Nightmare Before Christmas

There was no blog post yesterday because I was so exhausted that I bumbled around all day without really doing anything!  We set our alarms for 8am and at 10:00 the husband was shaking me awake and I had no recollection of turning off the alarms.  Finally the husband remembered – after I told him I couldnt’ study because I was too tired to lift my arms – that I had such a bad nightmare on Saturday night that my moaning and flailing woke him up.  I don’t remember that either, but he told me I looked pretty pitiful.

When I got up today, the idyllic scene outside my window was like something out of one of my nightmares –

Yes, it’s gorgeous.  But – that’s the kind of snow you make cocoa and cuddle by the fireplace in, not the kind of snow you walk 30minutes through to Organic Chemistry!

But after Sunday’s #fail I was determined to make the best of today; even though I woke up at 9:30!  I started my day with some good stretching.  Not gonna lie, then I started my day with this (after brushing my teeth of course!) –

Then I dressed for battle.

I take the dull out of bundling! (Say that out loud for me, pretty please?)

Oh yes, those are children’s snow boots.

Even my boots couldn’t fully save my trek though, it sort of sucked 😦  When I lived in Brooklyn and everyone walked it was kind of fun, but here, where I’m the only one in the snow, it’s a bit embarrassing.  At least I never really felt cold, probably because I got so sweaty; galumphing is a good workout!

I got to school early to pick up a portfolio (100%, booyah!) and then used the space before class to try to make up yesterday’s lost study time.  While I worked I snacked on a serving of Kugel.

I also drank a medium skim gingerbread latte (half pumps) and got distracted talking with a friend.

During Anatomy (87% with the curve on Friday’s test, booyah!) I slurped down a Revolution Foods Fruit Mash-Up.

As soon as classes were over, and I confirmed with the husband that he could pick me up from school, I got my study on.  I’m disappointed in myself that I screwed around so much it took me until after 7 to finish my notecards.  I’m proud of myself that when I was done at 7 I headed to the gym anyways!

I took my notecards on the elliptical – 35minutes, random, level 6.

We got home close to 9:00 and I’m pretty proud of the dinner I pulled together – fruits, veggies, and dessert!  First was a green purple monster.

This bad boy was a blend of frozen spinach, frozen blueberries, orange juice, Silk Almond Milk, and honey.

I gave the husband the extra and he loved it as well (although his did have a little extra sugar blended into it!).

Next up was a taste of the South.

I randomly picked up this can of Hoppin’ John when it was on sale a few weeks ago.  I’ve never eaten (heard of) Hoppin John before so I pretty much stuck with the directions on the can –

I did a 1/2 batch (one can) topped with Applegate Farms turkey bacon, Sriracha, and a little brown sugar.

I portioned half of it into a bowl, and tried something new.

Pretty good, who knew I liked black-eyed peas?!

Dessert was “new” as well, but there was never any question about liking it.

Oh. My. God.

This, my friends, is a (half)-batch of Jenna’s Caramel Sauce.

Well, that’s what’s left of the batch after Adam and I got to it.  It has a deep, decadent flavor and is sweet and rich.  Make it, make it, make it, make it!

Eaten drizzled (liberally) over a small bowl of vanilla ice-cream with lots of sliced strawberries.

Really it was just an excuse to eat some strawberries 😉

Yum!  Quite a pleasing dinner indeed.

Now I’ve got to hurry to shower so I can get to bed like a girl with an important test tomorrow.

We’re All Winners Here

I got my baby back, and I don’t mean ribs!  It feels so good to have my laptop back 😀  Although things aren’t quite back  to normal……I’m blogging from Ohio! 

The weekend worked with everyone’s schedules so we drove down to visit our in-laws and niece.

I was running around all morning like a crazy person trying to get things ready for our last-minute visit.  Packing, loads of dishes, clearing out the trash, and more.  I was so busy I didn’t even have time to eat.  Reason #12679459 why I probably shouldn’t be a healthy living blogger – I didn’t have time to eat, but I did make time for this –

And time to set up to take a picture with my chin.

Priorities, people!

I came home in between classes this morning to pack, and thank goodness because this was on my doorstep –

Did you know I won a case of Chobani?  If not you should probably start following me on Twitter.  We had to write an ode to our favorite flavor and I cinched the win with this bit of prose –

I’m so excited to taste so many new (to me) flavors!

Adam picked me up from class this afternoon and we got on the road right away.  The stretch of highway between here and Michael’s house is positively barren foodwise but I finally accepted that it would be McDonald’s or nothing.  Thankfully I remembered that their salads are actually not bad.

I got the Southwest salad with grilled chicken and was totally pleased.

My late lunch held me over well and I’m glad I didn’t wait any longer or I would have gnawed my arm off by dinner time.

The plan was to see a movie tonight so dinner came from a mall food court.  I ended up managing to find a pretty nice little natural burger spot.

I ordered a non-cow (veggie) burger with pickles and bbq sauce.

Nothing gourmet, but it was the best food court meal I’ve ever had.  The pickles were thick cut and fantastically crunchy.

During the movie Adam and I split this box of Crazy Core Skittles.

And the movie?  We saw “Skyline” which I can only describe in one word – no.  Just no, it was baaaaaaaad, please don’t subject yourself to it!

Squashing My To-Do List

When Adam and I were miserable, teaching in New York, we would escape in entertainment.  I genuinely believe that “Scrubs” saved our sanity (and our marriage!) during our first year.  During our second year, things had gotten much easier but they were still much harder than we had ever imagined.  On Sunday nights, when none of our plans for the week were complete and things felt hopeless because even after we stayed up all night writing them we’d still never get to teach the damn plans, one of us would say it – “Do you want to see what’s playing at the movies?

Something was always playing.  And if there hadn’t been I’m pretty sure we would have convinced ourselves that something from the previous week was worth rewatching.  Our studio apartment was on the corner of 2nd Avenue and the movie theatre – a fabulous revamped spot with a galaxy of stars sewn into the carpet and classic movie posters lining the walls – was on the corner of 13th.  Those eleven blocks, and every single store and restaurant along the way, are forever etched into my memory.  No matter how we felt before the decision to see a movie, that walk always felt hopeful.

But times have changed.  Now I’m in a Dietetics program (that I quit my job career to join), and letting Adam talk me into seeing “Paranormal Activity 2” (I hate scary movies) at 9:10 on a Tuesday night is just a bad idea (a really bad idea).  But that’s what I was doing yesterday!

Thankfully, today I really did get it together and I managed to take care of my to-do list.  My eats were nothing if not unorthodox and I can’t help but credit that in my success at actually taking care of business.  Should I have chocolate for breakfast every day?

Because that’s what I did today.  I let Adam gobble up most of the homemade pb cups, but this one was special.  A layer of chocolate and a layer of butterscotch, sandwiching a layer of crunchy peanut butter?  Oh yeah!

Breakfast’s dessert was significantly healthier.

Yesterday I roasted this delightful orange acorn squash with a teeny bit of honey and salt.

And today all I had to do was reheat and mash with a bit of Smart Balance Light.

Sort of like mashed potatoes, but a thousand times better.

For lunch I crunched through Anatomy with a bag of baby carrots and sliced Empire apple.

Btw – after the curves I scored an 89 on the Orgo test and a 74 on Anatomy.  I need to step up my Anatomy game for the remainder of the semester (I do, however, have a 96% as my Anatomy Lab current class average!).

Adam came to study with me between classes and Orgo lab and generously shared a few bites of pizza with me.

When I realized that I was actually considering punching him in the face and trying to make a break for it with the pizza I deemed it time for an early dinner.

Huuuuuge chicken burrito.

We took a quick walk around the ‘hood on the way home (glorious!), so 4 hours after my burrito I had dinner, part 2.

Low fat plain yogurt topped with 1/4 cup gingerbread granola, 2tsp maple syrup, a sliced plum, and a sprinkle of unsweetened shredded coconut.

I need to remember this combo in December, it felt very ‘visions of sugar plums.’

Maybe you’ve noticed my lack of gym time?  My plan/goal is to smash my to-do list over the next 4 days.  Whether I succeed or I fail in that endeavour, I’m returning to the gym come Monday!

Time to Break the Cycle

I’m back!  Hell Week part deux is over!

This past week wasn’t a total fail, but I wouldn’t call it a success either.  You see, there’s this cycle I’m trying to break.  I’m really ready to change, but right now it’s basically a schedule that goes like clockwork.  Here’s what goes down on weeks with multiple tests –

  1. I get really excited about all the studying I’m going to do.  I write up an intricate schedule of all the things I’m going to accomplish.
  2. I look at the schedule and get really overwhelmed.
  3. I get so overwhelmed that instead of studying for any of my tests, I stick my head in the sand like an Ostrich and watch Grey’s Anatomy.
  4. I stop going to the gym and I eat a bunch of crap, because I’m “busy.”  Except I’m not busy, because I’m not actually studying.
  5. I feel like crap physically (probably from eating crap) and mentally because I’m disappointed with myself.

This happens every time!  When I was a kid my dad used to tell me that the worst part of procrastinating when doing an unpleasant task is that in addition to doing the task you have to spend a lot of time thinking about it.  I know not to do this, but somehow it hasn’t quite clicked 😉

I didn’t have time for breakfast because I was running around like a chicken with its head cut off (not studying for my tests sadly, I had 4 papers to read for my Nutrition class this morning).  I did manage to warm up with a mug of honey vanilla chamomile,

That’s a good use of time people!

The papers presented in Nutrition today were actually fascinating – the impact of obesity on pregnancy, the benefits of breastfeeding, nutrition intervention in people with developmental disabilities – but I was too wound up to really focus.

We had a block of time before Orgo and I ended up buying a veggie sandwich while I studied.

Meh.  Too much bread, not enough veggie; I ate half.

Then it was time to face the music.  I think the hardest part was that I had the two tests back to back – I literally had to sprint from my Orgo exam to my Anatomy exam.  In the end things went better than they could have gone.  I’m guessing a B/C on the Orgo exam and a C/D (ugh!) on Anatomy.  Moving on…..

I’ve got a weekend of freedom!

Actually, we’ve got some excitement on the agenda tomorrow; Adam, Katie and I are going to run in a 5k!  I’m not even close to being ready for this race (when will I run something I’ve actually trained for?!?), but it will be fun to see if anyone comes in costume.

When I got home this afternoon I decided to dig deep, roll up my sleeves, and start working on breaking that cycle!  I reorganized my binder and got started on Orgo reading.  (go me!)  While I read I ate a crunchy snack.

and a serving of Sing Buri Cashews that Sahale Snacks sent me.

The nuts were soooo good.

The mix of cashews, peanuts, sesame seeds and dried pineapple was sweet and savory with just a perfect bit of spice.  I never like cashews when they are by their lonesome, but in mixes like this they are divine.

Plus a small vegan pecan pumpkin blondie.

And then it was time for a quick dinner.

(That’s on the small plate from my blondie)  I reheated some leftover roasted broccoli in 1/2 Tbsp of butter, then scrambled in two Eggland’s Best eggs, and topped with a dollop of chunky salsa.

Yum, I love eggs with broccoli!  When I cook eggs I let the yolk and white set separately for a while before I scramble; it gives them the best texture.

Dinner had to be quick because we were meeting a group of friends for a movie.  I packed my own snack, a small assortment of candy from the bulk bins.

Sidenote – when I get candy from the bulk bin I pick and choose the exact pieces I want.  I generally take 1-2 pieces of each candy (that’s 1 jordan almond or 1 gummy bear), it takes at least 10minutes, and I drive the husband crazy.

Anyhoo, we saw “Red” and it was hysterical!  Everyone in the group agreed that it was one of John Malkovich’s best movies.  Two thumbs up.

The Pants

What, I drop that mega-post on you and then I just disappear?  Sorry about that!  I was in a terrible mood yesterday and it just didn’t seem right to subject anyone but the husband to me.  Plus, I was actually in such a terrible mood that I couldn’t even get it together to make dinner so there wasn’t a whole lot of foodage going on.

A lot of times a bad day is just about a bad mood, and even though I know that I still couldn’t shake my rain cloud yesterday.  possibly because I had to get up at 6:30 on a Friday.  I rolled out of bed early, but on the wrong side of the bed!

I had to get up early to attend a meeting about an honor society I was invited to because of my summer school grades.  What I didn’t learn until after the 7:15am meeting is that I’m actually not eligible until after a 3rd semester at my school. 

The minute we left the meeting I was starving.  Not just hungry, stomach-growling, headachey, starving.  Nothing was open until 8:30.  I buy a medium coffee with skim milk.

I wait.  I get really psyched about an oatmeal bar in the food court.  It turns out a bunch of people called in sick and actually nothing is open.  I could go get food from the coffee place though.  I know it doesn’t make sense to some people, but I get more picky as I get hungrier.  If my stomach feels like it’s eating itself I want something good; I don’t want a dried out bagel or a mass-produced croissant.

I ended up wandering around campus for 1.5hours in futile search, getting hungrier by the minute.  Finally, minutes before class, I found this cup of grapes.

The grapes lifted my mood considerably.  But then in class I learned that the portfolio assignment due next week has to be turned in in an actual portfolio.  An actual expensive portfolio.  I’m sorry, I realize it’s not exactly cool that I have to budget for a binder, but it pisses me off that I’ve had to spend so much money on school supplies this semester.

After my 2hour class I went straight to a group meeting for a project.  We didn’t finish until it was time for Orgo, good thing I had eaten those grapes! 😉

I had absolutely no understanding of what we were talking about in Orgo.  None.  I started freaking out about the next test, and being super angry with myself that I let myself get behind on the reading.  By the time Anatomy was done I just wanted the day to be over.  I didn’t even go to the gym as planned, I just went home.  Sidenote – I do realize that the gym would have certainly lifted my spirits, but I was still starving.

I poured myself a serving of Terra Chips Blues.

The plan was to refill the bowl with some food-food as soon as I was done.  Yeah, about that; I never got off the couch!  I just let my bad mood spiral out of control.  Not doing any errands, or doing anything fun, certainly didn’t make me feel better and it just got worse and worse.

This morning I was determined to have a good day.  Really, it’s all about attitude.  When the alarm went off at 7:40 I read a magazine in bed before getting up.  I took a much-needed shower.  I cleaned the apartment – that one’s not actually that fun, but the mess was stressing me out.

I made a healthy, tasty breakfast.

A serving of Special K Red Berries with skim milk,

and some leftover fruit (papaya, mango, grapes, watermelon) I brought home from food lab.

Adam and I went on errands and took care of business (including buying that portfolio!).  When we got groceries we also got smile-inducing hot bar and a diet pop.

Who doesn’t love hot bar?

A bunch of green beans with a little bit of eggplant tomato salad,

cashew chicken with a tiny bit of fried chicken,

roasted veggies.

To round out the good mood vibes, I got a fun package from my parents.  With seasonal gifts.

And “the pants.”

Some background on the pants – When Adam was a freshman in college (I was a sophomore) his mom sent him a great pair of pajama pants.  They were super comfortable and I borrowed them often.  As time went on I eventually just stole them.  I was wearing the pants the Christmas morning that Adam proposed.  I wore them through recovery from all my various injuries.  The pants are the item I would save if the house was on fire.

The pants have been getting thin (they are old and I wear them a LOT).  I hardly ever wash them, and my mom has done many minor repairs.  Well, a few weeks ago I tore a huge hole through the left knee.  I sent my mom the pants in tears.  She rocks, and now I guess they are “the capris.”

When I mailed the pants, I threatened my mom several times that I would stop loving her if she threw away any of the fabric.  Instead, she made the legs into a pillow (dont’ worry, she also saved the scraps!) –

Adam and I love it.

I guess the point of the very long, whine-filled post is that today is a better day.  It always is.  And this took me so long to write that I took a snack break and ate a Brown Cow 0% Strawberry Greek Yogurt with homemade chocolate pb.

Random Sampling

There are two things you need to know about today going into this post – 1. It was an all over the place day; 2. It was chockfull of samples. Edited to add – whoops, make that three things – 3. I’m in a terrible, corny joke mood!  

Before I start I want to address the samples.  “Hello, Samples, how are you?”  Ok, ok, bad joke!  I just wanted to say that I respect my readers (you guys!) and try to give you the content you deserve (bad jokes aside), and I hope that this blog never feels like a commercial.  That said; I think part of my job as a food blogger – especially a healthy food blogger who also relies on a high volume of packaged foods – is to try, discuss, and introduce new and tasty products.  I hope you know that I would never sugarcoat a product that contains too much sugar (hyuck, hyuck), and that I always share my true opinion.  If I seem like I really like something, it’s because I do, not because I’m trying to impress a company.  And if it seems like I really, really like something, it’s because I’m kind of overeager and I’m pretty much always jazzed about something! 😀

All of that is to say that I started my morning with a sample.

Other than my diet soda addiction, I tend to shy away from “diet” products, so when Zone Perfect contacted me I figured it would be for a product that I should turn down because I wouldn’t purchase it on my own.  Then I realized that the products were cookie dough protein bars and all bets were off!  The bars came in a cookie jar (too cute!) –

And the packaging was adorable.

I decided to start with the Chocolate Chip Cookie Dough flavor; could it stack up to Balance Cookie Dough Bars (my very favorite product of all time)?

Yes!  I’m not going to diss BCDB’s by moving them to 2nd place (not a chance), but I’m pretty sure these firmly tie for my new favorite!  The flavor was mild but the texture was exactly like cookie dough.  The fact that there were chocolate chunks (instead of chocolate coating) made the experience seem 100% real.  I sort of felt like a naughty baker all through breakfast!  Are they healthy?  The short answer is, it depends.  Obviously all protein bars have more chemicals (and saturated fat) than a plate of waffles or scrambled eggs.  But tastewise this would make eggs its b***h.  If you don’t currently eat protein bars, I wouldn’t suggest throwing out your real food to buy these.  But if you do, then stock up immediately because these are amazing.  Note – I’m only taking CCCD here, I’ll let you know when I try the other flavors.

The reason I was eating an on-the-go breakfast in the first place is because I had to be at school at before 8am to meet with a teacher.  Afterwards I did some final studying and then I headed off to the big scary Anatomy Lab practical exam.  Phew, glad that’s over!  I dont’ think I got an A, but I did alright; and I’m very proud of how much I learned.

In between classes I did more errand running related to my transfer credits.  Please cross your fingers for me that it’s all sorted out soon.  I also finished a big chunk of work for a project, freeing up my afternoon.

Today’s Food Lab is one we’ve all been looking forward to for weeks – fruit!

There were triffles, crumbles, crisps, and an awesome variety of fresh fruits (papaya, mango, horn melon..).  My group made applesauce; it was delicious and I’m hoping to remake it at home soon.

I ran a few errands around Elmwood this afternoon and then Adam set off to multiple mail locations.  I got a fun box from Sahale Snacks that you’ll be seeing soon.  Also, Random Integer Generator picked #9,

I also got a fun mystery box!  When I was at BlogHer I had a long talk with the Terra Chips guys about how much I loved Blue, and I was thrilled to find this in the mail today!

Thanks Terra Chips!  We immediately tore the bag open and I had this handful x 3.

They are just regular potato chips but they taste so amazing!  The chips are extra thick and crunchy and the husband and I are both obsessed with them.

Next we headed to the mall where I confirmed the death of my i-pod, tear.  It wasn’t all bad though, I did have a coupon (I am on the mailing list to basically everything) for Aunt Annie’s Pretzels.

Jalapeno and Cheddar Pretzel?  Yes, please!

Cheesey and spicy and awesome and about a billionth of the calories of the jalapeno cheddar nachos I scarfed all last year (I looked it up, the pretzel has 300calories).  I ate a little bit more than half.

Finally, we made the evening a full-fledged date and headed to the movies.

We’ve been dying to see “Easy A” for weeks and I’m so glad we caught it while it was still in the theatres!  If you get a chance, see it!  The movie was funny and touching at the same time and the music and casting were awesome.  The dialogue was amazing and Adam and I pretty much want to grow up to be the main character’s parents.

I crunched my way through the movie with some prepacked snacks; a Gala apple,

and a cucumber.

We rounded out the date with a walk around the neighborhood when we got home.  Two things – 1) I am so glad I married someone who loves to walk with me; 2) I am so ready to go to the gym tomorrow!

When we got home I finished up dinner with a final sample of the day.

Special K Red Berries cereal now has more fiber, and I was sent a sample as part of the Foodbuzz Tastemakers’ Program.  Nutritional – 

I poured myself a heaping 1cup serving with skim milk.

Fab-u-lous!  I dont’ know why I don’t eat cereal more often, I’m always in love with it when I do.  It’s been a long time since I’ve bought Special K, but I’m putting it back on my  grocery list.  The flakes were just sweet enough and they kept their crunch, even through a long soak while I unpacked my binder.  Plus (especially for 110calories!) I found that a serving really filled me up.

In summary – 1) Today was a lot of fun; 2) I think this post just goes to show that it is possible to eat a healthy diet….in a hurry…..while still having a lot of fun (although my veggie consumption today was pretty sad!).

It’s F-F-F-Freezing!

Actually, that title’s a lie, my thermostat says it’s 65*.  But I feel pretty darn cold!  Right now (according to the thermostat and my phone) it’s 65* in here and 51* out there.  This leads to a couple of thoughts –

  • If I’m so cold in here, how the heck am I going to feel when I have to go outside?  And when I walk home from class at 9pm?!?
  • How much longer are we going to be able to push back putting on the heat?
  • Can I really wait until Sunday to switch out our summer and winter clothing?
  • Should we sign up for the October 30th 5k, or will the weather not permit the wearing of fun costumes?Th

My numb feet told me it was a good time to open up the Blueberry Cream Coffee I got on super sale at Wegman’s.

The flavor was good, although not at all blueberry.  Sadly, I didn’t realize until post-brewing that we are out of skim milk.  My Silk Almond Milk curdled 😦

I only managed a few sips of the mug and I still got a caffeine headache!  (Btw – my Orgo Lab tonight actually deals with decaffination.)

My tasty leftovers lunch made the headache seem like not such a big deal.

A big slice (~1.5servings) of Wegman’s Veggie Pizza, with ranch.

We got this we a free coupon for dinner last night and we pretty impressed; the quality was great for frozen pizza.  The veggies included peppers, broccoli, and black olives.  My only complaint is that I would have like MORE veggies on the pizza.

Hell Week But I’m Not Worried

Good morning, Monday!  I’ve got my own personal hell week coming up, and I fear that the blog will be neglected.  I wanted to stop by before the week starts to say hello goodbye.

Here is the basic deal, in addition to having both night classes this week:  Tuesday – 100 Test, 110 Quiz; Wednesday – Anatomy Test; Thursday – Anatomy Lab Test; Friday – Orgo Test.  Yikes!

Here’s what I am not worrying about this week –

  1. Getting up multiple, clever blog posts
  2. Scoring a 100% on all my exams
  3. Cooking gourmet meals for the husband and myself
  4. Running a marathon

Here’s what I am going to worry about this week –

  1. Posting once a day to give myself a routine
  2. Not failing my exams, and doing a job I’m proud of
  3. Helping the husband make sure we have some healthy food available
  4. Getting in at least 4 (small) work-outs before next Sunday
