St. Thomas; Tuesday Morning – Thursday Morning

We’re here. We’re here, we’re here, we’re here!  We’re also busy; this will be a quick recap post.

Tuesday morning at the airport, Adam and I did a good job putting together breakfast from our packed snacks.  We split the Orange Cranberry Cliff Bar,

and shared sharp cheddar, baby carrots, and a gingergold apple throughout the morning.

Our flights went well, and on our layover I found a Salsarita’s for lunch.

(Delicious) chips with spicy salsa,

and a chicken burrito with black beans, a little bit of rice, corn salsa, red onions, medium salsa, and shredded cheese.

So tasty and fresh, especially for a plane meal!  I ate about half of everything.

Before we knew it we were in my childhood home.  Being handed homemade toffee,

and finding gifts on our pillows.

I could get used to this!  The husband and I did some wrapping of our own too.

Before we knew it, it was time for dinner.

Spicy chicken with whole-wheat linguine,

mushrooms and broccoli with sesame oil and toasted sesame seeds,

and mandarin oranges.

We ate all squished together in a clump, because someone decided to start a puzzle at the table 😉

For dessert my dad and I opened up these Klick Halva Truffles.

Adam went out (late!) with some of our guy friends from high school, but I stayed home rereading All But My Life, by Gerda Weissmann Klein and laughing at the notes I wrote in the margins while writing a 15page final paper on it.

Wednesday morning was all about dinner leftovers for breakfast.

And 10minutes of strength and stretch moves.  My goal for vacation is to (at minimum) get in a good stretch every day.

For lunch, we headed to Barefoot Buddha, my favorite restaurant.

I split a passionfruit smoothie with the husband,

and a bagel sandwich with my mother.

Yuuuuuuuum.

The rest of the afternoon was spent on errands, including finding a gloriously huge pile of Achie comics (donated to my mom’s library),

and getting all of our wedding rings polished.

Plus testing saved maple sugar cookies from Thanksgiving.

Out of the freezer, still good!

For dinner we headed to Island Time Pub with my aunt and cousins (2sets, one local, one visiting). The lighting was awful, but the dark did mean we got to enjoy these sailboat sail “trees.”

Adam and I split a Caesar salad, with green peppers and mushrooms added.

And a buffalo chicken pizza.

I had these two slices plus a third.

I also had two black and cokes with dinner.

After that I was the designated driver, so even though we were out with friend until almost 1, I stuck to diet coke.

This morning began with a workout. A good workout 🙂 St. Thomas isn’t exactly map-my-run-able and I don’t have a Garmin, so we are focusing on time instead of distance. We had my mom drive us down to the nearby beach so we could run (not that we ran I’m the sand, just near the beach). In the end we ran for 20minutes and walked for 18minutes. Then we slowly walked up the HUGE hill home; I’ll have to take a picture tomorrow. All total, 60monutes of activity, which felt great.

Breakfast was Greek Gods honey Greek yogurt, topped with some blueberries and banana.

I’ve spent the morning running errands with my mom, including a trip to school so I could write this post.

Plug, Plug, Plug

Is everyone having a good weekend?  In spite of my vacation status I was actually super busy working all day, plugging away at my homework.  I got a lot accomplished, but that’s not to say I didn’t have some fun too 😀

For breakfast I dug into the oatmeal packet stash I brought with me.

This wasn’t all that filling, but thankfully we ate on my niece’s schedule so lunch and dinner both came a bit earlier than usual.

After breakfast we all headed to the Y to watch my niece’s cheerleading practice; it was a ton of fun to watch the little girls be active.  The lunch choice was less exciting, more fast food.  I went with another grilled southwest chicken salad.

This just wasn’t as thrilling the second day in a row, I ended up leaving more leftovers than usual.

Normally I would be totally bummed to have to have McDonald’s twice in 2 days, but this definitely helped to soothe my pain –

You better believe Adam and I both spent some time on the jungle gym with our niece!

Honestly, all that crouching and climbing actually felt like a pretty good workout!

The fun continued with some bowling, but I had to pass in favor of being an uber-nerd…

Dinner took us to Adam’s favorite Mexican place on the planet.  I’m less of a fan because the vegetarian options are lacking but he was so excited that it was worth it.  I ate my fair share of chips and salsa.

And for my meal my vegetarian plate came with 1 chile relano, 1 cheese enchilada, and rice and beans.

It was basically a big plate of cheese.  Yum/yuck!  I demolished my chile relano but let the husband take home 1/2 of my enchilada and 2/3 of my beans and rice.

Normally I’d been all junked out after that dinner but Michael found me jalapeno poppers with cream cheese and there’s no way I was passing that action up.

Soooo worth my months’ long obsession with getting my hands on cream cheese jalapeno poppers!

I completed all of my assignments for one of my classes, I got to run around with my niece, and I got some ccjp; ’twas a great day 😀

What’s the strangest place you’ve ever worked?  Shock me- bowling alley, poolside, a wedding?!

Mexican x Dos

A few things need to be said to preface this post –

  1. Today was carbtastic!
  2. You are not seeing double; my lunch and dinner pretty much were identical.  In retrospect, I think I was just so excited about dinner that my fried brian jumped the gun at lunch.
  3. I just finished taking a midterm and I have tests in Anatomy and Orgo on Friday.
  4. I promise this blog will stop sucking (or will at least suck less) when said tests are finished.

Breakfast (1), Cliff Spooky ‘Smores Z-Bar.

This was my first time with this flavor and I thought it was pretty great.  The flavor was marshmellow-y without being too sweet.  Not very filling though, which leads to (2) – a cinnamon raisin bagel with strawberry cream cheese.

I also bought an iced tea.  The vat of coconut cocoa iced tea had been tempting me for days so I finally caved.

Whoops! Where do I think I am, Brooklyn?!  Of course this was pre-sweetened!  Sometimes I forget that BSC is the mecca of all things unhealthy, and also making things that should be healthy into things that are unhealthy.  You guys know that I love all foods sugar laden, but tea is one of the few things that I think should not be sweet.  I took a sip and then dumped it in the trash.

Something that should be sweet is candy!  Like candy corn.

During the 2hour anatomy review session I also snacked on this cucumber.

I went straight from class, to class, to a review session and by the time I was heading home at 1 I figured I should just buy lunch on the way so I could focus on my midterm.  Enter nachos.

I stopped at a ‘fresh fast food’ Mexican place that we don’t usually frequent on the way home and I figured I should try an old favorite.  I was pretty impressed – these were cheesey without being too cheesey (ahem, the jalapeno nachos from my year on the couch!), and packed with beans.  I felt healthy(ish!) rather than sick after eating them.

Picture a small vegan pecan pumpkin blondie here too; I couldn’t take a photo because I ate it during my timed online midterm.

Dinner came courtesy of Foodbuzz, as well as my recent crock pot obsession.  Let me explain.  As part of the Foodbuzz Tastemaker Program I was sent a sample of this Pace Picante Sauce.

We’ve been loving stewed chicken in the crock pot lately, so why not salsa stewed chicken?!  Soooo simple – 1lb of chicken in the crock pot, a jar of salsa dumped on top, 8hours on low, shred with 2 forks.  Note – the spice level (for a medium) in this sauce is perfect, and I like the level of chunkiness.  Two thumbs up.

Easy peasy, and in a few more short steps we had a fabulous dinner.

Oven roasted butternut squash and broccoli,

sautéed chopped green peppers and onions,

shredded sharp cheddar,

salsa stewed chicken,

dollop of Daisy store-brand reduced fat sour cream.

Fabulous.  Made even more fabulous when finished with the addition of Terra Blues Chips.

I Wrote This Post Last Night

I’m taking a page from Kath‘s internship days and ‘ghost-writting’ this lunch post.  Thursday’s classes and gym trip mean that I’m out of the house from 9am – 4:30(ish) pm and since I have a tasty lunch packed I figured I’d go ahead and post it.  As this publishes I will be exiting my first Anatomy lab with a cat component – I’ll definitely tell y’all more about that later!

I centered lunch around the last Jalapeno Popper turkey patty.

I put it on an Arnold’s Sandwich Thin instead of a bun, and nixed the broiled sharp cheddar, so I knew I needed something special to tie the whole thing together.  Enter Laughing Cow Blue Cheese –

Sandwich perfection.

I imagine I’m going to enjoy that very much 😀

I also packed a small sliced purple pepper,

and the last (tear) of the dried kiwi with some dried apricots.

Hopefully this holds me over through Food Lab and a workout, I can’t deal with yesterday’s insane hunger!

Gourmand on the Go

I left the house more than 20 hours ago, good golly it’s been a full day!  Another clue that things were busy – 1o0% of my food was eaten on the go today.  I would say I’m definitely mastering the art of eating healthy on the fly.

This morning’s breakfast contained some pretty snazzy components –

a chocolate Oikos, 3 dried figs, 1/4 cup of homemade granola, and a plucot.  Things got less fancy in a hurry when I had to load those guys into a to-go cup –

I didn’t have time to finish before my first class started so I had to throw out some of my stellar combo, but breakfast on the go is a work in progress.

Lunch was identical to the other day; Whole Grain Sandwich Thin, Laughing Cow Queso Fresco and Chipotle cheese wedge, and three slices of turkey.

I hate to be repetitive but I see many more of this exact sandwich in my future; it’s just so good!  I thought I was going to hate the Arnold’s Sandwich Thins (I got them as a free sample from the Foodbuzz Tastemaker Program), but they are actually exquisitely doughy.  They remind me a lot of when I was a kid and a I would mush a piece of bread up into a single, delicious square.

I did mix up my side though, a sliced cuc.

Classes were pretty intense; I finally attended my last nutrition lecture and it’s going to be a lot of work.  I’m taking 7 courses this semester (several are 1-credit labs) and I’m already feeling a bit overwhelmed.  As soon as classes were done today I curled up with my planner, binder, and a computer to map out my assignments for the semester.  Todoist was key.

I was stuck at school until 5pm (rain) so I ended up searching the food court for sustenance.  Thank goodness I gave it another chance, I found a build your own salad place.

Romaine base, 2 servings of roasted veggies, green bell peppers, carrots, red onions, and blue cheese crumbles with a bit of balsamic.  It came topped with a tasty breadstick.

We were only home a minute or two before we headed back out.  Our dinner plans were Korean night with a group of friends.

Gleesh our friends are good cooks!  My bowl was sticky rice with carrots, cucumbers, kim chi, garlic paste, nori, and an egg.

Korean night eventually turned into boys’ only poker, and I sat on the couch catching up with the girls until after midnight.

Adam insisted on pizza on the way home (guess which one of use was drinking instead of driving?!) and I wanted to take part in the fun so I had him cut a slice in half for me.

Tasty bbq chicken pizza, without undoing my day’s worth of healthiness.  I mostly wanted a taste anyways.

It’s another busy day tomorrow, Bedtime, Bedtime, Bedtime!

Second Day Snowballs

There is a reason why health professionals advice against skipping meals.  I didn’t actually chose to go dinnerless last night, it was more a necessity of circumstances, but I paid the price all the same.  That unhealthy act snowballed into a whole day of poor nutrition.

I was starving when I woke up, but Tuesday is my 8am class day and there just wasn’t time for breakfast.  I packed a Cookie Dough Balance Bar instead.

I have class from 8am – 7:30pm (with some big breaks) most Tuesdays and I wanted to stay on campus to study.  I packed myself a healthy lunch.

I spread a wedge of Laughing Cow Queso Fresco and Chipotle on a Whole Grain Thin Bun and topped it with three slices of turkey.

On the side I had a baggie of green bell pepper slices and baby carrots.

And a small dark chocolate for dessert.

And that held me over for a good minute and a half.  I sought out sustenance in the food court and came back with, this –

Yeah.  Clearly if I want to eat healthfully on campus I’ll have to pack my own snacks from home.  I ate 90% and felt like crap, but that was at least less distracting than gnawing hunger.

My evening class snack was also unhealthy, but that was by choice.

Adam made himself a respectable dinner, but I had yet another coupon that was about to expire so I picked up a Moe’s kids’ meal.

It Was a Day Relano

***Disclaimer – between crappy lighting, cheap camera, and no photography skills, I could not get a usable picture of dinner.  But where I lack in artistic prowess I achieve in kitchen creativity; this recipe is a taste winner!  So please ignore the lack of photographs and go ahead and try it anyways.

On the agenda for dinner tonight were Stuffed Poblano Peppers.  I’ve had, and loved, chile relanos at restaurants before and I’ve always wanted to recreate them at home.  I didn’t really look at or follow any recipes for inspiration but I did have a couple of goals in mind –

  • make the recipe healthier by baking the peppers instead of frying them
  • achieve a filling that is creamy and cheesy without being over the top

Here are the steps I took for 4 servings (measurements all approximate, eyeball things for your tastes) –

  1. Preheat your oven to 400*.  Prepare a baking sheet with foil and cooking spray.
  2. Heat 1T evoo in a large saucepan over medium heat.
  3. Add 1lb 99% lean ground turkey to the pan.  Cook through, stirring often and using a wooden spatula to break the meat into little pieces.
  4. When the meat is almost cooked, stir in a drained 14.5oz can of crushed tomatoes (we used onion and garlic flavored).
  5. When the turkey is cooked through and combined with the tomatoes reduce the heat to low.
  6. Stir in 5 wedges of Laughing Cow Queso Fresco and Chipotle cheese.
  7. Remove the pan from the heat and stir in 1/2cup shredded sharp cheddar.
  8. Allow the filling to cool.  Meanwhile, chop the tops off of 8 small-medium poblano peppers; be sure to remove all of the seeds (that’s where the peppers’ heat lies).
  9. Use a spoon to stuff filling into peppers.  If you have extra filling it would be delicious in Mexican-style Sloppy Joses.
  10. Lay the peppers on the prepared baking sheet, at least 1inch apart.
  11. Bake for 25-30minutes, until the peppers’ skin appears to wrinkle and blister.

Baking and Buddies

I did not work out today (I told you I can’t take a day off, 1 has turned into 4, eek!) but I did manage to do a ton of creating.  I feel like I’ve spent the whole day mixing and stirring, and that’s a fabulous feeling!

First I whipped up a batch of natural spider repellant.

It’s h2o and lemon essential oil combined in an old spray bottle.  I went spritz-crazy all over the house.  I’ll let you know if it actually does any repelling.

Next I cooked up a batch of Maple Coconut Granola.

I used Kath’s recipe but substituted unsweetened shredded coconut for pecans.

Then I tried my first smoothie in a bowl!

First I put a Siggi’s Vanilla in the bottom of my bowl.

Next came my smoothie.

I mixed 1cup frozen strawberries, a packet of Chocolate Infusion Amazing Meal, and water.

This was my first smoothie using water as the liquid and I still adored the Chocolate Amazing Meal!  It wasn’t too grassy or too sweet but it totally helped to fill me up.  No weird graininess either.

Finally I topped my SIAB with 1/4 cup of my new granola.

Delectable!

I think smoothies via spoon instead of straw will definitely be the new thing in this house.

I may not have done any exercise, but my blender sure got a workout!  Next it had to tackle hummus.

I don’t have exact measurements, but I blended up chick peas, evoo, balsamic vinegar, salt, and water.

I wanted fresh hummus for lunch, but I also wanted … purple?

I ended up creating a pretty plate.

Purple bell peppers,

purple cherry tomatoes,

a dollop of hummus,

and some pita pieces; a take-home from dinner with my parents the other day.

Lunch was good, but nothing could top my afternoon snack.  I’ll give you a hint…

I cobbled together a couple recipes and my memories of Oko in Brooklyn to create Honey Greek Frozen Yogurt.

I didn’t have any fresh fruit (the horror) but enjoyed this bowl sans toppings just fine!

Make.This.  The texture is a tad bit softer than regular ice cream and the flavor is unlike anything I’ve ever tasted.  There is a bit of tang and a bit of sweet, but the olive oil totally comes through at the same time.  Click here for the link to my recipe.

Dinner was also a winner, and I’d say that even if it didn’t rhyme.

Soon I’ve got to head to the airport to pick up my friend Camile!  She’s flying in today and then tomorrow we are driving to NYC for BlogHer.  So excited!  The only sad this is that our friend Kristen was supposed to be meeting us in Buffalo on Sunday but due to some personal issues her trip got canceled.  I’m feeling a bit down about the breakdown of our trio visit, so indulge me in a little reminiscing?
