Highlights from the weekend…

I ate my first apple in months – a very crispy Lady Alice – and it was delightful.

Beer!  The Grimm was too ear waxy for my tastes but the Kills Boro Amethyst sour IPA with blueberries and lavender was very drinkable.

We were supposed to be back home in St. Thomas for carnival this weekend; instead we consoled ourselves with homemade Painkillers.  Nutmeg, pineapple juice, orange juice, rums, and I substituted low-fat coconut milk and sweetened condensed milk for coconut cream which worked out great!

Cafe Bustelo with chocolate milk, aka one of the best espresso-roast coffees with the best chocolate milk.

Yogurt bowls!  Working from home means I can make a fresh yogurt bowl every day and I have been loving the crap out of having berries around.  Very excited that we are going to the store tomorrow and can restock.  Icelandic-style coffee yogurt with blueberries, blackberries, and coconut chips.

Ice Cream In Space

Now that I’m working again, Saturday and Sunday did feel a little bit more like a weekend, even if the biggest excitement was standing in an hour+ line to buy groceries for two weeks.

Back At It

Big news I’ve been waiting to share – I went back to work this week!  I finally found a job that is a good fit for my experience; I’ll be responsible for the ICUs at a hospital in Queens.  Great timing, right?!  I actually will be able to do some work-from-home days but this week I had to go into the hospital for training.

We got take-out last night to celebrate the almost-end of my first work week.  Pizza loaded with vegetables – broccoli rabe, roasted zucchini, and olives – and garlic knots loaded with cheese.

It’s Not Delivery, It’s Trader Joe’s Pizza Dough

I made some damn delicious meals this weekend; all of my dinners were winners.  I am midway between my bimonthly grocery trips now though so we’ll see how next week goes.

Highlights include…

Phin coffee.  We are head over heels for this system, the results are so velvety!

We ate yogurt bowls as a family.  Mine had 2% Fage, honey, candied walnuts, cinnamon, espresso powder, and blueberries.

Leftover turkey meatballs.  This simple batch – seasoned with salt, pepper, TJ’s umami powder, and Korean chili flakes – turned out so good.

We made Hummingbird High’s small batch brownies and they were hands-down the best brownies I’ve ever eaten.  Insane.  I added espresso powder and didn’t have any cocoa powder and they were next-level fudgy.

It was an exciting week in home entertainment for us – I started watching Schitt’s Creek, and of course fell in love, and borrowed my mom’s Prime log-in to binge watch all of Absentia.

It was also an exciting week in home caffeination – I had a different (fancy!) coffee drink every day.

Cold As Ice

Pretty much everything I ate this week came out of our freezer.  Actually, 90% of what I ate this week was take-out chicken fingers.
