On The Run

This morning Adam, Webster, and I headed to the park.  They went frolicking and I went running.  I started the Couch-to-10k plan, again.  I refuse to go back to week one (I’ve started the plan four times in as many months, it’s embarrassing at this point) so I did the first day of week two – intervals of 4 minutes walking / 1 minute running, x 8.  Plus 5 minutes of straight running at the end as I hurried to find a dog and husband who are bad at following directions!  I was great to be outside.

The rest of the day included schoolwork, a shift at work, and an evening of tv.  In fact, we are mid-Bones right now so I’m keeping this short.

Here’s what I ate…  An Alter Ego Mini Dark Velvet chocolate bar.

This stuff was amazing, the perfect blend of milk and dark chocolate.  It had dark’s tang with the creaminess of milk.  Total love.

Vegan Chicken Salad Sandwiches

Recently Naysoya contacted me with the opportunity to try their newly reformulated Nayonaise line.  I’ve enjoyed their vegan mayo in the past during my Vegan Month challenges, so I happily accepted.  Pretty soon, a box showed up in the mail.

They sent me 2 free jars to sample – Vegan Nayonaise and Vegan Nayo Whipped.

Here’s what they had to say (product information):  “Nasoya recently perfected Nayonaise for a smoother, creamier texture and it now comes in new distinct varieties.  Original Nayonaise is an excellent alternative to traditional mayonnaise reformulated with a more delicious flavor than ever before. NayoWhipped, the line’s newest variety, has a tangier taste for those who prefer a whipped sandwich spread. The entire line is vegan, a good source of vitamin B12 and made from expeller pressed oil. All products are also fortified with Omega 3 ALA for added nutrition.”
And here’s what I have to say (disclaimer): I was provided these samples free of charge.  I did not receive compensation for writing this post, I just really wanted to share my tasty recipe.  All opinions are my own.

I haven’t tasted the whipped product yet (in non-vegan life I prefer Miracle Whip to regular mayo so I’m quite looking forward to it) but I’ll be sure to share my opinion when I do.  I was impressed with the reformulation of the Nayonaise.  The new product is in fact smoother than the previous version.

I’ve seen recipes in the past {on those Mayo tv commercials?!} where mayo is used in place of butter when grilling a sandwich and I figured that application would be a great way to taste out the Nayo.  I also used it as the binder in my vegan chicken salad.  I think the recipe turned out quite well; the Nayo gave the toasted bread a great crisp texture.

Vegan Chicken Salad Sandwiches, serves 2

  • 7 oz vegan “chicken” nuggets  (I recommend Wegman’s Don’t Be a Chicken line if you have access to it)
  • 1/4 cup slivered almonds, toasted
  • 3 celery ribs, cut in half vertically then sliced
  • 2 green onions, sliced
  • 1/8 tsp salt
  • 1 tsp lemon juice
  • 3 Tbsp plus 2 tsp Vegan Nayonaise
  • 4 slices bread of choice
  1. Cook nuggets according to manufacturer’s instructions.  Set aside until cool enough to handle, then dice.
  2. Combine cooled chicken, almonds, celery, green onions, salt, lemon juice, and 3 Tbsp of Nayo in a large bowl and toss to combine.
  3. Divide salad evenly between two slices of bread, then sandwich with the remaining slices.  Spread 1/2 tsp Nayo on the outer side of each slice of bread.
  4. Preheat a large grill pan over medium-low heat.  Cook sandwiches until toasty, 1 – 2 minutes on each side.

Choco-Cherry Love

I’ve been skipping breakfast on most of the early mornings of my internship without incident, but today I ran into issues.  After a week of eating breakfast – giant, glorious, egg studded breakfasts – my body rebelled at today’s sudden fast.  I spent the first hour of my morning light-headed and nauseous, crossing my fingers that I wouldn’t pass out while reading charts.  Yuck.

All that is to say, I drank a regular sugar Pepsi for breakfast (I felt better almost immediately!), after breaking out in a very embarrassing cold sweat while talking with a doctor.  No photo because I was in a hurry to get back to work.

Lunch was nutritionally lame as well; I ran out of time to pack food this morning.

When I got home this afternoon I made myself a Choco-Cherry Smoothie.

1 heaping cup frozen sweet dark cherries // 1.5 heaping Tbsp Navita’s chocolate Protein Smoothie Mixer // 1 Tbsp U-Bet chocolate syrup // ~1 cup Silk Vanilla Unsweetened Almond Milk.

It had so much potential but sadly my smoothie had absolutely no flavor.  It was basically ice water!  I’m not sure where I went wrong, but I drank the whole thing any way to get in the nutrients.

I spent my afternoon working on my thesis for the history class I’m taking this semester.  I am not enjoying having to write an actual paper; it’s been awhile!  I am hoping to plug away over the next two weeks though and get it done a little bit early so I can get it off of my mind.

I spent the evening in night class.  We talked about the Holocaust today, which felt like a throw-back to my first time in college.  Did you know – when I thought about getting my Masters in English I planned on writing my thesis on Holocaust literature?

Then I hurried home to squeeze in a few episodes of “Battlestar Galactica.”  I enjoyed a sliced banana with peanut butter while I wrote this post.

I’ve decided I’d rather paint my nails – a gorgeous, sparkly pink! – than eat a grown-up dinner, so that’s all she wrote.

Cider House Run

Let me apologize in advance for what is sure to be a post riddled with typos.  I’ll do my best, but I can’t make any promises.  I’m two days in and I’m going to have to agree with my friends who were in the previous rotation – this placement is exhausting.

Breakfast was a Pirouette Cinnamon Pecan Barre.

This bar was in my Yumvelope shipment.  The ingredient list is great – dates, walnuts, pecans, agave nectar, hemp seed, rolled oats, hemp protein, ground flax-seed,brown rice protein, vanilla, cinnamon, sea salt, peanuts – but I wasn’t a big fan of the final flavor; too much date.

Plus hospital coffee with 2% milk.

We get free soda and coffee at this hospital so expect to see a lot of caffeine breaks!

The McKenzie’s Seasonal Reserve Hard Cider was great.  It had notes of cinnamon that were quite tasty.

I headed straight from Cole’s to meet my friend for a gym visit.  I’m back to the Couch to 10k plan, right where I left off, though obviously I’ve got to stick with it this time.  2 minutes of running/3 minutes of walking, x 10.  I am fat, I am out of shape, I was still a little drunk – my workout was so flipping hard!

In spite of my extreme tiredness and Adam’s messing up our meal plan by eating while I was at the gym, I managed to cobble together a good dinner.  I was worried about not having enough to eat, but I think I ultimately went a bit overboard!

Poor Puppy

I had a few silly things to complain about, but the dog had another seizure today so that kind of all pales in comparison.  He’s doing ok now but we are going to have to meet with the vet soon and possibly rethink our strategy.

Regardless, it’s been a long day and just want to go to bed.  Keeping this quick…

Strawberry Tea With Mini Boba

You can, in fact, purchase the giant tapioca balls known as “boba” for bubble tea.  They are available in most Asian specialty groceries in most mid-sized cities.  Sadly, it took me years to learn this.  Even more sadly, some of you live in cities devoid of boba entirely.  And it just wouldn’t be right to let you live a life free of bubbles.

I’m not going to say my recipe is as good as what you’d get in a tea shop.  It isn’t.  But it is good.  And the fancy-factor of making your own strawberry tea makes up for the slightly less chewy boba.

I recommend making all of the components 24 hours ahead of time, for easy assembly the next day.

Strawberry Tea with Mini Boba, serves 4

  • 5 bags tea of choice (I recommend a nice Earl Grey)
  • 1 cup large pearl tapioca
  • 1 cup sliced strawberries
  • 1/3 cup granulated sugar
  • sweetener to taste

Brew 4 cups of tea (the 5th bag is to make your 4 cups extra-strength) according to package directions.  Set aside to cool completely.

Bring 4 cups of water to a boil in a small saucepan.  Add tapioca and allow water to return to a boil.  Reduce heat and simmer tapioca for 5-10 minutes, until balls are mostly translucent.  Strain and run under cool water to stop the cooking process.  Store cooked tapioca in a water-bath in a Tupperware in the fridge.

Place berries in a small saucepan over medium-low heat (go ahead and reuse your dirty tapioca saucepan, I won’t tell!).  Cook 1 minute, using the side of a wooden spoon to mash the berries.  Add sugar and continue to cook until it is completely dissolved, stirring constantly.  Remove from heat and cool completely before transferring to a Tupperware.

Divide mashed strawberries evenly between 4 glasses.  Top with brewed tea and shake or stir to combine.  Sweeten to taste.  Carefully scoop cooked tapioca out of water bath and place into tea.  Serve with large straws to allow for bubble slurping.

The title describes every single thing I ate today!  At least I managed to cover a good spread of the continent – Thailand, Japan, and India.

Adam wasn’t excited enough about my Pad Kee Mao leftovers, so I ate them myself for breakfast.

I rounded out the meal with a spoon of peanut butter.

Yes, contrary to popular Adam’s belief, that orange stuff in mayonnaise-based.  But when you husband sweetly delivers you lunch at work you don’t turn it down just because you’re doing a silly challenge.

I ate half of my chickpeas, with rice.  And 1.5+ of my fried dough.  I tried to eat less but half the times Adam went to take a bite I ended up snatching it away from him!

The flavor was very similar to the Johnny Cake I grew up eating and I was having a total taste memory.

Adam is in bed (he got under the covers at 8:45!) and I should be there too but I have a mental problem that keeps me from making healthy sleep decisions so instead I’ll probably get some dessert and watch Law and Order: SVU.
