Pizza Powered

As planned, we ordered a pie from Just Pizza last night and it was fabulous.

We got a Laura’s Old Fashioned – “The way our Mother used to make it. Made with Extra Thick Dough, a special Sweet Pizza Sauce (fresh sliced Onions in the sauce), Mozzarella & Romano Cheese, topped with Mushrooms.”

Not so fabulous was the way I felt after eating 5 slices this size.

Fat, ill, and irritated with myself for noting getting up an eating a salad.  On the plus side though, it’s sort of like Adam and I were carbo-loading for our run this morning!  If nothing else, our glycogen stores were nice and prepared.

Actually we were prepped all around, this is the run I got to test out my new shoes on.

I’m 90% sure I like them, but I’m going to run in them once more to be sure since my most recent pair sucked so badly.

I also tested out my new favorite shirt;

handmade by ME at last week’s tie dye party.

I think it’s pretty darn cute.

It was a good run to feel cute on, because I was mostly feeling like a jackass that I haven’t worked out all summer.  My planned 3.5 miles were tough.  We had two 1.75 mile loops around Delaware Park and I’m just glad I finished.  I had to take a few walking breaks, but I made sure to run for a least five minutes each time and walk for no more than 2 minutes at a time.  3.5 miles in 40 minutes and 20 seconds.  Followed by a 10 minute walk.

The rest of the agenda was shower ~ ice ~ grocery ~ clean the dirty apartment ~ dinner.  Thankfully our grocery trip was made much more exciting by our plan to sit in the cafe for a few hours so Adam could study.  I got cozy reading Nancy.

Sidenote – I am completely and utterly obsessed with the Nancy Drew books.

And got exciting lunch from the hot bar.

In an effort to save a bit of money, we also supplemented with salads from home.

In the end my meal ended up being arugula topped with carrots, 2 Tbsp of wheat germ, 1/4 cup of roasted chick peas, and 2 Tbsp of tarragon vinaigrette.

Plus roasted veggies, chili garlic eggplant, and veggies picked out of the cashew chicken,

and a few pieces of pineapple and berries.

Delish.  I read my first Nancy and munched and was in absolute bliss.

Unfortunately, the grocery took longer than anticipated and once I added in a last-minute walk to the co-op and the task of packing Adam’s lunches, I plain ran out of time to clean the house.  Tomorrow.  And at least I’m a good wife.

Adam has one rice bowl for each day of the work week.  And I took a good many nibbles that escaped the camera while I cooked.

I also made dinner.

Polenta that turned into a fairly intimidating, but tasty solid,

and huevos rancheros inspired tacos.

I scrambled 5 eggs (with skim milk, salt, and pepper) into sautéed chopped onions and green pepper, and then stuffed them into blue corn taco shells with a bit of sharp cheddar.  I served Adam and myself 3/5 and 2/5 accordingly.

Dessert was 2/3 to 1/3 in my favor though.

A gigantic cowboy cookie I picked up at the co-op.

My entire right side of my body has ached ever since yesterday’s tennis game, so I’m going to go curl up with a book.

Psych!

I know I said I was going home.  As I got into my car this morning I thought “I could be fun to stay longer…,” so I did!  I’ll go home tomorrow.

I think my delicious breakfast helped to put me in the vacation mood.

So sad!

My last bowl with it was fantastic though.

I was super glad I stayed when we ventured to a great outdoor mall (I snagged the perfect shoes for my hospital rotation) and spotted this –

First we had lunch.  This is a half portion (I split with my mom) of poached eggs with hollandaise, potato, spinach, asparagus, and artichoke.

Pretty good, but dessert was better.

I seriously don’t know what I’m going to do in Buffalo for the next year without froyo?!

After some more family time, we headed to dinner at Ruby Tuesdays.  I snagged one of these cheddar biscuits.

And went seafood delight for dinner.

I was seriously shocked by how good this food was; I must have exclaimed how much I enjoyed my meal at least five times during dinner!

Yum, yum, yum; the zucchini was my favorite.

Ok, now I promise to go home tomorrow!

Grog Not Groggy

After my run this morning I joined my parents for an hour and a half bike ride.  I burnt the crap out of my forearms yesterday so I ended up biking in 85* weather in this –

Worth it.  We rode all around the path and over some gorgeous bridges.  I so wish I’d had my camera but I couldn’t figure out a place to put it.

We came home for a refreshing breakfast.

0% Plain Greek Gods Yogurt with a strawberry honey straw, blueberries, peach, and Great Harvest granola.

I have maybe a half serving of granola left and my heart is breaking.

Getting lunch was not my strong suit today and I will admit that I was a little cranky this afternoon.  We did do some fun things though, like explore a neat farmer’s market.

I grabbed an iced coffee from a stand at the market.

But traded iced in for hot as soon as I saw this –

Grog style coffee?!  With a little skim milk.

I swear it did taste like buttered rum!

We also traveled to the mecca.

I bought sushi (spicy and regular brown rice California rolls) for lunch but I only ate three pieces.

Yucky City, way too much (mushy) rice.  If I had been closer to the store I would have returned it but I was eating on the car ride home.

I split these Sunkist gems with my dad for dessert.

Yum City.

My grumbling tummy was very happy when dinner was served.

Side salad with peas, radishes, spicy ranch, and dill cheese curds.

Corn on the cob so tasty it blew the corn I bought in Buffalo out of the water.

And quesadilla with sautéed onions and peppers, turkey sausage, shredded chicken, and colby and sharp cheddar cheese.

With a small turtle blizzard for dessert.

I’ve been pretty well fed this vacation.  Nonetheless, I can’t wait to go home to my husband tomorrow and hear about his first week back at school!

My Aching Ischium

Ow!

I wish I could blog more about today but it’s after midnight and I am just so tired!  Time to keep things cursory.

I started my morning with a version of my new favorite breakfast.

Great Harvest granola (essential!) with berries, 0% Plain Greek Gods Yogurt, and a blue raspberry honey stick.

Delicious, and totally fun looking.

Then my parents and I headed out for a 3 hour bike ride.  Hence the aching sit-bones!  My plan was to run but my leg is sore (from accelerating of all things) and I think I ended up getting a better workout anyways.

After our three hour ride a big lunch was key.

It doesn’t look like much but that’s a vegetarian rice bowl from the burrito place down the street.  Rice, black beans, creamy hot sauce, tomatoes, corn salsa, guacamole, lettuce, cheese and pineapple.

It was a totally ridiculously delicious combination of flavors.

I also had this light Arnold Palmer.

We ran some fun errands this afternoon including a little farmers’ market,

and then headed to dinner at Beppo Uno.

I started with a side Cesar salad,

and ordered the baked zitti for dinner.

I can’t believe my nacho-obsessed self can even say this but it was a little too cheesy for me!

I only took a few bites but gulped down my shockingly good garlic bread,

and a slice of my mom’s shrimp and pesto pizza.

I guess I’m carbo-loading for tomorrow’s bike ride?!

I’m blogging so late because my parents and I went to see a 9:20 showing of “Bad Teacher.”  <– Cameron Diaz meh, Jason Segel hubba hubba!

On The Road Again

This time I’m heading to Ohio.

I’m sorry for blog bailing yesterday, I forgot about how much getting new retainers hurts.  All of my appointments went well though; I should only need retainers for 6 more weeks (fingers crossed!), I got medical clearance to participate in the study, and I have no skin cancer.

Before I hit the road today I wanted to fuel up with a good breakfast.

Chobani Champions Honey-Nana yogurt, a sliced banana, and GH granola.

I’m seriously going to cry when this granola runs out!  Anyone from Charlottesville want to ship me a box??

As soon as breakfast is done (and I finish packing, ahem) I’m getting in the car.  See you from Ohio!

The Board Beard

Adam is finished with his Step I Board Exam!!!  He won’t know his score for a while, but this means he has a free week to relax with absolutely nothing he should be studying.  This also means he’s finally going to shave.

That, my friends, is a “board beard.”  The husband has had a (normal, groomed) beard for several years now and I love it.  Much to my chagrin, he decided a month or so ago to grow a board beard.  Basically, he wasn’t going to shave again until after the exam.  I’ve been sharing a bed with Paul Bunyan, lovely.

But boards are done, so that thing’s got to go!

My day was a little more low-key than Adam’s obviously.  I did get up at 6am to make him a protein smoothie, but I’m the driver this evening so I crawled back into bed until 9:30 to make sure I was well rested.  Since I did the prep work last night, I awoke with breakfast waiting for me.

I dumped 1 sliced banana, 1/4 cup oats, and 3/4 Silk Light Vanilla Soy Milk into the 0% Plain Fage container with the last bits of yogurt.

This morning all I had to do was stir in some cinnamon sugar and move my overnight oats to my new mug.

I picked this kitchen addition up from Budala Pottery at the Allentown Art Festival and I’m loving it.  It has a nice round bottom (great for people who prefer to eat things out of their mugs than drink) and I love the look of the handle.

After breakfast I had planned to go to the gym but I’m starting to get nervous about driving all night (and moving all day!) so I decided to skip it.

Lunch.

One last serving of vegan pasta leftovers, deveganized with parmesan cheese.

It felt good to get some veggies into my system before I head on the vacation I’ve deemed “Frozen Yogurt Tour 2011!”

Plus the last of the soy milk with chocolate syrup.

If it looks frothy it’s because I shook the crap out of it.  I recently read in an issue of Cooking Light that if you aren’t shaking the sludge from the bottom of your soy milk you’re not getting the added calcium.

I spent the afternoon packing – both of our bags, car snacks – and as soon as Adam gets home and shaves we’ll be ready to hit the road.  We are reaching his parents’ house sometime in the middle of the night and spending all day Sunday helping them move.  There’s no internet at their house so I will see you guys on Monday!

I feel a little strange writing this post because today felt a little strange.  We haven’t been getting enough sleep and I feel like I’ve been walking through a haze.  I’ve been insanely hungry and I’m sure it’s tied to my lack of sleep.  Though let’s pretend that I’m hungry from my good habits instead of my bad ones, like my workout this morning!

I had 40 minutes of cardio on the agenda so I hopped on the elliptical – level 6 random – for 40 minutes.  I worked up quite a sweat, but my pace was super slow and I knew that I wasn’t really pushing myself so I added 25 minutes on the stationary bike.  I had absolutely no idea what I was doing with the fancy tv-style settings, but I was dripping when I finished so I must have done something right.  As I was getting off the bike, I spotted a fun looking game setting that I’m eager to try out next week.

By the time I got home I was hun-ga-re!  Enter my newest dream team.

I topped a 1 cup serving of Quaker Golden Maple Oatmeal Squares with a serving of Amande strawberry flavored almond milk yogurt and 2 Tbsp of crunchy peanut butter.

I probably won’t buy this yogurt again, the texture was definitely a little “fake” and I’m not too keen on non-Greek flavored yogurts anyways, but I do highly recommend it for any vegans looking for a yogurt fix.  I sent my pb through a spin in the microwave to get it all melty and it became very swoon-worthy.

Unfortunately I didn’t eat “breakfast” until I got home and showered from working out and it was near noon.  My insane hunger coupled with the weird meal times meant I ended up grazing all day.

I had a perfect, crunchy pear.

And a packet of cinnamon roll Oat Revolution with brown sugar, a splash of skim milk, and a big handful of raisins.

Around 2 I did stop stuffing my face long enough to get gussied and leave the apartment – it’s time to find a summer job!  My long stroll up and down Elmwood (in a suit, with a packet of resumes) wasn’t fruitful yet, but at least it got me back off the couch.  I have a couple of prospects I’m feeling hopeful about, and I’m keeping my fingers crossed because the next step will be looking for jobs that aren’t walking distance from the apartment.

Adam picked me up towards the end of my walk home and we split a mini turtle Blizzard.

Then we came home and made a pile.  <– watch “Where the Wild Things Are,” you’ll thank me

I was flying solo for dinner so I went simple.

with a big plate of baby carrots to get in some veggies.

Notes – 1. I added a slice of cheese to that burger right after I snapped the photo.  2. My hand has been sneaking into the tin of cashews all evening but there’s no pictoral evidence.  3. Those burgers are really good!

And with that, I’m off to watch “Missing” on Netflix Instant Watch.   I rediscovered it recently and it’s rocking my socks.  Is there anything Canadian tv can’t do??!  I also loved “Are You Afraid of the Dark?,” “Braceface,” “Nothing Too Good for a Cowboy,” “That’s So Wierd,” and “In a Heartbeat.”  <– loooove

Blah, Blah, Blah.

Blah, blah, blah.  Today was just blah.  My mood was blah, my food was blah, my workout was blah, my photos today basically redefine the word blah…

We started our morning by pulling the pre-made chia seed and banana buttermilk pancakes out of the freezer.

I topped mine with a smear of Smart Balance Light and drizzle of maple syrup.

They were good, not boring and blurry like the picture suggests.

Adam drove me to school – a high point in the day because the wind here is ca-razy! – so I could attend my final Biochem lab, my last science lab ever in my degree!  That last lab bit would be a lot more exciting if we didn’t have a huge lab final next week that is totally throwing off my study plans for my other finals.

In the afternoon I also attended a study session for another exam that is making me want to curl up in a ball and cry.  When I take my Metabolism final two weeks from now we will have a 5minute break after the test and then we’ll be sitting for a comprehensive exam that spans the material from a course two semesters ago through now.  Yay.  <– can you see why I’m in a blah mood?!

In between test bad news #1 and test bad news #2 I did manage to go to the gym.  My half marathon training schedule (which I promise to share on Monday) had me slated for three miles, so I hopped on the treadmill.  Aaaaaand I confirmed that I can’t run three miles without having to stop for breaks.  Ugh!  I ran 3 frustrating miles, followed by a 10minute cool down for a total of 3.5 miles and 40 minutes.  With a 5-minute strength/stretch session afterward.

For lunch I packed overnight made in the morning oats.  I combined and let stew –

  • 1/3 cup raw oatmeal
  • 2/3 cup skim milk
  • a 0% Plain Stonyfield yogurt
  • 1/2 a sliced banana
  • 1 Tbsp brown sugar
  • 2 Tbsp raisins

Tasted delicious, but looked as brown and boring as my breakfast –

Plus some greens in the form of roasted green beans.

Still tasty cold, and two days later, ps.

I was feeling seriously blah when I got home, and felt myself heading toward Crankypalooza.  So I did the not-being-a-psycho-wife thing and took a long shower, scrapped our dinner plans, ordered nachos with extra black beans and sour cream, and cuddled on the couch with Adam to watch some Scrubs.

A serving (weighed out because if you don’t weigh it you’ll seriously just eat the entire bag) of mini Reeses was also consumed.

I’m not sure if it was the cheese, the cuddling, or my Zach Braff crush, but my bad mood lifted!  And I knuckled down and finished off all of my remaining work for one of my classes; which further helped to lift my mood.  Bring it on finals week!
