s 21st birthday celebration.

That night was actually back home in St. Thomas, on Christmas break.

Where did you celebrate your 21st birthday?

Playing Catch Up

I had big plans to go to the gym this morning, but when the alarm went off I felt like I’d been hit by a truck.  I thought I was all caught up on sleep from Saturday’s 4am fun, but clearly not.

Instead, I went back to bed and didn’t get up until 15minutes before I had to leave the house.  Clearly once I got to school coffee was a necessity.

A medium non-fat latte with sugar-free Irish creme syrup.

We got back our pre-Spring break Biochem exams today; my 85 was even more frustrating when I realized that I had circled B (correct) but written A (incorrect) for a key question.

Lunch was random but delicious.  First a Yoplait Key Lime Greek Yogurt.

Sooo thick and sweet, really tasty.  This tasted more like really thick regular yogurt than Greek yogurt (not a bad thing); the tang all came from the lime flavor.

I also had a Revolution Foods tropical fruit packet.

And during my second break I ate this roasted seaweed snack.

This was bought on a whim, but now it’s going on my permanent grocery list!  It was salty and crunchy, and the portion stretched a really long way for only 30calories.

My class didn’t get out until a little late, then Rachel came over to get some notes, and then I went to the gas station for some coffee (looking forward to iced tomorrow), and by the time I was home I was starving.  I made myself  a snack plate while I cooked dinner.

Baby carrots,

and half an everything bagel with pb and low-fat cream cheese.

I think my month of no-hunger is catching up to me, I felt like I could gnaw my arm off all evening!

Thankfully dinner came together in a snap.

Roasted asparagus,

and lobster ravioli (from our trip to Trader Joe’s) tossed in Newman’s Own Roasted Garlic marinara sauce (free via Foodbuzz Tastemakers’ Program).

This was good, but not filling enough.  Honestly the only reason I didn’t eat an after dinner snack is because I was so hungry I couldn’t decide what I wanted.

I wish I could tell you I filled my evening studying for Wednesday’s big, super important test.  But instead I took a much-needed nap.  As soon as a take a quick shower I’m back to bed to catch up on sleep!

What’s your favorite brand of Greek yogurt?

Often Blogged Activities

We’ve reached the week’s end, but I suppose the weekend is more exciting to those of you who aren’t on spring break 😉

It’s my mom’s last day here, but we kept things low-key.  We did have fun introducing her to often blogged activities.  Like eating yogurts at home for breakfast.

I went with Greek Gods fig on the bottom.

Soooo good!  I don’t actually like figs that much, but this yogurt is my favorite.

We spent the day running all sorts of fun errands, like going to Target, buying groceries, and hitting up the post office.  We live large like that.  We did at least introduce my mom to the blog fodder that is Wegman’s hot bar.

I got bunches of veggies,

with sweet and sour chicken and a mushroom bun.

The afternoon was low-key, but come 5pm I was still starving!  My hunger has definitely returned.  I made myself a cocoa for the drive to dinner.

Dinner, by the way, was from Spicy Thai, and it was fantastic!  The three of us shared an appetizer plate to start.

Veggie egg rolls, tofu tod, tempura eggplant, and crab rangoon.  Yes, this dinner was rather fried.

For dinner Adam and I split cashew chicken,

and Pad See Eiw with tofu.

The cashew chicken was not our favorite,

but the pad see eiw was ridiculous good.

If you haven’t tried broad rice noodles yet you’re crazy!

And for dessert, we introduced my mom to the awesomeness that is mini ice-creams.

I went with Double Fudge Brownie.

All is right with the world.

Tomorrow we’ve got to head to the airport at an ungodly hour, and then we’ve got brunch plans and I’ve got a volunteering obligation.  I’ll be back another evening 🙂

Have you jumped on the single-serve ice cream bandwagon yet?

And Fruit for Dessert

Hello from Ohio! I’m glad to be here, but getting here was a freaking disaster. There was an issue with our alarms, and we got a late start and a parking ticket! Ugh.

We had to stop at Wegmans on our way out of town, and hot bar brunch was a bright spot.

Lots of veggies,

and sweet and sour chicken.

I also snagged .12 pounds of yogurt pretzels.

On our first stop I picked up a coffee.

Half regular coffee and half (sweetened) white chocolate cappuccino. I’ve decided I pretty much only enjoy flavored coffee.

We spent the (looooong) trip talking and listening to music. All of our road trip cds come from the music that used to be on Scrubs. I know nothing about music now that there’s not Zach Braff to tell me who to listen to!

We reached my grandparent’s house just in time for dinner.

But first, a cheese course.

I also admired my grandma’s amazing Easter decorations,

including a ceramic bunny I made in grade school,

and snagging a mini-spoonful of jelly beans!

My mom cooked a fun medley dish; rice, chicken, celery, tomato, green onion, almonds, rice noodles, pineapple, cheese, and gravy.

With asparagus cooked in truffle oil (Adam was swooning!),

and fruit salad.

And we’re about to take a middle of the night trip to the store (my mom’s not crazy cakes, she just doesn’t live stateside anymore!  Going to the store any hour of the day is more exciting to her and me than someone who grew up in America) so I’ve got to hurry off!

Biochem Makes Bad Bloggers

I’ll leave the correlation between fences and good neighbors to Robert Frost, but in my experience Biochem makes bad bloggers.  Especially Biochem exams one has not adequately prepared for!

Yesterday’s post was sacrificed to a cramming session.  Unfortunately, the cramming session was then sacrificed to a orthodontist appointment and subsequent headache.  You can’t win ’em all!  Our teacher is very, very kind, so I probably ended up with a B anyways.  Sidenote – I swear I’m usually not such a terrible student, my (22day!!) sickness is really taking its toll.

I am blogging today though, with pictures and everything, but there’s the problem of not having much to blog.  My involuntary breakfast ban continues, but I did get coffee.

A grande non-fat latte with almond roca syrup (2pumps instead of 5).

I was hungry for lunch – my brain used up all my glucose on the exam – but I hadn’t done a great job of packing.  I brought a Revolution Foods tropical fruit packet.

And the newest Fage, 0% with Mango and Guanabana.

Oh. My. God.  Did you know that Gaunabana is the formal name for Soursop, my favorite fruit of all time that I almost never see outside of the Caribbean?!?  When I was saw the flavor at Wegmans I was so excited I bought two right away (and did a fairly embarrassing dance in the aisle!).  It was divine!

Yogurt perfection aside, I hadn’t packed enough food!  Thankfully the vending machines in the Dietetics building are stocked with mostly healthy things, so I was able to get this packet of tuna salad and crackers.

It was a little strange – I don’t usually add water chestnuts to my tuna salad – but it did the trick of holding me over through my last nutrition class.

I spent my break between classes working on my lab assignments and watching the snow pile outside.  Then, wonder of wonders, my night class so cancelled!

Eeeeeee!

I came straight home (the husband picked me up) and dove face first into a plate of Granny Smith apple with a serving of Smuckers Natural PB with Honey.

Then we got started on dinner.

Lemon Chicken Fricassee with Biscuit Topping from Rachael Ray.

We followed the recipe except –

  • substituting olive oil for shortening
  • substituting chicken breasts for thighs
  • using a frozen peas and carrots mix that also had lima beans, corn, and green beans
  • using some packaged frozen biscuits rather than making them

It was ok.  Only ok.  Adam said 6 out of 10, I said I won’t be eating any of the leftovers.

Plus a side salad.

Arugula topped with leftover roasted butternut squash, craisins, buttermilk blue cheese, and Newman’s Own Lite Raspberry and Walnut Dressing.

The salad was tasty at least.

The meal might not have been very good, but the entertainment was; season 5 of Futurama is finally on Netflix Instant Watch!

Did/do you watch Futurama?

Happy St. Patrick’s Day

I hope all my readers are out enjoying green beer and Irish car bombs!  No booze for me at the moment.  Anyone who really knows me can tell I’m sick just by looking at me today –

It’s a holiday with a theme color and my nails aren’t painted?!?!

Sickness be damned though, it’s a freaking holiday, I kept 90% of what I ate today green!  Well sort of, I didn’t eat breakfast and I didn’t pack lunch so this non-green tuna packet was kind of a necessity for lunch.

I have no taste buds at the moment, but I’ve had the spicy thai chili variety before and it’s quite tasty.

I sipped on a Green Superfood packet from Amazing Grass after lunch.

And ate a GoGo Squeez applesauce during my break.  <– fruit in a pouch rocks my socks

In the hours between my two classes I totally completed a huge assignment that’s not due for another few weeks; whoop, whoop!

During my late class I snacked on some green jelly beans,

and dried kiwi.

Yuuuuuum.  If you ever see dried kiwi at your stores, buy it!  The chew is perfect and the little seeds pop with the best crunch.

Dinner was tasty and on theme.

We stirred turnip greens into a box of mac and cheese.

Then topped them with poached hard-boiled eggs.

CSN Stores gave me this microwave egg poacher to try,

we haven’t gotten the method quite down yet, but the eggs were tasty and quick at least.

To combat my dead taste-buds I added 1oz of extra sharp cheddar and some sprinkles of Sriracha to my bowl.

Delicious!

How did you celebrate St. Patty’s day this year?

Mexican Melee

I didn’t post yesterday in a last-ditch attempt at today’s three tests.  This was not a successful plan.  Too little, too late.  Let’s just say that I’ve studied more for quizzes than I studied in total for these three exams.  At least my extreme disappointment in myself will serve as motivation the rest of the semester.  In fact, I’m not even going to talk about my tests in today’s recap; let’s keep things positive.

I had Adam drop me off at school early today to study (God, I miss the gym!) and I packed this Ricera vegan yogurt for breakfast.

Bletch!  One bite (and a lot of gagging) later and this was in the trash.  I don’t think I’ve ever tasted something so chemically in my life!  And the texture was indescribably bad, slimy at best.

Thankfully I picked up a tea on my way into the library.

This Republic of Tea English Breakfast Black Tea actually wasn’t half bad.  I need to make tea part of my routine more often.

Lunch was random and quick.  A leftover serving of Asian cole-slaw,

and a baggie of dried kiwi and hibiscus.

Yum, the kiwi was a fresh bag from OhNuts! and it tasted extra fresh.

Halfway through my second nutrition class I realized I made a mistake not packing more food, especially carbs – I was starting to shake!  Some really messy notes and a major headache later we were finally out of class and I tried to remedy the situation in the campus bookstore.  Peanut Butter Cookie Lara Bar,

and a pack of (new!) Rainbow Mentos.

The dose of protein and sugar was just what I needed to get my through my night class/test.

When I finally got home it took mere minutes to whip up a tasty themed(ish) dinner –

Yum, yum, yum.

First, Mexican-style pizza topped with black beans and corn.

This combo was too awesome, the leftovers are going to be great tomorrow.

On side, steamed kale with Stubbs BBQ Sauce and raisins.

Try raisins in your next savory dish, I dare you.

Finally, Mexican hot chocolate.

Serves 2 –

  • 1 cup plain almond milk (we used Unsweetened Silk)
  • 2 unsweetened baker’s chocolate squares
  • 1/4 tsp cinnamon extract
  • 4 Tbsp sugar
  • (optional) cinnamon and vegan marshmallows
  1. In a small, thick-bottomed put, heat milk to a low boil.
  2. Chop chocolate and add to milk.  Cover pot and continue to boil 1-2minutes.
  3. Whisk in sugar and cinnamon extract.
  4. Pour into two mugs and top with cinnamon and marshmallows if desired.

The cocoa was so thick and creamy it was more like pudding; I ate mine with a spoon!

We watched House while we ate (glorious!) and now I’ve got to get some beauty rest so I’m ready to conquer tomorrow!

Do you ever put raisins in savory dishes?

The Super What?

I may have been a cheerleader, but I just don’t follow football.  Even the Super Bowl.  There, I said it!  Adam and I are pretty much on the same page about everything.  But he cares about the Super Bowl a little bit, and that’s a whole lot more than I do.

We were on the same page with breakfast this morning though.

I whipped us up a batch of smoothies, 1 part frozen strawberries to 1 part chocolate peppermint stick soy milk.

We needed a sipable breakfast because we were busy moving around giving the house a deep clean.  I don’t want to tell you how long it’s been since I scrubbed the stove (um, never!), but it took me a good 20minutes to get the burners clean.

Once we were no longer living in squalor, we headed to Wegman’s for lunch.

Fruits,

and veggies,

plus a sandwich from home.

I split a pita and filled my half with Tribe Roasted Garlic Hummus, green pepper, and cucumber slices.

It was a nice lunch, and it fueled us through a weekly grocery trip amongst the horde of people who somehow forgot that today was the Super Bowl.  I don’t want to judge, but were those people all afraid that their carts of chips and beer would spoil if they bought them more than an hour before their parties?!?

I’m home alone tonight, Adam cared just enough about the game to head over to a house with cable.  I did send him off with party food though.

Spinach and Artichoke Hummus

  • 15.5 oz can chick peas, drained
  • 14 oz can quartered artichoke hearts in brine, drained
  • 3/4 cup frozen spinach
  • 4 cloves garlic, minced
  • 1 tsp plus 1 Tbsp extra virgin olive oil
  • 1/2 cup salted soy nuts
  • salt and pepper to taste
  1. Heat tsp oil in a skillet over medium-low.  Add garlic and saute until just beginning to brown, 1-2minutes, stirring occasionally.
  2. Add spinach to the pan and cook until completely thawed.  Remove pan from heat and set aside.
  3. Place chick peas in bowl of food processor and pulse until smooth.
  4. Add artichoke hearts to the processor and continue pulsing until smoothie, scraping down the sides as needed.
  5. Working in ~ 1/2 cup batches, add spinach and garlic to processor and pulse until smooth.
  6. Pulse in soy nuts and Tbsp oil, until mixture is well-combined.  Note – the soy nuts will add a chunky texture to the hummus, if you prefer a smoother end product then you will need to start but processing the nuts first.
  7. Season with salt and pepper to taste.

I stayed home doing girly things, like cleaning out the food processor, baking tomorrow’s lunch, then cleaning out the food processor again.  It’s a good thing I took many cooking bites, because after the send round of blade cleaning I decided I was not going to make dinner.

Really, it doesn’t come up that often that I have dinner by my lonesome, so why not revel in the situation and make myself a batch of single serve cookie dough for dinner?

Yeah, yeah, I had this yesterday too.  But this was different, this was peanut butter single-serve cookie dough.

  1. Using a fork, mash together 1 Tbsp Smart Balance Light and 2 Tbsp chunky peanut butter.
  2. Mash in 3 Tbsp flour and 2 Tbsp sugar.
  3. Pour in a splash of Silk Unsweetened Almond Milk and mix well.
  4. Place in the freezer for 30minutes, stirring occasionally.
  5. Top with a serving of chopped up Chocolove bar.
  6. Eat with a spoon, moaning occasionally.

Do you watch the Super Bowl?  Who were you cheering for today?

Seriously, have you tried the single-serve cookie dough thing yet?
