Another Recipe Tease

Alrighty, I’m here for a sour-puss post, as promised.  I got my Chem score back and let’s just say I will be working my butt off for the rest of the semester.  I actually still have an A in the class overall, but I’d like to make sure I keep it.  I didn’t get my Anthro test back yet because class was canceled.  That would have been more exciting had I known before I sprint/limped through the rain to get there.  My leg hurt a lot, but I took advantage of the “found time” and gave myself 45minutes to read a magazine 😀

I also had time to do some Chemistry reading while I waited for my next class.  I snacked on a package of Strawberry Pomegranate Teather while I worked.

The fruit leather was hard-core delicious, but I was starving by the time I got home.  Hunger coupled with major leg pain lead me to the peanut butter M&M’s.

I ended up having three handfuls!  I would have been better off sitting down with a small plate of real food.

Dinner was a healthier situation.

I wish I could share this recipe, Italian Style Gumbo, with you but it’s for another contest!  It was delicious though, and I promise to make a recipe page soon.

When I get up tomorrow I’ve got to pack for our PA trip and I’d like to squeeze in a workout too so bedtime is in order.  I hope everyone else had an irritation-free day!

Equations of Sorts

It’s 9:20 and I would kill to already be in bed so I’ll keep this short and sweet.  My day went lab –> people watching on campus –> doctor’s appointment/waiting for the husband’s doctor’s appointment –>  eating junk whilst watching tv –> this super lame post.

Breakfast = green.

1cup frozen spinach, 1cup oj, 1 frozen banana.

Lunch = sandwich + spicy.

Bread, sliced turkey, spinach, Crofters superfruit spread, cheese.  Looks unassuming, but the Yancey’s Farm Buffalo Wing cheese was intense.

Plus a sliced jazz apple.

A less healthy snack.

1 small mint milkshake – minty flavor = half a milkshake in the trash.

Dinner = Moes.

Chicken Homewrecker Jr (that’s a small plate).

I swear on a Big Gulp of diet coke that I will have an actual post tomorrow.  And some good news!

Slopped on Bagels and Secret Buffalo

Hi y’all, sorry for the late post!  It’s been a long (but good[ish]) day.  Adam and I stayed up way too late watching tv last night.  Catching up on “Modern Family” was amazing, but oversleeping this morning meant I didn’t have time to pack up like I’d planned.  At least I found at outfit that thrilled me –

My new blue chinos ($18, love love loved the Orlando outlet malls!) feel like Spring!

I drove the husband to school because I had an 8am coffee date with my friend Kate; “Free Pastry Day” at Starbucks was just too good to pass up.

I got a tall, skinny (i.e. small, nonfat and sugarfree) cinnamon dolce latte,

and a low-fat banana chocolate chip coffee cake.

I wanted to like the pastry, I really did, but it just tasted “diet.”  I prefer diet sodas to regular but anything else, yetch!  I ate about half of it so that I’d have something in my belly for breakfast.

Katie went to class around 9 and I ended up working on my Chemistry lab instead of reading; my mind just did not want to study for today’s test!  My desire for a good breakfast (and a need for caffeine to study with) fueled my lunch selection from the cafeteria.

Huge diet coke and a blueberry bagel with strawberry cream cheese.

I don’t want to complain, because the bagel was delicious and the cream cheese had real strawberries in it, but “deli-prepared” bagels always piss me off.  The cream cheese on my bagel was literally less than half of the amount the man wanted to put on.  Why?  Slopping on 3+ tablespoons of cream cheese is wasteful, unnecessary, and unhealthy.  I don’t understand why stores do this but I always make sure I ask for ‘half of what you usually use.’

My Anthro test went less than well, let’s just leave it at that.  Since I did poorly on both of my recent tests I know that I need to buckle down for the rest of the semester.  In fact, in between my test and my 2nd class I got right to work on the reading for the next class 🙂

After class (6:30) I had to pick up the husband, finish my lab, and un/pack my stuff for tomorrow.  I ate a small snack while I worked; pineapple and low fat cottage cheese.

Then, finally it was time to make dinner.

Buffao Chicken Baked Pasta.  I wish I could share the recipe with you guys but it’s my entry to a contest.  It was delicious though.

I’m going to do a quick quick (5-10minute) strength/stretch session and then I’ve got to hop in the shower.  I have a pilates video in my plan for tomorrow and I’m so excited!  Tomorrow will be another late(ish) post, I’ve got 8am lab and then a doctor’s appointment.  Cross your fingers for me that I’m actually able to schedule my bone scan.

In Need of a Green Beer

Happy Festivus!  No wait, that was yesterday’s post, Happy St. Patrick’s Day!  If you don’t know what Festivus is your life has been empty and you should check out this wikipedia post.

My late night/early morning combo didn’t leave me feeling that chipper but I knew I had to get my green on –

And breakfast, consumed on the way to 8am lab, was a Green Monster.

We were out of bananas so this guy had 1cup frozen spinach, 1cup oj, and 1/2cup frozen peaches.

Lab went well, I am all done with my post-calculations which always makes me happy.

Adam picked me up from campus around noon so we could finally replenish our stores at the grocery.  It was a quick trip, nothing too exciting, because frankly I’m too busy to do much cooking until after my two exams are over.  We did get an exciting lunch though.

The One Where Emily Whines (and Questions)

It’s been a short while since my last post, but let me tell you it has felt loooooong!  I’d like start this post by saying I love my husband and I’m so happy I got to see him.  The half was fabulous and I loved getting to run in it.  I love my family and I’m excited to be home.  And now I’m going to complain.  I’m also going to survey (in bold) just for funsies.

Tuesday, Kristen came home from school and took me to the airport.  We stopped to get my tattoo touched up on the way; pictures are coming, I promise!  I didn’t get to the airport late, but I definitely got there later than usual, I like a good 2hour buffer.  How early do you like to get to the airport?  My leg was killing me and I ripped the bandage off my tattoo picking up my bag so I was a mess about two minutes in.  Thankfully they let me skip to the front of most of the lines, Jet Blue lets you check 1 bag for free, and I had a nonstop flight.

Jet Blue has free cable onboard, something we don’t have at home, so my 3 hours went by pretty quickly.  I snacked on a package of Teather snacks; yum.

A Muscle Milk Light Bar; meh, too gooey and with a strange aftertaste.

And a little bag of blue chips; blue for Jet Blue, cute and tasty.

I want to say the flight was good, I mean I had chips and “Bones” was on, how could it not be?  Oh yeah, when people who have no business being parents take their little monsters in public!  Before people try to crucify me – I was a teacher for two years, not only do I recognize the signs of most disabilities/disorders, I fully sympathize with the parents who help their children live with them.  This little brat was NOT disabled.  Nor was he that little, the child was at least 6 or 7.  Infants scream on planes, it sucks for their parents and the people around them, but if it happens it is unavoidable.  I’m not going to say this kid needed to be smacked (I don’t believe in that) but his parents certainly needed a smack in the face.  He screamed the entire flight.  Ok, whatever.  But he also kicked the back of my seat the entire flight.  And every single kick felt like someone was shooting me in the leg.  By the time I got off the flight I was in tears.

I dragged myself down to baggage claim holding back tears.  And I even made it to the car and managed to look happy to see the husband.  I probably would have made it all the way home without crying, if we hadn’t been a block from our house before I realized that I left my camera on the plane.  Oh man.  Thank goodness the woman at the Jet Blue was a freaking angel who found my camera, gave us her personal cell phone number, and then met us outside the airport after we drove back.

Adam got dinner during the whole rigmarole and I ate some of his tortilla chips but have no photographs, obviously.  Ever left anything behind at the airport?

We got home around 10 and had to unpack then repack before we headed back to the airport at 3am.  Fun times.  My leg has been getting worse as the days go on so Wednesday I finally sucked up the embarrassment and asked for a wheel chair at the airport.  I am just too slow to make it from gate to gate in time.  Fully humiliated, at least I made it to my flight.

I had a three hour layover in Philly, for which a motorized cart dropped me off at my gate.  Have you ever ridden on one of the airport carts?  There were no healthy breakfast choices close by so I went straight to lunch at 8am.

as well as this side of Waldorf salad.

I also made it to a newstand and had a York Peppermint Patty for dessert.

The husband said I needed to suck it up and go to the ER but as my 2nd flight got more and more delayed that option slipped away.  The flight from Philly to STT was 4hours long (and 2hours late) so by the time we got into the air I was starving again.  I bought a snack box on the plane but was a little disappointed with the unhealthy choices.

I ended up eating the cheese and crackers.

If you can’t tell by the pictures I played a LOT of Sudoku the last couple of days.  I definitely caught up on sleep as well.  What do you do to pass the time on flights?

I was so happy to see my dad when I got to St. Thomas!  And I was pretty happy about the dark chocolate turtle he handed me as soon as we got in the house.

It was very nice reading magazines on my old bed while my parents cooked up dinner.  And it was a tasty one.

and turkey reubans cooked on the George Foreman.

Mmmn.  I quit eating red meat before I had the chance to try a “real” one, but turkey reubans are kind of my favorite.  I had a tempeh reuban in NYC that was socks rocking and there is a place here that I’m planning on getting one from this week as well.  Like reubans?  Hit up Allison.

After dinner I went in my room to read.  And fell asleep at 8pm.  Yes folks, that is 7pm Buffalo time, out like a light!  It’s just as well because I had to get up around 6 to go to school with my mommy.  My parents don’t have internet so I’ll do all my blogging from here.  I have Anthro work to make up all week/end and I have a doctor’s appointment for my foot at 11am today.

Oh the Places We Went!

Hey guys!  My second day in Orlando was so much fun; we are having a great time and eating lots of tasty foods.  Sadly, I feel like I need to keep this post quick because it’s bedtime and I’m tired.  It’s funny how the better the quantity of blogging material I have the more the quality of my posts go down.

Kristen was great about getting food requests to have in the house this weekend.  Breakfast was Dannon Greek yogurt with a chopped nectarine, topped with a tsp of strawberry jelly, in a go cup.

The nectarine was so delicious, Florida is definitely the place to be for fresh fruit right now.

After breakfast we trekked to Disney to pick up our race packets and hit up the expo.  I had a good time checking out the fun shirts and stuff but didn’t really have money to spend.  I did pick up a belt pack (i.e. fanny pack) which I proceeded to wear for the rest of the day.

We did lunch backwards today, dessert first then grown-up food.  First things first, Menchies!

I’ve been jealous of Meghann for months and my envy was totally justified, this place was ridiculous!

I got original tart yogurt with fresh fruit and a small dab of marshmallow sauce.

YuuuuuuuuM!

Lunch was not new to me, but is something I’ve been missing in Buffalo – Whole Foods salad bar.

I got seitan and veggies, bbq seitan, kung pow chicken, a stuffed grape leaf, and some roasted veggies.

Then we met up with a bunch of our friend’s friends at Universal Studios.  Seriously?!  I could not have had more fun today.  This was my first time at Universal and it was amazing.

Even if I did get a little wet.

My favorite part was the Dr. Seuss area.

Fun fact – my tattoo was partially inspired by the star bellied Sneetches.

It was so great to walk around all day and stretch my legs.  When we left the park I, ahem, refueled with a white chocolate and heath covered marshmallow stick.

Our dinner plans were for Seasons 52 but sadly there was an issue with our reservations and the plans fell through at the last minute.  We had driven past an Elephant Walk on the way that my friend Camile was super excited about so we ended up going there.

I had a diet coke and amaretto to drink before dinner.

And I ate 2 pieces of tempura salmon sushi for an appetizer.

I really wasn’t sure what to order for dinner.  The food choices were more American-Chinesse than what I usually prefer (authentic as possible Thai).  They had honey shrimp, sesame chicken, and similar things that sounded good but I knew would be unpleasantly unhealthy.  I ended up ordering tofu and veggie stir fry and asking for the sauce on the side.

My meal ended up being pretty tasty, I was definitely not disappointed.  I didn’t eat any of the rice but I pretty much decimated the rest.

We had big plans of heading out after dinner but we were all so tired it seemed much more pleasing to come home and go to bed.  I know 11:30 isn’t exactly early, but it will make for a better wake up tomorrow than a night of drinking would have!

What is your favorite Dr. Seuss story?  I am a really really big Seuss fan.  The Sneetches, Yurtle the Turtle, and The Butter Battle are all favorites but Oh, The Places You’ll Go really has my heart.

A Lunch Post?!

I knew this would be a busy week, but now it feels like things are just dropping out of the sky!  Last night’s late night issue was the power to our fridge randomly being shut off.  Fun times 😦

I planned on getting up to eat breakfast before lab but my pushed back bedtime meant I just wanted to sleep in.  I packed a (peeled) minneola to eat in class,

and bought a small package of peanuts from a vending machine as well.

Lab went well, but I’m incredibly worried about how difficult the post-lab calcuations are going to be, the minute my test is done on Friday I’m going to have to start working on that.  First I have to get through tomorrow’s Anthropology test though.

Lunch was a semi-Asian affair.  I had a serving of mini chicken egg rolls,

and a Thai-Style chicken Lean Cuisine.

I also randomly had a forkful of peanut butter,

and a (too) big bowl of cereal.

Now I am about to head to the Spot for a quickie study session with Caroline.  I’ll be back for dinner.

Do you have vending machines nearby at your job or school?  Do they tempt you to make unhealthy choices or are there any quality options available. 

Saturated Sunday

Sadly, I think this will be an entire week of one-a-day, quick and dirty posts.  I have to cut back somewhere and it can’t be at the gym (I did NOT go to the gym today, but that was more about my weak ankle than time) because I’ve only got three weeks left to train!  I’m going to try to keep eating healthy too and I’ve got a plenty of leftovers meal on the schedule for tomorrow.  It sucks that I let myself get so behind but hopefully I’ll keep on top of things after these two tests.

Breakfast was eaten in parts.  Dannon Coconut Pineapple Lite and Fit Yogurt.

A stolen 1/2 cup of the hubby’s cereal, with skim milk.

And a packet of hot chocolate.

Lunch was a replay of last night’s feast. 

Two biscuits spread with clover honey.

Chicken salad (+ 4 big bites from the container).

Sautéed okra, with paprika.  This was the best combo on earth, out of this world tangy and delicious.

3-8pm were spent doing a coffee shop study meet up with Caroline.  Everything bagel with veggie cream cheese.

Skim milk iced chai latte.

And when I got home I had baby carrots with Cedar’s Spinach and Artichoke Hummus.

Now I’ve actually got to go do a Chem homework assignment that’s due tomorrow, see ya!

What is your favorite spice?  I feel a lot of the bloggers on the cinnamon love but to me nothing beats paprika.  It adds spice and tang and goes with almost anything.
