Scarlet In The Face

Boy was I red in the face about skipping a post last night!  Nah, not really 🙂  Actually we got home close to midnight and I knew I had an early morning so I made the healthy living decision to get to bed.  Sometimes I forget to prioritize sleep, which I’m sure relates to the fact that it’s a month later and I’m still coughing.

Back to yesterday.  My test went well.  Not as well as I would have liked, but at least this one I’m sure I passed!  Plus a test meant getting done with class early – I’m a super fast exam taker – which meant I had time to switch my music class to pass/fail (whew!) and get home to visit the husband (yay!).

I had just enough time for a bowl of freshly chopped pineapple before I had to head back to class.

My music class still feels long (at 6-8:40 it is long!), but now that I’m not terrified of what it’s doing to my GPA it feels a little less tedious.

We had to run to Walgreens across town, and I can pull up our Groupons on my phone, so we ended up going out to dinner at 9pm on a whim!

We headed to Scarlet, a cozy little spot that is actually right down the street from our old apartment.

The inside looks fun and inviting, and we always kicked ourselves for not walking over there last year, but after tasting the food it appears we didn’t miss out on much.  The meal wasn’t terrible, and there were highlights, but overall it was disappointing.  Buffalo restaurants all seem to have menus that read like New York hot spots and food that tastes like TGIFriday’s.  But it was fun to have a Wednesday night date with the husband regardless.

Before we realized everything on the menu was fried, we decided to split 4 appetizers.

Adam and I always just eat off of the same plate, so I’m not even going to attempt to show you portion sizes this post.

We started with complimentary bread with flavored butters (tomato, garlic, and honey).

Then Three Cheese Fondue,

Buffalo Shrimp,

Tempura Chicken Tikka,

and Artichoke Francaise.

The buffalo shrimp were a low-point.

The breading was thick and spongy, the sauce spicy in an overpowering way, and if you’re going to go ahead and serve these deep-fried then you might as well use blue cheese dip rather than haphazardly tossing on blue cheese like someone’s eating these with a fork.  We left the shrimp basically untouched and if all the food had been like this we probably would have left, but thankfully other things were a little better.

The chicken – the one thing we knew would be fried – was pretty good.

The peanut sauce had a nice back spice to it.

The artichokes came in a fabulously lemony butter sauce,

but again, we were expecting something that wasn’t fried.  I enjoyed the big, meaty pieces of flesh, but Adam – who usually adores artichokes – wasn’t a fan.

The high point of the meal was the fondue.

We never could identify what the three cheeses were, but this had great texture (no graininess) and paired well with the apple slices.  Adam scooped into the actual bread bowl a bit and declared it nice and doughy.

So overall not the best (or healthiest) meal, but still fun!

This morning I had to be up early to register for my Fall 2011 classes.  I got everything I wanted, yay!  Actually, I should say I got everything I needed; what I really wanted was a forensic psychology class, but it didn’t fit in my schedule.  If I had my druthers I would be able to take forensic psych and forensic anthropology, in addition to my other courses.

Life for the rest of 2011 planned out, I made a nice fruit salad for breakfast.

This was a mix of pineapple, Cara Cara orange, banana, honey, unsweetened shredded coconut, and a few honey peanuts.

The combination of flavors was great.  I almost never eat my fruit with a fork but it’s actually really satisfying.

What classes did you take just for fun in college? 

My first time around in undergrad I switched majors (communication –> education) after a year of taking almost all communication classes so I took the maximum number of credits each semester just to graduate on time.  Back then I was sad I didn’t get to take more English courses (my 2nd major).  Now that I’m back in school I took an Anthropology course just for fun, and plan on doing one again whenever it fits in my schedule.

Often Blogged Activities

We’ve reached the week’s end, but I suppose the weekend is more exciting to those of you who aren’t on spring break 😉

It’s my mom’s last day here, but we kept things low-key.  We did have fun introducing her to often blogged activities.  Like eating yogurts at home for breakfast.

I went with Greek Gods fig on the bottom.

Soooo good!  I don’t actually like figs that much, but this yogurt is my favorite.

We spent the day running all sorts of fun errands, like going to Target, buying groceries, and hitting up the post office.  We live large like that.  We did at least introduce my mom to the blog fodder that is Wegman’s hot bar.

I got bunches of veggies,

with sweet and sour chicken and a mushroom bun.

The afternoon was low-key, but come 5pm I was still starving!  My hunger has definitely returned.  I made myself a cocoa for the drive to dinner.

Dinner, by the way, was from Spicy Thai, and it was fantastic!  The three of us shared an appetizer plate to start.

Veggie egg rolls, tofu tod, tempura eggplant, and crab rangoon.  Yes, this dinner was rather fried.

For dinner Adam and I split cashew chicken,

and Pad See Eiw with tofu.

The cashew chicken was not our favorite,

but the pad see eiw was ridiculous good.

If you haven’t tried broad rice noodles yet you’re crazy!

And for dessert, we introduced my mom to the awesomeness that is mini ice-creams.

I went with Double Fudge Brownie.

All is right with the world.

Tomorrow we’ve got to head to the airport at an ungodly hour, and then we’ve got brunch plans and I’ve got a volunteering obligation.  I’ll be back another evening 🙂

And Fruit for Dessert

Hello from Ohio! I’m glad to be here, but getting here was a freaking disaster. There was an issue with our alarms, and we got a late start and a parking ticket! Ugh.

We had to stop at Wegmans on our way out of town, and hot bar brunch was a bright spot.

Lots of veggies,

and sweet and sour chicken.

I also snagged .12 pounds of yogurt pretzels.

On our first stop I picked up a coffee.

Half regular coffee and half (sweetened) white chocolate cappuccino. I’ve decided I pretty much only enjoy flavored coffee.

We spent the (looooong) trip talking and listening to music. All of our road trip cds come from the music that used to be on Scrubs. I know nothing about music now that there’s not Zach Braff to tell me who to listen to!

We reached my grandparent’s house just in time for dinner.

But first, a cheese course.

I also admired my grandma’s amazing Easter decorations,

including a ceramic bunny I made in grade school,

and snagging a mini-spoonful of jelly beans!

My mom cooked a fun medley dish; rice, chicken, celery, tomato, green onion, almonds, rice noodles, pineapple, cheese, and gravy.

With asparagus cooked in truffle oil (Adam was swooning!),

and fruit salad.

And we’re about to take a middle of the night trip to the store (my mom’s not crazy cakes, she just doesn’t live stateside anymore!  Going to the store any hour of the day is more exciting to her and me than someone who grew up in America) so I’ve got to hurry off!

Short On Dinner

10pm is not technically late, but it feels late, and there’s really no good reason I’m not in bed already so I’ll keep this quick.

We had to take our cars in to a shop this morning (nothing big, just yearly brake, oil, and other things I’m sure I don’t know because I’m such a girl) so we brought them both at once and made an event of it.  Drive in, walk 8 blocks to Starbucks, study, walk back, drive home.  While we studied I made sure to hydrate and caffeinate.

That is a big bottle, but it looks extra big because my non-fat latte is a short, not a tall.  Did you know that all the locations in America carry short cups, they just don’t advertise them?

We had movie plans with friends so it was a quick turnaround once we made it home.  I snacked on baby carrots on the drive.

The husband and I were both a little irritable at the thought of watching a movie without lunch but thankfully(?!) Adam got the time wrong anyways and we had an extra hour or so to kill at the mall.  We ended up going to Jack Astors for lunch.

The husband and I split the Crispy Honey Sesame Chicken.  This was chicken with carrots, green onions, snow peas, red peppers, and bean sprouts in what was billed as a Thai-honey sauce.

The chicken was tasty and the veggies were good, but the sauce ended up tasting like bad American-Chinese food.  We cleared the plate though.

We also split some Reese’s Pieces at the movies.

Sucker Punch, by the way.  The movie was visually stunning and the musical score was fantastic, but the plot was soooo slow.

Things took a bit of a downward turn from there productivity-wise, but honestly any day I spend with the husband is a good one.  I made a major dinner fail.

I used the last of most of the ingredients, trying to make a mini pizza with sharp cheddar and an egg on top.  First I had a cooked pizza with a raw egg on top.  Then I had a cooked egg with a burnt hockey puck on the bottom.  I didn’t even take a picture it was such a disaster.

But, good news – when dinner fails you can finally go get that ice cream you’ve been waiting for.

Maybe I should eat some fruit tomorrow?!  We really did try to get me real dinner, but 40 frustrating minutes in the car later determined that Buffalo isn’t exactly a mecca of healthy take-out and I was better off just going to bed.

So I better get going to bed!

Biochem Makes Bad Bloggers

I’ll leave the correlation between fences and good neighbors to Robert Frost, but in my experience Biochem makes bad bloggers.  Especially Biochem exams one has not adequately prepared for!

Yesterday’s post was sacrificed to a cramming session.  Unfortunately, the cramming session was then sacrificed to a orthodontist appointment and subsequent headache.  You can’t win ’em all!  Our teacher is very, very kind, so I probably ended up with a B anyways.  Sidenote – I swear I’m usually not such a terrible student, my (22day!!) sickness is really taking its toll.

I am blogging today though, with pictures and everything, but there’s the problem of not having much to blog.  My involuntary breakfast ban continues, but I did get coffee.

A grande non-fat latte with almond roca syrup (2pumps instead of 5).

I was hungry for lunch – my brain used up all my glucose on the exam – but I hadn’t done a great job of packing.  I brought a Revolution Foods tropical fruit packet.

And the newest Fage, 0% with Mango and Guanabana.

Oh. My. God.  Did you know that Gaunabana is the formal name for Soursop, my favorite fruit of all time that I almost never see outside of the Caribbean?!?  When I was saw the flavor at Wegmans I was so excited I bought two right away (and did a fairly embarrassing dance in the aisle!).  It was divine! 

Yogurt perfection aside, I hadn’t packed enough food!  Thankfully the vending machines in the Dietetics building are stocked with mostly healthy things, so I was able to get this packet of tuna salad and crackers.

It was a little strange – I don’t usually add water chestnuts to my tuna salad – but it did the trick of holding me over through my last nutrition class.

I spent my break between classes working on my lab assignments and watching the snow pile outside.  Then, wonder of wonders, my night class so cancelled!

Eeeeeee!

I came straight home (the husband picked me up) and dove face first into a plate of Granny Smith apple with a serving of Smuckers Natural PB with Honey.

Then we got started on dinner. 

Lemon Chicken Fricassee with Biscuit Topping from Rachael Ray.

We followed the recipe except –

  • substituting olive oil for shortening
  • substituting chicken breasts for thighs
  • using a frozen peas and carrots mix that also had lima beans, corn, and green beans
  • using some packaged frozen biscuits rather than making them

It was ok.  Only ok.  Adam said 6 out of 10, I said I won’t be eating any of the leftovers.

Plus a side salad.

Arugula topped with leftover roasted butternut squash, craisins, buttermilk blue cheese, and Newman’s Own Lite Raspberry and Walnut Dressing.

The salad was tasty at least.

The meal might not have been very good, but the entertainment was; season 5 of Futurama is finally on Netflix Instant Watch!

Sweet Sore First Day of Spring Sunday

Can I tell you guys how sore my legs are?!  Moving around involves lots of lurching and waddling.  My longest runs before I got sick were about 2miles so the 5k was long comparatively.  Speaking of tired things, I kept us up past 3am the last few nights with my coughing, so we’ve both been a little tired.  The cure for that was a nice long, college-style sleep-in until noon.

When we did get up we had some errands to run that took us towards Wegman’s hot bar.

I got a nice mix of veggies,

and a few pieces of sweet and sour chicken.

I also snacked on a Crunchie Bar for dessert.

More candy from England (via Canada), this honey sponge candy is so crunchy and good!

Dinner was easy-peasy, and cheesey.

4-cheesey!  Newman’s Own Four Cheese Pizza.

I was sent a free coupon for the pizza through the Foodbuzz Tastemakers Program.

The cheese mix was tasty, but the crust was a little bit squishy.

I ate my serving with some roasted green beans.

It ended up being a tasty meal,

which is good, because I’ve packed the exact thing for lunch tomorrow!

In sweet Sunday spirit, we also made cupcakes.

Healthy Chocolate Cupcakes with Marshmallow Topping.  The recipe came from Shape magazine.

I followed the recipe exactly for a change, except that I made 16 cupcakes instead of throwing some of the batter out.  <– Seriously the stupidest instruction I’ve ever read; why on earth would you instruct readers to throw out part of the batter?  Just say the recipe makes 16 servings instead of 12.  And even with “extra” cupcakes we still had frosting left over, making it even stupider!

Stupid recipe or not, it was a stupendous recipe.  The frosting tasted exactly like marshmallow topping!

I enjoyed one cupcake for dessert.  I was going to have another, but chocolate cupcakes don’t really throw me, so instead I ate a pinch bowl of icing.

Perfection.

Exotic Culinary Exploration

After our race this morning – and a very long recovery in the shower – we spent the rest of the day doing exotic culinary exploration.  If you want to get technical, our culinary travels took us to Jamaica, England, Korea, and Canada.  If you want to get really technical though, just Canada.

On our way out of town we had an errand at a local bakery and ended up sharing this neat cookie.

Since parts of Canada are only a 30 minute drive away, we occasionally get Groupon offers for places ‘up north.’  When one came up for a Jamaican spot, my homesickness forced me to bite.  And thus we headed to Kool Katz.

It was a low-key spot and the wait staff was so friendly.  We ordered a random sampling of familiar dishes.  I went with a veggie pattie (fried dough stuffed with seasoned veggies),

And a jerk shrimp skewer appetizer (jerk = a fantastic spice rub).

I also shared bites of Adam’s curried chicken with beans and rice and tostones (fried plantains).

Everything was tasty, but honestly the best dish at the table was this side of cole slaw.

It was tart instead of creamy and full of juicy pieces of citrus fruit.  Best cole slaw I’ve ever had!  Overall the meal was good, but it didn’t fill the urge we were looking to satisfy.  Different places around the Caribbean often serve the same types of dish, but Jamaican style is just not the same as St. Thomian.

While we were in Canada we took advantage of some great views of Niagara Falls, as well as proximity to exotic candies.

While we hung out this afternoon I polished off the Cadbury Pep Bar (England).

The Pep Bars are basically York Patties, but better!

This evening we met up with a big group of friends at Koreana for some tradition Korean fare.

I ordered a spicy chicken dish that came with sticky rice.

It was ok, but the spice level wasn’t as intense as I was looking for and I ended up leaving half of it on the plate.  Thankfully the company was amazing as always.

When I got home I supplemented my dinner with some baked fries.

Now I’m done.  It was nice to be hungry after yesterday’s incurable bout of satiety 😉

Mirror, Mirror On the Wall

The healthiness level of my food consumption today mirrors the level of health I felt all day.  That is to say, not very healthy at all.  I feel rough.  It’s rough being sick for 16 days straight.  It’s rough finding out that I have a C average in two of my main classes because I’ve had so many tests fall in those 16 days.  It’s rough having a music exam that I literally only had 1 feasible hour to study for.  Long Wednesdays are always rough.  You get the picture.

Breakfast started out well with a big Granny Smith apple dipped in a serving of natural honey peanut butter.

But as I got closer to leaving my sore throat was begging for a cookie dough ice-cream sandwich.

I guess it’s a good thing the treat we’re obsessed with only has 160 calories?

I totally couldn’t get it together to pack lunch and ended up at Taco Bell on campus of all places.  Once there, I proceeded to drive the workers crazy by knowing only that I wanted a chicken burrito and asking the ingredients in all the varieties.  I believe what I ended up with was a chicken grilled stuft burrito.

Question – why the heck do we have to go with “stuft,” stuffed is literally one letter more?  Also, why was this so monsterous?  I nibbled away for a solid 45minutes (I knew dinner would be iffy so I wanted to make sure I was very fueled) and I still conceded defeat to the final quarter.

Dinner was in fact the definition of iffy. 

Buffalo wing and blue cheese chips.  They confirmed both that my cold has killed my taste buds and that I’m a terrible healthy living blogger when I’m sick.

Did I mention that I’m sick?

What do you like to eat when you’re sick?  Other than really disliking salads, I don’t have any “sick foods.”  It seems like I should be eating normally because my sickness is in my chest/head and not my stomach, but in fact I’ve coughed so hard that I’ve made myself throw up every day of the last 16 days.  It’s been fun around here.
