Measure It Monday

It’s hard to measure where I am in my sickness because my symptoms keep changing.  I feel much more perky but my congestion and seal-cough continue.  I would say I’m 2-3 days from well?  Hopefully!

One vestige of deathly sickness that remains is my complete and total lack of interest in breakfast.  As a future RD I know the morning meal is important, but I just can’t make myself eat it right now.  I did get a big coffee when I got to campus though.

Grande nonfat latte with 1 pump of Irish Cream syrup, delicious.

As foretold, lunch was dinner’s twin.  A serving of Newman’s Own 4 Cheese Pizza,

and roasted green beans.

Plus some fruit snacks my mom sent during the break between classes.

We’re learning about breast-feeding in my Nutrition Throughout the Life-cycle class and it is so interesting!  The benefits of breast vs. bottle are immeasurable, even more vast than I had previously thought.  Plus we are exploring (just a bit) the socioeconomic factors that come into play.  Fascinating!

Random sidenote – I walked to and from school today in jeans and Adam’s sweatshirt, no coat!  Boo-yah.  The temperature is set to drop again tomorrow but I’m getting very excited about spring.

While prepping dinner I snacked on (an exact) serving of Popcorners.

Do you measure out things like chips, or just eat from the bag?  I only put my hand in a bag of chips if I’m planning on eating the entire thing, which I sometimes do!  Otherwise I always use my food scale to measure out a serving.  When it comes to snack foods like chips, the difference between 1-2 servings in satiety and satisfaction is nill, but the caloric difference can be huge.

Dinner was quick and easy but so tasty and wonderful.

Only 4 ingredients and no measuring required.

Goat cheese tortellini, butter toffee almonds, cubed butternut squash, and balsamic vinegar.

Cook the pasta as directed.

Roast the squash.  Actually, roast the squash, get nowhere, and finish it off in pan with a bit of butter.

Reduce the vinegar.

Combine everything (plus nuts) and fall in love.

This was perfect; a little savory and a little sweet.  Plus, you really can’t go wrong with goat cheese.

I made myself a broiled grapefruit for dessert.

But then I discovered that I hate grapefruit.  Oh well, at least I know.

Instead I had a cupcake.

Not just a cupcake though.  I just took the picture to show you guys how cute and perfect it was.

Instead I crumbled it over a Stonyfield 0% Chocolate Underground Yogurt,

for a much less cute, much more delicious treat.

Say it with me – “Mmmmmn!”

What sort of foods do you measure?  Do you use cups/spoons or a food scale?  I measure cheese, snack items, cereal, peanut butter and maple syrup.  Plus a few other things I’m sure I’m forgetting.

Newman’s Own Vlog

I got a lot accomplished today, but we are reaching the ‘loopy’ portion of the evening so it’s important that my cold-carrying self keep this quick.

Lunch was a dynamic duo, 0% plain Chobani,

with a Justin’s maple almond butter packet.

I say I don’t like almond butter, but really everyone likes Justin’s Nut Butters!

Stimulating Conversation

We are mere hours away from Friday!  Thursdays I have my morning lab and (sometimes) an evening Nutrition class, which is why I was on-campus, and not blogging, all day.

Adam and I both tossed and turned all last night, making Starbucks at absolute necessity this morning.

I got a grande soy latte with cinnamon dolce syrup.

For lunch I brought my corn and black bean pizza leftovers,

and a temple orange.

I stayed on campus for my 4+hour break to get work done, but I definitely also chatted with a friend for a long time.  Since we talked about memoirs, bipolar disorder, and bezoars, among other things, I’m going to count that time as educational 🙂

Adam couldn’t pick me up until after 7:30 and then we had to go to Wegman’s to do something about our empty larder situation.  We ended up grabbing hot bar and having a cafe booth date.  Random assortment of (Asian style) green veggies and tofu,

with a brown rice veggie sushi roll.

The husband and I talked about micronutrient absorption on our “date,” so I’d say I’ve covered my intelligent conversation quotient for the week!

We got groceries (good), drove all the way home before we drove all the way back to get the almond milk we forgot (bad), came inside and chipped my tooth removing my retainers (worse), and made this dessert (great).

Stonyfield Vanilla Soy Yogurt topped with peanuts and marshmallow topping.  Marshmallow topping is vegan; I’m not sure how I’d classify that new fact.

On the agenda for tomorrow is a 2-week late trip to the gym, please keep your fingers crossed for me that we don’t get the 10inches they’re predicting?

Dinner for Breakfast Through Dinner

Thanks for all the well wishes for my sick laptop, guys!  Adam’s been a sport about letting me use his and for now I’m viewing it as a glass half full situation because it keeps me from wasting so much time on the internet 😉

There was a situation this morning with the applesauce (you so don’t want to know) so my breakfast ended up being a little less breakfasty.

Apparently I like my morning meals spicy and veggie filled.

This vegan Enchilada from Amy’s was pretty great though.

I also had a cup of Eggnog’n tea with a splash of Silk Hazelnut Soy Creamer.

Lunch was random if nothing else.

A plain So Delicious Coconut Milk Yogurt with some Crofter’s Strawberry Jam,

and a Thai Peanut Primal Strip.

If you’re going to write in and ask “but, Emily, weren’t you hungry after that lunch?” don’t bother.  Yes!  I was satisfied for an hour or so and then I was starving.  I sat through a club meeting after school where everyone was eating pizza and it was pretty torturous.

I was pretty ecstatic that I had time to buy a sandwich before my night class.

I got a 6inch sub with green pepper, red onion, lettuce, tomato, cucumber, pickles, black olives, and bbq sauce.

One of the things I’m loving about the vegan challenge is that I’m learning that it’s ok to skip the cheese sometimes.  Before I would have automatically ordered a slice of cheddar on this sandwich and it was totally fine without it.

It was a great night because we got out an hour early from my music class, and then it got even better when I walked in the door to dinner.

I set the husband up with the ingredients and recipe for Cooking Light’s Spicy Moroccan Chickpeas, and then he did the rest before I got home.

Go, husband!

The rest of the evening involved the pre-lab due tomorrow and the chocolate-covered strawberries the husband bought for Valentine’s.

Instant Playback

Since last night was the Super Bowl, I thought I’d give you the play-by-play of my evening.  Here are some of the things – other than scarfing single-serve pb cookie dough – I did while I was home alone –

  • found the articles (hopefully) for my big nutrition presentation
  • watched the new Super Bowl commercials online
  • organized three years worth of study note cards
  • sat in a 62* apartment for two hours before I realized the heat was off

Overall I’m not sure whether or not I’d call the evening a win or a fail 😀

I’ve gotten stuff done this morning too.  Like a kill-two-birds-with-one-workout trip to the gym where I studied notecards on the elliptical.  30minutes, elliptical level 6 and random.  I did several minutes of sprints intervals and got all my studying done.

And I made a tasty breakfast.

Before I got into the shower I made a batch of quick stewed apples – 1 chopped apple, 1 Tbsp agave syrup, 1 Tbsp h20, dash cinnamon; microwaved for 150 seconds.

Then after I got out of the shower, and my apples had cooled down a bit, I put them atop a bowl of Stonyfield Vanilla Soy Yogurt,

with a drizzle of maple syrup and 2 Tbsp of my simply sweet granola.

It was like a healthy, vegan apple crisp!

For reals though, this tasted exactly like – if not better than – apple crisp.  Make it!

What was your favorite Super Bowl commercial?  I didn’t see them all – and I wasn’t that impressed – but I think the “angry wife” Pepsi Max one was my fav.

Matching Meals

There was no Saturday post because I just couldn’t figure out the logistics of it.  Two things were happening yesterday – I was starving and my teeth were killing me.  This meant I started 80 different food items, then gummed at them pathetically before moving on.  I just didn’t know how to blog it without saying “I ate two bites of this, and three bites of that..” a million times.

But today, today was definitely worth blogging.  The husband and I ate matching meals all day!  That’s not to say he didn’t eat several things that I didn’t (or that he was particularly excited about this) but for the most part our meals were twins.

We started our day with hot chocolate.

Made stove-top style with skim milk, sugar, and Green and Black cocoa powder.

I’ve been loving the cocoa lately, and this homemade version might have been my best cup yet.

We also had yogurts.

I ate the Liberte, 0% Strawberry.

The Liberte yogurts are sooooo rich and creamy but they generally have a lot of saturated fat so I was thrilled to find this 0% one.

Then we had matching lunch plates.

Leftover mini cheesy meatloafs with roasted sweet potato fries.

This meatloaf was good the first day, but it definitely got better after sitting in the fridge.

We watched some “X-Files” while we ate, then headed to my campus to get some schoolwork done.  I hit up the gym while we were there. A quick treadmill work out – warm up + run 1mile (9.10) + incline walking – 2.5miles and 35minutes. Followed by a quick stretch and a few planks.

For dinner we went to Cheesecake Factory to use up the last of our Christmas gift certificates.

We shared an order of avocado egg rolls.

If by shared you mean split 1-5 and include Adam growling at me while I ate my one.

Our dinner plates weren’t exactly identical, but we did share many bites.  I ordered my favorite, the fresh vegetable appetizer salad,

and Adam got the spicy cashew chicken.

We had a lot of fun sharing, and we’ve both got lunch leftovers for tomorrow!

Plus we split a cookie dough cheesecake for dessert!

My First Long Day

So Wednesdays are a bit insane; I get to campus at 11am and I don’t finish classes until 8:40pm!  By the time my final class was done I was feeling very, very tired.  Sidenote – that tiredness was not helped by the fact that our music teacher does not allow food or drinks in the classroom…..in a 3hour long class……at dinner time. [end rant]

This morning I made sure to eat an extra filling breakfast to make up for yesterday’s missing dinner.

That’s a serving of plain Siggi’s topped with 2 tsp maple jam, 3 Tbsp chunky peanut butter, and a serving of Special K Red Berries.

Delicious, and the (tons of) peanut butter packed a protein punch that kept me full all morning.

Lunch was less exciting.  I packed a minneloa from home,

and bought a southwest chicken flat bread from the book store cafe.

My sandwich was tasty, but my teeth have started hurting and I could only eat half of it.  Boo!

I have lots of break time on Wednesdays – 1 hour + 45 minutes + 2 hours – but unfortunately I didn’t make good use of it at all today.  I’ll have to chalk up the wasted time to first long day tiredness.  Probably from now on I’ll go to the gym in my 2 hour break, but I didn’t want to go all sweaty to my first class session.

When I got home at 9 tonight I was beat.  All I could manage for dinner was a hot chocolate and a frozen meal.

Caramel Praline Hot Cocoa,

and a Pumpkin Squash Ravioli Healthy Choice.

P.S. This is disgusting.  I ate it because I was exhausted and starving, but they were steamed apples in with the squash chunks and the ravioli were sweet and disgusting.

I’m finishing an episode of The X-Files with Adam, and then bedtime can’t come quickly enough!

Two by Two, Hands of Blue

On a less nerdy note, this morning my breakfast was served two by two, in bowls of blue.

Bowl cup numero uno was a serving of (canned) tropical fruit salad.

Dos was some plain 0% Oikos with maple jam stirred in.

My mother put this maple jam in my stocking for Christmas because she’s a genius.

It’s Greek yogurt’s soul mate.  Instead of flavoring the yogurt but thinning it out, this gives you fully creamy yogurt with heavenly pockets of maple.

I had to get up for an earlyish breakfast this morning because I’ve got a orthodontist appointment at 8:45.  Oh yes, you read that right!  I’ll tell my braces story at a later date (remind me if it’s not up by next week), but for now suffice to say that this is not my first go-round with orthodontia.  I’m not getting actual braces, but the next time you see me I’ll be in retainers!
